Abstract
The aim of this research was to graft gallic acid (GA) onto high methoxyl pectin (HMP) through the redox-pair of ascorbic acid (Aa) and hydrogen peroxide (H2O2) with one- and two-pot procedures. The effectiveness of the both procedures and the chemical, physical and antioxidant properties of the obtained HMP-GA were evaluated. HMP-GAone-pot (23.3 ± 0.21 mg GA Equivalent (GAE)/g) and HMP-GAtwo-pot (32.3 ± 0.52 mg GAE/g) were best obtained at H2O2/Aa molar ratio-HMP/GA weight ratio of 9.0-0.5 and 16.0-0.5, respectively. The UV-Vis and FT-IR spectra and along with their derivative and thermal gravimetric analyses, revealed differences between HMP-GAone-pot and HMP-GAtwo-pot. The latter exhibited a greater antioxidant capacity than the former in single electron transfer (ET), hydrogen atom transfer (HAT), and ET-HAT mixed assays. The chemical differences can be attributed to side reactions that may have interfered with the grafting reaction. Consequently, HMP-GA, possessing unique antioxidant and prebiotic properties, can be synthesized through redox-pair procedures.

Abstract
The article examines the opportunity to use extracts and Aronia melanocarpa (Michx.) Elliot fruit powders in the production of sugar confectionery for the substitution of synthetic dyes. In the technology of manufacturing confectionery masses, synthetic dyes are used that can cause various allergic reactions, as well as hyperactivity syndrome and lack of concentration in children. The composition of hydroalcoholic extracts was analyzed, and the metabolites of polyphenols, individual anthocyanins and organic acids were quantified. Antioxidant capacity and CIELab chromatic parameters were tested. The technology for manufacturing confectionary masses with extract and powder of aronia was developed. The sensory profile, physicochemical and microbiological quality parameters, antioxidant activity and color characteristics of the confectionary masses with the extract and powder of aronia addition were determined on the 1st and 50th day from the production date. The evolution of DPPH antioxidant activity of confectionery masses during storage was measured in vitro, in the conditions of gastric digestion. The results showed that Aronia melanocarpa (Michx.) Elliot extract is rich in polyphenols, flavonoids and tannins, the main organic acids being represented by malic, citric, acetic and ascorbic acid. During the 50th storage day, the antioxidant activity was higher in confectionery masses containing aronia compared to the control. The sensory and microbiological testing of confectionary masses demonstrated that the combination of extract and aronia powder ensures the optimal shelf life and organoleptic scores. It was demonstrated that during the storage of confectionery masses with aronia, the physicochemical indicators of quality were in accordance with the regulated admissible values. Positive effects of aronia were observed on confectionery masses’ color saturation. These results underline the opportunity to use aronia extract and/or powder in confectionery industry to replace synthetic dyes and obtain products with enhanced functionality.

Abstract
La determinación de la capacidad antioxidante es útil para valorar la calidad de un alimento, la cantidad de antioxidantes presentes en un sistema, o la biodisponibilidad de compuestos antioxidantes en el cuerpo humano. Los métodos disponibles realizan la determinación del efecto potencial de las sustancias antioxidantes, presentes en los alimentos y en el organismo humano, contra las reacciones de oxidación. El objetivo fue comparar los resultados de la detección de la capacidad antioxidante total (CAT) en muestras de alimentos y plasma humano, mediante la quimioluminiscencia por fotosensibilización (PCL), en contraste con métodos que cuantifican la capacidad de absorbancia del radical de oxígeno (ORAC) y el poder antioxidante reductor del hierro (FRAP). Se obtuvieron extractos hidrosolubles y liposolubles de salvado de arroz estabilizado (SAE) y de harina de Ulva clathrata (HUC). El plasma se obtuvo de muestras de sangre humana (PHU). Se procesaron tres muestras en cada caso. Los resultados se analizaron mediante análisis de varianza de una vía y correlación de Pearson, p < 0.05. La CAT determinada mediante PCL fue: SAE 246.37 ± 5.37, HUC 21.05 ± 0.41 y PHU 90.59 ± 1.17 equivalentes Trolox (ET) μmol /100 g ó 100 mL, p < 0.05; ORAC: SAE 5015.62 ± 12.83, HUC 852.37 ± 3.45 y PHU 2563.31 ± 39.47 ET μmol /100 g ó 100 mL, p < 0.05. FRAP: SAE 519.37 ± 0.04, HUC 52.78 ± 0.01 y PHU 90.26 ± 0.01 equivalentes Fe2+ (EFe2+) µmol /100 g ó 100 mL. Se observaron correlaciones entre PCL y ORAC, r = 0.99; y la PCL y FRAP, r = 0.94, ambas estadísticamente significativas (p < 0.05). La PCL mostró ser un método confiable y alternativo para cuantificar la CAT, que se puede aplicar en estudios de alimentos y de intervenciones en salud.

Abstract
OBJECTIVE To study oxidative stress in young patients with focal symptomatic and cryptogenic epilepsy and after the new-onset epileptic seizures. MATERIAL AND METHODS Patients, aged from 19 to 44 years, were distributed into three groups, 30 patients in each: patients after a few (first) epileptic seizures, patients in the clinical remission that has lasted at least one year, and patients with treatment-resistant epileptic seizures. The control group included 20 healthy people. Parameters of the pro-oxidant status (TBA-reactive products) and the antioxidant defense (total superoxide-scavenging activity, catalase, total antioxidant activity, and reduced thiols (SH groups)) were measured in the blood plasma. RESULTS No significant differences in the concentrations of TBA-reactive products were identified in patients with epilepsy compared with healthy controls while concentrations of reduced SH groups, total superoxide-scavenging activity, catalase activity and the total antioxidant activity were significantly decreased in patients. In addition, some of the parameters displayed significant differences between different groups of patients. CONCLUSION In patients with epilepsy, the changes in the free-radical processes are seen already after the first seizures and persist in the treatment-resistant epilepsy and in clinical remission. Since the parameters of the activity of the antioxidant defense are significantly different in different groups of patients, one can assume that different elements of the oxidative stress are present after the first epileptic seizures and in different courses of the disease.

Abstract
Caffeic acid was modified via transglucosylation using sucrose and dextransucrase from Leuconostoc mesenteroides B-512FMCM. Following enzymatic modification, a caffeic acid glucoside was isolated by butanol separation, silica gel chromatography, and preparative HPLC. The synthesized caffeic acid glucoside had a molecular mass-to-charge ratio of 365 m/z, and its structure was identified as caffeic acid-3-O-α-d-glucopyranoside. The production of this caffeic acid-3-O-α-d-glucopyranoside at a concentration of 153 mM was optimized using 325 mM caffeic acid, 355 mM sucrose, and 650 mU mL-1 dextransucrase in the synthesis reaction. In comparison with the caffeic acid, the caffeic acid-3-O-α-d-glucopyranoside displayed 3-fold higher water solubility, 1.66-fold higher antilipid peroxidation effect, 15% stronger inhibition of colon cancer cell growth, and 11.5-fold higher browning resistance. These results indicate that this caffeic acid-3-O-α-d-glucopyranoside may be a suitable functional component of food and pharmaceutical products.

Abstract
The purpose of this study was to compare the antioxidant activity of carotenoids to that of α-tocopherol by using a photochemiluminescence method (PCL). Comparisons to results obtained by using other established methods (α-TEAC, FRAP, DPPH, LPSC) were carried out. A relationship between the chemical structure of carotenoids and their antioxidant activity could be discussed. The number of conjugated double bonds and functional groups had a positive influence. Additionally, the lipophilic antioxidant capacities of selected tomato products were analyzed using PCL and α-TEAC. HPLC was used to identify and quantify contents of carotenoids, tocopherols, and tocotrienols. The raw material fresh tomatoes had the lowest antioxidant effect in both assays due to the lower carotenoid content. Tomato ketchup had the highest AOC in PCL, and tomato puree, in α-TEAC. The antioxidant capacities were mainly dependent on the water content of the samples. Furthermore, a concentration-dependent effect could be observed in both assays.

Abstract
The consumption of fruits, vegetables, and whole grains rich in antioxidative phytochemicals is associated with a reduced risk of chronic diseases such as cancer, coronary heart disease, diabetes, Alzheimer's disease, cataract, and aged-related functional decline. For example, phenolic acids are among the main antioxidative phytochemicals in grains that have been shown to be beneficial to human health. Corn (Zea mays L.) is a major staple food in several parts of the world; thus, the antioxidant activity of several corn types was evaluated. The 2,2-Diphenyl-1-picryhydrazyl free radical (DPPH*) scavenging activity, total phenolic content (TPC), antioxidant capacity of lipid-soluble substances (ACL), oxygen radical absorbance capacity (ORAC), and phenolic acid compositions of typical and mutant genotypes (typical-1, waxy, typical-2, and high-amylose) were investigated. The DPPH* scavenging activity at 60 min was 34.39-44.51% in methanol extracts and 60.41-67.26% in HCl/methanol (1/99, v/v) extracts of corn. The DPPH* scavenging activity of alkaline hydrolysates of corn ranged from 48.63 to 64.85%. The TPC ranged from 0.67 to 1.02 g and from 0.91 to 2.15 g of ferulic acid equiv/kg of corn in methanol and HCl/methanol extracts, respectively. The TPC of alkaline hydrolysates ranged from 2.74 to 6.27 g of ferulic acid equiv/kg of corn. The ACL values were 0.41-0.80 and 0.84-1.59 g of Trolox equiv/kg of corn in methanol and HCl/methanol extracts, respectively. The ORAC values were 10.57-12.47 and 18.76-24.92 g of Trolox equiv/kg of corn in methanol and HCl/methanol extracts, respectively. ORAC values of alkaline hydrolysates ranged from 42.85 to 68.31 g of Trolox equiv/kg of corn. The composition of phenolic acids in alkaline hydrolysates of corn was p-hydroxybenzoic acid (5.08-10.6 mg/kg), vanillic acid (3.25-14.71 mg/kg), caffeic acid (2.32-25.73 mg/kg), syringic acid (12.37-24.48 mg/kg), p-coumaric acid (97.87-211.03 mg/kg), ferulic acid (1552.48-2969.10 mg/kg), and o-coumaric acid (126.53-575.87 mg/kg). Levels of DPPH* scavenging activity, TPC, ACL, and ORAC in HCl/methanol extracts were obviously higher than those present in methanol extracts. There was no significant loss of antioxidant capacity when corn was dried at relatively high temperatures (65 and 93 degrees C) postharvest as compared to drying at ambient temperatures (27 degrees C). Alkaline hydrolysates showed very high TPC, ACL, and ORAC values when compared to methanol and HCl/methanol extracts. High-amylose corn had a better antioxidant capacity than did typical (nonmutant) corn genotypes.
