Abstract
Elevated arsenic (As) contamination in drinking water was detected in many areas of Pakistan. The intoxication of As causes various neurological diseases in humans, which can be inhibited by the administration of potent antioxidants. Trace elements are also found in drinking water such as selenium (Se), which possess antioxidant potential. The main purpose of the current study is to find out the protective effect of Se against As toxicity which can cause anxiety- and depression-like behaviors as well as memory impairment. Thirty-six male rats were divided into six groups: (1) distilled water (dw)+dw, (2) dw+Se (0.175 mg/ml/kg), (3) dw+Se (0.35mg/ml/kg), (4) dw+As (2.5mg/ml/kg), (5) As (2.5mg/ml/kg) + Se (0.175 mg/ml/kg), and (6) As (2.5mg/ml/kg) + Se (0.35 mg/ml/kg). Rats were treated with respective treatment for 4 weeks. Sub-chronic treatment of As reduced time spent in open arm (elevated plus maze), and lightbox (light-dark activity test) and increased immobility time in forced swim test indicate anxiety- and/or depression-like behavior, respectively. Conversely, rats treated with As+Se (at both doses) increased time spent in open arm (elevated plus maze), and lightbox (light-dark activity test) and decreased immobility time in forced swim test indicate the anxiolytic and anti-depressive effect of Se, respectively. Co-administration of Se (0.175 and 0.35) inhibited As instigated reduction of spatial memory performed in Morris water maze. The reversal in the reduced level of malondialdehyde and activity of acetylcholinesterase in the hippocampus by Se was observed in As-treated animals, while the activity of antioxidant enzymes in the hippocampus was increased in As+Se than dw+As-treated animals. Histopathological studies have shown the reversal of hippocampus deterioration by Se in As-treated rats. The results may imply to prevent the intoxication of As instigated impairment in behavioral and biochemical indices by Se supplementation and/or increased safer intake.

Abstract
Phenols are widespread in nature, being the major components of several plants and essential oils. Natural phenols' anti-microbial, anti-bacterial, anti-oxidant, pharmacological and nutritional properties are, nowadays, well established. Hence, given their peculiar biological role, numerous studies are currently ongoing to overcome their limitations, as well as to enhance their activity. In this review, the functionalization of selected natural phenols is critically examined, mainly highlighting their improved bioactivity after the proper chemical transformations. In particular, functionalization of the most abundant naturally occurring monophenols, diphenols, lipidic phenols, phenolic acids, polyphenols and curcumin derivatives is explored.

Abstract
Liver necroptosis of chicks is induced by selenium (Se)/vitamin E (VE) deficiencies and may be associated with oxidative cell damage. To reveal the underlying mechanisms of liver necrosis, a pool of the corn-soy basal diet (10 μg Se/kg; no VE added), a basal diet plus all-rac-α-tocopheryl acetate (50 mg/kg), Se (sodium selenite at 0.3 mg/kg), or both of these nutrients were provided to day-old broiler chicks (n = 40/group) for 6 weeks. High incidences of liver necrosis (30%) of chicks were induced by -SE-VE, starting at day 16. The Se concentration in liver and glutathione peroxidase (GPX) activity were decreased (P < 0.05) by dietary Se deficiency. Meanwhile, Se deficiency elevated malondialdehyde content and decreased superoxide dismutase (SOD) activity in the liver at weeks 2 and 4. Chicks fed with the two Se-deficient diets showed lower (P < 0.05) hepatic mRNA expression of Gpx1, Gpx3, Gpx4, Selenof, Selenoh, Selenok, Selenom, Selenon, Selenoo, Selenop, Selenot, Selenou, Selenow, and Dio1 than those fed with the two Se-supplemented diets. Dietary Se deficiency had elevated (P < 0.05) the expression of SELENOP, but decreased the downregulation (P < 0.05) of GPX1, GPX4, SELENON, and SELENOW in the liver of chicks at two time points. Meanwhile, dietary Se deficiency upregulated (P < 0.05) the abundance of hepatic proteins of p38 mitogen-activated protein kinase, phospho-p38 mitogen-activated protein kinase, c-Jun N-terminal kinase, phospho-c-Jun N-terminal kinase, extracellular signal-regulated kinase, phospho-mitogen-activated protein kinase, receptor-interacting serine-threonine kinase 1 (RIPK1), receptor-interacting serine-threonine kinase 3 (RIPK3), and mixed lineage kinase domain-like (MLKL) at two time points. In conclusion, our data confirmed the differential regulation of dietary Se deficiency on several key selenoproteins, the RIPK1/RIPK3/MLKL, and mitogen-activated protein kinase signaling pathway in chicks and identified new molecular clues for understanding the etiology of nutritional liver necrosis.

Abstract
Oleuropein (OLE) and hydroxytyrosol (HT) are olive-derived phenols recognised as health-promoting agents with antioxidant, anti-inflammatory, cardioprotective, antifungal, antimicrobial, and antitumor activities, providing a wide range of applications as functional food ingredients. HT is Generally Recognised as Safe (GRAS) by the European Food Safety Authority (EFSA) and the Food and Drug Administration (FDA), whereas OLE is included in EFSA daily consumptions recommendations, albeit there is no official GRAS status for its pure form. Their application in food, however, may be hindered by challenges such as degradation caused by processing conditions and undesired sensorial properties (e.g., the astringency of OLE). Among the strategies to overcome such setbacks, the encapsulation in delivery systems and the covalent and non-covalent complexation are highlighted in this review. Additionally, the synthesis of OLE and HT derivatives are studied to improve their applicability. All in all, more research needs however to be carried out to investigate the impact of these approaches on the sensory properties of the final food product and its percussions at the gastrointestinal level, as well as on bioactivity. At last limitations of these approaches at a scale of the food industry must also be considered.

Abstract
Statistical analysis of data from crystal structures extracted from the Cambridge Structural Database (CSD) has shown that S and Se atoms display a similar tendency towards specific types of interaction if they are part of a fragment that corresponds to the side chains of cysteine (Cys), methionine (Met) selenocysteine (Sec) and selenomethionine (Mse). The most numerous are structures with C-H...Se and C-H...S interactions (∼80%), notably less numerous are structures with Se...Se and S...S interactions (∼5%), and Se...π and S...π interactions are the least numerous. The results of quantum-chemical calculations have indicated that C-H...Se (∼-0.8 kcal mol-1) and C-H...S interactions are weaker than the most stable parallel interaction (∼-3.3 kcal mol-1) and electrostatic interactions of σ/π type (∼-2.6 kcal mol-1). Their significant presence can be explained by the abundance of CH groups compared with the numbers of Se and S atoms in the crystal structures, and also by the influence of substituents bonded to the Se or S atom that further reduce their possibilities for interacting with species from the environment. This can also offer an explanation as to why O-H...Se (∼-4.4 kcal mol-1) and N-H...Se interactions (∼-2.2 kcal mol-1) are less numerous. Docking studies revealed that S and Se rarely participate in interactions with the amino acid residues of target enzymes, mostly because those residues preferentially interact with the substituents bonded to Se and S. The differences between Se and S ligands in the number and positions of their binding sites are more pronounced if the substituents are polar and if there are more Se/S atoms in the ligand.

Abstract
The effect of α-tocopherol supplementation on adaptation to training is still equivocal. The aim of the study was to determine the effect of training and α-tocopherol supplementation on α-tocopherol and thiobarbituric acid reactive substance (TBARS) concentration in the rat liver, heart, muscles, and testes. Male Wistar rats (n = 32) were divided into four groups (nonsupplemented, not trained—C; nonsupplemented, trained—CT; supplemented, not trained—E; supplemented and trained—ET). During the 14-day experimental period, 2 mg/d of vitamin E as α-tocopherol acetate was administered to the animals (groups E and ET). Rats in the training group (CT and ET) were subjected to 15 minutes of treadmill running each day. The α-tocopherol levels in rat tissues were assessed using high-performance liquid chromatography (HPLC). Lipid peroxides were determined by TBARS spectrophotometric method. α-Tocopherol had a significant impact on α-tocopherol concentration in all tissues. Training increased the α-tocopherol concentration in the heart and muscles but reduced it in the liver. Training also caused increased lipid peroxidation in the muscles, heart, and testes; but a higher α-tocopherol content in tissues reduced the TBARS level. The main finding of the study is that impaired α-tocopherol status and its adequate intake is needed to maintain optimal status to prevent damage to the skeletal and cardiac muscles as well as the testes in growing individuals.

Abstract
Insulin resistance, a pathological condition characterized by defects in insulin action leads to the development of Type 2 diabetes mellitus (T2DM), a disease which is currently on the rise that pose an enormous economic burden to healthcare systems worldwide. The current treatment and prevention strategies are considerably lacking in number and efficacy and therefore new targeted therapies and preventative strategies are urgently needed. Plant-derived chemicals such as metformin, derived from the French lilac, have been used to treat/manage insulin resistance and T2DM. Other plant-derived chemicals which are not yet discovered, may have superior properties to prevent and manage T2DM and thus research into this area is highly justifiable. Hydroxytyrosol is a phenolic phytochemical found in olive leaves and olive oil reported to have antioxidant, anti-inflammatory, anticancer and antidiabetic properties. The present review summarizes the current in vitro and in vivo studies examining the antidiabetic properties of hydroxytyrosol and investigating the mechanisms of its action.
