Strategies for improving loading of emulsion-based functional oil powder

Functional oil is type of oil that is beneficial to human health and has nutritional value, however, functional oils are rich in bioactive substances such as polyunsaturated fatty acids which are sensitive to environmental factors and are susceptible to oxidation or decomposition. Construction of emulsion-based oil powder is a promising approach for improving the stability and solubility of functional oils. However, the low effective loading of oil in powder is the main challenge limiting encapsulation technology. This manuscript focuses on reviewing the current research progress of emulsion-based functional oil powder construction and systematically summarizes the processing characteristics of emulsion-based oil powder with high payload and summarizing the strategies to enhance the payload of powder in term of emulsification and drying, respectively. The impact of emulsion formation on oil powder production is discussed from different characteristics of emulsions, including emulsion composition, emulsification methods and emulsion types. In addition, the current status of improving material loading performance by various modifications to the drying technology is discussed, including the addition of drying processing additives, changes in drying parameters and the effect of innovative technological means.

Product-Property Guided Scale-Up of a Fluidized Bed Spray Granulation Process Using the CFD-DEM Method

In this work, a method to predict the surface structures of particles produced by fluidized bed spray layering granulation using the CFD-DEM method was developed. A simple state-variable/event tracking approach was implemented to capture indirect quantifiers of the progression of structure-forming microprocesses. The state of the droplet at the time of impact on the particle surface, as well as the time required for drying, is correlated to product properties that quantify surface structure morphology such as roughness. A workflow for scale-up of fluidized bed granulation guided by product-property predictors is presented. The approach was tested on a demonstration case from the literature, where a particle core is coated with sodium benzoate solution. The experiment was scaled-up by a factor of eight to pilot-scale using the developed method. Varying the number of nozzles in use in the pilot-scale granulation affected the particle surface roughness due to the differing drying conditions encountered. On this basis, the ability of the tracked-quantity approach to capture the relationship between product properties and geometric feature or process conditions is demonstrated.

Modeling Food Particle Systems: A Review of Current Progress and Challenges

For many years, food engineers have attempted to describe physical phenomena such as heat and mass transfer in food via mathematical models. Still, the impact and benefits of computer-aided engineering are less established in food than in most other industries today. Complexity in the structure and composition of food matrices are largely responsible for this gap. During processing of food, its temperature, moisture, and structure can change continuously, along with its physical properties. We summarize the knowledge foundation, recent progress, and remaining limitations in modeling food particle systems in four relevant areas: flowability, size reduction, drying, and granulation and agglomeration. Our goal is to enable researchers in academia and industry dealing with food powders to identify approaches to address their challenges with adequate model systems or through structural and compositional simplifications. With advances in computer simulation capacity, detailed particle-scale models are now available for many applications. Here, we discuss aspects that require further attention, especially related to physics-based contact models for discrete-element models of food particle systems.

Influence of Thermal Conditions on Particle Properties in Fluidized Bed Layering Granulation

Fluidized bed layering granulation is frequently used to formulate particles of high quality. From previous studies, it is well known that the dynamic behavior of the process, as well as the product properties depend on operating parameters. The process is characterized by heat and mass transfer between fluidized particles and the surrounding fluidization medium. To investigate the mutual influence between particle phase and fluidization medium, a dynamic model is introduced. The model comprises two parts: a population balance model to describe the evolution of the particle sizes and a system of ordinary differential equations to account for thermal conditions. For the first time, the dynamic model considers the bidirectional coupling of particles and fluidization medium in fluidized bed layering granulation. By means of simulations, it is shown that the derived model is capable of reproducing the experimental findings.
