Abstract
Foodborne diseases are a significant cause of morbidity (600 million cases) and mortality (420,000 deaths) worldwide every year and are mainly associated with pathogens. Besides the direct effects on human health, they have relevant concerns related to financial, logistics, and infrastructure for the food and medical industries. The standard pathogen identification techniques usually require a sample enrichment step, plating, isolation, and biochemical tests. This process involves specific facilities, a long-time analysis procedures, and skilled personnel. Conversely, biosensors are an emerging innovative approach to detecting pathogens in real time due to their portability, specificity, sensitivity, and low fabrication costs. These advantages can be achieved from the synergistic work between nanotechnology, materials science, and biotechnology for coupling biomolecules in nano-matrices to enhance biosensing performance. This review highlights recent advancements in electrochemical and optical biosensing techniques for detecting bacteria and viruses. Key properties, such as detection limits, are examined, as they depend on factors like the design of the biorecognition molecule, the type of transducer, the target's characteristics, and matrix interferences. Sensitivity levels reported range from 1 to 1 × 10⁸ CFU/mL, with detection times spanning 10 min to 8 h. Additionally, the review explores innovative approaches, including biosensors capable of distinguishing between live and dead bacteria, multimodal sensing, and the simultaneous detection of multiple foodborne pathogens - emerging trends in biosensor development.

Abstract
The importance of food quality and safety lies in ensuring the best product quality to meet consumer demands and public health. Advanced technologies play a crucial role in minimizing the risk of foodborne illnesses, contamination, drug residue, and other potential hazards in food. Significant materials and technological advancements have been made throughout the food supply chain. Among them, quantum dots (QDs), as a class of advanced nanomaterials with unique physicochemical properties, are progressively demonstrating their value in the field of food quality and safety. This review aims to explore cutting-edge research on the different applications of QDs in food quality and safety, including encapsulation of bioactive compounds, detection of food analytes, food preservation and packaging, and intelligent food freshness indicators. Moreover, the modification strategies and potential toxicities of diverse QDs are outlined, which can affect performance and hinder applications in the food industry. The findings suggested that QDs are mainly used in analyte detection and active/intelligent food packaging. Various food analytes can be detected using QD-based sensors, including heavy metal ions, pesticides, antibiotics, microorganisms, additives, and functional components. Moreover, QD incorporation aided in improving the antibacterial and antioxidant activities of film/coatings, resulting in extended shelf life for packaged food. Finally, the perspectives and critical challenges for the productivity, toxicity, and practical application of QDs are also summarized. By consolidating these essential aspects into this review, the way for developing high-performance QD-based nanomaterials is presented for researchers and food technologists to better capitalize upon this technology in food applications.

Abstract
An outbreak of foodborne pathogens would cause severe consequences. Detecting and diagnosing foodborne diseases is crucial for food safety, and it is increasingly important to develop fast, sensitive, and cost-effective methods for detecting foodborne pathogens. In contrast to traditional methods, such as medium-based culture, nucleic acid amplification test, and enzyme-linked immunosorbent assay, electrochemical biosensors possess the advantages of simplicity, rapidity, high sensitivity, miniaturization, and low cost, making them ideal for developing pathogen-sensing devices. The biorecognition layer, consisting of recognition elements, such as aptamers, antibodies and bacteriophages, and other biomolecules or polymers, is the most critical component to determine the selectivity, specificity, reproducibility, and lifetime of a biosensor when detecting pathogens in a biosample. Furthermore, nanomaterials have been frequently used to improve electrochemical biosensors for sensitively detecting foodborne pathogens due to their high conductivity, surface-to-volume ratio, and electrocatalytic activity. In this review, we survey the characteristics of biorecognition elements and nanomaterials in constructing electrochemical biosensors applicable for detecting foodborne pathogens during the past five years. As well as the challenges and opportunities of electrochemical biosensors in the application of foodborne pathogen detection are discussed.

Abstract
Bacterial infectious diseases are severe threats to human health and increase substantial financial burdens. Nanomaterials have shown great potential in timely and accurate bacterial identification, detection, and monitoring to improve the cure rate and reduce mortality. Recently, carbon dots have been evidenced to be ideal candidates for bacterial identification and detection due to their superior physicochemical properties and biocompatibility. This review outlines the detailed recognition elements and recognition strategies with functionalized carbon dots (FCDs) for bacterial identification and detection. The advantages and limitations of different kinds of FCDs-based sensors will be critically discussed. Meanwhile, the ongoing challenges and perspectives of FCDs-based sensors for bacteria sensing are put forward.

Abstract
Opportunistic foodborne pathogens such as Staphylococcus aureus (S. aureus) can cause a wide variety of threats to public health. There is an urgent clinical need for a fast, simple, low-cost, and sensitive method. Here, we designed a fluorescence-based aptamer biosensor (aptasensor) for S. aureus detection using core-shell structured upconversion nanoparticles (CS-UCNPs) as a beacon. A S. aureus-specific aptamer was modified on the surface of CS-UCNPs for binding pathogens. The S. aureus bound to CS-UCNPs can then be isolated from the detection system by simple low-speed centrifugation. Thus, an aptasensor was successfully established for the detection of S. aureus. The fluorescence intensity of CS-UCNPs correlated with the concentration of S. aureus within the range of 6.36 × 102 to 6.36 × 108 CFU mL-1, resulting in the detected limit of S. aureus being 60 CFU mL-1. The aptasensor performed well in real food samples (milk) with a detection limit of 146 CFU mL-1 for S. aureus. Furthermore, we applied our aptasensor in chicken muscles for S. aureus detection, and compared it with the plate count gold standard method. There was no significant difference between our aptasensor and the plate count method within the detected limit, while the time for the aptasensor (0.58 h) was shorter than that of the plate count method (3-4 d). Therefore, we succeeded in the design of a simple, sensitive and fast CS-UCNPs aptasensor for S. aureus detection. This aptasensor system would have the potential for the detection of a wide range of bacterial species by switching the corresponding aptamer.

Abstract
Bacterial infections have become a global public health problem. Rapid and sensitive bacterial detection is of great importance for human health. Among various sensor systems, fluorescence sensor is rapid, portable, multiplexed, and cost-efficient. Herein, we reviewed the current trends of fluorescent sensors for bacterial detection from three aspects (response materials, target and recognition way). The fluorescent materials have the advantages of high fluorescent strength, high stability, and good biocompatibility. They provide a new path for bacterial detection. Several recent fluorescent nanomaterials for bacterial detection, including semiconductor quantum dots (QDs), carbon dots (CDs), up-conversion nanoparticles (UCNPs) and metal organic frameworks (MOFs), were introduced. Their optical properties and detection mechanisms were analyzed and compared. For different response targets in the detection process, we studied the fluorescence strategy using DNA, bacteria, and metabolites as the response target. In addition, we classified the recognition way between nanomaterial and target, including specific recognition methods based on aptamers, antibodies, bacteriophages, and non-specific recognition methods based on biological functional materials. The characteristics of different recognition methods were summarized. Finally, the weaknesses and future development of bacterial fluorescence sensor were discussed. This review provides new insights into the application of fluorescent sensing systems as an important tool for bacterial detection.

Abstract
The key factor to control the incidence rate of diseases caused by bacteria is rapid detection and early diagnosis. Herein, we proposed a new electrochemical bacterial sensor by coupling DNA walking and rolling circle amplification (RCA) reaction-assisted "silver-link" crossing electrode. Staphylococcus aureus (S. aureus) was detected using this proof-of concept strategy. Aptamer/DNA walker and auxiliary sequence (AS)/RCA reaction probe (RP) duplexes were modified on the electrode surface. The binding of S. aureus with its aptamer caused the disintegration of aptamer/DNA walker and released DNA walker. With the help of Exo III, DNA walker moved along the electrode surface and AS in AS/RP duplex was continuously digested to release RP. By introducing phi29 DNA polymerase, RCA reaction was performed using RP as the reaction primer to form long single-strand RCA extension products between the electrodes. The "silver-link" crossing electrode was formed by metallization of "gene-link", significant conductivity was thus acquired for bacteria detection. The limit of detection (LOD) was 10 CFU/mL and detection time was 2 h. The proposed sensor has high efficiency, good stability and low background signal, human serum and milk samples were successfully detected, which emerged a promising potential in the food monitoring and clinical diagnosis.

Abstract
The infection of Staphylococcus aureus (S.aureus) and the spread of drug-resistant bacteria pose a serious threat to global public health. Therefore, timely, rapid and accurate detection of S. aureus is of great significance for food safety, environmental monitoring, clinical diagnosis and treatment, and prevention of drug-resistant bacteria dissemination. Traditional S. aureus detection methods such as culture identification, ELISA, PCR, MALDI-TOF-MS and sequencing, etc., have good sensitivity and specificity, but they are complex to operate, requiring professionals and expensive and complex machines. Therefore, it is still challenging to develop a fast, simple, low-cost, specific and sensitive S. aureus detection method. Recent studies have demonstrated that fast, specific, low-cost, low sample volume, automated, and portable aptasensors have been widely used for S. aureus detection and have been proposed as the most attractive alternatives to their traditional detection methods. In this review, recent advances of aptasensors based on different transducer (optical and electrochemical) for S. aureus detection have been discussed in details. Furthermore, the applications of aptasensors in point-of-care testing (POCT) have also been discussed. More and more aptasensors are combined with nanomaterials as efficient transducers and amplifiers, which appears to be the development trend in aptasensors. Finally, some significant challenges for the development and application of aptasensors are outlined.

Abstract
A dual-signal photometric/fluorometric assay was established for rapid, qualitative, and quantitative detection of Salmonella typhimurium (S. typhimurium). This method was composed of two parts: (1) a single-step photometric (SSC) assay containing gold nanoparticles (AuNPs), poly-diallyldimethylammonium chloride (PDDA), and S. typhimurium-specific aptamer, and (2) a fluorescence (FL) assay containing carboxyl-modified CdSe/ZnS quantum dots (QDs-COOH). Users just need to drop samples contaminated with S. typhimurium into SSC assay; the apparent color change from red to blue can be observed in a short time (20 min). A smartphone app was developed to read the semiquantitative result. By subsequently adding one drop of FL assay into the reaction mixture, the generated fluorescence intensity reflected the concentration of S. typhimurium. The naked eye limit of detection (LOD) and fluorescent LOD were 103 cfu/mL and 10 cfu/mL, respectively. This method exhibited good selectivity. The reliability and practicability were verified by testing contaminated food, drinking water, and pets' urine.

Abstract
Staphylococcus aureus (S. aureus) is the top ordinary pathogen causing epidemic and food poisoning. The authentication of S. aureus has great significance for pathologic diagnosis and food hygiene supervision. Various biosensor methods have been established for identification. This paper reviews the research progress of aptasensors for S. aureus detection, focusing on the classification of aptamer technologies, including optical aptasensors and electrochemical aptasensors. Furthermore, the feasibility and future challenges of S. aureus detection for aptamer assays are discussed. Combining aptasensors with nanomaterials appears to be the developing trend in aptasensors.
