Abstract
Trehalose promotes polysaccharide synthesis in edible mushrooms, yet its effect on the antioxidant activity and structure of Lentinula edodes mycelium polysaccharides is still unknown. We investigated the effect of trehalose on the antioxidant activity of L. edodes polysaccharides and expression of genes related to L. edodes polysaccharide metabolism. Five g/L trehalose increased the biomass and polysaccharide content of L. edodes mycelium by over 50 % compared to the control. Trehalose increased the superoxide anion radical scavenging rate of L. edodes polysaccharides up to 80.9 %. Compared to the control, the molecular weight of polysaccharides was lower, and their glucuronic acid content was higher in the trehalose treatment. RNA-seq analysis revealed 1045 differentially expressed genes in the trehalose treatment compared to the control. Genes related to glycolysis/gluconeogenesis pathway, starch and sucrose metabolic pathway, and the pentose and glucuronate interconversions pathway were differentially expressed, possibly accounting for the increased polysaccharide synthesis. In summary, exogenous trehalose has potential to increase the biosynthesis and biological activity of L. edodes polysaccharides.

Abstract
The variety of enzyme-based biological preservatives is limited. This study evaluated the effects of glutathione peroxidase (GSH-Px) on the quality of crayfish during refrigerated storage by measuring the pH, total volatile basic nitrogen, trimethylamine, and microbial contamination in crayfish muscle simulation system. The results revealed that 0.3% GSH-Px (CK3) not only suppressed the degradation of nitrogenous substances but also decreased the contamination levels of total viable, Enterobacteriaceae, and Pseudomonas counts (P < 0.05). Furthermore, the populations of Lactococcus, Aeromonas, and Massilia differed in the CK3 group compared to the other groups (P < 0.05) at the end of the storage (day 15). Moreover, the principal coordinate analysis showed that the colony composition of CK3 stored for 15 days was similar to that of the control group stored for 10 days. Therefore, GSH-Px exhibits antibacterial activity against Gram-negative bacteria and has good application potential in freshwater aquatic product preservation.

Abstract
Food crops provide a good selenium (Se) source for Se-deficient populations. This study assessed how boiling affects Se concentration, speciation, and bioaccessibility in common food crops to determine human Se intake. Boiling rice resulted in an 11.9% decrease in minimum Se content, while sorghum experienced a maximum (34.9%) reduction. Boiled vegetables showed a 21% - 40% Se loss. Cereals showed notable decreases in selenomethionine (SeMet) and selenocysteine (SeCys2), while most vegetables exhibited a significant reduction in Se-methylselenocysteine (SeMeCys). Boiling significantly reduced the Se bioaccessibility in all food crops, except cabbage and potato. Cereal crops were more efficacious in meeting the recommended daily intake (RDI) of Se compared to vegetables. Rice exceeds other crops and provides up to 39.2% of the WHO/FAO-recommended target minimum daily intake of 60 μg/day. This study provides insight into a substantial dissonance between the estimated daily intake (EDI) of Se and the bioaccessible Se in both raw and boiled crops. Consequently, revising EDI standards is imperative.

Abstract
BACKGROUND Selenium (Se) pollution poses serious threats to terrestrial ecosystems. Mushrooms are important sources of Se with the potential for bioremediation. Pre-eminent Se resources must possess the ability to tolerate high levels of Se. To obtain Se-accumulating fungi, we isolated selenite-tolerance-enhanced Ganoderma lucidum JNUSE-200 through adaptive evolution. METHODS The molecular mechanism responsible for selenite tolerance and accumulation was explored in G. lucidum JNUSE-200 by comparing it with the original strain, G. lucidum CGMCC 5.26, using a combination of physiological and transcriptomic approaches. RESULTS G. lucidum JNUSE-200 demonstrated tolerance to 200 mg/kg selenite in liquid culture and exhibited normal growth, whereas G. lucidum CGMCC 5.26 experienced reduced growth, red coloration, and an unpleasant odor as a result of exposure to selenite at the same concentration. In this study, G. lucidum JNUSE-200 developed a triple defense mechanism against high-level selenite toxicity, and the key genes responsible for improved selenite tolerance were identified. CONCLUSIONS The present study offers novel insights into the molecular responses of fungi towards selenite, providing theoretical guidance for the breeding and cultivation of Se-accumulating varieties. Moreover, it significantly enhances the capacity of the bio-manufacturing industry and contributes to the development of beneficial applications in environmental biotechnology through fungal selenite transformation bioprocesses.

Abstract
Cardiovascular diseases stand as the predominant global cause of mortality, exerting a profound impact on both life expectancy and its quality. Given their immense public health burden, extensive efforts have been dedicated to comprehending the underlying mechanisms and developing strategies for prevention and treatment. Selenium, a crucial participant in redox reactions, emerges as a notable factor in maintaining myocardial cell homeostasis and influencing the progression of cardiovascular disorders. Some disorders, such as Keshan disease, are directly linked with its environmental deficiency. Nevertheless, the precise extent of its impact on the cardiovascular system remains unclear, marked by contradictory findings in the existing literature. High selenium levels have been associated with an increased risk of developing hypertension, while lower concentrations have been linked to heart failure and atrial fibrillation. Although some trials have shown its potential effectiveness in specific groups of patients, large cohort supplementation attempts have generally yielded unsatisfactory outcomes. Consequently, there persists a significant need for further research aimed at delineating specific patient cohorts and groups of diseases that would benefit from selenium supplementation.

Abstract
Dietary selenium (Se) supplementation has recently received increasing attention; however, Selenium nanoparticles (SeNPs) exhibit poor stability and tend to aggregate in aqueous solution. Therefore, enhancing the stability of SeNPs and their effective delivery to plants remain challenging. In this study, sodium alginate (SA) and lysozyme (LZ) were reacted via the wet-heat Maillard reaction (MR) to obtain amphiphilic alginate-based polymers (SA-LZ). Alkyl glycosides (APG) were introduced into SA-LZ to enhance the deposition of SeNPs in leaves. Thus, a renewable and degradable polysaccharide-based material (SA-LZ/APG) loaded with Se formed an amphiphilic alginate-based-based shell with a Se core. Notably, the encapsulation of SeNPs into a polysaccharide base (SA-LZ/APG) increased the stabilization of SeNPs and resulted in orange-red, zero-valent, monoclinic and spherical SeNPs with a mean diameter of approximately 43.0 nm. In addition, SA-LZ/APG-SeNPs reduced the interfacial tension of plant leaves and increased the Se content of plants compared to the blank group. In vitro studies have reported that SA-LZ/APG-SeNPs and SA-LZ-SeNPs have significantly better clearance of DDPH and ABTS than that of APG-SeNPs. Thus, we believe that SA-LZ/APG is a promising smart delivery system that can synergistically enhance the stability of SeNPs in aqueous solutions and improve the bioavailability of Se nutrient solutions.

Abstract
An in-depth understanding of Se uptake and metabolism in plants is necessary for developing Se biofortification strategies. Thus, hydroponic experiments were conducted to investigate the associated processes and mechanisms of organic Se (selenomethionine (SeMet) and selenomethionine-oxide (SeOMet)) uptake, translocation, transformation and their interaction in wheat, in comparison to inorganic Se. The results showed that Se uptake by the roots and the root-to-shoot translocation factor under the SeMet treatment were higher than those under the selenite, selenate and SeOMet treatments. The uptake and translocation of SeMet were higher than those of SeOMet within 72 h, although the differences gradually narrowed with time. The uptake of SeMet and SeOMet was also sensitive to the aquaporin inhibitor: AgNO3 addition resulted in 99.5% and 99.9% inhibitions of Se in the root in the SeMet and SeOMet treatments, respectively. Once absorbed by the root, they rapidly assimilated to other Se forms, and SeMet and Se-methyl-selenocysteine (MeSeCys) were the dominant species in SeMet- and SeOMet-treated plants, while notably, an unidentified Se form was also found in the root and xylem sap under the SeMet treatment. In addition, within 16 h, SeOMet inhibited the uptake and translocation of SeMet, while the inhibition was weakened with longer treatment time. Taken together, the present study provides new insights for the uptake and transformation processes of organic Se within plants.

Abstract
Lettuce is a common vegetable in hydroponic production. In this paper, a selenium (Se)-biofortification method was provided. The Se content, speciation, and the effects of different concentrations of selenate and selenite on lettuce growth and amino acids were investigated. The results showed that lettuce had strong ability to accumulate exogenous selenium, and inorganic Se could be effectively converted into organic Se. The proportion of organic Se in the shoots under treatment with 4 μmol L-1 selenite was 100%. Selenomethionine was the main organic Se, accounting for 51% (selenate) and 90% (selenite) of the total Se. Adding Se improves photosynthesis of lettuce and promotes growth. The growth with 2 μmol L-1 selenate and 4 μmol L-1 selenite was better than CK, and the shoot fresh weight was increased by 143.22% and 166.98%, respectively. Furthermore, the optimum Se application is 2 μmol L-1, and some areas can apply 4 μmol L-1 selenite. But Se-excessive areas are not recommended to grow selenium-rich foods. Therefore, lettuce has strong biofortification potential.

Abstract
Se-rich agro-foods are effective Se supplements for Se-deficient people, but the associated metals have potential risks to human health. Factors affecting the accumulation of Se and its associated metals in Se-rich agro-foods were obscure, and the prediction models for the accumulation of Se and its associated metals have not been established. In this study, 661 samples of Se-rich rice, garlic, black fungus, and eggs, four typical Se-rich agro-foods in China, and soil, matrix, feed, irrigation, and feeding water were collected and analyzed. The major associated metal for Se-rich rice and garlic was Cd, and that for Se-rich black fungus and egg was Cr. Se and its associated metal contents in Se-rich agro-foods were positively correlated with Se and metal contents in soil, matrix, feed, and matrix organic contents. The Se and Cd contents in Se-rich rice grain and garlic were positively and negatively correlated with soil pH, respectively. Eight models for predicting the content of Se and its main associated metals in Se-rich rice, garlic, black fungus, and eggs were established by multiple linear regression. The accuracy of the constructed models was further validated with blind samples. In summary, this study revealed the main associated metals, factors, and prediction models for Se and metal accumulation in four kinds of Se-rich agro-foods, thus helpful in producing high-quality and healthy Se-rich.

Abstract
Selenium (Se) deficiency can cause many diseases and thereby affect human health. Traditional inorganic Se supplements have disadvantages of toxicity and low bioavailability. Se-Enriched proteins exhibit good bio-accessibility and high biological activities. This review provides a comprehensive overview of the preparation, purification, identification, bioavailability, bioactivities and application of Se-enriched proteins. The method of extracting Se-enriched proteins from animals, microorganisms and plants mainly includes solvent extraction (water, salt, ethanol and alkali solution extraction) and novel extraction technologies (ultrasound-assisted and pulsed electric field assisted extraction). Se-Enriched proteins and their hydrolysates exhibit good bioactivities, mainly including antioxidant activity, immune regulation, neuroprotective activity, and inhibition of hyperglycemic activity, among others. Future research should focus on the relationship between Se-enriched protein metabolism and the selenium regulatory protein metabolic pathway by using multi-omics technology. In addition, it is necessary to comprehensively study the structure-activity relationship of Se-enriched proteins/hydrolysates from different sources, to further clarify their bioactive mechanism and to verify their health benefits in vivo.

Abstract
BACKGROUND Approximately 0.5-1 billion people worldwide face the risk of selenium (Se) deficiency because of the low Se concentration in their diets. Broccoli can accumulate Se and comprises a source of daily Se supplement for humans. Se biofortification is an effective strategy for enhancing Se content in crops. In the present study, the effects of Se yeast and selenite application on the Se content and nutrient quality of broccoli were investigated. RESULTS Broccoli growth was promoted by Se yeast but inhibited by selenite. The total Se content of broccoli florets remarkably increased with increasing exogenous Se fertilizer concentrations. The main Se species in broccoli florets were methyl-selenocysteine and selenomethionine, and their contents were significantly higher under Se yeast treatments than under selenite treatments. Se(VI) was detected only under selenite treatments. Se yeast and selenite had different influences on soluble sugar, soluble protein, vitamin C and free amino acid contents in broccoli florets. The total phenolic acid and glucosinolate contents were substantially increased by Se yeast and selenite, although the total flavonoid content was reduced by Se yeast. Tests on antioxidant enzyme activities revealed that several antioxidant enzymes (catalase, peroxidase, superoxide dismutase and glutathione peroxidase) responded to Se yeast and selenite treatments. CONCLUSION Se yeast is preferred over selenite for maximizing Se uptake and nutrient accumulation in Se-rich broccoli cultivation. However, an extremely high Se content in broccoli florets cannot be directly consumed by humans, although they can be processed into Se supplements. © 2021 Society of Chemical Industry.

Abstract
Seleno-amino acids are safe, health-promoting compounds for humans. Numerous studies have focused on the forms and metabolism of seleno-amino acids in vegetables. Based on research progress on seleno-amino acids, we provide insights into the production of selenium-enriched vegetables with high seleno-amino acids contents. To ensure safe and effective intake of selenium, several issues need to be addressed, including (1) how to improve the accumulation of seleno-amino acids and (2) how to control the total selenium and seleno-amino acids contents in vegetables. The combined use of plant factories with artificial lighting and multiple analytical technologies may help to resolve these issues. Moreover, we propose a Precise Control of Selenium Content production system, which has the potential to produce vegetables with specified amounts of selenium and high proportions of seleno-amino acids.

Abstract
Cadmium (Cd) has strong mobility and could cause toxicity to plants, and selenium (Se) can effectively detoxify Cd stress. However, differences in the detoxification effects of different species and dosages of exogenous Se on Cd and its mechanism are still unclear. In this study, a pot experiment was conducted to determine the effects of different rates of selenite and selenate application on radish growth, the uptake and translocation of Cd, and the fractions of Cd transformation in native Cd-contaminated soil. Results indicated that the decrease in radish biomass in selenate treatment was significantly greater than that in selenite treatment at a high Se application rate (2.5 mg·kg-1) (p < 0.05). In contrast to selenite treatments, the application of selenate significantly increased the translocation of Cd from radish roots to shoots (p < 0.05). Cadmium concentration and its bioaccumulation factor in radish decreased gradually with increasing selenite application rates, while these values decreased at low Se rate (1 mg·kg-1) and increased at high Se rate for selenate treatment. Different Se application rates resulted in Cd fractions distributions to change in soil. Therefore, the application of selenite treatment had a greater detoxification effect on Cd in soil than that in selenate treatment, and the double toxic effect was observed between Se and Cd in high selenate treatment (2.5 mg·kg-1). Combined with human health risk asseeement, the application of 2.5 mg·kg-1 selenite could be a good approach for detoxification in native Cd-contaminated soil used in this study.

Abstract
Selenium biofortification of edible and medicinal mushrooms is an effective way to produce selenium-enriched food supplements. Ganoderma lucidum is the typical one with excellent biological activity. This study investigated G. lucidum growth and bioactive metabolites alterations during liquid culture with different concentrations of selenite. Low selenium levels did not affect growth and mycelia morphology, whereas high selenium levels negatively influenced growth, dramatically decreased biomass, caused nucleic acid and protein leakage, damaged cell walls and membranes, and resulted in indicators such as degraded cells, a red color, and an unpleasant odor. Through headspace-solid phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS) analysis, ten volatile Se compounds were identified in G. lucidum with 200 ppm selenite, which led to an odor change, whereas only three with 50 ppm selenite. SeMet was the major selenoamino acid in the 50 ppm selenite group by high-performance liquid chromatography-inductively coupled plasma mass spectrometry (HPLC-ICP-MS), but more MeSeCys was produced with 200 ppm selenite. Polysaccharide yields were promoted and inhibited with 50 and 200 ppm selenite, respectively. These results provide comprehensive insights into the effects of selenite on G. lucidum in liquid culture and are beneficial for functional selenium-enriched mushroom production and improving nutritive values.

Abstract
Hypercholesterolemia, one of the major risk factors of cardiovascular diseases, is a worldwide public health problem. Nutraceuticals and phytochemicals are attracting attention as a result of their cholesterol-lowering ability and minimal side effects. Among them, selenium (Se) is on the list. The amount of Se in foods varies by region. Se-enriched fertilizers and feeds can raise the Se content in plants and animals, while some processing methods decrease food Se content. This review summarizes recent studies on (1) the content distribution of Se in foods and factors influencing Se-enriched foods, (2) the bioavailability and metabolism of Se, and (3) the role of Se in affecting blood cholesterol and cholesterol metabolism. Although the hypocholesterolemic effect of Se is equivocal, its cholesterol-lowering activity may be more remarkable when the Se supplementation is 200 μg/day or the baseline blood total cholesterol is above 200 mg/dL in humans with low Se status.

Abstract
The production of biomolecules using agro-industrial by-products as feedstock is a growing trend worldwide. Selenium (Se) is a trace element essential for health, and the Se-enrichment of yeast biomass can enhance its benefits. This study investigated the feasibility of the production of Saccharomyces cerevisiae Se-enriched biomass using a medium composed of corn bran and soybean bran acid hydrolysates as carbon and nitrogen sources in a stirred-tank reactor. After hydrolysis, hydrolysates presented complex composition and high concentrations of sugars, proteins, and minerals. The use of a stirred-tank bioreactor leads to the production of 9 g/L S. cerevisiae biomass enriched with 236.93 μg/g Se, and 99% cell viability. Likewise, the combination of sugarcane molasses and soybean bran hydrolysate was effective for cell growth of a probiotic strain of S. cerevisiae with a 24.08% β-glucan content. The results demonstrated that starchy acid hydrolysates are low-cost and efficient substrates for the production of yeast biomass and derivate products and may contribute to further studies for a sustainable development of biorefinery technologies.

Abstract
Flammulina velutipes is one of the most popular edible mushrooms worldwide. A selenium-biofortification method for its fruiting body was developed using selenite. This study investigated the selenium content, distribution, speciation and the effect of selenium on mushroom growth, nutritive value, and mineral accumulation. Results showed that F. velutipes accumulated nearly 108 μg/g of organic selenium under treatment with 20 μg/g selenite, which accounts for over 97% of total selenium. Most (60-74%) of selenium combined with the protein fraction, whereas 15-21% combined with the polysaccharide fraction. Selenomethionine (56.8%), selenocysteine (22.8%), and methylselenocysteine (17.3%) were the main organic selenium compounds in the fruiting body. Selenium biofortification increased the biomass yield of fruiting body and elevated the content of polysaccharides, proteins, total amino acids, essential amino acids, and several minerals, including iron, calcium, and copper. F. velutipes might become a suitable selenium supplement.

Abstract
AbstractThere are about 3000 species of mushrooms, which have a high amount of substances that are beneficial to human health, such as antioxidants. It is well known that oxidative stress plays an important role in the etiopathogenesis of many diseases, including cancer, cardiovascular disorders, and diseases of the central nervous system. One way to prevent homeostasis disorders that occur as a result of excessive production of pro-oxidative substances is to include the ingredients having antioxidant properties in the diet. Several compounds, such as those with phenolic and indole derivatives as well as carotenoids and some vitamins, exhibit antioxidant activity. These substances are present in many foods, including mushrooms. In addition, they have certain unique compounds that are not found in other sources (e.g., norbadione A). The present work discusses selected ingredients exhibiting antioxidant activity, which are found in various species of mushrooms as wells as describes the content of these compounds in the extracts obtained from mushrooms using artificial digestive juice.

Abstract
Selenium is an essential trace element that improves fruit quality and nutritional value. However, the effect of sodium selenite on apple quality and its relative sucrose metabolism activity remains unclear. In this study, we investigated the roles of selenite spraying, in improving Fuji apple quality and sucrose metabolism-related enzyme activity. Results showed that foliar spraying of sodium selenite significantly (P < 0.05) increased apple fruit yield and internal quality, but no significant effects on external quality. The apple yield, vitamin C content, sugar-acid ratio and total soluble sugar increased 4.4% to 11.7%, 4.68% to 20.86%, 3.07% to 31.57%, and 4.53% to 18.89%, respectively. Se content is 9.5-fold compared to the control. Significant correlations were observed between neutral invertase, sucrose synthase activity and sucrose phosphate synthase enzymes, and sucrose phosphate synthase enzyme was most crucial. Spraying sodium selenite of 100-150 mg/L could be appropriate for improving Fuji apple yield and quality.

Abstract
Understanding the effects of processing on the Se content and bioaccessibility in food is critical in guiding the development of Se-enriched products. In this study, Se-enriched Pleurotus eryngii was obtained by applying different Se supplements to the substrate. Selenium content and its bioaccessibility among raw and processed fruit bodies were compared. The application of exogenous Se had no significant effect on the yield of P. eryngii, while amendment Se yeast could slightly promote the growth of P. eryngii. The enrichment ability of P. eryngii among different Se supplements declined in the order of Na2SeO3 > Se yeast > Na2SeO4. However, the processing treatments resulted in 6.6%-45.9% Se loss. The Se bioaccessibility of P. eryngii was 78.4%-89.7%. Frying treatment reduced Se bioaccessibility in samples, whereas boiling treatment enhanced it. Therefore, Se yeast and boiling treatment are recommended as the ideal Se supplement and processing method for Se-enriched P. eryngii.

Abstract
Using agro-residues in bioreactors to produce mushrooms is an important component of eco-agriculture. Here, we tested the cultivation of Lentinula edodes with corn cob (CC) and corn straw (CS), and then evaluated the resulting enzyme activities, agronomic traits, textures and nutrient compositions of mushrooms. Laccase (T1 formula, 3.26 g U−1) and carboxymethyl cellulase (T3 formula, 1.01 g U−1) activities were the highest at the time for a complete substrate colonization stage (TCSC), while acidic xylanase activity was the highest (CK formula, 4.05 g U−1) in the mushroom block to color-turned (TMBCT) stage. The biological efficiency of growth on the T6 formula was 8.82% higher than growth on the CK formula, wherein the low C/N ratio of the substrate had an obvious negative effect on yield while the mass ratio of pileus (MRP) of fruiting bodies did not change with mixed substrates. No significant differences were observed in mineral composition for CK formulas, but corn crop waste (CCW) formulas exhibited more optimal nutritional contents. A formula containing more corn cob and sawdust (SD) (sum of at least 70%) as the substrate can produce fruiting bodies with good hardness. These results indicate that the use of corn cobs as the main ingredient, mixed with sawdust and corn straw to grow L. edodes provides a more efficient use of agro-residues for growth. Thus, mixed agro-residue formulas have exceptional advantages in texture, nutrition of fruiting bodies, and yields. Using agro-residues in bioreactors to produce mushrooms is an important component of eco-agriculture.![]()

Abstract
There are a lack of systematic studies comparing the effects of foliar-applied selenium (Se) with different Se sources at different growth stages in wheat. Herein, we biofortified wheat via the foliar application of selenite and selenate at different rates and different stages under field conditions. Results showed that foliar-applied selenate and selenite had no significant effect either on wheat biomass or grain yield (p < 0.05). Selenium distribution in different parts of wheat plant ranked decrease as leaf > root > grain > glume > stem with selenite treatment, and it appeared in the decline order as leaf > grain > glume > stem > root with selenate treatment. These results suggested that biofortification with selenate caused, relatively to selenite, a higher accumulation of Se in grains. Foliar application of Se of either selenate or selenite at pre-filling stage was superior in improving the Se concentration of wheat grains than application at pre-flowering stage. Meanwhile, organic Se comprised about 72-93% of total Se in wheat grains, which was reduced by 5.8% at high Se rate (100 g ha-1), irrespective of the forms of Se or stages applied. The organic Se proportion in wheat grains was 9% higher with the selenate treatment than with the selenite treatment. Selenomethionine (SeMet) was the main organic species (67-86%) in wheat grains, followed by selenocysteine (SeCys2). In summary, our results indicate that Se biofortification of wheat is most effective with 20 g ha-1 selenate foliar-applied at pre-filling stage.

Abstract
Due to the two-dimensional effect of selenium (Se) to health, which form of Se is most effective for increasing the bioaccessible Se content in P. ostreatus and whether these products have potential health risks are worth considering. Three Se supplements were applied at different application rates into substrates for cultivating P. ostreatus. The total content and speciation of Se in P. ostreatus fruit bodies were analyzed, and the bioaccessibility of Se was determined via an in vitro physiologically based extraction test (PBET). Results showed that P. ostreatus had the highest utilization efficiency with selenite, followed by Se yeast and selenate. Organic Se (46%-90%) was the major Se speciation in P. ostreatus regardless applied Se species. Although the Se bioaccessibility of the gastrointestinal digestion of P. ostreatus was high (70%-92%), the estimated daily intake and target hazard quotient values are all within the safe ranges. Se-enriched P. ostreatus can be safely used as a dietary source of Se for increasing Se intake.

Abstract
The effects of ultrasound-enhanced hot air drying on the drying characteristics, microstructure and bioactive profile of germinated highland barley seeds (GHB) were studied. GHB was dried by hot air at 55 °C and 70 °C and ultrasonic intensities of 125.1 W/dm2 and 180.2 W/dm2, respectively. The results showed that when the drying temperature was 55 °C or 70 °C, the sonicated groups could shorten the drying time by 17.4–26.1% or 18.8–31.3%, respectively. Ultrasound drying at 125.1 W/dm2 and 55 °C could mostly increase the content of organic selenium and the rehydration rate, improve the color and maintain the original structure of GHB. Compared with hot air drying alone, the phenolic content did not increase due to ultrasound-enhanced hot air drying. Therefore, drying at an ultrasonic intensity of 125.1 W/dm2 and a temperature of 55 °C could effectively shorten the drying time, and enhance the quality of GHB.

Abstract
Auricularia cornea is a widely cultivated edible fungus with substantial nutritive value. This study aimed to enrich the multifunctional bionutrient element selenium in A. cornea to improve its quality and explore the accumulation of selenium in the fungus using high-throughput RNA-Seq technology. In general, the treatment group with a 100 µg/g supply of selenium outperformed the other treatment groups in terms of high yield, rich crude polysaccharides and a high total selenium concentration. Additional evidences demonstrated the budding and mature phases were two typical growth stages of A. cornea and were important for the accumulation of selenium. Therefore, the budding and mature phase tissues of A. cornea in the treatment group with a 100 µg/g supply of selenium were used for transcriptome analysis and compared to those of a control group that lacked additional selenium. A total of 2.56 × 105 unigenes from A. cornea transcriptome were assembled and annotated to five frequently used databases including NR, GO, KEGG, eggNOG and SwissProt. GO and KEGG pathway analysis revealed that genes involved in metabolic process and translation were up-expressed at the budding stage in response to selenium supplementation, including amino acid metabolism, lipid metabolism, ribosome. In addition, the differential gene expression patterns of A. cornea suggested that the up-expressed genes were more likely to be detected at the budding stage than at the mature stage. These results provide insights into the transcriptional response of A. cornea to selenium accumulation.
