Abstract
Chemical composition, amino acids (AAs), and fatty acid (FAs) profiles, and health and nutrition values of breast muscle of ROSS 308 broiler chickens were studied after being slaughtered at 28, 35, 42, and 49 d of age (n = 126 males and 126 females/slaughter age). The slaughter age significantly affected some AAs levels including glutamic acid, valine, isoleucine, histidine, and leucine, and some FAs level including capric acid, tetradecanoic acid, eicosanoic acid, total saturated fatty acids, 9-pentadecenoic acid, hexadecatetraenoic acid, α-linolenic acid, stearidonic acid, linoleic acid, dihomo-γ-linolenic acid, arachidonic acid, adrenic acid, omega 6, sum polyunsaturated fatty acids (Ʃ PUFAs), and unsaturation index. Subsequently, the slaughter age significantly affected some health indexes including the n-6/n-3 ratio, thrombogenic index, hypocholesterolemic/hypercholesterolemic ratio, and health-promoting index. Valine, leucine, isoleucine, histidine, and glutamic acid levels increased with increasing slaughter age until 35 d of age and then decreased with increasing slaughter age until 49 d of age. Moreover, the health indices of fatty acids were best at slaughter age of 35 d, followed by 49 d, and the lowest health-promoting indices were at 42 d, followed by 28 d. The sex did not affect (P ˃ 0.05) all the evaluating parameters including chemical composition, amino acid and fatty acid profiles, and related health indices. There was no significant interaction effect between sex and slaughter age in all evaluating parameters except in stearidonic acid level. In conclusion, amino acids and fatty acids profiles and health and nutritional values of male and female ROSS 308 broiler chicken breast muscle can be affected by slaughter age. The study provides valuable insights into the nutritional value of meat, including its composition, amino acid, and fatty acid profiles, and associated health indices, for both male and female fast-growing ROSS 308 broiler chickens, as the slaughter age increases.

Abstract
The levels of l-arginine and asymmetric dimethylarginine (ADMA) and the amount of the nitric oxide (NO) production have recently been linked to breast cancer and pharmaceutical effect evaluation. Herein, a method combining electrochemistry and high-resolution mass spectrometry (HRMS) was established and used to study NO metabolism and its modulation by ginsenoside compound K (CK) in breast cancer cells. Platinum nanoparticles-decorated fluorine tin oxide was employed as an electrochemical sensor for in situ detection of NO release, while HRMS was used for the analysis of the NO-related metabolites. Through the combination of the electrochemical and HRMS results, decreases in arginine and NO and increases in ADMA and ornithine were observed after modulation by CK, and two highly correlated metabolic pathways including arginine and proline metabolism and vascular smooth muscle contraction were found. This method offers a new strategy for fast evaluation of pharmaceutical efficacy based on NO metabolism.

Abstract
Present study aimed to evaluate the influence of distinct concentration of dietary supplements hemp oil on apparent nutrient digestibility, blood biochemical parameters and metabolomics of teddy dogs. A total of 25 healthy teddy dogs were selected and divided into five treatments according to diet supplements hemp oil at a rate of 0% (A), 0.5% (B), 1% (C), 2% (D), and 4% (E). Appropriate added hemp oil improved apparent nutrient digestibility of dry matter, crude protein and crude fat (86.32–88.08%, 86.87–88.87% and 96.76–97.43%). The hemp oil significantly increased blood biochemical of utilization related total protein, albumin and globulin (61.33–69.54, 35.08–40.38 and 26.53–31.63 g/L), immunity capacity related immunoglobulin E and γ-interferon (203–347kU/L and 23.04–25.78ng/L), energy-related thyroxine and triiodothyronine (27.11–36.75 and 0.94–1.67 nmol/L). In addition, hemp oil improved superoxide dismutation (26.47–33.02 U/ml) and reduced malondialdehyde (5.30–3.28 nmol/ml). The differential metabolites mainly included nucleotides and metabolites of oxidized lipids, bile and other fatty acids, coenzymes and vitamins. The main metabolic pathways included purine and arachidonic acid metabolism, bile and unsaturated fatty acid biosynthesis, cell oxidative phosphorylation and rheumatoid arthritis. Overall, appropriate dietary supplements hemp oil positively to nutrient digestibility and blood metabolism, immunity and antioxidant capacity, 1% to 2% hemp oil supplements was recommended for teddy dog diet.

Abstract
Oxidation is a major cause of meat quality deterioration during broiler production, which leads to undesirable meat color and impaired water holding capacity (WHC), thereby impacting consumer appeal and satisfaction. Chlorogenic acid (CGA), a natural phenolic acid, is regarded as a potential, safer and healthier antioxidant to improve meat quality. To investigate the protective effects of CGA on the meat quality of oxidatively stressed broilers, 240 one-day-old male Cobb broiler chickens were allocated to four treatments: basal diet (control group), basal diet + dexamethasone (DEX) injection (DEX group), basal diet containing 500 mg kg-1 CGA (CGA group), and basal diet containing 500 mg kg-1 CGA + DEX injection (DEX_CGA group). Meat quality, antioxidant capacity, the nuclear factor erythroid 2-related factor 2 (Nrf2) pathway, and metabolomic profile were detected in the breast muscle of broilers. Then, correlation analysis between meat quality and antioxidant capacity, antioxidant-related genes, and metabolites was performed. The results indicated that CGA supplementation improved the growth performance and meat quality traits (pH, WHC, and meat color) and enhanced the antioxidant enzyme activity by activating the Nrf2 pathway in the breast muscle of oxidatively stressed broilers. A total of 619 metabolites were identified, among which 93 differential metabolites were found between control and DEX groups, and 65 differential metabolites were observed between DEX and DEX_CGA groups. Breast metabolic profiles were changed by DEX treatment, while CGA supplementation could normalize the metabolic changes in DEX-challenged broilers. Metabolic pathway analysis revealed that most of the differential metabolites between DEX and DEX_CGA groups were involved in pyrimidine/purine, propanoate and phenylalanine metabolism, primary bile acid biosynthesis, and lysine metabolism, which may contribute to explain the protective effects of CGA on meat quality. Moreover, according to the correlation analysis, four metabolites were identified as potential biomarkers to predict the meat quality. In conclusion, our findings demonstrate that CGA is an effective, natural and safe antioxidant to enhance the quality of meat from intensive industrial poultry production.

Abstract
Simple Summary Pork is the most consumed meat source for humans, and the utilization of nutritional approaches to produce pork with an appropriate content of intramuscular fat (IMF) and a balanced ratio of different kinds of fatty acid is an important objective pursuit of swine production. We speculated that dietary supplementation of beta-hydroxy beta-methyl butyrate (HMB) may provide benefits in lipid metabolism of skeletal muscle. In this study, we try to investigate the effects of dietary HMB supplementation on muscular lipid metabolism in Bama Xiang mini-pigs. We found that HMB supplementation could decrease the IMF content and increase n3 polyunsaturated fatty acids as well as regulate the related metabolites (N-Methyl-l-glutamate and nummularine A) in the serum of Bama Xiang mini-pigs, thus improving their meat quality. Abstract This study aimed to investigate the effects of dietary beta-hydroxy beta-methyl butyrate (HMB) supplementation on muscular lipid metabolism in Bama Xiang mini-pigs. Thirty-two piglets (8.58 ± 0.40 kg, barrow) were selected and fed a basal diet supplemented either with 0 (control), 0.13%, 0.64%, or 1.28% HMB for 60 days. Throughout the experiments, they had free access to clean drinking water and diets. Data of this study were analyzed by one-way ANOVA using the SAS 8.2 software package, followed by a Tukey’s studentized range test to explore treatment effects. The results showed that compared to the control, 0.13% HMB decreased the intramuscular fat (IMF) content and increased polyunsaturated fatty acids (PUFAs) in Longissimus thoracis muscle (LTM), and increased the n3 PUFAs in soleus muscles (SM, p < 0.05). Moreover, HMB supplementation led to alterations in the mRNA expression of genes related to lipid metabolism. Serum metabolome profiling showed that in both LTM and SM of Bama Xiang mini-pigs, N-Methyl-l-glutamate was positively correlated with SFA and nummularine A was negatively correlated with C18:3n3 PUFA (p < 0.05). Therefore, N-Methyl-l-glutamate and nummularine A might be potential biomarkers of the HMB-supplemented group. These results suggested that dietary HMB supplementation could decrease the IMF content and increase n3 PUFAs as well as regulate the related metabolites (N-Methyl-l-glutamate and nummularine A) in the serum of pigs.

Abstract
This study aimed to explore the effects of beta-hydroxy-beta-methyl butyrate (HMB) on serum metabolic profiles and meat quality of muscles in Wenshi broiler chickens. Birds were fed a basal diet with an additional 0, 0.05, 0.10, or 0.15% HMB, respectively. Results showed that dietary HMB quadratically increased the average daily gain (P = 0.058) and decreased feed:gain (P < 0.05) mainly in the starter phase. At 51 days of age, birds receiving 0.10% HMB diet exhibited less abdominal fat and more breast yield than the control (P < 0.05). Moreover, dietary HMB quadratically decreased the L∗ value and drip loss in selected muscles (P < 0.05) and increased the a∗ value in breast muscle (P < 0.05). Serum metabolome profiling showed that the most differentially abundant metabolites are lipids and lipid-like molecules, including phosphatidylcholines. It was concluded that HMB improved growth performance and meat quality of muscle in broilers.

Abstract
The fatty acid composition of chicken's meat is largely influenced by dietary lipids, which are often used as supplements to increase dietary caloric density. The underlying key metabolites and pathways influenced by dietary oils remain poorly known in chickens. The objective of this study was to explore the underlying metabolic mechanisms of how diets supplemented with mixed or a single oil with distinct fatty acid composition influence the fatty acid profile in breast muscle of Qingyuan chickens. Birds were fed a corn-soybean meal diet supplemented with either soybean oil (control, CON) or equal amounts of mixed edible oils (MEO; soybean oil : lard : fish oil : coconut oil = 1 : 1 : 0.5 : 0.5) from 1 to 120 days of age. Growth performance and fatty acid composition of muscle lipids were analysed. LC-MS was applied to investigate the effects of CON v. MEO diets on lipid-related metabolites in the muscle of chickens at day 120. Compared with the CON diet, chickens fed the MEO diet had a lower feed conversion ratio (P < 0.05), higher proportions of lauric acid (C12:0), myristic acid (C14:0), palmitoleic acid (C16:1n-7), oleic acid (C18:1n-9), EPA (C20:5n-3) and DHA (C22:6n-3), and a lower linoleic acid (C18:2n-6) content in breast muscle (P < 0.05). Muscle metabolome profiling showed that the most differentially abundant metabolites are phospholipids, including phosphatidylcholines (PC) and phosphatidylethanolamines (PE), which enriched the glycerophospholipid metabolism (P < 0.05). These key differentially abundant metabolites - PC (14:0/20:4), PC (18:1/14:1), PC (18:0/14:1), PC (18:0/18:4), PC (20:0/18:4), PE (22:0/P-16:0), PE (24:0/20:5), PE (22:2/P-18:1), PE (24:0/18:4) - were closely associated with the contents of C12:0, C14:0, DHA and C18:2n-6 in muscle lipids (P < 0.05). The content of glutathione metabolite was higher with MEO than CON diet (P < 0.05). Based on these results, it can be concluded that the diet supplemented with MEO reduced the feed conversion ratio, enriched the content of n-3 fatty acids and modified the related metabolites (including PC, PE and glutathione) in breast muscle of chickens.
