Influence of culinary skills on ultraprocessed food consumption and Mediterranean diet adherence: An integrative review

The Mediterranean diet is a diet pattern with several healthy characteristics, including a high consumption of fresh fruits, vegetables, whole-grain products, and extra virgin olive oil as the main fat source. It is also characterized by a low consumption of processed foods and high-fat meats. However, there has been a nutritional transition such that, because of globalization and economic growth, the consumption of ultraprocessed foods is increasing, comprising 14% to 57% of total energy intake. North America and Australia have the worst prognosis. Further, the younger population consumes greater amounts of ultraprocessed foods compared with adults, whereas the older population has the lowest rates. Among the various factors responsible for the nutritional transition, culinary skills seem an important function of diet quality, but, unfortunately, culinary skills have been little investigated by the scientific community. Higher culinary skills may be related to increased consumption of homemade meals, higher diet quality, and greater consumption of vegetables and fruits and may be associated with higher Mediterranean diet adherence. Consequently, ultraprocessed foods, ready-to-eat food, and delivered meals, as well as meals outside the home, are reduced. Unfortunately, the process of generational transmission of cooking skills is progressively weakening, aggravated by the reduction of free time for home cooking. Still, even though there are few interventions conducted to improve culinary skills, especially those focused on children, the available results suggest that there have been positive changes in the direction of a healthier dietary pattern. This integrative review analyzes consumption levels of ultraprocessed foods. We then consider the extent to which culinary skills affect ultraprocessed food consumption levels and the relative impact on obesity.

Effects of Reheating Methods on Rheological and Textural Characteristics of Rice Starch with Different Gelatinization Degrees

Pregelatinized starch (PGS) is often used to improve the processing quality of foodstuffs, but little attention has been paid to the effects of different reheating methods and degree of starch gelatinization (DSG) on their rheological and textural properties. In this study, pregelatinized rice starches (RS) with gelatinization degrees ranging from 58% to 100% were prepared via different Rapid Visco Analyser (RVA) heating procedures and reheated in various methods, including high-power microwave (HM), low-power microwave (LM), and water bath. The rheological behavior and textural properties were explored, and the results demonstrated that the consistency, gel strength, hardness, and springiness of PGS in all tested samples decreased significantly after reheating. The storage modulus (G') of PGS increased dramatically while the thermal stability decreased. Interestingly, the reheating methods possessed various effects on the starch of different DSG.

Examining COVID-19-Related Changes toward More Climate-Friendly Food Consumption in Germany

The present study examined the overall potential that the COVID-19 pandemic and its restrictions have for the promotion of climate-friendly food consumption in Germany. We looked at COVID-19-related changes in people’s climate-friendly food-consumption behaviors by comparing retrospectively self-reported performances between the time period in which the COVID-19 restrictions were in place and the pre-COVID-19 period. Furthermore, we examined the durability of such COVID-19-related changes with regard to an imagined post-COVID-19 period and the role of people’s personal climate-protection norms in COVID-19-related behavioral changes. To do so, we conducted two online surveys in June/July 2020 with German consumers: (a) an online study in a sample that was representative of the German population (NCOR1 = 3092) and (b) another online study in a smaller sample of German consumers (NCOR2 = 300). Altogether, the data from both surveys indicated several COVID-19-related changes toward more climate-friendly food consumption, not only during the COVID-19 pandemic and its restrictions, but also with regard to long-term changes in a potential post-COVID-19 period. Furthermore, our results also provide initial empirical evidence that people’s personal climate-protection norms are relevant moderating factors of these short- and long-term COVID-19-related behavioral changes.
