Abstract
The world's growing population is putting immense pressure on natural resources and food security. Algae, as a sustainable and nutrient-rich alternative protein source, have gained attention due to their lower environmental impacts and potential health benefits. However, consumer acceptance remains a key challenge, especially in developing countries where awareness is limited. This study investigates the factors influencing Iranian consumers' willingness to consume algae-based foods through the Theory of Planned Behavior (TPB). A survey involving 445 respondents from Mashhad, Iran, was conducted, and the data were analyzed using structural equation modeling. The findings reveal that attitude has the strongest influence on consumption intention, followed by food disgust, subjective norms, knowledge, moral norms, and environmental concerns. Attitude also mediates the relationships between the constructs of disgust, moral norms, knowledge, and environmental concerns with consumption intention. Furthermore, the findings indicate that attitude constitutes the fundamental mechanism of the relationship between knowledge, environmental concerns, and intention. On the other hand, moral norms confirm the existence of a relationship between the subjective norms construct and consumption intention, such that moral norms shape the fundamental mechanism of the relationship between subjective norms and attitude, emphasizing the profound influence of moral values in Iranian consumption culture. In contrast, food neophobia did not have a significant impact on consumption intentions, indicating an openness towards dietary innovations among Iranians. This research contributes to the theoretical advancement in this field by identifying the direct, indirect, and total effects of the extended Theory of Planned Behavior components on the decision to consume algae or algae-containing foods. Practically, the findings from this study can provide guidance for effective introduction and promotion strategies of algae-based food products in emerging markets.

Abstract
Despite well-documented scepticism among Western consumers about eating insects, there are groups of potential early adopters who will form the initial market for insect-based food. Understanding the different preferences of these potential early adopters is key to developing effective targeted marketing actions. This study aimed to identify segments of potential early adopters and their distinct product attribute preferences. Via an online survey in Germany (N = 922), we conducted discrete choice experiments using real packaging of insect-based meatballs and crackers. Latent class logit analysis identified four consumer segments for each product, three of which showed a willingness to buy the products. While these potential consumer groups varied in their price sensitivity and insect labelling preferences, they all attached the greatest importance to naturalness claims. Interestingly, sustainability and nutritional information were not top priorities for all consumers; instead we observed the importance of an institutional trust indicator, especially for unconvinced consumers. In conclusion, the results of the present study provide interesting insights for both researchers and practitioners to make informed marketing decisions in the development and labelling of insect-based products.

Abstract
While the market is full of different dietary supplements, in most countries, legislation is clear and strict towards these products, with severe limitations on their health claims. Overall, the claims cannot go beyond the consumption of a said supplement will contribute to a healthy diet. Thus, the supplement industry has been reacting and changing their approach to consumers. One change is the considerable growth of the nutraceutical market, which provides naturally produced products, with low processing and close to no claims on the label. The marketing of this industry shifts from claiming several benefits on the label (dietary supplements) to relying on the knowledge of consumers towards the benefits of minimally processed foods filled with natural products (nutraceuticals). This review focuses on the difference between these two products, their consumption patterns, forms of presentation, explaining what makes them different, their changes through time, and their most notable ingredients, basically balancing out their pros and cons.

Abstract
Allium cepa L., commonly known as onion, is one of the most-consumed vegetables. The benefits of the intake of its bulb are well studied and are related to its high polyphenol content. The flowers of onions are also edible; however, there are no studies about their biological properties. Our aim was to determine the polyphenolic profile and assess the antioxidant and anti-obesity capacity of an ethanolic extract from fresh flowers of A. cepa. The phenolic constituents were identified through LC-DAD-ESI/MSn. For the anti-obesity potential, the inhibitory activity against digestive enzymes was measured. Several in vitro assays were carried out to determine the antioxidant capacity. A Caenorhabditis elegans model was used to evaluate the effect of the extract on stress resistance and fat accumulation. For the first time, kaempferol and isorhamnetin glucosides were identified in the flowers. The extract reduced fat accumulation in the nematode and had a high lipase and α- glucosidase inhibitory activity. Regarding the antioxidant activity, the extract increased the survival rate of C. elegans exposed to lethal oxidative stress. Moreover, the activities of superoxide dismutase and catalase were enhanced by the extract. Our results demonstrate, for the first time, the antioxidant and anti-obesity activity of onion flowers and their potential use as functional foods and nutraceuticals.

A choice experiment on consumer perceptions of three generations of genetically modified foods. Appetite 2021; 161:105158. Abstract
Genetically modified (GM) foods remain a contentious issue worldwide, yet consumer preferences in this field have received too little attention in the academic research. The present paper helps fill this gap by investigating the hypothetical consumer behaviour towards and willingness to pay (WTP) for a specific type of GM food (of the first, second or third generation) using a choice experiment with 1444 respondents from three European cities. A random parameter logit-error component (RPL-EC) model allows for heterogeneity in consumer preferences and potential correlation across utilities and across taste parameters. The results show that consumers seem to attach utility to GM foods insofar as they perceive that generational traits improve their nutritional qualities or bring health benefits. Moreover, the role played by education in improving people's understanding of the issues associated with GM foods provides insights to assist marketers in developing differentiated strategies. Marketers would be able to help consumers dampen the effect of fear and allow them to develop more informed opinions, which, however, do not necessarily translate into purchasing behaviour.
