Abstract
This study investigates the rheological behavior of two plant-based polysaccharides, with different degrees of hydrophilicity, agar (highly hydrophilic) and guar gum (hydrophilic), in water and 1-ethyl-3-methylimidazolium acetate (EMImAc). The rheological response of these polymers is highly dependent on the solvent's ability to disrupt intermolecular associations. In water, agar forms hydrogels, while guar gum behaves as a viscoelastic liquid with slow modes. The plateau modulus (GN0) scales with polymer concentration (c) as GN0 ∼ c3, consistent with other natural polymers. In EMImAc, both polysaccharides form viscoelastic liquids, exhibiting GN0 ∼ c2.3, as expected for semiflexible polymer solutions. However, the terminal relaxation time, τD, and the specific viscosity, ηsp, scale as τD ∼ c5.3 and ηsp ∼ c7.6, indicative of intermolecular chain-chain associations. Despite the solvent or polysaccharide, the fractional viscosity overshoot and the shear strain at the maximum stress show a terminal Weissenberg number dependence similar to other synthetic polymers.

Abstract
Bacterial infections and inflammation progression yield huge trouble for the management of serious skin wounds and burns. However, some hydrogel dressing exhibit poor wound-healing capabilities. Additionally, little information is given on the molecular theory of hydrogel gelation mechanisms and drug release performance from drug-polymer network in the water environment. Herein, cationic guar gum (CG) is first mixed with dipotassium glycyrrhizinate (DG), and then crosslinked Cu2+ to strengthen the mechanical strength followed by encapsulating mussel adhesive protein (MAP) as composite dressings. Intriguingly, CG-Cu2+ 0.5-DG10 possessed proper rheological properties and mechanical strength predominantly driven by strong CG-H2O-Cu2+ and Cu2+-CG hydrogen bonding interaction. Weak DG-CG hydrogen bonding only controlled DG release in the initial 4 h, while strong hydrogen bonding is the main force regulating the sustained release of Cu2+ within 48 h. The incorporation of MAP further loosened the tight crosslinking of CG-Cu2+ 0.5-DG10. The screened CG-Cu2+ 0.5-DG10/MAP possessed excellent self-healing, injectability, antibacterial, anti-inflammatory, cell proliferation-promotion activities with high biocompatibility. Therefore, CG-Cu2+ 0.5-DG10/MAP hydrogel expedited wound closure on S. aureus-infected full-thickness skin wound model and lowered necrosis progression to the unburned interspaces on a rat burn model. The results highlight the promising translational potential of Cu2+-inspired hydrogels for the management of burns and infected wounds.

Abstract
Biobased materials are expanding dramatically in various industrial applications due to their unique intrinsic properties. In this study, various chemical functionalization procedures were used to synthesize guar gum, a naturally occurring polysaccharide-based polyurea, and its iodine complexes. Firstly, guar gum was subjected to tosylation reaction using p-toluene sulphonyl chloride to introduce tosyl moieties in the polymer chain with the degree of substitution (DS) ranging between 0.16 and 1.54. Sample having the highest degree of tosyl moiety was further reacted with tris(2-aminoethyl) amine to produce 6-deoxy-6-tris(2-aminoethyl) amine derivative via nucleophilic substitution reaction to impart amino functional groups. The degree of substitution in 6-deoxy-6-tris(2-aminoethyl) amine derivative was found to be 0.59. 6-deoxy-6-tris(2-aminoethyl) amine derivative was reacted with different diisocyanates (Toluene-2,4-diisocyanate (TDI), 1,6-diisocyanatohexane (HMDI)) to produce guar gum based polyurea. Iodine complexes of the resulting polyurea were prepared by reacting with different iodinating agents. Different chemical reactions, formation of polyurea and its iodine complexes were thoroughly analyzed by different analytical techniques such as FT-IR, NMR, elemental analysis, XRD, UV-Vis spectroscopy, and a reaction scheme has been proposed. Morphological and rheological characteristics were analyzed by SEM and viscosity measurement. Thermal analysis was carried out by TGA and DSC studies. Finally, by examining the complex's UV-Vis spectra, the iodine release characteristics from polyurea‑iodine complexes were investigated.

Abstract
In the present study, a novel environment friendly dry method for preparation of guar gum maleate (GGM) with varying degrees of substitution (DS; 0.02-1.04) was optimized. GGM with a maximum DS of 1.04 was successfully synthesized using guar gum (GG) and maleic anhydride (MA) in proportion of 1: 1 at 80 °C with 4 h of reaction time. The activation energy for the reaction was determined to be 36.91 ± 3.61 kJ mol-1 with pre-exponential factor of 1392 min-1. Esterification of GG was confirmed by FT-IR and 13C NMR. Analysis using size exclusion chromatography (SEC) indicated a decrease in weight average molecular weight (Mw) of the polymer with an increase in polydispersity index (PDI) due to esterification. In comparison with GG, GGM displayed increased hydrophobicity and reduced thermal stability, as analysed by differential scanning calorimetry (DSC). Rheological studies of GGM revealed that initial apparent viscosity decreased with increasing DS. For the first time, the study offered valuable insights on GGM synthesis under dry solvent-less reaction conditions enabling simpler and scalable synthesis process.

Abstract
We investigate carboxymethyl hydroxypropyl guar gum (CMHPG) solution properties in water and NaCl, KCl, and CaCl2 aqueous solutions. The Huggins, Kraemer, and Rao models were applied by fitting specific and relative viscosity of CMHPG/water and CMHPG/salt/water to determine the intrinsic viscosity [η]. The Rao models yielded better results (R2 = 0.779-0.999) than Huggins and Kraemer equations. [η] decreased up to 84% in salt solution over the range 0.9-100 mM compared to water. Salt effects screened the CMHPG charged side groups chains leading to a compacted structure. In 0.9 mM NaCl(aq), the hydrodynamic coil radius (Rcoil) was 28% smaller and 45% smaller in 100 mM NaCl solution relative to water. Similar decreases were seen in KCl and CaCl2 solutions. KCl and CaCl2 were more effective than NaCl. CMHPG is salt-tolerant and shows comparatively less viscosity change than native guar gum, with modest reduced viscosity increases with CMHPG dilution at all salt concentrations. The electrostatic interactions were effective up to 100 mM salt. The activation energy of viscous flow for CMHPG solutions was computed and compared to measured xanthan gum and several literature values. These data show that the barrier to CMHPG flow is higher than for xanthan gum.

Abstract
Proper modeling of flow or viscosity curves as a function of shear rate is a useful tool in any engineering activity. The rheology of foods depends on the composition, processing to which they have been subjected and the state of dispersion in which they are found. Liquid foods are complex biosystems, that show non-Newtonian behavior under flow conditions. This review presents models used in recent decades to describe the experimental rheological behavior of various liquid foods, ranging from Newtonian fluids to the most complex. Some non-Newtonian parameters such as those of the Ostwald-de Waele, Bingham, Herschel-Bulkley, Casson, Cross, and Carreau models are summarized. Examples of thixotropic behavior described by the Weltman and Abu-Jdayil models are also presented. In each model, explanations based on the composition and dispersion state of the food are made. This is useful in innovative processing technologies and for scientists new to the field of food rheology. An attempt is made to exemplify and group the expected behavior for most fluid foods, including some for a dysphagia diet, depending on their composition or the dispersed system formed, which will be useful for professionals who wish to compare reported rheological parameters with those obtained experimentally.

Abstract
The production of polymer mixtures is a widely used method to improve polymer performance, as such mixtures can combine advantageous properties from each component. In this study, mixtures based on carboxymethyl chitosan (CMCh) and poly(N-vinylpyrrolidone) (PVP) were characterized using steady shear measurements, viscometry, infrared spectroscopy, thermogravimetric analysis, scanning electron microscopy, and atomic force microscopy. Viscometry and steady shear studies were performed on solutions of the native polymers and their mixtures with various weight proportions (80/20, 50/50, and 20/80%w/w). The rheological tests revealed that the apparent viscosity of solutions of CMCh/PVP mixtures was higher than that of the native polymer solutions. The rheological data showed that CMCh solutions and their mixtures were typical pseudoplastic liquids, which could be accurately described by the Cross and power law models. Viscometric parameters were determined using the method proposed by Garcia et al., which indicated good miscibility between CMCh and PVP in aqueous solution. Furthermore, the morphology, structure, and thermal properties of CMCh films changed when PVP was added. The obtained analytical data showed the formation of stable mixtures of CMCh and PVP, with a high miscibility ratio between these polymers, through intermolecular interactions between the polymer chains.

Abstract
Developing self-healing polysaccharide hydrogels offers a promising strategy for the healing of full-thickness skin wounds. However, the green and facile fabrication of self-healing polysaccharide hydrogel dressings is challenging. Herein, a novel hydrogen-bonded polysaccharide hydrogel consisting only of cationic guar gum (CG) and CuCl2 was developed by simply mixing CG and Cu2+ solution. A strong enough intermolecular hydrogen bonding could be formed between ipsilateral hydroxyl groups to induce rapid gelation. Benefiting from dynamic and reversible linkages, cationic guar gum-Cu2+ (CG-Cu) hydrogels exhibited self-healing, injectable and self-adaption. The CG-Cu hydrogels possessed favorable mechanical strength (compression strength: 50-89 kPa), excellent biocompatibility (cell viability: >95 %; hemolysis ratio: < 5 %) and satisfying antibacterial ability. In vivo degradation tests showed that the CG-Cu hydrogels could be completely degraded after 21 days. Furthermore, in-situ injected CG-Cu hydrogel dressings could perfectly cover wounds to reduce risk of infection and accelerated full-thickness skin generation. In conclusion, this study may provide a new simple and straightforward strategy to prepare self-healing polysaccharide hydrogels based on hydrogen bonding to expand its application in the field of biomedicine and tissue regeneration.

Abstract
Chitosan (Chit) and its composite films are widely used in biomedical, cosmetic, and packaging applications. In addition, their properties can be improved and modified using various techniques. In this study, the effect of the type of clay in Chit composites on the structure, morphology, and physical properties of Chit solution and films was tested. The liquid flow properties of Chit solution with and without clay were carried out using the steady shear test. Chit films containing clay were obtained using the solution-casting method. The morphology, structure, and physical properties of the films were characterized by scanning electron microscopy, atomic force microscopy, infrared spectroscopy, swelling behavior, and tensile tests. The results reveal that for the Chit solution with clay (C1) containing 35 wt.% dimethyl dialkyl (C14-C18) amine, the apparent viscosity is the highest, whereas Chit solutions with other clays show reduced apparent viscosity. Rheological parameters of Chit composites were determined by the power law and Cross models, indicating shear-thinning behavior. Analytical data were compared, and show that the addition of clay is favorable to the formation of intermolecular interactions between Chit and clay, which improves in the properties of the studied composites.

Abstract
The viscosity behaviour and physical properties of blends containing hyaluronic acid (HA) and poly(N-vinylpyrrolidone) (PVP) were studied by the viscometric technique, steady shear tests, tensile tests and infrared spectroscopy. Viscometric and rheological measurements were carried out using blends of HA/PVP with different HA weight fractions (0, 0.2, 0.5, 0.8 and 1). The polymer films and HA/PVP blend films were prepared using the solution casting method. The study of HA blends by viscometry showed that HA/PVP was miscible with the exception of the blend with high HA content. HA and its blends showed a shear-thinning flow behaviour. The non-Newtonian indices (n) of HA/PVP blends were calculated by the Ostwald-de Waele equation, indicating a shear-thinning effect in which pseudoplasticity increased with increasing HA contents. Mechanical properties, such as tensile strength and elongation at the break, were higher for HA/PVP films with wHA = 0.5 compared to those with higher HA contents. The elongation at the break of HA/PVP blend films displayed a pronounced increase compared to HA films. Moreover, infrared analysis confirmed the existence of interactions between HA and PVP. The blending of HA with PVP generated films with elasticity and better properties than homopolymer films.

Abstract
Sesbania cannabina galactomannan (2%) solutions added with strongly hydrated ions (Na2CO3, NaH2PO4, NaCl) and weakly hydrated ions (NaNO3) at different ionic strengths were rheologically characterized. The four selected salts dramatically decreased the intrinsic viscosity of galactomannan solution in the following order of effectiveness: Na2CO3 < NaH2PO4 < NaCl < NaNO3. This conforms effectively to the Hofmeister anion series. Moreover, salt addition increased the viscosity of galactomannan solution when the ionic strength was 1 mmol/kg, which related to an increased occurrence of intermolecular interactions. As increasing ionic strength, galactomannan chains may tend to contract or expand due to the presence of strongly or weakly hydrated ions, thereby decreasing the viscosity. These phenomena were demonstrated by zeta potential measurement and again observed in dynamic viscoelasticity measurement. Overall, this property can be used to manipulate the rheological properties of galactomannan in food gums to obtain gums of high quality for enhancing consumer goods.

Abstract
In this paper, subcritical water (SCW) was applied to modify pumpkin (Cucurbita moschata Duchesne ex Poiret) polysaccharides, and the properties and antioxidant activity of pumpkin polysaccharides were investigated. SCW treatments at varying temperature led to changes in the rheological and emulsifying properties of pumpkin polysaccharides. SCW treatments efficiently degraded pumpkin polysaccharides and changed the molecular weight distribution. Decreases in intrinsic viscosity, viscosity-average molecular weight, and apparent viscosity were also observed, while the activation energy and flow behavior indices increased. The temperature of SCW treatment has a great influence on the linear viscoelastic properties and antioxidant activity of pumpkin polysaccharides. Pumpkin polysaccharides solution treated by SCW at 150 °C exhibited the highest emulsifying activity and antioxidant activity, which was probably due to a broader molecular mass distribution and more reducing ends exposed after treatment. Scanning electron microscopy showed that SCW treatment changed the microstructure of pumpkin polysaccharides, resulting in the exposure of bigger surface area. Our results suggest that SCW treatment is an effective approach to modify pumpkin polysaccharides to achieve improved solution properties and antioxidant activity.

Abstract
Acid soluble collagen (ASC) was extracted from Silver Carp fish skin. Collagen was dissolved in acetic acid at varying concentrations and its rheological properties were studied. Steady shear flow properties of collagen solutions at concentrations of 5 and 10 mg/mL were characterized using rheometry at 20 °C. Collagen solutions were irradiated with UV light (wavelength 254 nm) for up to 2 h and rheological properties were measured. All the collagen solutions showed a shear-thinning flow behavior. A constant viscosity region was observed after 1 h of UV irradiation, which showed that collagen molecules were fully denatured. A short treatment with collagen solution by UV (ultraviolet) light led to an increase in viscosity; however, the denaturation temperature of UV-irradiated collagen decreased. Depending on the time of UV treatment, collagen extracted from Silver Carp fish skin may undergo physical crosslinking or photodegradation. Physically crosslinked collagen may find applications in functional food, cosmetic, biomedical, and pharmaceutical industries.

Abstract
Gleditsia sinensis, fenugreek and guar galactomannans (referred to as GSG, FG, and GG) were extracted from their gums and investigated using various techniques. Mannose to galactose ratios were 3.55, 1.11, and 1.65, respectively. The intrinsic viscosity of GSG was very close to that of GG, while that of FG was the lowest one. This was attributed to the influence of high galactose substitution of FG on the mannan backbone, which induced a lower chain dimension due to intermolecular entanglement. High degrees of substitution and high temperatures contributed to improving the solubility of galactomannan. Rheological behavior indicated that GG had the highest apparent viscosity, yet the power-law model could well-fitted the flow curves of GSG and FG, but not GG. Through morphological observations, the extracted galactomannans exhibited rod-like structure in deionized water and showed fibrous filament network structure after dehydration by freeze-drying. The thermal behavior was greatly influenced by the degree of side groups and Mw of galactomannans.

Abstract
Novel Guar Gum (GG) and polyethylene glycol (PEG) polymer blends with rosin glycerol ester (RE) nanoparticle was synthesized under ultrasonic irradiation at different composition ratios (1:1, 1:2, 1:4, 2:1, and 4:1). The intrinsic viscosities of the nanoparticles were investigated using ultrasound irradiation to determine the miscibility of the blends in solution as affected by salt, sonication time, temperature, and pH. The intrinsic viscosities of the nanosystems were compared with five different models, including Huggins, Kraemer, Tanglertpaibul-Rao, Higiro, and Rao. The Tanglertpaibul-Rao was the best model and the intrinsic viscosities of 138,27, 142,94 and 163,29 dl/g were reported for GG-PEG/RE (1:1,1:2,1:4), respectively. The viscosity results reveal that the blend containing 1:2 (GG-PEG/RE) was an optimum miscible blend. The miscibility behaviour of the polymeric nanoparticles was investigated using the voluminosity (VE), shape factor (υ), creaming index (CI) parameter, and the Krigbaum and Wall parameter (Δb), which account for the intermolecular interactions. When compared to the intrinsic viscosity results of the nanoparticles, the miscibility-improving effect of sub-300 nm GG-PEG/RE nanoparticles is clearly proven due to the ultrasonic effect. Scanning transmission electron microscopy (STEM) and Fourier transformed infrared (FTIR) spectroscopy were used for characterization of the polymeric nanoparticles.

Abstract
Drag reduction by the addition of polymer additives has been widely studied. However, there are only a few studies on binary polymer mixtures, here named blends. In this work, xanthan gum, polyacrylamide and poly(ethylene oxide) were associated with guar gum and drag reduction was used as a parameter to determine the synergistic interaction between polymers. The aim was to verify the relation of the synergy with the rigidity of the polymeric chains, the molecular weights and the magnitude of the molecular interactions between the studied polymers. To that end, several ratios of mixtures were tested at different Reynolds numbers in a rotational rheometer with double-gap concentric cylinders geometry. Finally, experiments were done to verify the behaviour of the blends over time at a fixed Reynolds number. From all these tests, it was documented that blends containing rigid chain polymers show positive synergism in the interaction in at least one of the ratios and that this interaction is more pronounced when the molecular weights are closer and intermolecular forces are stronger. It was also noted that, in general, blends are great substitutes for solutions containing only one type of polymer.

Abstract
The blends of gelatin and shear-thinning hydrocolloids (guar gum, kappa-carrageenan and xanthan gum) were examined to determine the effect of the conformational change on the functional properties of the solutions. The polyelectrolyte complexes of 0.5% gelatin/0.5% polysaccharide in 70 mM KCl or 70 mM NaCl were investigated by the laboratory rheometer and conductivity meter in the temperature range 25 - 45 °C. The rheological data were fitted by the power-law and Herschel-Bulkley model to obtain the flow parameters. The functional properties of the samples were substantially affected by the conformational change of the polysaccharide, as well as by the type of the hydrocolloid and salt solution. There was an evident change of viscosity and conductivity of the solutions upon heating, corresponding to the helix-coil transition of the polysaccharide at temperature about 35 °C. The type of the salt solvent had an effect on the gelation properties of the samples. Gelatin/kappa-carrageenan blend in NaCl provided a gel of high consistency at ambient temperature (20 - 25 °C), whereas the blend in KCl did not gel in the studied temperature range. The potential stability of the blends was determined by zeta-potential analysis. The low values of ζ-potential indicate that the gelatin/polysaccharide blends are electrically unstable systems which tend to coagulate. The mixtures of gelatin/polysaccharide electrostatic complexes may have a great potential in many food applications.

Abstract
The remarkable ability of polymeric additives to reduce the level of frictional drag significantly in turbulent flow, even under extremely low dilutions, is known as turbulent drag-reduction behavior. Several bio-polymers have been assessed as promising drag-reducing agents for the potential replacement of high molecular weight synthetic polymers to improve safety and ameliorate environmental concerns. This article reviews the recent advances regarding the impact of several bio-polymer additives on turbulent drag reduction in either pipe or rotating disk flow systems, and their potential applications in the petroleum, biomedical, and agricultural industries.

Abstract
Se-GFP-22, a heteropolysaccharide, with a weight-average Mw of 4.13×106Da, was purified from the crude Se-polysaccharide (Se-GFP) isolated from fruit bodies of Se-enriched Grifola frondosa. Selenium was accumulated efficiently in Grifola frondosa during cultivation with Na2SeO3. The structure was investigated through FT-IR, GC, GC-MS, NMR, HPSEC-MALL-RI, particle size, Conge-red test, CD, AFM and SEM. Se-GFP-22 was deduced as a backbone chain of 1,4-α-d-Glcp units with a branched point at C6 of both 1,3,6-β-d-Manp and 1,4,6-α-d-Galp units. A typical absorption for selenium ester was existed in Se-GFP-22. Se-GFP-22 adopted as a spherical conformation with random coils. A novel Se-polysaccharide of different monosaccharide constituents, molecular weight, linkage types and high content of selenium has been isolated from G. frondosa. The antioxidant effect of Se-GFP-22 was more potent than that of G. frondosa polysaccharide (GFP-22), which may be influenced by the co-effect of polysaccharide and Se, molecular weight, degree of branching and configuration.
