Abstract
AIM To isolate the slow-growing or viable but non-culturable competitive exclusion (CE) microorganisms from composts and then verify the anti-Listeria monocytogenes activities of those CE isolates in compost. METHODS AND RESULTS CE strains were isolated from composts using double- or triple-layer agar methods, purified, and then characterized. Both compost extracts and solid compost samples were spiked with a cocktail of 3 L. monocytogenes strains which were co-inoculated with or without CE strain cocktail and incubated at both 22°C and 35°C for 168 h. Results indicated that the addition of resuscitation promoting factor (Rpf) promoted the growth of slow-growing species from composts. About 50% of the isolated CE strains (n=40) were identified as Bacillus spp., 17 strains can inhibit more than ten tested L. monocytogenes strains, and 9 strains were motile and competitive biofilm formers. In compost extracts, the growth potentials of L. monocytogenes were reduced up to 2.2 logs when co-culturing with CE strains. In compost samples, the addition of CE strains reduced L. monocytogenes population by ca. 1.3 log CFU/g at 22°C after 24 to 168 h incubation. CONCLUSION Our modified double/triple-layer agar procedure with Rpf as growth supplement coupled with spot-on-lawn testing can be a quick and efficient method for isolating CE candidates from composts. The efficacy of CE strains against L. monocytogenes in compost extracts and compost samples was affected by compost type, nutrient level, and incubation temperature. SIGNIFICANCE AND IMPACT OF THE STUDY Compost is a rich source of CE microorganisms and compost-adapted CE microorganisms have the potential as a biological agent to control L. monocytogenes in agricultural environments.

Abstract
Listeria monocytogenes can form long-lasting biofilms on food-contact surfaces. Lactic acid bacteria (LAB) have shown promise in antagonizing this microorganism in liquid media. However, the ecological relationships differ when cells are forming biofilms. In this work, we propose the use of Lactobacillus biofilms as surface "conditioners" to modulate the adhesion of L. monocytogenes. For this, the biofilm formation ability of Lactobacillus fermentum MP26 and Lactobacillus salivarius MP14 (human milk origin), fluorescently labeled by transfer of the mCherry-encoding pRCR12 plasmid, was first evaluated. Then, mature biofilms of these strains transformed with pRCR12 for expressing the fluorescent protein mCherry were used as adhesion substrate for GFP-tagged L. monocytogenes Scott A. The resulting biofilms were studied in terms of cellular population and attached biomass (cells plus matrix). Species distribution inside the biofilm structure was revealed by confocal laser scanning microscopy (CLSM). Although none of the Lactobacillus spp. strains reduced the adhesion of L. monocytogenes Scott A, species interactions seem to interfere with the synthesis of extracellular polymeric substances and species distribution inside the biofilms. In dual-species biofilms, CLSM images revealed that Lactobacillus cells were trapping those of L. monocytogenes Scott A. When surfaces were conditioned with Lactobacillus biofilms, the spatial distribution of L. monocytogenes Scott A cells was species-specific, suggesting these interactions are governing the ultimate biofilm structure. The results here obtained open new possibilities for controlling L. monocytogenes dispersal using these Lactobacillus spp. biofilms as a "natural" immobilization way. Whether species interactions could modify the virulence of L. monocytogenes still remains unclear.

Abstract
This review examines the impact of microbial communities colonizing food processing environments in the form of biofilms on food safety and food quality. The focus is both on biofilms formed by pathogenic and spoilage microorganisms and on those formed by harmless or beneficial microbes, which are of particular relevance in the processing of fermented foods. Information is presented on intraspecies variability in biofilm formation, interspecies relationships of cooperativism or competition within biofilms, the factors influencing biofilm ecology and architecture, and how these factors may influence removal. The effect on the biofilm formation ability of particular food components and different environmental conditions that commonly prevail during food processing is discussed. Available tools for the in situ monitoring and characterization of wild microbial biofilms in food processing facilities are explored. Finally, research on novel agents or strategies for the control of biofilm formation or removal is summarized.

Abstract
Of the 1648 microbial isolates from 133 soil samples collected from 30 diverse locations in the Republic of Korea, two isolates exhibited strong antilisterial activity and ability to grow to high populations (>8.0 log CFU/ml) in Bennett's broth. Isolates were identified as Streptomyces lactacystinicus (strain Samnamu 5-15) and Streptomyces purpureus (strain Chamnamu-sup 4-15). Both isolates formed biofilms on the surface of stainless steel coupons (SSCs) immersed in Bennett's broth within 24 h at 25 °C. Cells retained antilisterial activity after biofilm formation and showed significantly (P ≤ 0.05) enhanced resistance against dry conditions (43% relative humidity [RH]) compared to the cells not in biofilm. An initial population (ca. 3.2 log CFU/cm2) of Listeria monocytogenes inoculated on SSCs lacking Streptomyces biofilm decreased to 1.4 log CFU/cm2 within 48 h at 25 °C and 43% RH. In contrast, L. monocytogenes (3.3 log CFU/cm2) inoculated on SSCs containing Streptomyces biofilm decreased to populations below the theoretical detection limit (0.5 log CFU/cm2) within 24 h. The results indicate that biofilms formed by the Streptomyces spp. inhibitory to L. monocytogenes showed enhanced resistance to desiccation condition (43% RH) and effectively inhibited the growth of L. monocytogenes on the surfaces of SSCs. Antilisterial biofilms developed in this study may be applicable on desiccated environmental surfaces in food related environments such as food storage, handling, and processing facilities to enhance the microbiological safety of foods.

Abstract
In this paper, a novel sensor platform based on screen printed carbon electrode coated by graphene modified polyacrylamide gel (GR/PAAGC) was developed and implemented for sampling, detection and enumeration of coliform bacteria (coliforms) on food contact surfaces. The optimized formula of polyacrylamide (PAA) and agar-agar increased the adhesive properties of the gel, being crucial for the coliforms recovery, attached to food contact surfaces. The 6-Chloro-3-indoxyl-β-D-galactopyranoside (6-CIGP) was used as a new electrochemical reporter for β-D-galactosidase activity. The released 6,6'-Dichloro-Indigo (6-DI) was directly detected by GR/PAAGC sensor. The presence of Isopropyl-β-D-thiogalactopyranoside (IPTG) and n-Octyl-β-D-thiogalactopyranoside (OBDG) in the gel contributed to reduction of the detection time. The addition of graphene enhanced the voltammetric signal and increased the conductivity of PAA gel. The anodic and cathodic peaks of the released product were directly proportional to the concentration of coliforms. Bacterial cell concentrations ranging from 1.6log10CFU/mL to 6.6log10CFU/mL were detected. Well-shaped, sharp voltammetric curves were generated within 3 h. Redox peaks exhibited good sensitivity with detection limits (LOD) < 0.6log10CFU/mL. After series of optimization experiments, coliforms ranging from 0.6log10CFU/cm2 to 6.610CFU/cm2 on stainless steel surfaces have been detected within 30 min with a LOD of 0.1log10CFU/cm2. The developed rapid, sensitive, reproducible and specific sensor successfully applied for single detection as well as for real-time monitoring of growth of coliform bacteria on stainless steel surfaces during food processing.

Abstract
Staphylococcus aureus is a gram-positive and opportunistic pathogen that is one of the most common causes of nosocomial infections; therefore, its rapid diagnosis is important and valuable. Today, the use of nanoparticles is expanding due to their unique properties. The purpose of the present study is the determination of S. aureus by a colorimetric method based on gold nanoparticles (AuNPs). Firstly, S. aureus was cultured on both LB media (broth and agar) and their chromosomal DNA was extracted. Afterwards, primers and biosensor were designed based on Protein A sequence data in the gene bank. PCR assay was performed under optimal conditions and the PCR product was electrophoresed on 2-percent agarose gel. The synthesized biosensors were conjugated with AuNPs and, eventually, a single-stranded genome was added to the conjugated AuNPs and hybridization was performed. The results were evaluated based on color change detected by the naked eye, optical spectrophotometry, and transient electron microscopy. Finally, the sensitivity and specificity of the AuNP-biosensor were determined. The results of the present study showed a 390 bp band on the agarose electrophoresis gel, which confirmed the presence of Protein A genes on the chromosome of the bacteria. The PCR and colorimetric methods were compared with each other. The sensitivity of the PCR and colorimetric methods were 30 ng μL-1 and 10 ng μL-1, respectively. The limit of detection (LOD) equaling 8.73 ng μL-1 was determined and the specificity of the method was confirmed by the DNA of other bacteria. According to the results, the present method is rapid and sensitive in detecting S. aureus.

Abstract
We produced a Pseudomonas veronii biofilm on the surface of a stainless steel that is inhibitory to Escherichia coli O157:H7. Pseudomonas veronii strain KACC 81051BP, isolated from lettuce, readily formed biofilm on the surface of stainless steel coupons (SSCs) immersed in tryptic soy broth at 25°C. Cells showed significantly (P ≤ 0·05) enhanced tolerance to desiccation stress (43% relative humidity (RH)) and retained antimicrobial activity against E. coli O157:H7. The number of E. coli O157:H7 (control; 4·1 ± 0·1 log CFU per coupon) on sterile SSCs decreased to 2·7 ± 0·2 log CFU per coupon after exposure to 43% RH at 25°C for 48 h, while the population of E. coli O157:H7 (4·1 ± 0·0 log CFU per coupon) on SSCs containing P. veronii biofilm decreased to below the theoretical detection limit (1·5 log CFU per coupon) within 24 h. The antimicrobial biofilm produced on stainless steel may have application in preventing cross-contamination by E. coli O157:H7 on other abiotic surfaces in food-contact environments. SIGNIFICANCE AND IMPACT OF THE STUDY The presence of Escherichia coli O157:H7 on environmental surfaces of food manufacturing, transportation and storage facilities is a significant food safety concern because it can result in cross-contamination of food products. In this study, we developed a Pseudomonas veronii biofilm on the surface of a stainless steel that inhibits the growth of E. coli O157:H7. Since P. veronii in biofilm resists desiccation, it provides persistent antimicrobial activity. Information presented here provides novel and practical insights to developing biological strategies to inactivate E. coli O157:H7 on diverse surfaces in food processing and handling environments.
