Abstract
Diabetes has become a significant global health issue, driving the adoption of low glycemic index (GI) diets and positioning low-GI foods as a key research focus. Although methods for lowering the GI of foods have been reviewed, a comprehensive analysis of the underlying mechanisms is lacking. Moreover, GI-lowering techniques, whether through exogenous additives or specific processing methods, can influence food sensory qualities and impact storage stability. However, systematic reviews on these effects are limited. This review summarizes mechanisms for reducing the GI of starchy foods, focusing on four key strategies: inhibiting digestive enzymes, altering substrate structure, blocking enzyme-substrate interactions, and stimulating insulin secretion. It also addresses the sensory impacts of these GI-reduction methods. Additionally, the review evaluates how certain nutrient additions affect food stability during storage, aiming to offer scientific guidance for the development of low-GI starchy foods.

Abstract
The impact of heat stress (HS) on production is intricately linked with feed intake. We investigated the effects of HS on intestines and diencephalic genes in Pekin ducks. One hundred and sixty adult ducks were allocated to two treatment rooms. The control room was maintained at 22°C and the HS room at 35°C for the first 10 h of the day then reduced to 29.5°C. After 3 weeks, 10 hens and 5 drakes were euthanized from each room and jejunum and ileum collected for histology. Brains were collected for gene expression analysis using qRT-PCR. Intestinal morphology data were analyzed with two-way ANOVA and diencephalic gene data were analyzed with Kruskal-Wallis test. There was an increase in villi width in the ileum (p = .0136) and jejunum (p = .0019) of HS hens compared to controls. HS drakes showed a higher crypt depth (CD) in the jejunum (p = .0198) compared to controls. There was an increase in crypt goblet cells (GC) count in the ileum (p = .0169) of HS drakes compared to HS hens. There was higher villi GC count (p = .07) in the jejunum of HS drakes compared to controls. There was an increase in the crypt GC density (p = .0054) in the ileum, not jejunum, of HS drakes compared to HS hens. Further, there were no differences in the proopiomelanocortin gene expression in either sex but there was an increase in the expression of neuropeptide Y (NPY) gene in HS hens (p = .031) only and a decrease in the corticotropin releasing hormone gene in the HS drakes (p = .037) compared to controls. These data show that there are sex differences in the effect of HS on gut morphology while the upregulation in NPY gene may suggest a role in mediating response to chronic HS.

Abstract
Colonic motility plays a vital role in maintaining proper digestive function. The rhythmic contractions and relaxations facilitate various types of motor functions that generate both propulsive and non-propulsive motility modes which in turn generate shear stresses on the epithelial surface. However, the interplay between colonic mucus, shear stress, and epithelium remains poorly characterized. Here, we present a colonic computational model that describes the potential roles of mucus and shear stress in both homeostasis and ulcerative colitis (UC). Our model integrates several key features, including the properties of the mucus bilayer and faeces, intraluminal pressure, and crypt characteristics to predict the time-space mosaic of shear stress. We show that the mucus thickness which could vary based on the severity of UC, may significantly reduce the amount of shear stress applied to the colonic crypts and effect faecal velocity. Our model also reveals an important spatial shear stress variance in homeostatic colonic crypts that suggests shear stress may have a modulatory role in epithelial cell migration, differentiation, apoptosis, and immune surveillance. Together, our study uncovers the rather neglected roles of mucus and shear stress in intestinal cellular processes during homeostasis and inflammation.

Abstract
Many existing in vitro digestion systems do not accurately represent the peristaltic contractions of the gastrointestinal system; most of the systems that have physiologically-relevant peristaltic contractions have low throughput and can only test one sample at a time. A device has been developed that provides simulated peristaltic contractions for up to 12 digestion modules simultaneously using rollers of varying width to modulate the dynamics of the peristaltic motion. The force applied to a simulated food bolus varied from 2.61 ± 0.03 N to 4.51 ± 0.16 N (p < 0.05) depending on roller width. Video analysis showed that the degree of occlusion of the digestion module varied from 72.1 ± 0.4% to 84.6 ± 1.2% (p < 0.05). A multiphysics, computational fluid dynamics model was created to understand the fluid flow. The fluid flow was also examined experimentally using video analysis of tracer particles. The model-predicted maximum fluid velocity in the peristaltic simulator incorporating the thin rollers was 0.016 m/s, and the corresponding value measured using tracer particles was 0.015 m/s. The occlusion, pressure, and fluid velocity in the new peristaltic simulator fell within physiologically representative ranges. Although no in vitro device perfectly recreates the conditions of the gastrointestinal system, this novel device is a flexible platform for future gastrointestinal research and could allow for high-throughput screening of food materials for health-promoting properties under conditions representative of human gastrointestinal motility.

Abstract
In this work, simulations of intestinal peristalsis are performed to investigate the intraluminal transport of macromolecules (MMs) and permeation enhancers (PEs). Properties of insulin and sodium caprate (C10) are used to represent the general class of MM and PE molecules. Nuclear magnetic resonance spectroscopy was used to obtain the diffusivity of C10, and coarse-grain molecular dynamics simulations were carried out to estimate the concentration-dependent diffusivity of C10. A segment of the small intestine with the length of 29.75 cm was modeled. Peristaltic speed, pocket size, release location, and occlusion ratio of the peristaltic wave were varied to study the effect on drug transport. It was observed that the maximum concentration at the epithelial surface for the PE and the MM increased by 397 % and 380 %, respectively, when the peristaltic wave speed was decreased from 1.5 to 0.5 cm s-1. At this wave speed, physiologically relevant concentrations of PE were found at the epithelial surface. However, when the occlusion ratio is increased from 0.3 to 0.7, the concentration approaches zero. These results suggest that a slower-moving and more contracted peristaltic wave leads to higher efficiency in transporting mass to the epithelial wall during the peristalsis phases of the migrating motor complex.

Abstract
Small intestine motility and its ensuing flow of luminal content impact both nutrient absorption and bacterial growth. To explore this interdependence we introduce a biophysical description of intestinal flow and absorption. Rooted in observations of mice we identify the average flow velocity as the key control of absorption efficiency and bacterial growth, independent of the exact contraction pattern. We uncover self-regulation of contraction and flow in response to nutrients and bacterial levels to promote efficient absorption while restraining detrimental bacterial overgrowth.
