The Bioaccessibility and Bioavailability of Pentachlorophenol in Five Animal-Derived Foods Measured by Simulated Gastrointestinal Digestion. Foods 2024; 13:1254. Abstract
Pentachlorophenol (PCP) is a ubiquitous emerging persistent organic pollutant detected in the environment and foodstuffs. Despite the dietary intake of PCP being performed using surveillance data, the assessment does not consider the bioaccessibility and bioavailability of PCP. Pork, beef, pork liver, chicken and freshwater fish Ctenopharyngodon Idella-fortified by three levels of PCP were processed by RIVM and the Caco-2 cell model after steaming, boiling and pan-frying, and PCP in foods and digestive juices were detected using isotope dilution-UPLC-MS/MS. The culinary treatment and food matrix were significantly influenced (p < 0.05) in terms of the bioaccessibility and bioavailability of PCP. Pan-frying was a significant factor (p < 0.05) influencing the digestion and absorption of PCP in foods, with the following bioaccessibility: pork (81.37-90.36%), beef (72.09-83.63%), pork liver (69.11-78.07%), chicken (63.43-75.52%) and freshwater fish (60.27-72.14%). The bioavailability was as follows: pork (49.39-63.41%), beef (40.32-53.43%), pork liver (33.63-47.11%), chicken (30.63-40.83%) and freshwater fish (17.14-27.09%). Pork and beef with higher fat content were a key factor in facilitating the notable PCP bioaccessibility and bioavailability (p < 0.05). Further, the exposure of PCP to the population was significantly reduced by 42.70-98.46% after the consideration of bioaccessibility and bioavailability, with no potential health risk. It can improve the accuracy of risk assessment for PCP.

Abstract
Mercury (Hg) contamination on the Brazilian southeast coast has been highlighted, especially in relation to species of commercial importance. This study aimed to quantify the Hg concentration in species of mussels, fish, and crabs obtained from fishing colonies on the beaches of the west and south of the city of Rio de Janeiro, investigate the possible effect of seasonality, sex, and location sampling, and finally, the risk to consumer health in four different age groups. The difference between cooked and raw commercially available mussel samples was also verified. The main results highlight that the fish presented higher levels of Hg and that the mussel samples sold cooked presented lower levels of Hg when compared to the raw ones. For Micropogonias furnieri, Sardinella brasiliensis, and Callinectes spp., the season variable influenced Hg concentrations, while only for Merluccius merluccius was a difference between the sexes identified, with males having the highest values. Although Hg concentrations in animals were below the permitted limit, consumption of all species exceeded the monthly intake limit for this metal. For the hazard quotient (HQ) calculation, most species presented HQ > 1, especially when ingested by the child population. These results are fundamental for designing consumption strategies for these animals, in order to prioritize the acquisition of some species over others, depending on the location and/or season, for each age group, with the aim of maintaining seafood consumption with minimal risk to the population's health.

Abstract
Mercury (Hg) is a global pollutant showing potent toxicity to living organisms. The transformations of Hg are critical to global Hg cycling and Hg exposure risks, considering Hg mobilities and toxicities vary depending on Hg speciation. Though currently well understood in ambient environments, Hg transformations are inadequately explored in non-microbial organisms. The primary drivers of in vivo Hg transformations are far from clear, and the impacts of these processes on global Hg cycling and Hg associated health risks are not well understood. This hinders a comprehensive understanding of global Hg cycling and the effective mitigation of Hg exposure risks. Here, we focused on Hg transformations in non-microbial organisms, particularly algae, plants, and animals. The process of Hg oxidation/reduction and methylation/demethylation in organisms were reviewed since these processes are the key transformations between the dominant Hg species, i.e., elemental Hg (Hg0), divalent inorganic Hg (IHgII), and methylmercury (MeHg). By summarizing the current knowledge of Hg transformations in organisms, we proposed the potential yet overlooked drivers of these processes, along with potential challenges that hinder a full understanding of in vivo Hg transformations. Knowledge summarized in this review would help achieve a comprehensive understanding of the fate and toxicity of Hg in organisms, providing a basis for predicting Hg cycles and mitigating human exposure.

Abstract
This study addresses the effect of various cooking approaches on total Hg (HgT) and total Se (SeT) contents in three predatory fish species. For this purpose, samples of swordfish, dogfish, and tuna from regular French (fish) markets were cooked by boiling, steaming, grilling, and frying, respectively. The levels of HgT and SeT in raw and cooked samples were determined by inductively coupled plasma-mass spectrometry. The data showed a significant increase in HgT and SeT levels between raw and cooked samples (33% of the samples for SeT and 67% for HgT) due to the water loss during the cooking. High intra-species variation related to HgT and SeT levels was found. Considering the level of exposure to HgT through fish consumption and taking also into account the possible protective effect of Se (expressed here via the Se/Hg molar ratio), the safest cooking approach corresponds to grilled swordfish, fried tuna, and steamed dogfish, which show Se/Hg molar ratios of (1.0 ± 0.5), (4.3 ± 4.2), and (1.0 ± 0.6), respectively.

Abstract
This study reports the development and validation of a new analytical method for simultaneous speciation analysis of Se and Hg in fish muscle. For this purpose, four Se species (selenite/Se(IV), selenate/Se(VI), selenomethionine/SeMet, and selenocysteine/SeCys) and two Hg species (inorganic mercury/iHg and methylmercury/MeHg) were extracted simultaneously by microwave-assisted enzymatic hydrolysis and then separated by HPLC in less than 15 min by using a column with both anion and cation exchange mechanisms and a mobile phase consisting of a mixture of methanol 5% (v/v), 45 mM HNO3, 0.015% 2-mercaptoethanol, and 1.5 mM sodium 3-mercapto-1-propanesulfonate. The separated species of Hg and Se were detected online by inductively coupled plasma-mass spectrometry (ICP-MS). The speciation analysis method was validated by means of the accuracy profile approach by carrying out three series of measurements in duplicate on three different days over a time-span of 3 weeks. The limits of quantification (LOQ) are in the range of 0.010-0.013 mg/kg wet weight (ww) for all selenium species, except for Se(IV) (0.15 mg/kg ww), while the coefficient of variation in terms of intermediate reproducibility (CVR) was < 7%. The LOQ for MeHg was 0.006 mg/kg ww, while the CVR was 3%. The method was successfully applied to the analysis of muscle samples from four different fish species: rainbow trout, tuna, swordfish, and dogfish.

Abstract
Human mercury (Hg) exposure is mostly caused by eating fish. However, there are major differences between the measured and predicted mercury concentration on Hg bioavailability. This study investigated the effects of cooking (steaming, baking, frying, marinating, and smoking) and selected components' co-ingestion on Hg bioaccessibility. Baking and frying reduced Hg bioaccessibility compared to the raw sample. The bioaccessible Hg fraction in fish was assessed through in vitro digestion method. Hg bioaccessibility varied from 4.31 to nearly 24.95% and the Hg recovery rate varied from 63.44 to 78.74%. Co-ingested garlic and broccoli with pontic shad had a positive effect on decreasing fish Hg bioaccessibility. The antioxidant activity of co-ingested food items was also calculated and correlated with mercury bioaccessibility. These results highlighted a possible positive role of plant-based foods and other food processing techniques in the bioaccessibility reduction of other chemical contaminants found in food sources.

Abstract
Petroleum activity and the dumping of domestic and industrial sewage are important sources of mercury (Hg) contamination in the aquatic environment. Thus, this article aimed to biomonitor the Hg concentration in fish, mussels, and swimming crabs of commercial importance in southeastern Brazil. The quantifications were carried out over a year to verify the influence of seasonality. Finally, a risk assessment was applied to identify whether the concentrations found could lead to long-term damage to the population. Our results indicate that the contaminations were higher in spring, summer, and winter than in autumn, mainly among fish and swimming crabs. The results of quantification in the animal and estimated monthly intake, despite being below the limit established nationally and internationally, were indicative of risk for these two animals after calculating the Hazard quotient. The highest risk values were attributed to the infant population. Based on the data generated by this work, the consumption of mussels is encouraged throughout the year, to the detriment of the other types of seafood studied, especially during summer, spring, and winter. Our work reinforces the importance of risk assessment for a more reliable understanding of the impact of contaminants in seafood on the population's health.

Abstract
Fish and marine mammals constitute a significant part of the country food diet of many Indigenous communities in Canada. These animals sometimes accumulate essential elements as well as elevated levels of toxic metals. We experimentally assessed how changes in cooking temperature (23-99 °C by boiling) modified elemental concentrations in whitefish muscle and grey seal liver (two organs commonly consumed in some northern communities). Wet and dry elemental concentrations changed linearly as a function of temperature, and two patterns were observed: methylmercury, selenium, and rare earth elements tended to remain associated with the food during cooking, whereas alkali, alkaline-earth metals, and arsenic were significantly transferred to cooking juices. Mass balances indicated that speciation of mercury was stable during cooking. Because elements generally behaved similarly as those of their periodic table group or their ecotoxicological classes (A, B, intermediate), we propose that elemental behavior during cooking is partly a function of chemical affinity, and this relationship can be used to predict the behavior of data-poor elements of emerging concern, such as technology-critical elements. Furthermore, the marked increases and decreases in elemental concentrations during cooking (e.g., -14% As and +39% Se in whitefish; -22% Cd and +55% Hg in seal liver, on a wet weight basis) should be considered when assessing risk because current exposure models usually only consider elemental concentrations in raw food.

Abstract
Marine traditional Chinese medicines (MTCMs) hold a significant place in the rich cultural heritage in China. It plays an irreplaceable role in addressing human diseases and serves as a crucial pillar for the development of China's marine economy. However, the rapid pace of industrialization has raised concerns about the safety of MTCM, particularly in relation to heavy metal pollution. Heavy metal pollution poses a significant threat to the development of MTCM and human health, necessitating the need for detection analysis and risk assessment of heavy metals in MTCM. In this paper, the current research status, pollution situation, detection and analysis technology, removal technology and risk assessment of heavy metals in MTCM are discussed, and the establishment of a pollution detection database and a comprehensive quality and safety supervision system for MTCM is proposed. These measures aim to enhance understanding of heavy metals and harmful elements in MTCM. It is expected to provide a valuable reference for the control of heavy metals and harmful elements in MTCM, as well as the sustainable development and application of MTCM.

Abstract
The main goal of the present study is to determine the sources of methylmercury (MeHg) for high fish-consumption populations with the Portuguese population as showcase, as Portugal is the EU country with the highest fish consumption per capita (2019: 59.91 kg year-1). Since limited information is available on the effective levels of mercury after culinary treatments, cooked and raw codfish (Gadus morhua), hake (Merluccius merluccius), octopus (Octopus vulgaris), horse mackerel (Trachurus trachurus) and sardine (Sardina pilchardus) were considered. The mercury concentration ranking Hake > Horse mackerel > Codfish > Octopus > Sardine was observed in all situations (cooked and raw samples) for both MeHg and total mercury (T-Hg). The gathered results reinforce the general assumption that the loss of moisture during cooking increases MeHg and T-Hg concentrations in fish, but the idea that MeHg in fish muscle tissue represents the bulk of T-Hg cannot be generalised, as our study determined a MeHg/T-Hg ratio of 0.43 for grilled sardines.

Abstract
Guanabara Bay (GB) is a highly contaminated estuarine system and an important fishing area in Southeastern Brazil. In this regard, knowledge concerning the association of certain contaminants in seafood to abiotic factors and human health risk assessments is still understudied. Therefore, this study aimed to quantify nine toxic elements in highly consumed crabs, shrimp, and squid, and associate the results with abiotic factors. A human health risk assessment was also performed. Our findings indicate that crabs are the main bioaccumulators. Transparency and depth were noteworthy for all three taxonomic groups. In general, contaminant concentrations were below the limits established by different international agencies, except for As, which was higher than the Brazilian limit (1 mg kg-1). However, the Hazard Index identified risks to consumer health for the ingestion of seafood. This study emphasizes the importance of jointly evaluating different toxic elements, for a more accurate health risk assessment.

Abstract
Fish are vulnerable to environmental pollutants such as polycyclic aromatic hydrocarbon and heavy metals. As one of the most commonly applied processing methods, the smoking of different species has been applied globally. Hence, this study aims to investigate the smoking process on the polycyclic aromatic hydrocarbon and elemental accumulation of the five different species (rainbow trout, Atlantic bonito, horse mackerel, sea bass, and Atlantic bluefin tuna) which are commonly processed and traded in the smoked fish industry. The processing yield, water holding capacity, and pH were also investigated. The results revealed that the proximal differences among fish species influence the water holding capacity, processing yield, and pH which are very important for process sustainability and the quality of the end product. The main finding was the proximal composition impact on the accumulation of both PAHs and heavy metals at different levels. While all of the tested samples were below the maximum permissible limit, some of the heavy metals, especially toxic elements, were found above the acceptable limit. Horse mackerel is determined to be the species most vulnerable to PAHs and heavy metal accumulation.

Abstract
BACKGROUND Fish are the primary source of protein and docosahexaenoic acid (DHA) for pregnant women and children, but methylmercury (MeHg) pollution is the potential hazard of fish consumption. In risk assessments, the bio-accessibility of MeHg is usually assumed to be 100%, which could lead to overestimation of dietary exposure. METHOD An existing PBTK model was adapted to estimate parameters of the bio-accessibility based on MeHg exposure data from a cohort of 397 Chinese pregnant women. The posterior distributions of parameters were determined by using the ABC - MCMC. RMSEP and Spearman's rank correlation coefficients (Rho) were calculated to determine the goodness of model fitting. The Monte Carlo analysis was performed for the parameter distributions to estimate the model variability. RESULT The median of daily MeHg intake and maternal MeHg levels were 0.018 μg/kg bw and 3.01 μg/kg in the early and middle terms of pregnancy. The estimated bio-accessibility of freshwater fish, marine fish and others were 46.1, 17.3 and 58.2%, separately. The RMSEP improved from 11.18 to 2.54 and the Rho improved from 0.19 to 0.22 after bio-accessibility optimization. The model variability was estimated to be 2.6. CONCLUSION The bio-accessibility estimated in this study was comparable to that determined in previous in vitro studies. The optimized model could improve the prediction performance on the MeHg body burden by dietary exposure.

Abstract
Herein, we developed a paper-based smart sensing chip for the real-time, visual, and non-destructive monitoring of food freshness using a ratiometric aggregation-induced emission (AIE) luminogen (i.e., H+MQ, protonated 4-(triphenylamine)styryl)quinoxalin-2(1H)-one) as pH sensitive indicators. Upon exposure to amine vapors, the deprotonation of H+MQ occurs and triggers its color change from blue to yellow, with the fluorescence redshift from blue to amaranth. Consequently, we successfully achieved the sensitive detection of ammonia vapors by recording the bimodal color and fluorescence changes. Given the high sensitivity of H+MQ to ammonia vapor, a paper-based smart sensor chip was prepared by depositing H+MQ on the commercial qualitative filter paper through a physical deposition strategy. After being placed inside the sealed containers, the developed H+MQ-loaded paper chip was applied to the real-time monitoring of biogenic amine contents according to its color difference and ratio fluorescence change. The detection results were further compared with those obtained by the high-performance liquid chromatography method, which verified the feasibility of the designed paper chip for the food spoilage degree evaluation. Briefly, this work indicates that the designed H+MQ-loaded paper chip could be a promising approach for improving food freshness monitoring.

Abstract
The critical health risks caused by cadmium (Cd) via dietary exposure are commonly assessed by detecting Cd concentrations in foods. Differently, in this study, the bioaccessibility and bioavailability of Cd in major local harvests were introduced to assess the dietary exposure of local residents from a high-level environmental Cd region. The results indicated that certain Cd was released into the digestive juice after in vitro digestion with a bioaccessibility of 20-63% for rice and 3-32% for leafy vegetables, and the released portion was partially absorbed by Caco-2 cells with a bioavailability of 2-21% for rice and 0.2-13% for leafy vegetables. The results obtained from the toxicokinetic model revealed that the predicted urinary Cd values from the estimated daily intake (EDI) of Cd, which accounted for bioaccessibility and bioavailability, were consistent with the actual measured values, and the EDIs were considerably lower than the acceptable daily intake. This suggests that the bioaccessibility and bioavailability adjusted dietary Cd exposure should be more precise. The key issues addressed in our study implores that a potential health risk cannot be neglected in people with high consumption of rice from high-level zone.

Abstract
Mercury (Hg) is a well-known toxicant which enters the marine environment by both natural and anthropogenic sources. Consumption of fish and other seafood that contain methylmercury (MeHg) is a leading source of Hg exposure in humans. Considerable efforts have been made to mitigate the Hg presence and reduce its risks to humans. In this review the acknowledged methods of mitigation are summarized such as regulation and maximum allowable limits, and culinary treatments. In addition, selected industrial level trials are reviewed, and studies on Hg intoxication and the protective effects of the essential trace element, selenium (Se), are discussed. In view of the available literature, Hg reduction in fish and other seafood on a large industrial scale still is largely unsuccessful. Hence, more research and further attempts are necessary in order to better mitigate the Hg problem in fish and other seafood products.

Abstract
Arsenic, cadmium, copper, lead, and zinc concentrations in the edible part of wild and farmed Sparus aurata from Algerian coastal were determined. The highest concentrations of cadmium (0.0078 mg kg-1 wet weight), copper (0.98 mg kg-1 w.w), and zinc (5.1 mg kg-1 w.w) were recorded in farmed sea bream, whereas the highest arsenic (5.02 mg kg-1 w.w) and lead (0.006 mg kg-1 w.w) levels were registered in wild one. The statistical analysis (Friedman test, p < 0.05) indicated that the origin of fish (wild, farmed in a cage, and farmed in raceway) has relevance to the distribution of metal. Estimated weekly intake of inorganic arsenic, cadmium, and lead for a 72.5-kg person consuming Sparus aurata from Algeria does not exceed 1% of the WHO/JECFA recommended rate for all metals, certainly due to the limited consumption of seafood products by the local population. The total target hazard index is far less than "one" 1, and the carcinogenic risk for arsenic exceeds the acceptable value of 10-5. Based on the result of this study, the potential risk to human health from the consumption of contaminate farmed sea bream (in the cage) should be considered.

Abstract
Seafood has been generally considered to be the main diet exposure source of metal(loid)s. We evaluated health risk of mercury (Hg), arsenic (As), cadmium (Cd), lead (Pb), chromium (Cr), nickel (Ni), copper (Cu), and zinc (Zn) through consumption of cooked seafood based on bioaccessibility, which was obtained by physiologically based extraction test method. Results showed that cooking practices could decrease metal(loid)s concentration from seafood (by 6.0-45.7%). Metal(loid)s release from seafood in this study followed the descending order of Hg > Zn > Ni > Cd > Pb > As > Cu > Cr. On average, cooking lowered the bioaccessibility of As, Hg, Cd, Pb, Ni, Cr, Cu, and Zn by 15.2, 26.1, 30.9, 30.7, 25.7, 31.2, 17.6, and 22.4%, respectively. Health risk calculation results showed that Cr, Ni, and Zn in seafood species in this study were within the human health benefits range. Hg, Cd, Pb, and Cu exposure from cooked seafood was within the safe dose. However, we found that there is a potential of having cancer (especially bladder and lung cancer) for people exposure to iAs from seafood based on bioaccessible contents the first time.

Abstract
Consumption of mercury (Hg) contaminated rice can be a major environmental health issue but the toxicokinetics is not well known. Hg isotopes have been shown to be good tracers in studying Hg exposure and metabolic processes. We established a Hg mass balance and Hg isotope model in rats fed with Hg contaminated rice (THg 51.3 ng/g; MeHg 25 ng/g) for 90 days to investigate Hg toxicokinetics. Overall 80% of feeding THg was recovered in rat body and excrement, while the excrement accounted for 55% of total observed THg in rats. Feces were the main route of Hg elimination in rats, while urinary excretion was negligible. However, only 32% of utilized MeHg was recovered in rats, indicating significant demethylation of MeHg in rat body. Positive net fractionations of δ202Hg (relative to the feeding rice) were observed in hair and blood samples (1.21‰ and 1.25‰, respectively), which have similar trend with the results obtained in human hair study, exhibiting higher δ202Hg values (2‰- 3‰) than consumed fish and rice. Most importantly, we observed negative net fractionations in feces (-0.44‰), which confirmed the missed Hg with negative δ202Hg signal. We concluded that mass balance and Hg isotope are useful tools for quantifying toxicokinetics of Hg. Demethylation of MeHg in the intestine were the important detoxification process in rat body characterizing with negative net Hg fractionations in feces.

Abstract
INTRODUCTION mercury exposure is recognized as a worldwide public health concern. However, the effect of long-term exposure to low-doses of this heavy metal is still subject to debate. Due to the use of mercury in dental amalgam, dental health care professionals are chronically exposed to low-doses of this metal. In this context, we have conducted a descriptive cross-sectional survey among liberal dentists in two regions of the center of Morocco. In parallel, the global health status of participants was investigated to assess the relevance of a subsequent etiological survey. METHODS data were collected through a self-reported questionnaire. Occupational exposure of dentists to mercury was evaluated based on their use of dental amalgam. Moreover, the other common factors increasing the background pollution or inducing exposure peaks were also investigated. On the other hand, smoking, vaccination, fish consumption, and the number of dental amalgam in mouth were considered as non-occupational exposure sources. Finally, the self-reported global health problems of participants were collected. RESULTS 192 dentists were included in the present study. Seventy-six percent (76.04%) of them declared using dental amalgam in their practice. Moreover, the presence of dental amalgam in mouth was identified as the main non-occupational source of exposure to mercury (63.45% of participants). Finally, most of participants (46.35%) have expressed neuropsychological complaints. CONCLUSION altogether, our results revealed a real mercury exposure in the studied population. Thus, effective preventive measures should be promoted to minimize the mercury exposure in dental offices. Moreover, an etiological study will be of great interest to reveal the impact of mercury exposure in this population.
