Abstract
Halal and kosher slaughter have given the utmost importance to the sharpness of knives during the slaughter of animals. A sharp knife of appropriate dimension (blade length) makes slaughter less painful during neck severance and facilitates desirable bleeding. The role of knife sharpness has not been given due credit from an animal welfare perspective and is likely ignored by the people involved in slaughterhouses. A neat, clean, and efficient neck cut by an extremely sharp knife reduces the pain. It improves the bleeding out, thus making animals unconscious early without undergoing unnecessary pain and stress. It also helps in improving meat quality and food safety. A slight incremental improvement in knife sharpness could significantly improve the animal welfare, productivity, efficiency, and safety of meat plant workers. The present review critically analyzed the significance of knife sharpness in religious slaughter by reducing stress and pain and improving meat quality and food safety. The objective quantification of knife sharpness, proper regular training of slaughterers, and slow slaughter rate are the challenges faced by the meat industry.

Abstract
The main objective of this research was to carry out a comparative study between different types of slaughter in beef cattle with and without stunning. In addition, the hygienic quality of the obtained meat was determined through microbiological analysis and the animal welfare at the time of slaughtering was assessed by means of physiological parameters. A total of 52 blood samples collected at the slaughterhouse during slaughter (10 for each type of slaughter: regular, halal, and halal with stunning; 10 at the time of resting; and 12 from rotating box slaughter) were analysed for physiological parameters indicating animal welfare status, namely, glucose, cortisol, lactate dehydrogenase (LDH) and creatine kinase (CK). In addition, the meat from 30 of the above animals was analysed for aerobic mesophilic bacteria, enterobacteria and coliforms. Moreover, a radiological study of the possible skull damage due to the non-penetrative captive bolt used at the time of stunning in the halal rite slaughter was carried out. A significance difference (p < 0.05) in the microbiological counts per type of slaughter was observed. It was proven that the amounts of glucose, LDH, CK, and cortisol in plasma were influenced (p < 0.05) by the type of slaughter. The halal rite slaughter using stunning with a non-penetrative captive bolt resulted in the best hygienic quality of meat and obtained the lowest values for all animal welfare biomarkers.

Abstract
BACKGROUND While most cattle and sheep in the United Kingdom are stunned before slaughter, non-stun methods are permitted to supply meat to specific consumers. This study aimed to identify the existing literature that compared animal welfare indicators during stun and non-stun slaughter, using a scoping review framework. METHOD Following a structured search strategy, including the establishment of a PICO (population, intervention, comparator and outcomes) question, a comprehensive literature search of the CAB Abstracts, MEDLINE and PubMed databases, was conducted. A total of 962 papers were identified, of which 16 were selected for data extraction. RESULTS Fourteen papers concluded that welfare at slaughter was negatively impacted at non-stun slaughter in comparison to stun slaughter; two papers were inconclusive. Welfare indicators identified included biochemical parameters, brain activity and visual signs of consciousness. Limitations regarding inconsistent restraint method, neck cut position and non-standardised measures of welfare at slaughter are highlighted. CONCLUSIONS This study provides further evidence that stunning is an effective method to improve the welfare of sheep and cattle at slaughter. Animal welfare advisors, politicians, religious communities and others interested in animal welfare could use the findings to further discuss and establish new dialogues for producing updated guidance on animal welfare at slaughter.

Abstract
The killing of cattle for human consumption (slaughtering) can take place in a slaughterhouse or on farm. The processes of slaughtering that were assessed for welfare, from the arrival of cattle until their death (including slaughtering without stunning), were grouped into three main phases: pre-stunning (including arrival, unloading from the truck, lairage, handling and moving of cattle); stunning (including restraint); and bleeding. Stunning methods were grouped into two categories: mechanical and electrical. Twelve welfare consequences that cattle may be exposed to during slaughter were identified: heat stress, cold stress, fatigue, prolonged thirst, prolonged hunger, impeded movement, restriction of movements, resting problems (inability to rest or discomfort during resting), social stress, pain, fear and distress. Welfare consequences and their relevant animal-based measures are described. In total, 40 welfare hazards that could occur during slaughter were identified and characterised, most of them related to stunning and bleeding. Staff were identified as the origin of 39 hazards, which were attributed to the lack of appropriate skill sets needed to perform tasks or to fatigue. Measures to prevent and correct hazards were identified, and structural and managerial measures were identified as those with a crucial role in prevention. Outcome tables linking hazards, welfare consequences, animal-based measures, origin of hazards, and preventive and corrective measures were developed for each process. Mitigation measures to minimise welfare consequences are proposed.

Abstract
Only some animal species could be transformed into ḥalāl salami and the raw meat must be obtained from ritually slaughtered animals. Several scientific studies have been conducted on ritual slaughtering practices and manufacturing of meat products for Jewish and Muslim religious communities; furthermore, many projects have been funded by the European Community on this topic. The authenticity and traceability of meat is one of the priorities of ḥalāl food certification systems. The pig matrix (meat and/or lard) may be fraudulently present in ḥalāl processed meat, as well as salami, for both economic and technological purposes; in fact, the use of these raw materials reflects the easier availability and their lower cost; furthermore, it allows manufacturers to obtain final products with better quality (sensory properties) and stability (especially with respect to oxidative reactions). The aim of this review is to discuss the qualitative and technological aspects of ḥalāl raw meat for dry fermented sausages (salami); moreover, this study focuses on the most recent studies carried out on the certification system and on the analytical methods performed in order to solve problems such as fraud and adulteration of ḥalāl salami and other halal meat foods.

Abstract
Simple Summary False aneurysm of the severed arteries is a potential concern in animals as it could extend the duration of brain function before they die. Indeed, false aneurysm formation in the carotids and a slow rate of blood loss may extend the period of consciousness during slaughter without stunning. The aim of this study was to monitor the development of false aneurysms in animals slaughtered using Halal procedures and to evaluate the possible link between the onset of false aneurysm, the extension of the bleeding phase, and the persistence of signs of consciousness in the animal. We analysed, also using a histological test, the correlation between false aneurysms and the location of the cut made by the operator at the neck, which varied between the first and the fourth cervical vertebrae. Performing the cut at the first cervical vertebra reduced false-aneurysm formation and decreased the period of consciousness of Halal-slaughtered animals without pre-stunning. This could prevent unnecessary suffering, welfare abuse, and the failure of properly bleeding. Abstract This study evaluated the occurrence of false aneurysms and reflexes in bovines, associated with the point along the neck where the cut was performed. The survey was carried out on a total of 1200 male beef cattle, belonging mainly to the Charolais and Limousin breeds, aged between twelve and twenty-four months. In the slaughterhouse, three operators, identified by convention as Operator C4, Operator C2, and Operator C1, performed the Halal slaughtering. Each operator carried out the slaughter of 400 animals and, on the basis of his own professional training, performed the cutting of the vessels at different points along the neck: Operator C4 between the third and fourth cervical vertebrae; Operator C2 at the level of the second cervical vertebra; and Operator C1 at the first cervical vertebra. The occurrence of false aneurysms was assessed on the basis of the different cutting site used by the three operators. Then, the evaluation of consciousness indicators, that is, rhythmic breathing and eye response, closely related to a slow bleeding process and to a delayed loss of brain function, was carried out 90 s post-bleeding. The group of cattle slaughtered by Operator C4 had a prevalence of false aneurysms of 10.25%. Conversely, the other two groups of cattle slaughtered by Operators C2 and C1 showed false aneurysm formation in 7.25% of each case. Further, 37.5% of the animals (18 for Operator C4, 17 for Operator C2, and 16 for Operator C1) with signs of consciousness 90 s after sticking were consequent to the onset of false aneurysms and, more precisely, they were owing to a late second cut of the vessel carried out by the operator, when false aneurysms occurred. The results of the research showed that the cutting point chosen by the operator is a key element in determining the onset of false aneurysms.

Abstract
Simple Summary Resource-limited farmers under communal farming environments slaughter goats for cultural beliefs and meat consumption using indigenous slaughter methods. These methods include transverse neck incision (TNI), piercing with a short spear on the suprasternal notch targeting the heart (SNP), and piercing with a short spear under-shoulder-blade chest-floor point-of-elbow (CFP) targeting the heart to induce insensibility and death. Unsatisfied animal welfare institutes consider these slaughter methods as cruel because goats are slaughtered while sensible; therefore, experiencing pain and suffering before death. In this study, we slaughtered castrates using the above-mentioned methods and collected behavioural responses before slaughter and while bleeding, the total blood expelled during bleeding, the time it took for the blood to be expelled, the time it took the goats to lose sensibility, and time to lose heartbeat. We found that goats slaughtered using CFP lost sensibility faster. We concluded that goats slaughtered using the CFP method experienced less pain and suffering during slaughter and died faster. Abstract Resource-limited farmers slaughter goats without stunning. The objective of the current study was to assess the influence of indigenous slaughter methods used by resource-limited households on slaughter stress-related behaviour, bleeding efficiency, and time to post-slaughter trauma of goats. Thirty clinically healthy castrated Nguni goats aged between 15 to 18 months old with body condition score of three were randomly assigned to three non-stunning informal slaughter methods, (1) transverse neck incision (TNI); (2) suprasternal notch piercing in the direction of the heart (SNP); and (3) under-shoulder-blade chest-floor point-of-elbow (CFP) sticking in the direction of the heart. Ten goats were slaughtered using each method. Slaughter method had no effect (p < 0.05) on stress-related behaviour. Rate of bleeding efficiency was highest (p < 0.05) for SNP slaughtered goats. Time to lose sensibility was lowest (p < 0.05) for goats slaughtered using the CFP (55 s) when compared to SNP (68 s) and TNI (75 s) slaughter methods. Time to post-slaughter trauma was highest (p < 0.05) for SNP (247 s) and lowest for TNI (195 s). These findings suggest that goats slaughtered with SNP experienced rapid death when compared to TNI and SNP slaughter methods. It was concluded that the SNP slaughter method is the most effective slaughter technique because it is associated with higher bleeding efficiency and lower time to lose sensibility before death.

Abstract
This study quantified the welfare of 423 cattle and water buffalo in four Bangladeshi slaughterhouses to identify facility and species-specific factors that influence welfare. The majority of animals arrived at the slaughterhouse with injuries, signs of dehydration and oculo-nasal discharge. During slaughter, buffalo experienced more stabbing at the throat (21%), compared to local cattle (10%, P = 0.011), and significantly more cuts to the neck during slaughter (5.1 ± 1) than Hariana (3.9 ± 1) or local cattle (3.6 ± 1.1; P < 0.001). These results indicated that welfare compromise is common to all species, but that the risk to buffalo was greater. Partial severing of carotid arteries was common and affected time to unconsciousness. There was a statistical interaction between facility and species on the time taken for animals to reach unconsciousness, suggesting that welfare within a location could be improved; however, animal welfare was compromised at all facilities. Immediate welfare improvements could be made by training for effective halal slaughter, and future welfare improvements could be gained by improved facility infrastructure for restraint and halal approved pre-slaughter stunning.

Abstract
In the European Union, slaughter without stunning is allowed for religious slaughter to obtain halal and kosher meat. Especially in the case of Jewish slaughtering, cuts which are not deemed as kosher are sold to regular market without any specific labelling. This survey, conducted in Tuscany in 2016, aimed to quantify the carcasses rejected in relation to the type of religious slaughter. 656 bovines were slaughtered without stunning: 538 (82%) for halal and 118 (18%) for kosher. All carcasses slaughtered by the Islamic procedure (dhabiha) were considered halal, while 77.1% of carcasses slaughtered by the Jewish procedure (shechita) did not pass the approval. Carcasses were rejected after chest cavity inspection (50%) and after the lungs control (50%). This study provides an important insight in this field and postulates how to amalgamate the concepts of freedom of religion, as enshrined by the Charter of Fundamental Rights of the EU, with consumer rights and animal welfare.

Abstract
The purpose of this study was to evaluate the impact of nonpenetrating captive bolt stunning followed by electrical induction of cardiac arrest on veal calf welfare, veal quality, and blood yield. Ninety calves from the same farm were randomly assigned to 1 of 2 treatment groups in a balanced unpaired comparison design. The first treatment group (the "head-only" method-application of the pneumatic nonpenetrating stun to the frontal plate of the skull at the intersection of 2 imaginary lines extending from the lateral canthus to the opposite poll [CONTROL]) was stunned with a nonpenetrating captive bolt gun ( = 45). The second group ( = 45) was stunned with a nonpenetrating captive bolt gun followed by secondary electrical induction of cardiac arrest (the "head/heart" method-initial application of the pneumatic nonpenetrating captive bolt stun followed by 1 s application of an electrical stun to the ventral region of the ribcage directly caudal to the junction of the humerus and scapula while the stunned calf was in lateral recumbence [HEAD/HEART]). Stunning efficacy was the indicator of animal welfare used in this study. All calves were instantly rendered insensible by the initial stun and did not display common indicators of return to consciousness. For meat quality evaluation, all samples were collected from the 12th rib region of the longissimus thoracis. Meat samples were evaluated for color, drip loss, ultimate pH, cook loss, and Warner-Bratzler shear force. The L* values (measure of meat color lightness) were darker ( < 0.05) in the HEAD/HEART group (45.08 ± 0.72) than the CONTROL group (47.10 ± 0.72). There were no differences ( > 0.05) observed in a* (redness) and b* (yellowness) values between treatments. No differences ( > 0.05) were observed in drip loss, ultimate pH, cook loss, and Warner-Bratzler shear force. The blood yield from the CONTROL group (7,217.9 ± 143.5 g) was greater ( < 0.05) than that from the HEAD/HEART group (6,656.4 ± 143.5 g). Overall, the data indicated no difference between the CONTROL and HEAD/HEART groups with regard to animal welfare because the initial stun was effective in all calves. However, longissimus thoracis L* and blood yield were negatively impacted by the HEAD/HEART method. The data in this study suggest that secondary induction of cardiac arrest is not necessary with effective nonpenetrating captive bolt stunning in veal calves.

Abstract
This review describes the neurobiological mechanisms that are relevant for the stunning and killing process of animals in the abattoir. The mechanisms underlying the loss of consciousness depend on the technique used: mechanical, electrical or gas stunning. Direct exsanguination (without prior stun) causes also a loss of consciousness before inducing death. The underlying mechanisms may involve cerebral anoxia or ischemia, or the depolarisation, acidification and/or the destruction of brain neurons. These effects may be caused by shock waves, electrical fields, the reduction or arrest of the cerebral blood circulation, increased levels of CO2 or low levels of O2 in the inhaled air, or the mechanical destruction of neurons. The targeted brain structures are the reticular formation, the ascending reticular activating system or thalamus, or the cerebral hemispheres in a general manner. Some of the techniques, when properly used, induce an immediate loss of consciousness; other techniques a progressive loss of consciousness.

Abstract
This study examined the effect of neck cut position on the time to physical collapse in upright restrained halal slaughtered cattle (n = 644). Time to collapse was used as an indirect indicator of the early stages of onset of unconsciousness. Cattle were slaughtered with either a conventional low (LNC) (n=561) or a high neck cut (HNC) (n = 83). Mean time to final collapse was higher in the LNC compared to HNC group (18.9 ± 1.1s and 13.5 ± 1.3s respectively (P < 0.01)). The mean false aneurysm scores were higher in the LNC cattle (0.8 ± 0.0) compared to the HNC (0.6 ± 0.1) (P < 0.01). Animals that took > 20s to final collapse had larger false aneurysms. In summary, the HNC reduced the mean time to final collapse and the frequency of animals that took longer than 20s to collapse.

Abstract
The time to onset of arrested blood flow and the size of false aneurysms in the severed carotid arteries were assessed in 126 cattle during halal slaughter without stunning. Thirty six cattle (29%) showed early arrest of blood flow. In 6%, both the left and right carotid arteries in the same animal stopped bleeding before 60s had elapsed following the neck cut. The time to early arrested blood flow was on average 21s, and this was accompanied by enlargement with false aneurysms which occluded the arteries. In the arteries which were still bleeding at 60s after the neck was cut the artery size was normal. Based on comparative data from different slaughter premises it appeared that making the cut in the neck at the first cervical vertebra instead of the second to fourth cervical vertebrae reduced the frequency of false aneurysm formation and early arrested blood flow. This was confirmed in a separate controlled trial where 100 cattle were stunned with a captive bolt and the arteries were examined following neck cutting at either the C1 or C3 positions.
