The complexities of decision-making in food waste valorization: A critical review

The efficient utilization of food waste (FW) resources through Food Waste Valorization (FWV) has received increasing attention in recent years. Various decision-making studies have been undertaken to facilitate FWV implementation, such as the studies on decision-making framework and FWV technology assessment. Food waste hierarchy is a widely discussed framework in FW management, but it was found too simplified and does not always contribute positively to environmental sustainability. Moreover, decision-making studies in FWV often focus on specific aspects of the food system and employ distinctive decision-making approaches, making it difficult to compare the results from different studies. Therefore, our literature review is conducted to provide a comprehensive understanding of FWV decision-making. This study identifies what decisions are needed, and three levels of decisions are revealed: system-level, FW stream-level, and FWV option-level. The assessment approaches and criteria used to support decision-making in FWV are also collected and analyzed. Building upon these findings, an hourglass model is synthesized to provide a holistic illustration of decision-making in FWV. This study untangles the complexities of FWV decision-making and sheds light on the limitations of current studies. We anticipate this study will make more people realize that FWV is a multidisciplinary issue and requires the collective participation of researchers, practitioners, policymakers, and consumers. Such collective engagement is essential to effectively address practical challenges and propel the transition of the current food system toward a more resource-efficient paradigm.

Triple Bottom-Line Evaluation of the Production of Animal Feed from Food Waste: A Life Cycle Assessment

This study applies a triple bottom line (TBL) framework that incorporates the environmental, economic, and social impacts of producing animal feed from food waste (FW) collected at the post-consumption stage of the food supply chain. The environmental bottom line (BL) is conducted using life cycle assessment (LCA), the economic BL is calculated using the net present value (NPV), while the social BL is assessed using the strengths, weaknesses, opportunities, and threats (SWOT) analysis. The results within the environmental BL indicate that at a 13.8% recovery rate, animal feed produced from a ton of FW saves 0.33 m² equivalent of crop land but requires 3.5 tons of water compared to 0.9 tons and 0.78 tons for landfilling and incineration for FW treatment respectively. In addition, the production of animal feed from one ton of FW emits 1064.6 kg CO₂-eq, compared to 823.6 kg CO₂-eq using landfilling and 781.9 kg CO₂-eq when incinerated. The economic BL indicates a profit of $3.65/ton from incinerating FW, compared to cost of $93.8 and $137.6 per ton for animal feed production and landfilling of FW respectively. The analytic hierarchy process (AHP) is applied to integrate the TBL scores and rank the scenarios accordingly. AHP recommends animal feed and incineration over landfilling by a fourfold higher score. A simulation using an augmented simplex lattice mixture (ASLM) design recommends incineration with energy recovery over animal feed production from FW collected at the consumer stage. Sensitivity analysis indicates that the production of animal feed from FW is environmentally feasible if the safe recovery rate exceeds 48%, is which possible for FW collected at early stages of the food supply chain.

Analysis of the Food Loss and Waste Valorisation of Animal By-Products from the Retail Sector

The meat industry generates a large amount of animal by-products not only derived from the slaughter process but also due to the losses and waste of meat products along the supply chain, contributing to the world’s food loss and waste problem. Yearly, 1.7 Mt of meat in the European retail sector and 20% of meat for consumption is wasted in this sector of the supply chain. Therefore, the aim of this paper was to find and evaluate alternatives for the valorisation of agri-food residues, more specifically the meat waste from the food retail sector, through a technological perspective. Thus, we delve into the industrial processes already implemented and the emerging procedures that use muscle, bones and fats by-products from poultry, cattle and pork as the main raw materials in order to identify and characterise them. The results indicate that in addition to the current destinations—landfill, incineration and the rendering process—these animal by-products can be incorporated in the production of biodiesel, food formulations, pharmaceuticals, fertilisers and biogas through an industrial symbiosis approach. Consequently, the several valorisation processes and procedures identified not only suggest an increase in concern about the impacts of the disposal of these materials, but also highlight the potential associated with the use of animal by-products as raw material to obtain added-value products.

Management of meat by- and co-products for an improved meat processing sustainability

Large amounts of meat by- and co-products are generated during slaughtering and meat processing, and require rational management of these products for an ecological disposal. Efficient solutions are very important for sustainability and innovative developments create high added-value from meat by-products with the least environmental impact, handling and disposal costs, in its transition to bioeconomy. Some proteins have relevant technological uses for gelation, foaming and emulsification while protein hydrolyzates may contribute to a better digestibility and palatability. Protein hydrolysis generate added-value products such as bioactive peptides with relevant physiological effects of interest for applications in the food, pet food, pharmaceutical and cosmetics industry. Inedible fats are increasingly used as raw material for the generation of biodiesel. Other applications are focused on the development of new biodegradable plastics that can constitute an alternative to petroleum-based plastics. This manuscript presents the latest developments for adding value to meat by- and co-products and discusses opportunities for making meat production and processing more sustainable.
