Abstract
BACKGROUND Industrial starch hydrolysis allows the production of syrups with varying functionality depending on their Brix value and dextrose equivalent (DE). As the current methods for evaluating these products are labor-intensive and time-consuming, the objective of this study was to investigate the potential of near-infrared (NIR) spectroscopy for classifying the different tapioca starch hydrolysis products. RESULTS NIR spectra of samples of seven products (n = 410) were recorded in transflectance mode in the 12 000-4000 cm-1 range. Next, orthogonal partial least squares (OPLS) regression models were built to predict the Brix and DE values of the different samples. To classify the different starch hydrolysis products, support vector machines (SVM) were trained using either the raw spectra or latent variables (LVs) obtained from the OPLS models. The best classification accuracy was obtained by the SVM classifier based on the LVs from the OPLS model for DE prediction, resulting in 95% correct classification over all classes. CONCLUSION These results show the potential of NIR spectroscopy for classifying tapioca starch hydrolysis products with respect to their functional properties related to the Brix and DE values. © 2024 Society of Chemical Industry.

Abstract
Rearing scale may influence black soldier fly (BSF) larvae traits when they are fed on a single diet, but different feeding substrates have not been tested yet. This study evaluated the effects of wheat starch processing by-products-based diets on growth performance, bioconversion efficiency, and nutritional profile of BSF larvae reared in different scales. Four diets (D1 and D2 [isonitrogenous, isolipidic and isoenergetic]; D3 and D4 [displaying 1:1 and 1:2 as protein to carbohydrate ratios, respectively]) were tested at 3 rearing scales (4 replicate boxes/diet, with a constant volume [0.84 cm3]/larva and feed [0.7 g]/larva): 1) small (S; 12 × 12 cm, substrate height: 4 cm, 686 6-day-old larvae (6-DOL)/box), 2) medium (M, 32 × 21 cm, substrate height: 7 cm, 5 600 6-DOL/box), and 3) large (L, 60 × 40 cm, substrate height: 7 cm, 20 000 6-DOL/box). Larval weight was recorded at the beginning of trial and every 4 days, and growth rate (GR), specific growth rate (SGR), feed conversion ratio (FCR), survival, bioconversion efficiency corrected for residue (BER), reduction rate (RR), and waste reduction index (WRI) calculated at the end of larval growth (frass DM ≥ 55%). Substrate pH, T and height were measured at the beginning, every 4 days, and end of trial. Larval proximate composition was analysed at the end of trial. Data were analysed by generalised linear mixed model (SPSS software, P < 0.05). The D1 larvae showed higher weight, GR, SGR and WRI (along with higher substrate T) than D2 at M scale, while increased SGR and FCR - as well as decreased survival, RR and WRI - were observed in D2 larvae at S scale (P < 0.05). Larval CP and ether extract (EE) contents were influenced by M and L scales only, being higher in D2 group than in D1 (P < 0.001). Differently, decreased ash was recorded in D2 larvae when reared at S and M scales, while L scale revealed higher ash in D2 group than D1 (P < 0.001). The D3 larvae displayed greater weight, SGR, survival, RR and WRI (along with greater substrate T) than D4 at M scale, with increased survival and substrate T being also highlighted in L scale (P < 0.05). The D3 larvae also showed lower DM and EE - as well as higher CP - than D4 at all the rearing scales (P < 0.001). In conclusion, D1 and D3 led to better BSF larval growth performance, bioconversion efficiency and nutritional profile mainly at M and L scales, as a consequence of their ability to facilitate larval aggregation and, in turn, allow achieving a higher substrate T.

Abstract
The demand for bioactive molecules with nutritional benefits and pharmaceutically important properties is increasing, leading researchers to develop modified production strategies with low-cost purification processes. Recent developments in bioreactor technology can aid in the production of valuable products. Enzyme membrane bioreactors (EMRs) are emerging as sustainable synthesis processes in various agro-food industries, biofuel applications, and waste management processes. EMRs are modified reactors used for chemical reactions and product separation, particularly large-molecule hydrolysis and the conversion of macromolecules. EMRs generally produce low-molecular-weight carbohydrates, such as oligosaccharides, fructooligosaccharides, and gentiooligosaccharides. In this review, we provide a comprehensive overview of the use of EMRs for the production of valuable products, such as oligosaccharides and oligodextrans, and we discuss their application in the bioconversion of inulin, lignin, and sugars. Furthermore, we critically summarize the application and limitations of EMRs. This review provides important insights that can aid in the production of valuable products by food and pharmaceutical industries, and it is intended to assist scientists in developing improved quality and environmentally friendly prebiotics using EMRs.

Abstract
This study demonstrated the feasibility of comprehensive enzymatic conversion of starch for non-waste applications in food industry. Enzymatic conversion of starch gives rise to nano-sized particles that can be used for manufacturing biodegradable and edible packaging materials and glucose syrup for replacing sugar in confectionery formulations. The 96 h enzymatic hydrolysis yielded starch nanoparticles smaller than 100 nm. Films based on nano-sized starch particles have promising physicochemical properties for manufacturing biodegradable and edible packaging materials. Such properties as reduced moisture content, increased homogeneity, crystallinity, and high initial thermal stability improve the mechanical and performance characteristics of the final food packaging materials. During film formation from starch subjected to preliminary mechanical amorphization, the polymer chain is recrystallized. The C-type crystal structure of starch is converted to the B-type structure. The supernatant obtained by starch hydrolysis can be used for producing glucose syrup. The resulting glucose syrup can be used as a sugar substitute in production of confectionery products. No objective technological differences in properties of glucose syrup obtained by comprehensive conversion of starch and the commercially available glucose syrup derived from sucrose were revealed.
