Abstract
Simple Summary Horse meat; even though is still not popular in most countries; its consumption is slowly increasing and has the potential to become an alternative future red meat. However; research is still insufficient and a deeper understanding of its nutritional and physicochemical characteristics would be beneficial for the horse meat industry. The capacity of horses to efficiently uptake polyunsaturated fatty acids into their tissues has been reported; but detailed knowledge about horse meat fatty acid composition is limited. The present work provides a comprehensive fatty acid composition analysis of subcutaneous and muscle tissues from semiextensively reared Hispano-Breton horses; results indicated that finishing on a high-grain diet limited muscle n-3 accumulation. In addition; the evolution of physicochemical quality parameters such as pH, instrumental color, texture and cook loss were thoroughly studied during vacuum ageing (0, 7, 14 and 21 days), and the conclusion was that an ageing period between 7 and 14 days would be recommended for an optimum horse meat quality. The reasons for this recommendation were that tenderness increased during the first two weeks and then stayed stable and that visual properties deteriorated after 14 days. Overall; these results will help to standardize post mortem practices to obtain a homogeneous final horse meat quality. Abstract A full-randomized block design was used for the study of the FA composition and meat quality parameters, considering ageing time as a split-plot factor. Chemical and fatty acid composition of steaks (longissimus thoracis and lumborum muscle) from 15 month old semiextensively reared Hispano-Bretón horses were characterized (day 0), and the effect of vacuum ageing (0, 7, 14 and 21 days) on several meat quality parameters (pH, instrumental color and texture and cook loss) was determined. The average fat content of horse loin was 3.31%, and the n-3 polyunsaturated fatty acid content, although higher than in ruminant meats, suggested that the finishing on a high-grain diet limited muscle n-3 accumulation. Results revealed that ageing affected all meat quality measurements; color started to turn brownish at 14 days of ageing, with a decrease in redness but not in yellowness. Tenderness improved during the first two weeks, and the Warner-Bratzler shear force scores showed that meat aged for 7 days could be considered as ‘intermediate tender’. Under the present study conditions, an ageing period between 7 and 14 days is recommended for an optimum horse meat quality.

Abstract
Normand cull-cows received a diet enriched in n-3 polyunsaturated fatty acids (PUFA), known to enhance nutritional quality, but to decrease beef lipid stability. Half of the cows received a supplementation of vitamin E and plant extracts rich in polyphenols during the finishing period. Half of each feeding group was slaughtered under limited, the others under added stress conditions. Longissimus thoracis (LT) and Semitendinosus (ST) were evaluated after storage under air, or 70% O2/30% CO2 or vacuum conditions. Irrespectively of diet, pre-slaughter stress i) increased post-mortem malondialdehyde (MDA) formation except in vacuum-stored meat, ii) decreased vitamin A levels in the LT, iii) decreased vitamin E levels in meat stored in 70% O2/30% CO2 and total anti-oxidant status in vacuum stored meat. Effects were global; dietary supplementation with vitamin E and plant extracts was associated with lower MDA levels and MetMb percentage and higher levels of vitamin A and E.

Abstract
BACKGROUND Meat color and lipid peroxidation are important traits related to meat quality. CO2 concentration is a critical factor that can affect meat quality in the commercial use of gas stunning (GS). However, the effect and mechanism of CO2 stunning on meat color and lipid peroxidation during long-term storage remain poorly studied. We aimed to study the effects of GS methods, especially CO2 concentration, on meat color and meat lipid peroxidation in broilers during long-term storage at 4 °C and to explore the potential mechanism of meat color change via lipid peroxidation and the inner lipid peroxide scavenging system. METHODS Eighteen broilers were sacrificed after exposure to one of the following gas mixtures for 90 s: 40% CO2 + 21% O2 + 39% N2 (G40%), 79% CO2 + 21% O2 (G79%), or no stunning (0% CO2, control). Meat color, serum variables, enzyme activities, and the gene expression of mitogen-activated protein kinase (MAPK), nuclear factor-erythroid 2-related factor 2 (Nrf2), glutathione S-transferase (GST) and superoxide dismutase (SOD) were determined. RESULTS The concentrations of serum triiodothyronine (T3, P = 0.03) and the ratio of serum free triiodothyronine/free thyroxine (FT3/FT4, P < 0.01) were decreased, whereas levels of serum cortisol (P < 0.01) were increased in the 40% CO2 group compared with the control group. Additionally, the thiobarbituric acid-reactive substances (TBARS) 3 d (P < 0.01) and TBARS 6 d (P = 0.01) in breast meat and the TBARS 3 d in thigh meat (P < 0.01) were increased in the 40% CO2 group compared with the control group. Serum T3 was negatively correlated with TBARS6 d both in the breast and thigh meat (r = - 0.63, P < 0.01 and r = - 0.47, P = 0.05 respectively). T3/T4 was negatively correlated with TBARS6 d in the breast meat and in the thigh meat (r = - 0.57, P = 0.01; and r = - 0.53, P = 0.03 respectively). Compared with the control group, Lightness (L*) 1 d (P = 0.03) and L*9 d (P < 0.01) were increased, whereas total chromatic aberration (E*) 1 d (P = 0.05) and E*3 d (P < 0.01) were decreased in the breast meat of both the G40% and G79% groups. The values of yellowness (b*) 3 d (P = 0.01), b*6 d (P < 0.01) and E*6 d (P < 0.01) in the thigh meat were lower in both the G40% and G79% groups than in the control group. In the breast muscle, the mRNA levels of c-Jun N-terminal kinase 2 (JNK2, P = 0.03), GSTT1 (P = 0.04), and SOD1 (P = 0.05) were decreased, and the mRNA levels of JNK1 (P = 0.07), Nrf2 (P = 0.09), and GSTA3 (P = 0.06) were slightly lower in both the G40% and G79% groups compared with the control group. However, among these genes, only the mRNA level of JNK1 was decreased in the G40% group compared with the control group and the G79% group (P = 0.03) in the thigh muscle. CONCLUSIONS Compared with the control group, meat color quality in the breast meat was decreased, and the expression of genes in the MAPK/Nrf2/ARE (antioxidant responsive element) antioxidant pathway in breast muscle was partly suppressed by GS of both 40% and 79% CO2. However, oxidative stress and meat lipid peroxidation during storage were aggravated by GS with 40% CO2 compared to GS with 79% CO2 and no GS.

Abstract
A study was performed in growing pigs to evaluate the efficacy of α-tocopherol (Tol) concentration in plasma, muscle, liver, and adipose tissue following dietary supplementation with vitamin E (VE) and various sources of fat. The trial involved 96 piglets weaned at an average of 28 d of age. Piglets were fed for 2 wk a semipurified diet not supplemented with VE. Piglets were then randomly assigned to 5 isoenergetic semipurified diets with 100 IU/kg VE as dl-α-tocopheryl acetate: a control (CTRL) diet (with no added fat) and 4 other diets containing either 3% linseed oil (LIN), 3% hydrogenated coconut oil (COC), 3% olive oil (OLI), or 3% safflower oil (SAF) representing diets rich in n-3 PUFA, SFA, MUFA, and n-6 PUFA, respectively. After 49 d of treatment, pigs were killed and blood, muscle (longissimus dorsi), adipose tissue, and whole liver (without gallbladder) were collected and analyzed for their Tol concentrations. For all tissues, LIN and SAF diets led to lower (P < 0.02) Tol concentrations as compared to the CTRL diet: -63 and -67%, respectively. α-Tocopherol concentrations in plasma, liver, and adipose tissue were greater (P < 0.001) in the COC group as compared to the CTRL group. The OLI diet led to greater (P < 0.01) liver Tol concentration (+92%) as compared to the CTRL diet but had no significant effect on plasma, muscle, and adipose tissue Tol concentrations. There were significant correlations (P < 0.001) between plasma, muscle, and liver Tol concentrations (r > 0.78). These results show that supplementation with PUFA markedly decreases Tol concentration in blood and tissues of growing pigs, whereas SFA increase Tol content in blood, liver, and adipose tissue. Monounsaturated fatty acids only increase liver Tol concentrations. Therefore, increasing the amount of fat in the diet (from <0.1 to approximately 3.5%) and the type of dietary fatty acids supplemented with VE are key factors with regards to VE concentration in plasma and tissue. The Tol:PUFA needs to be carefully considered to meet the VE pigs requirement and to ensure an optimal Tol meat enrichment.

Serum cortisol and haematological, biochemical and antioxidant enzyme variables in horse blood sampled in a slaughterhouse lairage, immediately before stunning and during exsanguination. Abstract
The aim of the study was to determine changes of serum cortisol and biochemical, haematological and antioxidant enzyme variables in the blood of horses sampled during the pre-slaughter period (in the lairage and in the stunning box) and during exsanguination. A total of 24 Slovenian warm-blooded horses were observed. Blood samples for determination of serum cortisol and biochemical, haematological (red blood cell count, haematocrit, haemaglobin concentration) and antioxidant enzyme (whole blood superoxide dismutase and glutathione peroxidase) variables were collected by venipuncture of the left jugular vein in the lairage pen, 60 min before stunning (lairage) and immediately before stunning (stunning box). At exsanguination, blood samples were collected from the wound at the time of jugular vein sticking. During blood collection in the lairage pen and in the stunning box, horses were gently restrained with a halter. They were stunned using a penetrating captive bolt pistol impelled by air and were bled by jugular vein sticking. Horses were physically active in the lairage pen and in the race before entering the stunning box. After stunning, the horses showed paddling movements with their legs. In horses, the plasma lactate and glucose concentrations, the serum potassium concentration, the activities of the serum muscle enzymes aspartate aminotransferase and creatine kinase, and values of most of the other biochemical (Table 1) and haematological variables (Table 2), were significantly (P < 0.05) higher at exsanguination, than in blood sampled while they were in the lairage and in the stunning box. The serum concentrations of cortisol and chloride and the activities of alanine aminotransferase and antioxidant enzymes were not significantly different between the pre-slaughter period and exsanguination. All selected blood variables were not significantly different between the lairge and the stunning box sampling time, indicating no physiological stress responses of the investigated horses to stressors, such as novelty of the pre-slaughter environment and handling, present in the slaughterhouse between the lairage and the stunning box. However, the significantly higher values, at exsanguination, for the plasma lactate and glucose concentrations, serum muscle enzyme activities and haematological variables, than during the pre-slaughter period, might partially be attributed to stimulation of the sympathetic nervous system, caused by stunning and bleeding.

Abstract
Meat is an appropriate source of proteins and minerals for human nutrition. Technological treatments modify the physical-chemical properties of proteins, making them liable to decrease the nutritional potential of meat. To counteract this damage, antioxidants and chaperone proteins in muscle cells can prevent oxidation, restore the function of denatured proteins, and thus prevent aggregation. This study aimed to explore the impact of indoor vs outdoor-reared meat protein composition on digestion and to associate protein markers to in vitro digestion parameters. Indoor-reared meat tended to show less oxidation and denaturation than outdoor-reared meat and was characterised by an overexpression of contractile and chaperone proteins. Outdoor-reared meat showed amplification of antioxidant and detoxification metabolism defending against oxidised compounds. Impacts on digestion remained minor. Several protein markers of in vitro digestion parameters were found for aged and cooked meat, linked to the detoxification process and to muscle contraction.

Abstract
The present study was to investigate the effects of dietary microencapsulated sodium butyrate (SB) and acute pre-slaughter stress, mimicked by subcutaneous corticosterone (CORT) administration, on BW, carcass characteristics, muscle antioxidant status, and meat quality of broiler chickens. A total of 120 1-d-old broiler chickens were fed a control diet (without SB) or a 0.4-g microencapsulated SB/kg diet. On 42 d, half of the birds from each treatment were given 1 single subcutaneous injection of CORT (4 mg/kg of BW in corn oil) to mimic acute stress, whereas the other half were injected with the same amount of corn oil (sham control). Three hours later, BW loss was determined and breast meat samples were collected. The results showed that the BW of the CORT-challenged groups lost much more than the sham control group (P < 0.001), whereas it was alleviated by the dietary microencapsulated SB (P < 0.05). Meanwhile, the catalase activity was decreased and malondialdehyde level was increased by the stress (P < 0.05), and the microencapsulated-SB diet significantly inhibited this effect (P < 0.05). Lower pH values and higher yellowness values were also observed in CORT-challenged chickens (P < 0.05), and the microencapsulated-SB diet treatment partially exerted a preventive effect. Microencapsulated SB significantly decreased the contents of saturated fatty acids and C18:0 (P < 0.01 and P < 0.001), and increased C20:0 and C20:4 contents. However, the effect of the stress treatment on fatty acid composition was insignificant (P > 0.05). In addition, diet and stress did not significantly influence carcass characteristics and the chemical composition of breast meat (P > 0.05). These results suggest that microencapsulated SB was favorable for chickens in the presence of stress, which may be partially ascribed to the ability of SB to decrease catabolism and oxidative injury of tissues.

Abstract
The present study had been conducted to explore the effect of corticosterone (CORT) on the induction of lipid peroxidation in skeletal muscle. The experimental chickens were subjected to 1 single s.c. injection of CORT (4 mg/kg of BW). Blood samples were obtained at the beginning and end of a 3-h experimental period. Muscle samples were obtained from musculus pectoralis major and musculus biceps femoris (BF) before and immediately after slaughter, and at 24- and 48-h time points postmortem. The result showed that plasma level of TBA reacting substances (TBARS) was significantly increased, whereas the activity of super-oxide dismutase was decreased after CORT injection. Plasma level of total antioxidant power, as reflected by the ferric reducing-antioxidant power, was increased by CORT administration. The preslaughter level of TBARS could be increased by CORT administration in pectoralis major. In contrast, although the preslaughter level of TBARS was not significantly changed by CORT administration in BF, the augmented TBARS level was detected at 48 h postmortem in BF of CORT chickens. During the period of storage, the concentrations of TBARS increased, whereas ferric reducing-antioxidant power level decreased over time regardless of treatment. In conclusion, the data suggest that elevated CORT due to preslaughter stress would affect the redox balance in skeletal muscle. The result suggested that the oxidative stability during storage of meat is associated with the alteration in muscle physiology induced by CORT administration.

Abstract
The present study investigates the combined effects of feed-induced increase in polyunsaturated fatty acids (PUFA) content and/or alpha-tocopherol content in pig muscles and preslaughter stress on cell integrity. Cell integrity was determined by plasma lactate dehydrogenase (LDH) activity, and antioxidative status of muscle was measured by activities of the antioxidative enzymes catalase, superoxide dismutase, and glutathione peroxidase. Preslaughter stress increased LDH activity, reflecting loss in cell membrane integrity independent of increased content of PUFA and/or alpha-tocopherol. However, feed-induced increase of PUFA decreased the LDH activity in plasma immediately after slaughter. Catalase activity in the muscle tissue increased as a consequence of the high-PUFA diet, which may indicate an increased demand caused by introduction of oxidative labile PUFA.
