Abstract
In the cheese industry, whey, which is rich in lactose and proteins, is underutilized, causing adverse environmental impacts. The fractionation of its components, typically carried out through filtration membranes, faces operational challenges such as membrane fouling, significant protein loss during the process, and extended operating times. These challenges require attention and specific methods for optimization and to increase efficiency. A promising strategy to enhance industry efficiency and sustainability is the use of enzymatic pre-treatment with the enzyme transglutaminase (TGase). This enzyme plays a crucial role in protein modification, catalyzing covalent cross-links between lysine and glutamine residues, increasing the molecular weight of proteins, facilitating their retention on membranes, and contributing to the improvement of the quality of the final products. The aim of this study is to review the application of the enzyme TGase as a pretreatment in whey protein filtration. The scope involves assessing the enzyme's impact on whey protein properties and its relationship with process performance. It also aims to identify both the optimization of operational parameters and the enhancement of product characteristics. This study demonstrates that the application of TGase leads to improved performance in protein concentration, lactose permeation, and permeate flux rate during the filtration process. It also has the capacity to enhance protein solubility, viscosity, thermal stability, and protein gelation in whey. In this context, it is relevant for enhancing the characteristics of whey, thereby contributing to the production of higher quality final products in the food industry. © 2023 Society of Chemical Industry.

Abstract
The advances in nanocomposites incorporating bioactive substances have the potential to transform the food packaging sector. Different nanofillers have been incorporated into polymeric matrixes to develop nanocomposite materials with improved mechanical, thermal, optical and barrier properties. Nanoclays, nanosilica, carbon nanotubes, nanocellulose, and chitosan/chitin nanoparticles have been successfully included into polymeric films, resulting in packaging materials with advanced characteristics. Nanostructured antimicrobial films have promising applications as active packaging in the food industry. Nanocomposite films containing antimicrobial substances such as essential oils, bacteriocins, antimicrobial enzymes, or metallic nanoparticles have been developed. These active nanocomposites are useful packaging materials to enhance food safety. Nanocomposites are promising materials for use in food packaging applications as practical and safe substitutes to the traditional packaging plastics.

Abstract
Over the past five years, there has been growing interest in the design of modified cellulose nanocrystals (CNCs) as nanoscale antimicrobial agents in potential end-user applications such as food preservation/packaging, additive manufacturing, biomedical and water purification. The interest of applying CNCs-based antimicrobial agents arise due to their abilities to be derived from renewable bioresources and their excellent physicochemical properties including rod-like morphologies, large specific surface area, low toxicity, biocompatibility, biodegradability and sustainability. The presence of ample surface hydroxyl groups further allows easy chemical surface modifications for the design of advanced functional CNCs-based antimicrobial materials. Furthermore, CNCs are used to support antimicrobial agents that are subjected to instability issues. The current review summarizes recent progress in CNC-inorganic hybrid-based materials (Ag and Zn nanoparticles, other metal/metal oxide) and CNC-organic hybrid-based materials (polymers, chitosan, simple organic molecules). It focuses on their design, syntheses and applications with a brief discussion on their probable modes of antimicrobial action whereby the roles of CNCs and/or the antimicrobial agents are highlighted.

Abstract
The main objective of this study was to fabricate nanofibers from zein incorporated with two concentrations of sakacin (9 and 18 AU/mL) with anti-Listeria properties by electrospinning technique. The efficacies of the resulting active nanofibers against L. innocua, in quail breast during 24 days of refrigerated storage (4 ± 1 °C) were evaluated. The minimum inhibitory concentration (MIC) of bacteriocin against L. innocua was approximate 9 AU/mL. Fourier-transform infrared spectra of bacteriocin-loaded nanofibers indicated characteristic peaks of zein and sakacin and that the nanofibers showed an encapsulation efficiency close to 91.5 %. The thermal stability of sakacin increased by electrospinning. Scanning electron microscopy images showed that nanofibers prepared from electrospinning zein/sakacin solutions exhibited smooth and continuous nanofibers with no defects with an average diameter between 236 and 275 nm. The presence of sakacin led to decreased contact angle properties. Nanofibers with 18 AU/mL sakacin exhibited the highest zone of inhibition of 226.14 ± 8.05 mm. The lowest L. innocua (6.1 logs CFU/cm2) growth after 24 days at 4 °C were obtained in quail breast wrapped with zein containing 18 AU/mL sakacin. The results demonstrate an outlook for the potential use of zein nanofibers containing sakacin to reduce L. innocua contamination in ready-to-eat (RTE) products.

Abstract
IntroductionPrompted by the increasing need for an intensified valorization of agri-food waste, in this work a three-step chemical procedure was used to extract high-purity cellulose from garlic stalk, corncob, and giant cane cut-up by a sequential removal of hemicellulose, lignin, ash, and organic compounds. Cellulose nanocrystals of potential interest for nanocomposite applications were then obtained through acid hydrolysis.MethodsThe purity of the cellulose was determined employing Nuclear Magnetic Resonance and infrared spectroscopy, whereas dynamic light scattering, optical, atomic force microscopy, and transmission electron microscopy were used for morphological characterization. The high purity and crystallinity of cellulose was confirmed by comparison with the ultra-pure bacterial cellulose originating from K. sucrofermentans, irrespective of the waste used.Results and discussionAt the end of the extraction procedure, cellulose yields of 35.73, 37.15, and 39.10%, for garlic stalk, corncob, and giant cane cut-up, respectively, were achieved. Dynamic light scattering and atomic force microscopy analyses showed that the length of the whisker-like nanocrystals depended on the raw material (from ~100 nm up to > 2μm), while the final yield was ~40–50% for all three wastes. The versatility and effectiveness of the method here proposed can be profitably used for a wide range of agro-waste feedstocks.

Abstract
Background: Synthetic hydrogels are commonly mechanically weak which limits the scope of their applications. Methods: In this study, we synthesized an organic-inorganic hybrid hydrogel with ultrahigh strength, stiffness, and toughness via enzyme-induced mineralization of calcium phosphate in a double network of bacterial cellulose nanofibers and alginate-Ca2+. Results: Cellulose nanofibers formed the first rigid network via hydrogen binding and templated the deposition of calcium phosphate, while alginate-Ca2+ formed the second energy-dissipating network via ionic interaction. The two networks created a brick-mortar-like structure, in which the "tortuous fracture path" mechanism by breaking the interlaced calcium phosphate-coated bacterial cellulose nanofibers and the hysteresis by unzipping the ionic alginate-Ca2+ network made a great contribution to the mechanical properties of the hydrogels. Conclusion: The optimized hydrogel exhibited ultrahigh fracture stress of 48 MPa, Young's modulus of 1329 MPa, and fracture energy of 3013 J/m2, which are barely possessed by the reported synthetic hydrogels. Finally, the hydrogel represented potential use in subchondral bone defect repair in an ex vivo model.

Abstract
Bacterial cellulose (BC), also termed bio-cellulose, has been recognized as a biomaterial of vital importance, thanks to its impressive structural features, diverse synthesis routes, high thermomechanical properties, and its ability to combine with multiple additives to form composites for a wide range of applications in diversified areas. Its purity, nontoxicity, and better physico-mechanical features than plant cellulose (PC) make it a better choice for biological applications. However, a major issue with the use of BC instead of PC for various applications is its high production costs, mainly caused by the use of expensive components in the chemically defined media, such as Hestrin–Schramm (HS) medium. Furthermore, the low yield of BC-producing bacteria indirectly accounts for the high cost of BC-based products. Over the last couple of decades, extensive efforts have been devoted to the exploration of low-cost carbon sources for BC production, besides identifying efficient bacterial strains as well as developing engineered strains, developing advanced reactors, and optimizing the culturing conditions for the high yield and productivity of BC, with the aim to minimize its production cost. Considering the applications, BC has attracted attention in highly diversified areas, such as medical, pharmaceutics, textile, cosmetics, food, environmental, and industrial sectors. This review is focused on overviewing the cost-effective synthesis routes for BC production, along with its noteworthy applications in the food and environmental sectors. We have made a comprehensive review of recent papers regarding the cost-effective production and applications of BC in the food and environmental sectors. This review provides the basic knowledge and understanding for cost-effective and scaleup of BC production by discussing the techno-economic analysis of BC production, BC market, and commercialization of BC products. It explores BC applications as food additives as its functionalization to minimize different environmental hazards, such as air contaminants and water pollutants.

Abstract
The development of innovative functional products with potential health benefits, under the concept of bio-economy, is flourishing. This study undertook an evaluation of non-dairy lactobacilli Lactiplantibacillus pentosus B329 and Lactiplantibacillus plantarum 820 as “ready to use” starter cultures. Lactic acid bacteria (LAB) cultures were evaluated for their fermentation efficiency, before and after freeze-drying, using cheese whey (CW) as a fermentation substrate and subsequent immobilization on bacteria cellulose (BC) to produce a novel biocatalyst. The biocatalyst was applied in functional sour milk production and compared with free cells via the assessment of physicochemical and microbiological properties and sensory evaluation. Evidently, LAB strains exhibited high fermentative activity before and after freeze-drying. Results of a 5-month storage stability test showed that viability was 19% enhanced by immobilization on BC, supporting the concept of “ready to use” cultures for the production of fermented beverages. Likewise, sour milk produced by the BC biocatalyst presented higher organoleptic scores, compared to the free cells case, whereas immobilization on BC enhanced probiotic viability during post-fermentation storage (4 °C, 28 days). The obtained high viability (>107 log cfu/g) demonstrated the efficacy of the proposed bioprocess for the production of functional/probiotic-rich beverages. Ultimately, this work presents a consolidated scheme that includes the advantages and the cooperative effect of probiotic LAB strains combined with a functional biopolymer (BC) towards the formulation of novel functional products that coincide with the pillars of food systems sustainability.

Abstract
Production of some antimicrobial peptides by bacterial producers is a resource-intensive process, thus, using inexpensive growth media and simplifying antimicrobial extraction and down-stream processing are highly desirable. Acid whey, a dairy industry waste, is explored as a medium for production of broad-spectrum antimicrobials from selected bacteriocinogenic bacteria. Neutralized and yeast extract-supplemented acid whey was suitable for production of antimicrobials by four tested strains, but Paenibacillus polymyxa OSY-EC was the most prolific antimicrobial producer. Concentrating synthesized antimicrobials during culture incubation using beads of polymeric adsorbent resin, followed by solvent extraction and freeze-drying, resulted in antimicrobials-rich powder (AMRP). Under these conditions, P. polymyxa OSY-EC produced paenibacillin, polymyxin E, and fusaricidin, which are active against Gram-positive and Gram-negative bacteria and fungi, respectively. When media containing 2x and 4x minimum inhibitory concentrations of AMRP were inoculated with Listeria innocua and Escherichia coli, microbial populations decreased by ≥4-log CFU ml-1 in tryptic soy broth and ≥3.5-log CFU ml-1 in milk. The antimicrobial mechanism of action of AMRP solutions was attributed to the disruption of cytoplasmic membrane of indicator strains, L. innocua and E. coli. These findings exemplify promising strategies for valorization of acid whey via microbial bioreactions to yield potent antimicrobials.

Abstract
This study presents the valorization of side streams from the sunflower-based biodiesel industry for the production of bio-based and biodegradable food packaging following circular economy principles. Bacterial cellulose (BC) was produced via fermentation in 6 L static tray bioreactors using nutrient-rich supplements derived from the enzymatic hydrolysis of sunflower meal (SFM) combined with crude glycerol as carbon source. Novel biofilms were produced using either matrices of protein isolates extracted from sunflower meal (SFMPI) alone or SFMPI matrices reinforced with nanocellulose biofillers of commercial or bacterial origin. Acid hydrolysis was employed for ex-situ modification of BC to nanostructures (56 nm). The biofilms reinforced with bacterial nanocellulose structures (SFMPI-BNC) showed 64.5% higher tensile strength, 75.5% higher Young’s modulus, 131.5% higher elongation at break, 32.5% lower water solubility and 14.1% lower water vapor permeability than the biofilms produced only with SFMPI. The biofilms were evaluated on fresh strawberries packaging showing that the SFMPI-BNC-based films lead to effective preservation at 10 °C considering microbial growth and physicochemical profile (weight loss, chemical characterization, color, firmness and respiration activity). The SFMPI-BNC-based films could be applied in fresh fruit packaging applications.
