Determination of Four PAHs and Formaldehyde in Traditionally Smoked Chicken Products

The present study was conducted to analyze the level of four priority polycyclic aromatic hydrocarbons (PAHs), including benzo[a]pyrene (BaP), chrysene (Chr), benzo[a]anthracene (BaA), and benzo[b]fluoranthene (BbF), in traditionally smoked chicken products marketed in China. The results show that the amount of ƩPAH4 (the sum of four different PAHs: BaP, Chr, BaA, and BbF) was 30.43-225.17 and 18.75-129.54 µg/kg in the skin and meat of smoked chicken products, respectively. The content of ƩPAH4 in the smoked skin was significantly higher as compared to the smoked meat (p < 0.05). The calculation of MOE (margin of exposure) results suggested the possibilities of ingestion risk associated with the consumption of smoked chicken skin. Furthermore, the formaldehyde content in the skin of smoked chicken was 2.17-6.84 mg/kg and 0.86-2.95 mg/kg in the smoked meat. These results indicate that optimization or alternative methods for food processing should be developed to reduce the high level of harmful substances formed during processing to ensure the safety of smoked chicken products. Moreover, along with harmful substances, the moisture content and color of traditionally smoked chicken were analyzed to provide a practical reference for healthy, safe and green processing technology for smoked chicken.

Electronic nose for detection of food adulteration: a review

The food products may attract unscrupulous vendors to dilute it with inexpensive alternative food sources to achieve more profit. The risk of high value food adulteration with cheaper substitutes has reached an alarming stage in recent years. Commonly available detection methods for food adulteration are costly, time consuming and requires high degree of technical expertise. However, a rapid and suitable detection method for possible adulterant is being evolved to tackle the aforesaid issues. In recent years, electronic nose (e-nose) system is being evolved for falsification detection of food products with reliable and rapid way. E-nose has the ability to artificially perceive aroma and distinguish them. The use of chemometric analysis together with gas sensor arrays have shown to be a significant procedure for quality monitoring in food. E-nose techniques with numerous provisions are reliable and favourable for food industry in food fraud detection. In the present review, the contributions of gas sensor based e-nose system are discussed extensively with a view to ascertain the adulteration of food products.

Changes in acetaldehyde and formaldehyde contents in foods depending on the typical home cooking methods

Analytical methods were validated for the evaluation of acetaldehyde and formaldehyde, which are harmful chemicals, using solid-phase microextraction-gas chromatography/mass spectrometry in four different matrices. Typical home-cooking methods including boiling, pan-frying, and stir-frying, were applied to beef, rapeseed oil, canned pork ham, egg, and rice wine. In addition, monosaccharides, disaccharides, alanine, and glycine were heated for the formation of both aldehydes. All validation parameters, including accuracy, precision, limit of detection, limit of quantification, and uncertainty, for four different matrices were within recommended ranges, confirming the validity of the current method. Acetaldehyde contents ranged from undetectable to 17.92 μg/g and formaldehyde contents ranged from undetectable to 0.27 μg/g. Generally, boiling decreased both aldehydes except acetaldehyde in egg. Pan- and stir-frying increased both aldehyde content substantially in rapeseed oil whereas pan-frying increased acetaldehyde content in canned pork ham and egg. Fructose and sucrose produced higher content of both aldehydes than maltose and glucose when heated. Depending on food type, the cooking process had slightly different effects on the contents of acetaldehyde and formaldehyde.
