Abstract
With increased interest in precision livestock farming (PLF) by dairy producers, a clearer understanding of public perceptions is needed to ensure that use of these technologies is socially sustainable. This study sought to (1) characterize public perceptions toward precision dairy technologies (PDT), trust in farmers using PDT, and likelihood to purchase (LTP) dairy produced with PDT; and (2) describe how these perceptions may be influenced by information framing about the potential effects of PDT use; and (3) evaluate the influence of demographic characteristics of the participant sample. In an online survey distributed to US residents (n = 2,365), participants randomly received 1 of 8 vignettes, each containing either positively or negatively valenced information about hypothetical PDT effects on human-animal relationship, data transparency, and animal welfare. Perceptions toward PDT were assessed with Likert item questions before and after vignette exposure and through representational thematic text analysis of open-ended responses (n = 80 randomly selected) justifying the Likert responses. Linear models were selected using backward selection to assess significant predictors of baseline and shifts in perceptions toward PDT, farmer trust, and LTP. Baseline perceptions toward PDT, trust, and LTP were generally positive, with more positive perceptions associated with higher incomes, rural backgrounds, and dairy consumers more knowledgeable about production; in contrast, baseline perceptions were more negative among participants with higher levels of concern toward animals. Across the sample, participants experienced slight negative shifts in PDT perceptions after vignette exposure, with those who indicated a voting preference for the Democratic party (e.g., politically liberal) and who had more positive attitudes about animal protection more vulnerable to negative perception shifts. Generally, information about data transparency did not shift perceptions of PDT in either direction. However, the valence of animal welfare information strongly predicted the direction of perception shifts, such that negative information was particularly influential in generating worsened perceptions of PDT, even if participants received positive information about other attributes. Similarly, the perceived effect of PDT on cows was the most frequently raised theme in the qualitative responses, though participants also focused on ethical acceptability of the technology itself and how it might affect farmers. We suggest that for the dairy industry to maintain its social license to operate, it will benefit from more closely engaging with public concerns regarding potential effects of PDT on animal welfare and the relationship between farmers and animals.

Abstract
This study aimed to assess public perceptions and knowledge of, and attitudes towards, zoophilia in Hungary. Conducted between October and December 2021 with 1753 respondents, the survey revealed significant interest and concern regarding zoophilia. The majority (98.3%) of respondents deemed zoophilia to be unacceptable from both health and animal welfare perspectives. Of those surveyed, 98.9% believed that animals possess dignity, and 84.7% felt that zoophilia negatively impacts this dignity. However, awareness of Hungarian legislation on zoophilia was limited, with 38.9% of respondents unaware that such acts are legally prohibited. The survey also highlighted a strong consensus (98.2%) favoring strict penalties for zoophilia. Additionally, the survey uncovered that 14% of respondents had encountered or heard of zoophilic incidents, involving various animals, predominantly dogs. Gender and settlement type significantly influence attitudes toward zoophilic acts, with women and people in capital and major cities being more aware of the legal prohibition and more supportive of strict sanctions. The results underscore a crucial need for enhanced public education on legal standards and ethical considerations regarding zoophilia and suggest a significant gap in understanding and managing the issue, necessitating further research and legislative reforms.

Abstract
The microbiome plays a crucial role in the calves' early stages of life. Several management practices can be considered to enhance the development and composition of the microbiome in calves. However, their social acceptance is largely unknown. The aim of this study was to investigate the public acceptance of innovative microbiome management practices aimed at improving the health and welfare of calves and to assess the factors influencing these levels of acceptance. Data used in the analysis were obtained from an online survey conducted in July 2023. The final sample consists of 3 220 citizens from four EU countries (Finland = 813, France = 803, Ireland = 801 and Poland = 803). Participants were asked to assess four management practices designed to improve calves' health and welfare: (1) using colostrum, (2) providing mix probiotics powder, (3) providing probiotics as yogurt or kefir and (4) prolonged cow-calf contact. Participants were provided with different levels of information: one group received only a short description of the intervention, while the other group received both the intervention description and information on aspects such as potential costs and environmental impact of the intervention. Participants were asked to rate the acceptance on a standardised scale ranging from 1 to 5, with 1 indicating "strongly agree" and 5 indicating "strongly disagree". Additionally, the participants were questioned about their socio-demographic background (e.g. age, education). They were also asked to provide their perspectives on various dimensions concerning familiarity with farming and microbiome, food safety, environmental awareness, cost consideration, and cultural perspective of consuming dairy products. Obtained data were analysed using the ordinary least squares regression model. The findings reveal that prolonged cow-calf contact was the most acceptable measure among tested interventions in all countries (79% of responders agreed or strongly agreed). Attitudinal and socio-economic variables were found to have a differential effect across the studied management strategies. For instance, individuals with greater familiarity with farming systems and microbiomes were more inclined to accept all four interventions, while women, compared to men, showed higher acceptance of prolonged cow-calf contact. Results also indicate that the provision of additional information to the participants was associated with a decrease in the acceptance of the measures. In conclusion, the public's perceptions regarding microbiome management strategies in dairy calves are shaped by complex factors. Also, our discussion emphasises the importance of clarity and transparency of messages, ethical dissemination of scientific knowledge, and the necessity for balanced and coherent communication.

Abstract
Individuals of the general public can perform both consumer and citizen roles in farm animal welfare, and attitudes toward farm animal welfare may differ between these roles. However, scant research is available regarding this distinction, especially in developing countries such as China. The present study aimed to explore consumer-citizen gaps in Chinese public attitudes toward farm animal welfare across three dimensions and across demographic characteristics. A 36-item scale was designed, and completed by 5284 Chinese participants in a large-scale cross-sectional survey. Consumer-citizen gaps in attitudes toward farm animal welfare across three dimensions and demographic characteristics were analyzed using the Wilcoxon signed-rank test, and effects of demographic characteristics on attitudes were further explored by linear regression analysis. A significant consumer-citizen gap was found in overall attitudes, although the consumer role was only slightly more positive than the citizen role. The consumer-citizen gap is driven by differences in both cognitive attitudes and behavioral attitudes. The gap is most pronounced in cognitive attitudes, where the consumer role is significantly more positive, and smaller in behavioral attitudes, where the citizen role is significantly more positive. The consumer-citizen gap varies significantly among different demographic groups, including gender, age, education, monthly household income, area of residence, and occupation. Additionally, education, monthly household income, and area of residence have significant effects on attitudes in the dual role, whereas gender only affect consumer-role attitudes significantly. The findings provide evidence that consumer-citizen gaps in Chinese public attitudes toward farm animal welfare exist, and this distinction is mainly determined by demographic characteristics.

Abstract
In bodybuilders' diets, protein plays a crucial role in supporting muscle growth and repairing damaged muscle tissue. These individuals meet their protein needs by combining dietary sources with supplements. Animal-based proteins are often preferred over plant-based proteins because they are believed to better support muscle protein synthesis. This review explores the meat consumption patterns of bodybuilders and high-level meat consumers, focusing on rabbit, beef, chicken, turkey, and lamb. We describe and compare the types of meat bodybuilders commonly consume and provide an overview of protein supplements, including meat-based options, plant-based alternatives, and whey-based products. Our aim is to gain insight into the dietary preferences of bodybuilders and high-level meat consumers, considering their nutritional requirements and the potential effect on the meat industry. We conducted an extensive search across various databases, including Scopus, Web of Science, PubMed, and Google Scholar. We found that individual choices vary based on factors such as attitudes, trust, taste, texture, nutritional content, ethical considerations, and cultural influences. Nutritional factors, including protein content, amino acid profiles, and fat levels, significantly influence the preferences of bodybuilders and high-level meat consumers. However, it is crucial to maintain a balance by incorporating other essential nutrients such as carbohydrates, healthy fats, vitamins, and minerals to ensure a complete and balanced diet. The findings from this review can inform strategies and product development initiatives tailored to the needs of bodybuilders and discerning meat enthusiasts.

Abstract
Women's health-specific contributions in emergency response stages pertain primarily to family and community-based rescue and support-focused roles. As disasters affect both human beings and their animal co-inhabitants, comprehensive literature exploring women's contributions towards companion animal welfare in emergency response settings remains sparse. COVID-19-triggered public health mitigation strategies caused diverse challenges relating to veterinary medical service access, thus establishing a platform for a nuanced exploration of gendered roles vis-a-vis animal health and well-being during the initial COVID-19 emergency response period. This project employs a semi-structured interview approach to qualitatively investigate the roles, responsibilities, and experiences of twelve people, eleven of whom self-identify as women, who cared for animal co-inhabitants while seeking veterinary medical services during the COVID-19 emergency response in Metro Vancouver, British Columbia, Canada. This research identifies three primary animal welfare-related roles that woman companion animal guardians (WCAGs) assumed during the COVID-19 emergency response period: 1) Companion animal physical health caregiver, spanning from nuclear to extended families and into the community; 2) Companion animal mental wellness supporter, associated with human-animal interactions in family/household, community, and veterinary clinic settings; 3) Companion animal holistic well-being advocate, utilizing various strategies at family, community, and societal levels. Understanding gender-specific animal welfare contributions in an emergency response setting narrows knowledge gaps and provides WCAGs and animal welfare-related public, private, and not-for-profit sectors with evidence-based strategies for emergency response planning improvements, supporting healthy and sustainable human-animal bonds in the current COVID-19 pandemic and future extreme events.

Abstract
Animal slaughter plans and related activities must not increase the number of hazards in meat. In their nature, these processes must reduce possible hazards to minimum or acceptable levels. This is a generally accepted concept worldwide; hence, authorities continue to develop regulations that seek to mitigate the scourge of meat hazards for consumer protection. The situation is similar with small wild ungulate meat, in which a hazard analysis plan needs developing to improve meat safety. This investigation follows a narrative review of articles published for a PhD program and other scholarly articles supporting the concept of a basic slaughter plan for small wild ungulate animals in South Africa. The findings of this investigation highlight the need to control hazards within one health concept plan, which should be implemented and propagated by establishing forums that will drive meat safety solutions in these communities. There should be a basic hygiene slaughter plan developed and endorsed by all members of the forum. The outcome must be the control of microbiological, chemical and physical hazards from farm-to-fork, and as part of a system imbedded in game meat policies and regulations.

Abstract
Emerging new purchasing behaviors have been reflected in the sales trends of dairy products, mainly in cow milk consumption. This study aimed to investigate the preferences of milk purchasers toward different product attributes, by considering both individuals' socio-demographic characteristics (SD) and milk purchasing habits (PH) as independent variables in the milk consumption model definition. To achieve this objective, a questionnaire was administered to a sample of 1,216 residents in Northwest Italy. The application of the Best-Worst scaling (BWS) methodology to define the purchasers' declared preferences toward a set of 12 milk attributes, showed that milk origin and expiry date are the most important attributes for milk choice in the decision-making process. The correlation analysis showed that the SD and milk purchasing habits variables affect the definition of stated preferences heterogeneously between the intrinsic, extrinsic, and credence attributes.

Abstract
Public concern has arisen between increased productivity in animal production systems and farm animal welfare (FAW). Consumers demand ethical production systems and tend to purchase products that reflect their animal welfare concerns. They are becoming increasingly judicious, with growing expectations around animal produce. Nonetheless, positive attitudes concerning FAW do not always correspond to purchasing behavior, where higher concern is not related to higher purchasing frequency. The study seeks to determine if individuals behave differently in their dual roles as citizens and consumers, expressing preferences for FAW but ultimately failing to act on such preferences when making purchasing decisions. Theoretically, the research uses elements of the COM-B model to investigate the importance of capability, opportunity, and motivation for consumers. The study is conducted on an island of Ireland basis and investigates the perceptions and purchasing frequency of Irish and Northern Irish consumer’s (n = 972). Firstly, attitudes towards purchasing animal welfare products are elicited using Categorical Principal Component Analysis (CATPCA). Cluster analysis subsequently defines three distinct typologies based upon the final cluster centers attained from CATPCA. The largest cluster is characterized as being Indifferent (n = 672) and differentiated by relatively low concern for animal welfare. Despite this, their purchasing frequency of animal welfare products is monthly. The other two clusters, The Engaged and The Struggling, are similar in size and share the same concern for animal welfare but are polarized in their motivation, capability, and opportunity to purchase animal welfare friendly products. The Struggling typology act as citizens rather than consumers; while they are highly concerned for welfare they have significantly lower purchasing frequency even compared to The Indifferent. Finally, Non-Linear Canonical Correlation Analysis (NLCCA) is used to reveal and visually demonstrate the structure of the whole dataset. The analysis demonstrates that concern for animal welfare is not associated with purchase frequency of animal welfare friendly produce when contextual factors are not conducive to doing so. The findings are relevant to a broad audience including industry, policymakers, and academics.

Abstract
(1) Background: Autochthonous breeds meat is well accepted due to its sensory characteristics, perceived low environmental impact, and animal welfare. We aimed to evaluate the effect of weaning and slaughter age on the physicochemical and sensory characteristics of Arouquesa, a Portuguese Protected Designation of Origin (PDO) meat and to evaluate the psychological effect of knowing the weaning age on the consumer's hedonic evaluation. (2) Methods: Meat from 26 animals was assigned to 4 groups, with combinations of weaning (W) at 9 or 5 months and slaughter (S) at 9 or 12 months: W9-S9, W9-S12, W5-S9, and W5-S12. The meat was analysed for pH24h, colour (L*a*b*), cooking losses and shear force. A Check All that Apply test was made with 70 consumers; they were also asked to punctuate the hedonic appreciation of anonymous and weaning age-identified meat. (3) Results: W9-S9 were more tender, had lower shear force, and was juicier than W5-S9. When animals were slaughtered at 12 months, there were no differences in the physicochemical and sensory characteristics between the weaning ages. The effect of information about the weaning age influences the consumer's hedonic evaluation, as revealed by the comparison between the anonymous and identified samples. (4) Later weaning resulted in more tender meat when the slaughter was at 9 months and positively impacted consumer perception.

Abstract
Consumers are increasingly aware of the benefits of local foods in terms of quality, sustainability, animal welfare, and safety. This research addresses two main questions: (i) is the perception towards sustainability aspects of local dairy products related to individuals' preferences for milk and cheese quality aspects? (ii) are these perceptions related to people's socio-demographic characteristics? For this purpose, a choice experiment was conducted online in Apulia (South-East Italy) involving a sample of 543 respondents. A Principal Component Analysis (PCA) was applied to analyze the consumer opinion related to dairy products' quality attributes, sustainability, and availability on the market. From the PCA, four main components (accounting the 64.5% of the total explained variance) were defined, highlighting non-overlapping choice styles of consumers, distinguished by attitudes primarily based on quality attributes of dairy products rather than sustainability characteristics or perceived higher quality of local products. Furthermore, the Availability request component described the consumer need for higher availability and/or visibility of local dairy products on the market. The effect of gender, age, and educational status of individuals emerged as significantly important for the resulting component definitions. The obtained results clearly suggest the need to increase the efficiency of communication strategies concerning local dairy products, as well as local dairy products' availability and visibility on the markets.

Abstract
Novel gene-editing (GE) technologies provide promising opportunities to increase livestock productivity and to tackle several global livestock production sustainability and food security challenges. However, these technologies, as with previous genetic modification technologies in food production, are very likely to generate social controversy and opposition toward their use in the meat industry. Here, we explored public attitudes and consumption predisposition toward gene-edited meat products and their potential added benefits to livestock farming. Our results show that societal perception currently comes as a package, where the use of gene-editing technology acts as an extrinsic cue of meat products quality, and is used to make a range of inferences about all quality facets at once. Although consumers with anti-GE attitudinal positions generally were not sensitive to price discounts or added benefits, added benefits increased the consumption predisposition of most moderate and pro-GE consumers, where benefits related to animal welfare had larger effects than those relating to the environment or human health issues.

Abstract
The rationale behind this review is the potential of developing a single score tool for meat quality evaluation based on visual and sensorial assessments of fresh meat. Based on the known sensory wheel concept, the first step was to create quality wheels capturing most common intrinsic and extrinsic quality cues of pork and beef outlined in the latest scientific papers. This resulted in identifying meat color, sensory characteristics and fat content as the most important intrinsic quality cues of fresh beef and pork. Furthermore, the highest number of studies showed the importance of price, certification logos and brand for beef quality evaluation. According to recent articles, price, breed, animal welfare and a veterinary certificate are the most important extrinsic attributes for pork consumers. The second step was to develop a single-score tool named the “Meat quality index”. It has been developed in line with published approaches of different total quality index concepts used in the food sector, providing insights into its application in the meat sector. As a result, this review proposes a unique approach in using quality index application, through the consumer’s preferences aspect of fresh meat.

Abstract
Meat consumption is estimated to increase worldwide, mostly because of the increase in population. Further, this increase in meat consumption will ultimately affect the environment and aggravate climate change. Herein, consumers’ behaviour was studied to understand if consumers would consider a change in their dietary habits by choosing beef from the Portuguese autochthonous bovine breed or even reducing their meat intake for environmental reasons. In 2021, a survey was conducted online and in some food sales outlets in Portugal. Therefore, data collected from the 491 participants were analysed with the aim of assessing the Portuguese consumer behaviour and preferences on beef. Firstly, we conducted a descriptive analysis. Then, factor analysis was performed by principal component analysis. Finally, by cluster analysis, we attempted to identify a group of consumers with different behaviours into specific categories. Although it was not possible to segregate consumers into different categories, most of the respondents agree that meat consumption harms the environment; however, just 30.6% are willing to reduce meat consumption due to environmental reasons. As for the concerns for animal welfare, respondents between the age of 23 and 49 years seem to have a greater concern towards animal welfare. To value autochthonous bovine Jarmelista meat, it is fundamental to implement a concerted communication between suppliers and producers to value Jarmelista beef. Furthermore, it is also important that regional governmental institutions support local producers not only for financial support but also to create strategies to protect the breed from extinction.

Abstract
The cow’s milk market is going through a critical period characterised by a continuous contraction in consumption as a consequence of the lack of competitiveness on the market of the conventional product (commodity) versus numerous specialties. This paper aimed to define the profiles of milk consumers in terms of individual preferences (assessed using the best-worst scaling methodology) and socio-demographic features. A survey was conducted in several stores of large-scale retail, convenience stores, and open-air markets distributed in north-west Italy to collect data from 1216 respondents. For milk shopper purchasing habits, two consumer groups were defined and compared in terms of preferences: the fresh pasteurized milk consumer (FPc) (56% of the total sample) and the ultra-high temperature treated milk consumer (UHTc) (35%). A series of two-ways multivariate analysis of variance (MANOVA) were conducted to assess the effect of individuals’ socio-demographic characteristics and the type of milk chosen on the consumer preferences, simultaneously. Significant differences in milk purchasing habits and preferences emerged when comparing the two consumer groups (UHTc and FPc). Empirical evidence of the study supported the starting hypothesis, suggesting the significance or relevance of the consumer socio-demographic characteristic, as well as their interaction effect with the type of milk on the level of importance given to the considered milk quality attributes. On the contrary, the gender results were not significant for the milk preferences definition. The assessment of consumer preferences, associated with the individuals’ socio-demographic characteristics could have important implications for outlining more effective marketing strategies based on a more targeted communication (i.e., related to the sustainability dimension of the local product, nutritional value and brand), leading the consumer back to the commodity rediscovery concerning individuals’ features and habits.

Abstract
The consumption of traditional wine has decreased in Europe during the last fifteen years. In parallel, new wine alternatives obtained by blending wines and fruit juices or by flavoring wines with artificial or natural flavors have appeared on the market. Recently, an innovative fruit wine obtained by co-fermentation of grape must and kiwi juice has been proposed and its potential of attraction for consumers should be exploited. To assess the potential consumer acceptability and expectations towards this new product, an online choice experiment has been conducted involving a consumer group of young adults (18–35 years old; n = 373). After the data collection, participants were divided into two groups according to whether they had already tasted a fruit wine (neophiles) or had never tasted it (new entries). For each group, the individual’s responses (on wine consumption habits, expectations and willingness to consume and pay a fruit wine) were analyzed through Principal Component Analysis. Different consumption styles and expectation patterns were defined in the two groups. However, in general, neophiles showed consumption patterns based on the evaluation of fruit quality, sales format, alcoholic content and the presence or not of bubbles, not giving importance to the brand. In contrast, new entries’ responses identified consumption patterns driven by the willingness to pay for a new product, the product value for money and packaging features. Differences between the two groups in expectations about the product sensory characteristics also emerged. These findings should contribute to this area of study by integrating environmental, economic and social dimensions and addressing food innovation and sustainability in the fruit and wine chains.

Abstract
In Argentina, color and intramuscular fat are the main attributes of raw beef quality; however, it is necessary to clarify how consumers use them, in order to establish different marketing strategies. Consumer preferences are affected by multiple factors. Thus, the objective of the present study was to identify the Argentinian consumer's choice behavior regarding beef color and fat content. An online survey was carried out in Argentina. It inquired about socio-demographic characteristics, purchase and consumption habits and beliefs, showing pictures related to color, marbling and the amount of fat. Choice behavior was evaluated by asking why consumers chose a particular picture out of the ones shown. Several Kruskal-Wallis tests evaluated the different hypotheses. Three different decision trees using the CHAID analysis method were created. Multifactorial analysis was carried out for clustering consumers. Regarding consumer beliefs, 90% of the respondents agreed with the sentence, "The two main characteristics defining beef quality at purchase time are meat color and marbling". Socio-demographic characteristics affected purchase habits and beliefs; they also affected perceptions about meat color and marbling. It was possible to build three consumer groups for future marketing strategies: "hedonic" focused on a pleasing sensory experience, "appearance" prioritized the visual aspects, and the "health-conscious" consumers were interested in their healthy nutrition.

Abstract
Background: Companion animals may be a positive presence for their owners during the COVID-19 pandemic. However, the welfare of a companion animal is strongly influenced by the behaviour of their owners, as well as their physical and social environment. We aimed to investigate the reported changes in companion animal welfare and behaviour and to examine the association between these changes and companion animal owners’ mental health. Methods: A cross-sectional online survey of UK residents over 18 years of age was conducted between April and June 2020 (n = 5926). The questionnaire included validated, bespoke items measuring outcomes related to mental health, human-animal bonds and reported changes in animal welfare and behaviour. The final item of the survey invited open-ended free-text responses, allowing participants to describe experiences associated with human-animal relationships during the first UK lockdown phase. Results: Animal owners made up 89.8% of the sample (n = 5323), of whom 67.3% reported changes in their animal’s welfare and behaviour during the first lockdown phase (n = 3583). These reported changes were reduced to a positive (0–7) and negative (0–5) welfare scale, following principal component analysis (PCA) of 17 items. Participants reported more positive changes for cats, whereas more negative changes were reported for dogs. Thematic analysis identified three main themes relating to the positive and negative impact on companion animals of the COVID-19 pandemic. Generalised linear models indicated that companion animal owners with poorer mental health scores pre-lockdown reported fewer negative changes in animal welfare and behaviour. However, companion animal owners with poorer mental health scores since lockdown reported more changes, both positive and negative, in animal welfare and behaviour. Conclusion: Our findings extend previous insights into perceived welfare and behaviour changes on a very limited range of species to a wider range of companion animals. Owner mental health status has a clear, albeit small, effect on companion animal welfare and behaviour.

Abstract
This research aimed to explore the effects of animal welfare information on consumers' hedonic and emotional responses towards milk. Two studies were conducted. For Study 1, participants (N = 101) were asked to fill out a questionnaire on attitudes towards animal welfare, in which a variety of factors including raising methods, quality of life, emotions, quality of the product, nutrition, price, and environment, were tested. For Study 2, participants (N = 63) tasted a milk sample (2% fat, standardized and homogenized) in two different conditions: [1] blind (without any previous information), and [2] informed (with information stating that the milk was obtained from a farm with an animal welfare system in place). For Study 1, participants with higher milk consumption per week showed a higher agreement with positive animal welfare statements. For Study 2, the overall liking for the milk in the informed condition was significantly higher than that of the milk in the blind condition (7.4 vs. 6.8, using a 9-point hedonic scale). Participants had higher penalizations for the milk in the blind condition as they suggested that the milk's flavor, sweetness, aroma, and mouthfeel were not enough in the product. This research showed that animal welfare can be an important extrinsic factor in the consumers' hedonic and emotional responses towards milk. These findings can be useful for understanding consumers' behaviors towards animal welfare.

Abstract
The dairy sector accounts for a large share of all European agricultural production, at the same time however, it is one of the most ascribed sector contributors to the environmental impact of agriculture, particularly for greenhouse gas emissions. Simultaneously, it is a strategic sector for the economy but generates increasing debate in the community regarding the social aspects mainly related to the use of resources and the food-feed competition of livestock involving the reduction of human-edible crops. In this general framework, this study aims to compare four different dairy farming scenarios characterized by different use of environmental resources in the Alpine area, considering as a case study the production of the Toma di Lanzo cheese (a traditional cheese produced in the mountainous regions of Piedmont-Northwest Italy). The study envisaged the integrated use of three methodologies: Life Cycle Assessment, Life Cycle Costing and the assessment of human-edible feed conversion efficiency to jointly analyze environmental, economic and social aspects. The main results of this research highlighted how the utilization of local breeds, which maximize the efficiency in the use of territory resources, such as grasslands in a mountain environment, allowed dairy production to reduce emissions, when compared to the high-input traditional breeding systems. Although the mountain livestock systems have several critical issues mainly linked to social factors such as low generational turnover, work schedules, modest life quality of families, it is however possible to earn more income than in lowland scenarios. At the same time, this production system allows the Toma di Lanzo cheese-making heritage to be preserved. This mountain pasture cheese, to which superior organoleptic and nutritional characteristics are attributable, when compared to cheeses from the valley floor, incorporates traditional values, a link to the territory and the transmission of knowledge. With reference to food-feed competition in livestock involving the reduction of the use of human-edible crops and feedstuffs in animal diets, we found that grazing and grass-based feeding systems were one of the most sustainable ways to produce milk.

Abstract
Simple Summary The aim of the study was to investigate the consumers’ attitude to their preference of rabbit meat in eight countries depending on the production method and its purchase form. Consumers’ attitude was evaluated in Spain, Italy, France, Poland, Hungary, China, Brazil and Mexico based on the respondents’ opinion regarding origin, production conditions, slaughtering methods and breed. Results revealed that breed was an inessential factor. The origin of rabbits was the most important in Italy, France, Hungary and Brazil (in the latter country the slaughtering method and the level of processing were also highly valued), feeding of animals received the highest scores in Spain, Poland and Mexico (in the latter also the slaughtering method), while the level of processing was the foremost factor in China. The preference of fresh meat was the highest in Spain, France and Mexico, and that of frozen in Brazil and Mexico. The highest preference of a whole carcass was found in France and Mexico. The thigh was mostly favored in France and that of the loin in Mexico. The prepared meat products (roasted, smoked and semi-finished) were the most popular in Mexico. It can be concluded the preference of respondents depended on the country. The importance of feeding was highlighted in Italy, Poland, Hungary and Mexico. High values were received for housing conditions in Italy, Poland, Hungary and Mexico. The level of processing was the most important in China and Brazil, while the slaughtering method was considered the most important in Brazil and Mexico. Breed received the lowest score in almost all countries. The preference of fresh meat was the highest (above 50%) in Spain, France and Mexico, and that of frozen in Brazil and Mexico (about 20%). The highest preference for a whole carcass (above 50%) was given by the respondents in France and Mexico. Thigh was mostly preferred in France whereas consumers preferred loin in Mexico. Roasted, smoked and semi-finished forms were mostly favored in Mexico. It can be concluded that the preference of respondents depended on the country. Preferences were different among the Mediterranean countries, and also Latin American countries.

Abstract
The innate liking of fats may be due to one or more orosensory, post-ingestive, and metabolic signals; however, individuals differ in their preference for fat in meat. One of the variables that mainly impacts eating behaviors and thus should be carefully analyzed is sex/gender, and while sex (female/male, in a binary approximation) refers only to biological characteristics, gender (woman/man, in a binary approximation) refers to cultural attitudes and behavior. This study aimed at exploring the role of gender, age, taste responsiveness (measured as sensitivity to the bitterness of 6-n-propylthiouracil (PROP)), personality traits, attitudes, and liking of and familiarity with meat on the choice of fat-rich meat products in 1208 women and men aged 18–66. Both a between- and a within-gender approach were adopted. Results showed that gender had a major impact on liking of and familiarity with meat and choice for fat-rich meat compared to age. A lower liking meat in general was found in women, independently of fat content. Women also reported a lower familiarity than men with fatty meat and cold meat and a lower choice of fat-rich meat. Genders differed in the influence of personality and attitudes about fat-rich meat choice. In both genders, the choice of meat higher in fat was associated with liking cold and fatty meat and with age and negatively with liking low-fat meat. Women were in general more interested in health than men, and this may explain the main difference in the choice of fat-rich meat between genders. However, when we look at each gender separately, general health interest was significantly correlated with a lower choice of fat-rich meat only in men. In addition, in men food neophobia was negatively correlated with choice of fat-rich meat. In women, the emotional dimension was found to play an important role, with sensitivity to disgust that was negatively associated with fat-rich meat choice and emotional eating that was positively associated with it. Thanks to the large sample and the gender-sensitive approach adopted, this study showed that different factors affect choice of fat-rich meat by gender, in addition to liking of and familiarity with fat-rich and cold meat and age. This suggests that strategies personalized by gender to reinforce or activate barriers to this type of consumption may be more effective at reducing fat intake, promoting the consumption of meat lower in fat.
