Burn injury in kitchen workers: a cause for prevention

Burn and cut injuries related to job stress among kitchen workers in Japan

To clarify the correlation between kitchen work-related burns and cuts and job stress, a self-administered questionnaire survey was conducted involving 991 kitchen workers among 126 kitchen facilities. The demographics, condition of burns and cuts, job stress with the Brief Job Stress Questionnaire (BJSQ), health condition, and work-related and environmental factors were surveyed. Multiple logistic regression models and trend tests were used according to quartiles (Q1, Q2, Q3, and Q4) of each sub-scale BJSQ. After adjustment for potential confounding variables, burns/cuts were associated with a higher score category (Q4) of job demands (OR: 2.56, 95% CI: 1.10-6.02/OR: 2.72, 95% CI: 1.30-5.69), psychological stress (OR: 4.49, 95% CI: 2.05-9.81/OR: 3.52, 95% CI: 1.84-6.72), and physical stress (OR: 2.41, 95% CI: 1.20-4.98/OR 2.16, 95% CI: 1.16-4.01). The ORs of the burn/cut injures increased from Q1 to Q4 with job demands (p for trend = 0.045/0.003), psychological stress (p for trend<0.001/0.001), and physical stress (p for trend = 0.006/0.005), respectively. These findings suggest that kitchen work-related burns and cuts are more likely to be correlated with job stress, and the higher the job stress score, the higher the frequency of burns and cuts among kitchen workers.

Clinical forensic evidence in burns: rescuer burns

In the literature no systematic study is available on rescuer burn for victims of burn injury. This is a retrospective study of nine patients (five admitted and four outpatients) were treated in this hospital as rescuer burns in 3.5 years. All nine patients were males. Average age of the patient treated on outpatient basis was 47 years (ranging between 44 and 52) and total burn area ranged for 1-4%. Average age of the five patients treated on inpatient basis was 32.6 years (ranging between 30 and 34). The total burn area ranged from 14.5 to 38%. During the period of study, in addition to nine rescuer burns, one patient sustained burn before the rescue attempt due to the victim hugging the rescuer. Based on the study of patterns of burn, these patients were found to have three grades of burn injury: Grade 1--upper extremity involvement only. (A) only one upper extremity involvement, (B) both upper extremities involvement, Grade 2--upper extremity/extremities and face involvement, Grade 3--upper extremity/extremities, face-neck, adjacent chest and lower extremity involvement.

Excesso de peso: característica dos trabalhadores de cozinhas coletivas?

O estudo, de desenho transversal, teve como objetivo levantar a prevalência de sobrepeso e obesidade em trabalhadores de cozinhas (n = 200) de oito hospitais públicos localizados na grande Florianópolis, Santa Catarina, verificando se há algum fator de risco específico relacionado às condições de trabalho. Utilizaram-se, como grupo de comparação, trabalhadores das lavanderias (n = 178) dos mesmos hospitais. Os dados foram coletados através de questionário estruturado e levantamento de medidas de peso e estatura. A prevalência de sobrepeso e obesidade (IMC > 25 kg/m²) foi maior entre os trabalhadores de cozinhas, encontrando-se associação positiva entre as mulheres (RP = 1,3; IC 95% = 1,1 a 1,5). A variável "beliscar" alimentos no local de trabalho mostrou-se condição específica dos trabalhadores de cozinhas independentemente do sexo, sendo que os homens e as mulheres das cozinhas "beliscam" alimentos freqüentemente no trabalho 5,7 e 3,9 vezes mais que os homens e mulheres das lavanderias, respectivamente. Sendo assim, o acesso ao alimento pode estar relacionado à manutenção do excesso de peso e a maiores médias de peso entre as mulheres.

Queixas, doenças ocupacionais e acidentes de trabalho em trabalhadores de cozinhas industriais

As atividades desenvolvidas em cozinhas industriais apresentam um conjunto de características que podem desencadear doenças ocupacionais e acidentes de trabalho típicos. O objetivo deste estudo é comparar a prevalência de doenças ocupacionais, acidentes de trabalho e dores músculo-esqueléticas em trabalhadores de cinco cozinhas industriais. Para alcançar estes objetivos, foram avaliados 257 trabalhadores de cinco cozinhas industriais, com os seguintes procedimentos: entrevistas, questionários, análise da atividade real e aplicação do método NIOSH. Utilizou-se o teste qui-quadrado (x) para comparar a homogeneidade dos dados entre os trabalhadores. Excetuando-se a prevalência de dor na região dorsal da coluna (p=0,01) e alergia (p=0,00461), todas as variáveis estudadas apresentaram p>0,05, mostrando a homogeneidade entre os trabalhadores. A análise ergonômica identificou os seguintes problemas: ambiente físico (dimensões, configurações, ambiências), instrumentos e equipamentos inadequados, má postura, organização do trabalho inadequada e levantamento de pesos acima dos limites recomendados.
