Spice aldehydes improve emulsification stability of β-carotene by Schiff base reaction binding sodium caseinate as emulsion surface stabilizer. Food Chem 2025; 475:143305. Abstract
Cinnamaldehyde (CA), P-Anisaldehyde (PAA), N-heptanal (NHA) and Citronellal (CNA) were used to modify sodium caseinate (SC) as emulsifiers to stabilize β-carotene emulsion, and the binding mechanism of SC and spice aldehyde (SA) was discussed. The results showed that the binding of SA and SC was mainly driven by non-covalent interaction, especially hydrogen bonding. It was also found that CA may form covalent bond with SC through Schiff base reaction. Moreover, the combination of SA altered the structure of SC, enhanced its surface hydrophobicity, and improved its emulsifying property. The β-carotene has been better embedded by using CA-SC composite as surface stabilizer, and the droplets dispersed uniformly and with a droplet size of 222.65 nm, Emulsifying activity index (EAI) was 58.52 m2/g, emulsion stability index (ESI) was 42.22 min when the pH was 8.0. Thus, CA was better to be used to improve the emulsification stability of β-carotene by combining with SC as surface stabilizer.

Int J Biol Macromol 2024; 271:132118. Abstract
In this study, Perilla essential oil (PEO) Pickering emulsions, prepared using soybean protein isolate-chitosan nanoparticles (SPI-CSNPs) as emulsifiers (SCEO), were used to improve the performance of bacterial cellulose/polyvinyl alcohol (BC/PVA) films for application in chilled beef preservation. The SCEO has a smaller particle size (185 nm), higher viscosity, a more uniform dispersion and was more stable at an oil phase volume fraction of 80 %. An increase in the films' surface roughness and in the hydrogen bonding between SCEO and the films' matrix was also observed, resulting in a lower tensile strength (TS, 94.75-62.02 MPa) and higher elongation at break (EAB, 26.78-55.62 %). Moreover, the thermal stability, water vapor permeability, antioxidant and antibacterial properties of the composite films improved as the SCEO content increased. Furthermore, the Pickering emulsion method was effective in preventing the loss of PEO during storage. Overall, one particular composite film, BP/SCEO3, could prolong the shelf life of chilled beef by up to 14 days, and hence was promising for food preservation.

Abstract
The current study entails the encapsulation validity to enclose naturally occurring food preservatives, such as cinnamon essential oil (CM), within various wall materials. This approach has demonstrated enhanced encapsulated compounds' stability, efficiency, and bioactivity. The base carrier system consisted of a solid lipid (Berry wax, RW) individually blended with whey protein (WYN), maltodextrin (MDN), and gum Arabic (GMC) as wall materials. The resulting formulations were freeze-dried: WYN/RW/CM, MDN/RW/CM, and GMC/RW/CM. The study comprehensively analyzed encapsulation efficiency, morphology, crystallinity, thermal, and physiochemical properties. When RW was combined with WYN, MDN, and GMC, the microcapsule WYN/RW/CM showed the highest efficiency at 93.4 %, while the GMC/RW/CM exhibited the highest relative crystallinity at 46.54 %. Furthermore, the investigation assessed storage stability, release of bioactive compounds, and oxidative stability during storage at 4 °C/ 25 % RH ± 5 % and 25 °C/40 % RH ± 5 % for 55 days, revealing optimal stability in the WYN/RW/CM microcapsule. Additionally, the antimicrobial activity was assessed at various concentrations of microcapsules, revealing their inhibitory effect against Escherichia coli (gram-negative) and Staphylococcus aureus (gram-positive) bacteria. The WYN/RW/CM microcapsule exhibited the highest inhibition activity in both strains, reaching 40 mm. This study demonstrates that combining WYN with RW as a wall material has greater efficiency in encapsulation and potential uses in various industrial sectors.

Abstract
Inulin is a fructan biosynthesized mainly in plants of the Asteraceae family. It is also found in edible vegetables and fruits such as onion, garlic, leek, and banana. For the industrial production of inulin, chicory and Jerusalem artichoke are the main raw material. Inulin is used in the food, pharmaceutical, cosmetic as well biotechnological industries. It has a GRAS status and exhibits prebiotic properties. Inulin can be used as a wall material in the encapsulation process of drugs and other bioactive compounds and the development of their delivery systems. In the review, the use of inulin for the encapsulation of probiotics, essential and fatty oils, antioxidant compounds, natural colorant and other bioactive compounds is presented. The encapsulation techniques, materials and the properties of final products suitable for the delivery into food are discussed. Research limitations are also highlighted.

Abstract
Recently, intelligent packaging has combined several functions, including monitoring and preserving food freshness in real-time. This study was developed a hybrid film (active/ colorimetric) based on AM/CPC/9%SFW as a carrier of Origanum compactum essential oil (OC) in various concentrations (0%, 1%, 1.25%, and 1.5% v/v). The film's emulsions showed homogeneity regarding particle size, polydispersity index, and ζ -potential. Hybrid films' morphological, mechanical, water and light barrier, thermal, and antioxidant properties were enhanced with an increased OC. Interestingly, all films rapidly responded to pH/NH3 and reflected different colors. In the hybrid films, an inhibition effect against gram-positive (Staphylococcus aureus) and gram-negative (Escherichia coli) bacteria and OC (1.5%) film exhibited a large inhibition zone attained diameters of 37.33 and 15.67 mm, respectively, in the disc diffusion test. Outstanding, AM/CPC/9%SFW/1.5 %OC film displayed the ability to preserve and monitor chicken breast and shrimp freshness to 33 and 21 h, respectively, during storage at 25 °C.
