Bioactive Constituents and Antioxidant Activity of Some Carpathian Basin Honeys

Unifloral honeys have a high commercial value and should undergo a strict quality control before marketing. This study aimed at determining floral origin, polyphenolic compounds and antioxidant activity in 7 samples marketed as lavender and thyme honeys. The samples were subjected to pollen analysis to confirm their botanical origin. Coupled chromatographic techniques (HPLC-DAD-ESI-MS) were optimized for the separation and identification of polyphenolic compounds. The antioxidant properties of the samples were determined by spectrophotometric methods. Pollen profile analysis revealed that only 3 out of 5 alleged lavender honeys contained a low percentage (0.6-1.5) of lavender pollen; and there were only traces (0.1–0.6%) of thyme pollen in the alleged thyme honeys. Polyphenolic constituents did not allow for the clear separation of honey samples, revealing no marker compounds previously associated with lavender and thyme honeys. All samples contained large amounts of chlorogenic acid, chrysin, hesperetin, kaempferol and p-coumaric acid; as well as abscisic acid, a plant hormone known to be present in floral nectar and honey. Our results suggest that only one of five alleged lavender honeys and neither of the two alleged thyme honeys are true unifloral honeys. However, they can still provide various health benefits, such as being good sources of antioxidants. There was no relationship between the antioxidant activity and the uni- or multifloral character of the honey samples. Total phenolic content and antioxidant activity was the lowest in the honey sample with lavender and the highest in one of the alleged lavender honeys. Our findings highlight the importance of microscopical and phytochemical analyses of honeys before marketing, to ensure satisfactory quality for customers.

Physicochemical Properties of Honey from Marche, Central Italy: Classification of Unifloral and Multifloral Honeys by Multivariate Analysis

The purpose of this study was the physicochemical characterization and classification of Italian honey from Marche Region with a chemometric approach. A total of 135 honeys of different botanical origins [acacia ( Robinia pseudoacacia L.), chestnut ( Castanea sativa), coriander ( Coriandrum sativum L.), lime ( Tilia spp.), sunflower ( Helianthus annuus L.), Metcalfa honeydew and multifloral honey] were considered. The average results of electrical conductivity (0.14 – 1.45 mS cm−1), pH (3.89 – 5.42), free acidity (10.9 – 39.0 meqNaOH kg−1), lactones (2.4 – 4.5 meqNaOH kg−1), total acidity (14.5 – 40.9 meqNaOH kg−1), proline (229–665 mg kg−1) and 5-(hydroxy-methyl)-2-furaldehyde (0.6–3.9 mg kg−1) content show wide variability among the analysed honey types, with statistically significant differences between the different honey types. Pattern recognition methods such as principal component analysis and discriminant analysis were performed in order to find a relationship between variables and types of honey and to classify honey on the basis of its physicochemical properties. The variables of electrical conductivity, acidity (free, lactones), pH and proline content exhibited higher discriminant power and provided enough information for the classification and distinction of unifloral honey types, but not for the classification of multifloral honey (100% and 85% of samples correctly classified, respectively).

Phytochemical and physical-chemical analysis of Polish willow (Salix spp.) honey: identification of the marker compounds

The case study of Polish Salix spp. honey was compared with published data on willow honey from other regions. GC-FID/MS (after HS-SPME and ultrasonic solvent extraction) and targeted HPLC-DAD were applied. Phenolic content, FRAP/DPPH assays and the colour coordinates were determined spectrophotometrically. Beside ubiquitous linalool derivatives, borneol (up to 10.9%), bicyclic monoterpenes with pinane skeleton (pinocarvone up to 10.6%, myrtenal up to 4.8% and verbenone up to 3.4%) and trans-β-damascenone (up to 13.0%) dominated in the headspace. The main compounds of the extractives were vomifoliol (up to 39.6%) and methyl syringate (up to 16.5%) along with not common 4-hydroxy-3-(1-methylethyl)benzaldehyde (up to 11.1%). Abscisic acid (ABA) was found (up to 53.7 mg/kg) with the isomeric ratio (Z,E)-ABA:(E,E)-ABA=1:2. The honey exhibited low antioxidant potential with pale yellow colour. The composition of Polish willow honey is similar to Mediterranean willow honeys with several relevant differences.
