Carbohydrate composition of ripe pineapple (cv. perola) and the glycemic response in humans

Valorization of pineapple processing residues through acetification to produce specialty vinegars enriched with red-Jambo extract of Syzygium malaccense leaf

The present study proposes the production of vinegars from pineapple processing residues as an eco-friendly strategy for adding value and economic strengthening of the production chain. Pineapple pulp and peel wines were produced and acetificated to vinegar by wild strains of acetic bacteria using Orlean's method (traditional system) followed by enrichment with leaf extract of Red-Jambo, Syzygium malaccense. Appreciable phenolic contents and antioxidant potential were found in pulp and peel vinegars with the added leaf extract. Catechin, epicatechin and caffeic, p-coumaric, ferulic, and gallic acids were the main phenolic compounds found in peel vinegar. The enrichment of the vinegar with the extract promoted an increase in the content of polyphenols (443.6-337.3 mg GAE/L) and antioxidant activity. Peel wines presented higher luminosity (L^*) and higher saturation index (C^*), and their color tended more toward yellow than pulp wines. Acetification reduced the saturation index (C^*) and led to the intensification of the hue angle in the peels vinegar. Each type of pineapple vinegar produced showed biocidal activity against different bacteria and yeast, and the addition of leaf extract potentiated the antimicrobial activity of peel vinegar, especially against Staphalococcus aureus. The vinegars developed could find an attractive market niche in the food sector.

Cognitive enhancing of pineapple extract and juice in scopolamine-induced amnesia in mice

The objective of the present study was to evaluate the cognitive enhancing of pineapple juice and ethanolic extract in scopolamine-induced cognitive deficit mice. The ethanolic extract of pineapple (Ananas comosus (L.) Merr.) was prepared by maceration method and its juice was obtained by a homogenizer. Object recognition task was used to evaluate the mice memory. Exploration time in the first and second trial was recorded. The differences in exploration time between a familiar and a novel object in the second trial were taken as a memory index. Animals were randomly assigned into 15 groups of 6 each including: control group (normal saline + vehicle), positive control group (scopolamine + rivastigmine), seven experimental groups (received scopolamine alone or scopolamine + ethanolic extract of pineapple in different doses), six other experimental groups were treated by ethanolic extract or juice of pineapple in different doses. Scopolamine (100 μL, 1 mg/kg, i.p.) and pineapple juice or extract (50, 75 and 100 mg/kg, i.p.) were administered 40 and 30 min before starting the second trial in the experimental groups. Object discrimination was impaired after scopolamine administration. Results showed that juice and ethanolic extract of pineapple significantly restored object recognition ability in mice treated with scopolamine. These finding suggested that pineapple had a protective role against scopolamine-induced amnesia, indicating its ability in management of cognitive disorders.

Effect of acoustically assisted treatments on vitamins, antioxidant activity, organic acids and drying kinetics of pineapple

The effects of the application of an acoustically assisted treatment on the vitamins (C, B₁, B₂, B₃, and B₅), the antioxidant activity (DPPH, FRAP), the polyphenol and flavonoid contents, the organic acid contents (citric and malic) and drying kinetics of pineapple (Ananas comosus var. Perola) have been studied. Treatments were carried out using two different soaking media: distilled water and pineapple juice at 30°C during 10, 20 and 30min without and with acoustic assistance (23.2W/L). After treatment, samples were dried at 60°C and 0.5m/s during 8h. The quality parameters were determined in untreated, treated, and treated-dried samples. The acoustic assistance promoted an increment of vitamins B₁, B₂, B₃ and B₅, total flavonoid and malic acid contents, and a reduction of vitamin C, total polyphenol content, antioxidant activity and citric acid content in treated samples. However, in all treated-dried samples the final content of those quality parameters was higher than the observed in the untreated dried sample.
