Do Adults Draw Differently-Sized Meals on Larger or Smaller Plates? Examining Plate Size in a Community Sample

Background

Prior research has reported that plate size may influence an individual's perceptions and recall of food and meal size. Therefore, manipulating plate size could influence projected meal quantities and portion size among community dwelling adults.

Methods

The present study interviewed 281 adult parents in their own homes in a medium-sized city in the United States. Participants were asked to accurately draw and label the foods they expected to eat for dinner that night, drawing on either a 23 cm or 28 cm paper plate. The respondents were then asked to label each food drawn in order to ensure proper recording of meals.

Results

Results showed clear differences in drawn food sizes between plate sizes as well as between sexes. Larger plates had about 24% more food drawn on them than small plates. Men drew their meals on 28 cm plates to be 37% larger than men who received 23 cm plates, while women with 28 cm plates drew their meals to be about 17% larger than women given 23 cm plates. Most (60%) of the overall differences in food size between plates came from the biggest food that was drawn. Women and men both drew bigger meat portions on 28 cm plates when compared to the meat portions on 23 cm plates.

Conclusions

Overall, these findings support the concept that adult participants' estimates of dinner meal size may be shaped by plate size. The effect of differing plate sizes appears to be more powerful for men than women, and may encourage greater food consumption among men, primarily as meat products.

The Dynamic Ebbinghaus: motion dynamics greatly enhance the classic contextual size illusion

The Ebbinghaus illusion is a classic example of the influence of a contextual surround on the perceived size of an object. Here, we introduce a novel variant of this illusion called the Dynamic Ebbinghaus illusion in which the size and eccentricity of the surrounding inducers modulates dynamically over time. Under these conditions, the size of the central circle is perceived to change in opposition with the size of the inducers. Interestingly, this illusory effect is relatively weak when participants are fixating a stationary central target, less than half the magnitude of the classic static illusion. However, when the entire stimulus translates in space requiring a smooth pursuit eye movement to track the target, the illusory effect is greatly enhanced, almost twice the magnitude of the classic static illusion. A variety of manipulations including target motion, peripheral viewing, and smooth pursuit eye movements all lead to dramatic illusory effects, with the largest effect nearly four times the strength of the classic static illusion. We interpret these results in light of the fact that motion-related manipulations lead to uncertainty in the image size representation of the target, specifically due to added noise at the level of the retinal input. We propose that the neural circuits integrating visual cues for size perception, such as retinal image size, perceived distance, and various contextual factors, weight each cue according to the level of noise or uncertainty in their neural representation. Thus, more weight is given to the influence of contextual information in deriving perceived size in the presence of stimulus and eye motion. Biologically plausible models of size perception should be able to account for the reweighting of different visual cues under varying levels of certainty.

Visual illusions and plate design: the effects of plate rim widths and rim coloring on perceived food portion size

OBJECTIVE

The Delboeuf Illusion affects perceptions of the relative sizes of concentric shapes. This study was designed to extend research on the application of the Delboeuf illusion to food on a plate by testing whether a plate’s rim width and coloring influence perceptual bias to affect perceived food portion size.

DESIGN AND METHODS

Within-subjects experimental design. Experiment 1 tested the effect of rim width on perceived food portion size. Experiment 2 tested the effect of rim coloring on perceived food portion size. In both experiments, participants observed a series of photographic images of paired, side-by-side plates varying in designs and amounts of food. From each pair, participants were asked to select the plate that contained more food. Multi-level logistic regression examined the effects of rim width and coloring on perceived food portion size.

RESULTS

Experiment 1: Participants overestimated the diameter of food portions by 5% and the visual area of food portions by 10% on plates with wider rims compared to plates with very thin rims (P<0.0001). The effect of rim width was greater with larger food portion sizes. Experiment 2: Participants overestimated the diameter of food portions by 1.5% and the visual area of food portions by 3% on plates with rim coloring compared to plates with no coloring (P=0.01). The effect of rim coloring was greater with smaller food portion sizes.

CONCLUSION

The Delboeuf illusion applies to food on a plate. Participants overestimated food portion size on plates with wider and colored rims. These findings may help design plates to influence perceptions of food portion sizes.

When less is more: like humans, chimpanzees (Pan troglodytes) misperceive food amounts based on plate size

We investigated whether chimpanzees (Pan troglodytes) misperceived food portion sizes depending upon the context in which they were presented, something that often affects how much humans serve themselves and subsequently consume. Chimpanzees judged same-sized and smaller food portions to be larger in amount when presented on a small plate compared to an equal or larger food portion presented on a large plate and did so despite clearly being able to tell the difference in portions when plate size was identical. These results are consistent with data from the human literature in which people misperceive food portion sizes as a function of plate size. This misperception is attributed to the Delboeuf illusion which occurs when the size of a central item is misperceived on the basis of its surrounding context. These results demonstrate a cross-species shared visual misperception of portion size that affects choice behavior, here in a nonhuman species for which there is little experience with tests that involve choosing between food amounts on dinnerware. The biases resulting in this form of misperception of food portions appear to have a deep-rooted evolutionary history which we share with, at minimum, our closest living nonhuman relative, the chimpanzee.

Using plate mapping to examine sensitivity to plate size in food portions and meal composition among college students

People eat meals rather than nutrients or food groups. Plate size may influence meal size, meal composition, and food type. To examine effects of plate size on meals, we developed a method we label plate mapping. A quasi-experimental study asked university students to accurately draw what they would like to eat for dinner on either a 9″ or 11″ paper plate. Coding plate drawings for total meal size revealed that students drew an average of 26% more food on larger plates. When plates were coded for meal composition we found that the biggest three food portions drawn by students were bigger on 11″ plates, with 70% of the overall difference in food area occurring in the biggest food. Participants drew bigger portions of vegetables on larger plates, while other food types showed little change in mean size. Gender moderated plate sensitivity for food types: women drew 36% bigger vegetable portions than men on larger plates. Smaller plates may lead to smaller meal sizes, but plate size may differentially influence composition of meals for men and women. These findings suggest plate mapping can be used to reflect meal conceptualizations and assess sensitivity to plate size.

Size contrast and assimilation explained by the statistics of natural scene geometry

The term "size contrast and assimilation" refers to a large class of geometrical illusions in which the apparent sizes of identical visual targets in various contexts are different. Here we have examined whether these intriguing discrepancies between physical and perceived size can be explained by a visual process in which percepts are determined by the probability distribution of the possible real-world sources of retinal stimuli. To test this idea, we acquired a range image database of natural scenes that specified the location of every image point in 3-D space. By sampling the possible physical sources of various size contrast or assimilation stimuli in the database, we determined the probability distributions of the size of the target in the images generated by these sources. For each of the various stimuli tested, these probability distributions of target size in different contexts accurately predicted the perceptual effects reported in psychophysical studies. We conclude that size contrast and assimilation effects are a further manifestation of a fundamentally probabilistic process of visual perception.

Effect of spatial waveform on apparent spatial frequency

We examined the effect of spatial waveform on the perceived spatial frequency of a grating target. The luminance profile of 0.5 c/ degrees sinusoidal gratings was modified by either compressive or expansive power functions, and was presented alternately with a true sinusoidal grating. Subjects matched the apparent spatial frequency of the two gratings using a method of adjustment. Both compressive and expansive power functions lowered the perceived spatial frequency of the grating, irrespective of the stimulus contrast. Rectified sine wave gratings were also found to reduce apparent spatial frequency. The magnitude of the spatial frequency shifts with spatial waveform diminished with successive matches, which may represent a change in matching strategy employed by observers. Calculations and a further experiment suggest that judgements of spatial frequency may in part be determined by the separation between edges in a grating.
