Abstract
Objective The growth, carcass and retail cut yield records on 1,428 Hanwoo steers obtained through progeny testing were analyzed in this study, and their heritability and genetic relationships among the traits were estimated using animal models. Methods Two different models were compared in this study. Each model was fitted for different fixed class effects, date of slaughter for carcass traits and batch of progeny test live measurement traits, and a choice of covariates (carcass weight in Model 1 or backfat thickness in Model 2) for carcass traits. Results The differences in body composition among individuals were deemed being unaffected by their age at slaughter, except for carcass weight and backfat thickness. Heritability estimates of body size measurements were 0.21 to 0.36. Heritability estimates of retail cut percentage were high (0.56 from Model 1 and 0.47 from Model 2). And the heritability estimates for loin muscle percentage were 0.36 from Model 1 and 0.42 from Model 2, which were high enough to consider direct selection on carcass cutability traits as effective. The genetic correlations between body size measurements and retail cut ratio (RCR) were close to zero. But, some negative genetic correlations were found with chest girths measured at yearling (Model 1) or at 24 months of age or with chest widths. Loin muscle ratio (LMR) was genetically negatively correlated with body weights or body size measurements, in general in Model 1. These relationships were low close to zero but positive in Model 2. Phenotypic correlation between cutability traits (RCR, LMR) and live body size measurements were moderate and negative in Model 1 while those in Model 2 were all close to zero. Conclusion Therefore, the body weights or linear body measurements at an earlier age may not be the most desirable selection traits for exploitation of correlated responses to improve loin muscle or lean meat yield.

Abstract
This study aimed to estimate genetic correlation between carcass grading and retail productivity traits and to estimate the correlated response on retail productivity traits through selection for carcass grading traits in order to assess the efficacy of indirect selection. Genetic parameters were estimated with the data from 4240 Hanwoo steers using mixed models, and phenotypes included carcass weight (CWT), back fat thickness (BFT), eye muscle area (EMA), marbling (MAR), and estimated lean yield percentage (ELP) as the carcass grading traits, and weight and portion of retail cuts (RCW and RCP), trimmed fats (TFW and TFP) and trimmed bones (TBW and TBP) as the lean productivity traits. The CWT had positive genetic correlations with RCW (0.95) and TFW (0.73), but its genetic correlation with RCP was negligible (0.02). The BFT was negatively correlated with RCP (−0.63), but positively correlated with TFW and TFP (0.77 and 0.70). Genetic correlations of MAR with TFW and TFP were low. Among the carcass grading traits, only EMA was positively correlated with both RCW (0.60) and RCP (0.72). The EMA had a relatively strong negative genetic correlation with TFW (−0.64). The genetic correlation coefficients of ELP with RCP, TFW, and TFP were 0.76, −0.90, and −0.82, respectively. These correlation coefficients suggested that the ELP and EMA might be favorable traits in regulating lean productivity of carcass.

Two-hundred and twenty-four spring-born British×Continental crossbred steers were used in a 2-yr project to evaluate the effect of production system (calf-fed vs. yearling-fed) and its interaction with breed cross and hormone implant strategies, with and without β-adrenergic agonist on carcass characteristics. Carcasses from yearling-fed steers were 32% heavier (P<0.001), resulting in higher (P<0.05) dressing percentages, grade fat and rib-eye (longissimus thoracis) area (REA) (1.1, 32 and 10%, respectively). However, despite being lighter, the estimated lean yield percentage was 3% greater (P=0.010) in carcasses from calf-fed steers. No difference (P>0.05) was observed for marbling scores between production systems. Use of hormonal implants increased (P<0.001) weights of live animals and carcasses (7 and 9%, respectively). However, non-implanted yearling-fed steers had the lowest proportion of Canada Quality Grade A and the highest proportion of Canada Quality Grade AAA carcasses (P<0.001). Moreover, the observed increase (P=0.016) in marbling scores (up to 37%) from British cross-bred steers disappeared with the use of implants. The only effect observed on carcass traits from the use of β-adrenergic agonists was an increase of 6% in REA (P=0.032). The main production system effect observed for carcass composition was a lower (P=0.008) proportion of bone in carcasses from yearling-fed steers. The use of hormonal implants increased (P<0.001) the proportion of lean and decreased (P=0.019) the proportion of fat (P<0.05). Overall carcass composition of steers with large Continental influence (>50%) had a higher proportion of lean and bone and a lower proportion of fat than carcasses from 50–75% British steers (P<0.001), which was also reflected in the composition of several individual primal cuts (e.g., rib, short-loin, flank, chuck and plate). The interactions amongst production systems and the other production factors studied were minimal. Therefore, despite expected differences in carcass size, reducing age at slaughter did not have a negative impact on Canadian beef carcass traits.

Abstract
Sixty Hereford (H) and Braford (B: 3/8 Zebu and 5/8 H) steers were finished on: D1) rangeland plus corn grain (1% of live weight) (H n=15, B n=15); and D2) high quality pasture (H n=15, B n=15) to study the effect of diet, temperament and lairage time on carcass and meat quality. Steers were slaughtered the same day in two groups, spending 15 and 3h in pens, respectively (50% from D1, 50% from D2 in each group). Animals from D1 had better carcass performance without effect of the diet on meat quality. Regardless of breed, calmer steers showed higher average daily gain and lower shear force values. Carcasses from animals in the long lairage group had a better rate of pH decline and more tender meat, suggesting that more than 3h preslaughter time should be necessary to rest and recover, mainly depending on lairage conditions.

Abstract
Data from 534 steers representing six sire breed groups were used to develop live animal ultrasound prediction equations for weight and percentage of retail product. Steers were ultrasonically measured for 12th-rib fat thickness (UFAT), rump fat thickness (URPFAT), longissimus muscle area (ULMA), and body wall thickness (UBDWALL) within 5 d before slaughter. Carcass measurements included in USDA yield grade (YG) and quality grade calculations were obtained. Carcasses were fabricated into boneless, totally trimmed retail products. Regression equations to predict weight and percentage of retail product were developed using either live animal or carcass traits as independent variables. Most of the variation in weight of retail product was accounted for by live weight (FWT) and carcass weight with R2 values of 0.66 and 0.69, respectively. Fat measurements accounted for the largest portion of the variation in percentage of retail product when used as single predictors (R2 = 0.54, 0.44, 0.23, and 0.54 for UFAT, URPFAT, UBDWALL, and carcass fat, respectively). Final models (P < 0.10) using live animal variables included FWT, UFAT, ULMA, and URPFAT for retail product weight (R2 = 0.84) and UFAT, URPFAT, ULMA, UBDWALL, and FWT for retail product percentage (R2 = 0.61). Comparatively, equations using YG variables resulted in R2 values of 0.86 and 0.65 for weight and percentage of retail product, respectively. Results indicate that live animal equations using ultrasound measurements are similar in accuracy to carcass measurements for predicting beef carcass composition, and alternative ultrasound measurements of rump fat and body wall thickness enhance the predictive capability of live animal-based equations for retail yield.

Abstract
Postweaning growth, feed efficiency, and carcass traits were analyzed on 1,422 animals obtained by mating F1 cows to F1 (Belgian Blue x British breeds) or Charolais sires. Cows were obtained from mating Hereford, Angus, and MARC IIIHereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) dams to Hereford or Angus (British breeds), Tuli, Boran, Brahman, or Belgian Blue sires. Breed groups were fed in replicated pens and slaughtered serially in each of 2 yr. Postweaning average daily gain; live weight; hot carcass weight; fat depth; longissimus area; estimated kidney, pelvic, and heart fat (percentage); percentage Choice; marbling score; USDA yield grade; retail product yield (percentage); retail product weight; fat yield (percentage); fat weight; bone yield (percentage); and bone weight were analyzed in this population. Quadratic regressions of pen mean weight on days fed and of cumulative ME consumption on days fed were used to estimate gain, ME consumption and efficiency (Mcal of ME/kg of gain) over time (0 to 200 d on feed), and weight (300 to 550 kg) intervals. Maternal grandsire breed was significant (P < 0.01) for all traits. Maternal granddam breed (Hereford, Angus, or MARC III)was significant (P < 0.05) only for fat depth, USDA yield grade, retail product yield, fat yield, fat weight, and bone yield. Sire breed was significant (P < 0.05) for live weight, hot carcass weight, longissimus area, and bone weight. Sex class was a significant (P < 0.001) source of variation for all traits except for percentage Choice, marbling score, retail product yield, and fat yield. Interactions between maternal grandsire and sire breed were nonexistent. Sire and grandsire breed effects can be optimized by selection and use of appropriate crossbreeding systems.

Abstract
Five hundred thirty-four steers were evaluated over a 2-yr period to develop and validate prediction equations for estimating carcass composition from live animal ultrasound measurements and to compare these equations with those developed from carcass measurements. Within 5 d before slaughter, steers were ultrasonically measured for 12th-rib fat thickness (UFAT), longissimus area (ULMA), rump fat thickness (URPFAT), and body wall thickness (UBDWALL). Carcasses were fabricated to determine weight (KGRPRD) and percentage (PRPRD) of boneless, totally trimmed retail product. Data from steers born in Year 1 (n = 282) were used to develop prediction equations using stepwise regression. Final models using live animal variables included live weight (FWT), UFAT, ULMA, and URPFAT for KGRPRD (R2 = 0.83) and UFAT, URPFAT, ULMA, FWT, and UBDWALL for PRPRD (R2 = 0.67). Equations developed from USDA yield grade variables resulted in R2 values of 0.87 and 0.68 for KGRPRD and PRPRD, respectively. When these equations were applied to steers born in Year 2 (n = 252), correlations between values predicted from live animal models and actual carcass values were 0.92 for KGRPRD, and ranged from 0.73 to 0.76 for PRPRD. Similar correlations were found for equations developed from carcass measures (r = 0.94 for KGRPRD and 0.81 for PRPRD). Both live animal and carcass equations overestimated (P < 0.01) actual KGRPRD and PRPRD. Regression of actual values on predicted values revealed a similar fit for equations developed from live animal and carcass measures. Results indicate that composition prediction equations developed from live animal and ultrasound measurements can be useful to estimate carcass composition.
