Evaluation of carcass, live, and real-time ultrasound measures in feedlot cattle: I. Assessment of sex and breed effects

Effects of organic or inorganic cobalt, copper, manganese, and zinc supplementation to late-gestating beef cows on productive and physiological responses of the offspring

Eighty-four multiparous, nonlactating, pregnant Angus × Hereford cows were ranked by pregnancy type (56 AI and 28 natural service), BW, and BCS and allocated to 21 drylot pens at the end of their second trimester of gestation (d 0). Pens were assigned to receive forage-based diets containing 1) sulfate sources of Cu, Co, Mn, and Zn (INR); 2) an organic complexed source of Cu, Mn, Co, and Zn (AAC; Availa 4; Zinpro Corporation, Eden Prairie, MN); or 3) no supplemental Cu, Co, Mn, and Zn (CON). Diets were offered from d 0 until calving and formulated to meet requirements for energy, protein, macrominerals, Se, I, and vitamins. The INR and AAC diets provided the same daily amount of Cu, Co, Mn, and Zn. Cow BW and BCS were recorded and liver samples were collected on d -10 and 2 wk (d 75) before the calving season. Within 3 h after calving, calf BW was recorded, liver samples were collected, and the expelled placenta was retrieved ( = 47 placentas). Calves were weaned on d 283 of the experiment, preconditioned for 45 d (d 283 to 328), transferred to a growing lot on d 328, and moved to a finishing lot on d 440 where they remained until slaughter. Liver Co, Cu, and Zn concentrations on d 75 were greater ( ≤ 0.05) for INR and AAC cows compared with CON cows, whereas INR cows had reduced ( = 0.04) liver Co but greater ( = 0.03) liver Cu compared with AAC cows. In placental cotyledons, Co concentrations were greater ( ≤ 0.05) in AAC and INR cows compared with CON cows, whereas Cu concentrations were increased ( = 0.05) only in AAC cows compared with CON cows. Calves from INR and AAC cows had greater ( < 0.01) liver Co concentrations at birth compared with calves from CON cows. Liver Cu and Zn concentrations at birth were greater ( ≤ 0.05) in calves from AAC cows compared with cohorts from CON cows. Weaning BW was greater ( ≤ 0.05) in calves from AAC cows compared with cohorts from CON cows, and this difference was maintained until slaughter. In the growing lot, calves from AAC cows had reduced ( < 0.01) incidence of bovine respiratory disease compared with CON and INR cohorts. Collectively, these results suggest that feeding the AAC diet to late-gestating beef cows stimulated programming effects on postnatal offspring growth and health compared with the CON diet. Therefore, supplementing late-gestating beef cows with an organic complexed source of Co, Cu, Zn, and Mn instead of no supplementation appears to optimize offspring productivity in beef production systems.

Genetic parameters for yearling weight, carcass traits, and primal-cut yields of Hanwoo cattle

Genetic parameters associated with yearling weight, carcass traits, and primal-cut yields of male Hanwoo cattle were investigated using univariate and bivariate animal models. The mean yearling weight (YWT), carcass weight (CWT), longissimus muscle area (LMA), backfat thickness (BFT), and marbling score (MS) were 352.47 ± 0.40 kg, 337.39 ± 0.64 kg, 78.28 ± 0.13 cm2, 8.45 ± 0.05 mm, and 3.25 ± 0.03, respectively. Total primal-cut yield (TPC) was 78.95 ± 0.10% of CWT, of which 42.3% was contributed by the forequarters (chuck, CHK; shoulder, SLD; ribs, RIB; and brisket and flank, BAF). Loins, top round (TRND), and round (RND) were associated with yields of 13.57%, 5.45 ± 0.01%, and 8.87 ± 0.02%, respectively. The largest cut studied was ribs (15.67 ± 0.03%). The estimated heritabilities (h2) of YWT, CWT, LMA, BFT, and MS were 0.18 ± 0.02, 0.29 ± 0.04, 0.38 ± 0.05, 0.45 ± 0.05, and 0.62 ± 0.07, respectively. Shoulder yield was highly heritable in Hanwoo steers (0.83 ± 0.13), followed by the yields of round (0.66 ± 0.12), striploin (0.64 ± 0.12), top round (0.62 ± 0.12), sirloin (0.60 ± 0.12), and total primal-cut yield (0.52 ± 0.11). The h2 values of CHK, BAF, RIB, and tenderloin (TLN) ranged from 0.19 ± 0.09 to 0.41 ± 0.11. Generally, the genetic CV was low for most traits (2.33%-6.15%), except for CHK, BFT, and MS. The genetic correlation (rg) was strong between YWT and CWT (0.77 ± 0.06). The greatest positive and negative rg among carcass traits were those between LMA and CWT (0.52 ± 0.08) and between LMA and BFT (-0.30 ± 0.09), respectively. The correlation between CHK and SLD (0.81 ± 0.14), and those between SLD, TLN, TRND, and RND, were mostly strong (0.77-0.87), but the rg between RIB and other traits were strongly negative. The TPC yield showed moderate to high rg with most primal cuts. The YWT, CWT, and LMA correlated notably with CHK, SLD, and loin yields, especially LMA. However, BFT and MS were negatively correlated with many primal cuts but RIB. Those rg estimates were also opposite of that of LMA and CWT with primal cuts. Phenotypic correlations (rp) were generally weaker than rg estimates. The rp of YWT, CWT, and LMA were either zero or moderately negative compared to those of the BFT and MS with primal cuts. Most primal cuts yielded positive rp estimates among them, except for RIB. Our results suggest that direct selection for YWT, various carcass traits, and primal-cut yields may increase the carcass value of Hanwoo males.

Estimation of breed and heterosis effects for growth and carcass traits in cattle using published crossbreeding studies

Current genetic evaluations are performed separately for each breed. Multiple breed genetic evaluations, however, assume a common base among breeds, enabling producers to compare cattle of different breed makeup. Breed and heterosis effects are needed in a multibreed evaluation because databases maintained by breed associations include few crossbred animals, which may not be enough to accurately estimate these effects. The objective of this study was to infer breed effects, maternal effects, direct heterosis effects, and maternal heterosis effects for growth and carcass traits using least squares means estimates from crossbreeding studies published in the literature from 1976 to 1996. The data set was formed by recording each least squares mean along with the breed composition, maternal breed composition, and direct and maternal heterozygosity. Each trait was analyzed using a single trait fixed effect model, which included study as a fixed effect and breed composition and heterozygosity as covariates. Breed solutions for each trait were expressed relative to the Angus breed. Direct breed effects for weaning weight ranged from -7.0 +/- 0.67 kg (British Dairy) to 29.3 +/- 0.74 kg (Simmental), and maternal effects ranged from -11.7 +/- 0.24 kg (Hereford) to 31.1 +/- 2.22 kg (Gelbvieh). Direct breed effects for birth weight ranged from -0.5 +/- 0.14 kg (British Dairy) to 10.1 +/- 0.46 kg (Continental Beef), and maternal effects ranged from -7.2 +/- 0.13 kg (Brahman) to 6.0 +/- 1.07 kg (Continental Beef). Direct breed effects ranged from -17.9 +/- 1.64 kg (Brahman) to 21.6 +/- 1.95 kg (Charolais), from -6.5 +/- 1.29 kg (Brahman) to 55.8 +/- 1.47 kg (Continental Beef), from -8.1 +/- 0.48 cm(2) (Shorthorn) to 21.0 +/- 0.48 cm(2) (Continental Beef), and from -1.1 +/- 0.02 cm (Continental Beef) to 0 +/- 0.00 cm (Angus) for postweaning BW gain, carcass weight, LM area, and fat thickness, respectively. The use of literature estimates to predict direct and maternal breed and heterosis effects may supplement their direct prediction in a multibreed evaluation.

National cattle evaluation system for combined analysis of carcass characteristics and indicator traits recorded by using ultrasound in Angus cattle

The objectives were to 1) evaluate genetic relationships of sex-specific indicators of carcass merit obtained by using ultrasound with carcass traits of steers; 2) estimate genetic parameters needed to implement combined analyses of carcass and indicator traits to produce unified national cattle evaluations for LM area, subcutaneous fat depth (SQF), and marbling (MRB), with the ultimate goal of publishing only EPD for the carcass traits; and 3) compare resulting evaluations with previous ones. Four data sets were extracted from the records of the American Angus Association from 33,857 bulls, 33,737 heifers, and 1,805 steers that had measures of intramuscular fat content (IMF), LM area (uLMA), and SQF derived from interpretation of ultrasonic imagery, and BW recorded at the time of scanning. Also used were 38,296 records from steers with MRB, fat depth at the 12th to 13th rib interface (FD), carcass weight, and carcass LM area (cLMA) recorded on slaughter. (Co)variance components were estimated with ASREML by using the same models as used for national cattle evaluations by the American Angus Association. Heritability estimates for carcass measures were 0.45 +/- 0.03, 0.34 +/- 0.02, 0.40 +/- 0.02, and 0.33 +/- 0.02 for MRB, FD, carcass weight, and cLMA, respectively. Genetic correlations of carcass measures from steers with ultrasonic measures from bulls and heifers indicated sex-specific relationships for IMF (0.66 +/- 0.05 vs. 0.52 +/- 0.06) and uLMA (0.63 +/- 0.06 vs. 0.78 +/- 0.05), but not for BW at scanning (0.46 +/- 0.07 vs. 0.40 +/- 0.07) or SQF (0.53 +/- 0.06 vs. 0.55 +/- 0.06). For each trait, estimates of genetic correlations between bulls and heifers measured by using ultrasound were greater than 0.8. Prototype national cattle evaluations were conducted by using the estimated genetic parameters, resulting in some reranking of sires relative to previous analyses. Rank correlations of high-impact sires were 0.91 and 0.84 for the joint analysis of MRB and IMF with previous separate analyses of MRB and IMF, respectively. Corresponding results for FD and SQF were 0.90 and 0.90, and for cLMA and uLMA were 0.79 and 0.89. The unified national cattle evaluation for carcass traits using measurements from slaughtered animals and ultrasonic imagery of seed stock in a combined analysis appropriately weights information from these sources and provides breeders estimates of genetic merit consistent with traits in their breeding objectives on which to base selection decisions.

Análise de custos de diferentes grupos genéticos de bovinos de corte terminados em confinamento

O desempenho de 149 animais, machos inteiros, confinados por períodos variáveis de acordo com acabamento de carcaça, foi utilizado para avaliar a eficiência econômica dos grupos genéticos Nelore sobreano, Nelore desmamado, ½ Valdostana ½ Nelore, ½ Simental ½ Nelore, ½ Braford ½ Brangus, ½ Braford ¼ Angus ¼ Nelore, Brangus, ½ Canchim ¼ Angus ¼ Nelore e ½ Canchim ¼ Simental ¼ Nelore. O custo operacional variável, o custo por quilograma de carne produzida e a margem bruta foram analisados pelo método dos quadrados mínimos ordinários, mediante modelo estatístico que incluiu o efeito do grupo genético e o peso inicial como covariável, comparando-se as médias pelo teste Duncan (P<0,05). Os maiores custos operacionais variáveis no período, em US$, foram do ½ Canchim ¼ Simental ¼ Nelore (160,8), Nelore desmamado (158,7) e ½ Canchim ¼ Angus ¼ Nelore (155,1). Os menores custos por quilograma de carne, em US$, foram do Nelore sobreano (0,79) e Brangus (0,82). A maior margem bruta, em US$, foi obtida pelo grupo genético Nelore sobreano (94,6), seguida do Brangus (71,5) e do ½ Simental ½ Nelore (46,6). Os grupos genéticos mais pesados no início do confinamento e que permaneceram menos tempo confinados apresentaram maior margem bruta.
