Abstract
Dairy herds are mating a portion of cows to beef cattle semen to create a value-added calf. Objectives of this study were to compare the feedlot performance and carcass characteristics of beef × Holstein steers by breed when sires represented bulls with commercially available semen. Three groups of single-born, male calves (n = 262) born to Holstein dams on 10 Pennsylvania dairies were sourced during 3 yr. Steers were sired by seven beef breeds: Angus, Charolais, Limousin, Hereford, Red Angus, Simmental, and Wagyu. Steers were picked up within a week of age and raised at two preweaned calf facilities until weaning (8 ± 1 wk of age) under similar health and management protocols. Steers were then transported to a commercial calf growing facility where they were managed as a single group until 10 ± 2 mo of age when they were moved to be finished at the Pennsylvania Department of Agriculture's Livestock Evaluation Center feedlot. Groups of steers were selected for slaughter based on body weight. Carcass characteristics were evaluated by trained personnel and a three-rib section of the longissimus muscle (LM) was collected from each carcass for Warner-Bratzler shear force (WBSF) evaluation and intramuscular fat determination. Steers sired by all sire breeds except for Limousin had greater average daily gain (ADG; 1.62 to 1.76 kg/d) than Wagyu × Holstein steers (1.39 kg/d; P < 0.05). Angus-sired steers had an 8.6% greater ADG than Red Angus-sired steers (P < 0.05). Angus, Charolais (1.73 kg/d), and Simmental-sired steers (1.68 kg/d) also had greater ADG than Limousin-sired steers (1.55 kg/d; P < 0.05). Wagyu × Holstein steers spent 5 to 26 more days on feed (P < 0.05) than Limousin × Holstein, Simmental × Holstein, Angus × Holstein, and Charolais × Holstein steers. Angus and Charolais-sired steers were also on feed for 19 and 21 d fewer, respectively, than Limousin-sired steers (P < 0.05). Red Angus-sired steers had greater marbling scores than Simmental and Limousin-sired steers and Angus and Charolais-sired steers had greater marbling scores than Limousin-sired steers (P < 0.05). Angus, Limousin, and Hereford-sired steers produced the most tender LM as evaluated by WBSF; Angus-sired carcasses (3.82 kg) were more tender than Charolais (4.30 kg) and Simmental-sired carcasses (4.51 kg; P < 0.05). Limousin and Hereford-sired steers (3.70 and 3.83 kg, respectively) also had more tender steaks than Simmental-sired steers.

Abstract
The objective was to compare pregnancy per service event (P/S) in lactating dairy cows following timed artificial insemination (AI) or timed embryo transfer (ET) using either fresh or frozen in vitro-produced embryos. Oocytes were collected once per week for up to 9 wk using transvaginal ovum pick-up from elite dairy donors (ET-DAIRY; n = 40; Holstein-Friesian and Jersey) and elite beef donors (ET-ELITE-BEEF; n = 21; Angus). Both ET-DAIRY and ET-ELITE-BEEF donors consisted of heifers and cows. In addition, oocytes were collected from the ovaries of beef heifers of known pedigree following slaughter at a commercial abattoir (ET-COMM-BEEF; n = 119). Following in vitro maturation and fertilization, presumptive zygotes were cultured in vitro to the blastocyst stage. Grade 1 blastocysts were either transferred fresh or frozen for on-farm thawing and direct transfer. A total of 1,106 recipient cows (all lactating, predominantly Holstein-Friesian) located on 16 herdlets were blocked based on parity, calving date, and Economic Breeding Index, and randomly assigned to receive AI (n = 243) or ET (n = 863) after estrous synchronization with a 10-d Progesterone-synch protocol. Cows assigned to ET were further randomized to receive fresh (n = 187) or frozen (n = 178) ET-ELITE-BEEF embryos, fresh (n = 169) or frozen (n = 162) ET-DAIRY embryos, or fresh (n = 80) or frozen (n = 87) ET-COMM-BEEF embryos. Pregnancy was diagnosed using transrectal ultrasound on d 32 to 35 after synchronized ovulation and confirmed on d 62 to 65, at which time fetal sex was determined. Pregnancy per service event at d 32 was not different between AI (48.8%) and ET (48.9%) and did not differ between dairy and beef embryos (50.3% vs. 48.1%, respectively). However, P/S was less on d 32 following transfer of frozen embryos (41.6%) compared with fresh embryos (56.1%). Pregnancy loss between d 32 and 62 was greater for ET (15.1%) compared with AI (4.7%), with greater losses observed for frozen beef (18.5%), fresh beef (17.3%), and frozen dairy (19.2%) compared with fresh dairy (6.0%) embryos. Serum progesterone (P4) concentration on d 7 was associated with P/S at d 32 and 62. Cows in the quartile with the least serum P4 concentrations (quartile 1) had less probability of being pregnant on d 32 (33.4%) compared with cows in the 3 upper quartiles for serum P4 (45.7%, 55.6%, and 61.2% for quartile 2, quartile 3, and quartile 4, respectively). Sex ratio (male:female) at d 62 was skewed toward more male fetuses following ET (61.1:38.9) compared with AI (43.2:56.8) and was consistent with the sex ratio among in vitro blastocysts (61.2:38.8). In conclusion, P/S was similar for AI and ET, although pregnancy loss between d 32 and 62 was greater for ET than for AI.

Abstract
The mechanisms underlying male infertility are poorly understood. Most mammalian spermatozoa have two centrioles: the typical barrel-shaped proximal centriole (PC) and the atypical fan-like distal centriole (DC) connected to the axoneme (Ax). These structures are essential for fertility. However, the relationship between centriole quality and subfertility (reduced fertility) is not well established. Here, we tested the hypothesis that assessing sperm centriole quality can identify cattle subfertility. By comparing sperm from 25 fertile and 6 subfertile bulls, all with normal semen analyses, we found that unexplained subfertility and lower sire conception rates (pregnancy rate from artificial insemination in cattle) correlate with abnormal centriolar biomarker distribution. Fluorescence-based Ratiometric Analysis of Sperm Centrioles (FRAC) found only four fertile bulls (4/25, 16%) had positive FRAC tests (having one or more mean FRAC ratios outside of the distribution range in a group's high-quality sperm population), whereas all of the subfertile bulls (6/6, 100%) had positive FRAC tests (P = 0.00008). The most sensitive biomarker was acetylated tubulin, which had a novel labeling pattern between the DC and Ax. These data suggest that FRAC and acetylated tubulin labeling can identify bull subfertility that remains undetected by current methods and may provide insight into a novel mechanism of subfertility.

Abstract
Improved reproductive management has allowed dairy cow pregnancies to be optimized for beef production. The objective of this sire-controlled study was to characterize the effects of beef or dairy maternal genetics and the dairy management system on calf growth. Pregnancies were created with a 2 × 2 factorial arrangement of dam breed (Holstein or Jersey) and mating type (artificial insemination or implantation of an in vitro produced embryo from a commercial beef cow oocyte). Resulting calves were reared in a calf ranch. Additionally, commercial beef cows were inseminated and reared resulting calves on range. Therefore, the five treatments were Angus × Holstein (A × H; n = 19), Angus × Jersey (A × J; n = 22), Angus × beef gestated by Holstein (H ET; n = 18), Angus × beef gestated by Jersey (J ET; n = 8), and Angus × beef raised by beef (A × B; n = 20). Beginning at birth, calf body weight, cannon circumference, forearm circumference, top width, hip width, and hip height were measured approximately every 28 d until ~196 d of age. At birth, A × J calves weighed the least (P < 0.01). At 150 d of age, body weight was greatest (P < 0.05) among A × B calves, intermediate among H ET and A × H calves, and least among J ET and A × J calves (P < 0.05). Morphometric differences were detected between treatments (multivariate analysis of variance, P < 0.01). Primary discriminant function scores identified A × B calves having lesser values than A × J or A × H calves (analysis of variance [ANOVA], P < 0.01); A × B calves had greater cannon circumference, greater top width, and less hip height (standardized loadings of -0.47, -0.48, and 0.63, respectively). Secondary discriminant function scores identified J ET and H ET to have greater forearm circumference-a key indicator of muscling-than A × J or A × H (ANOVA, P < 0.01; standardized loading of 0.99). The dairy management system limited growth rate of beef genetics compared to the beef management system. In addition, Holstein dams transmitted greater growth potential than Jersey dams. Replacing maternal dairy genetics with beef genetics moderated frame size and created a more muscular phenotype.

Abstract
The decline in farm revenue due to volatile milk prices has led to an increase in the use of beef semen in dairy herds. While this strategy ("Beef-on-dairy" (BoD)) can have economic benefits, it can also lead to unintended consequences affecting animal welfare. Semen sale trends from breeding organizations depict increasing sales of beef semen across the globe. Calves born from such breeding strategies can perform better when compared to purebred dairy calves, especially in terms of meat quality and growth traits. The Beef-on-dairy strategy can lead to unintentional negative impacts including an increase in gestation length, and increased dystocia and stillbirth rates. Studies in this regard have found the highest gestation length for Limousin crossbred calves followed by calves from the Angus breed. This increase in gestation length can lead to economic losses ranging from 3 to 5 US$ per animal for each additional day. In terms of the growth performance of crossbred animals, literature studies are inconclusive due to the vast differences in farming structure across the regions. But almost all the studies agree regarding improvement in the meat quality in terms of color, fiber type, and intra-muscular fat content for crossbred animals. Utilization of genomic selection, and development of specialized Beef-on-dairy indexes for the sires, can be a viable strategy to make selection easier for the farmers.

Abstract
Our objective was to characterize semen type prevalence and allocation to inseminate US Holstein and Jersey females by year, parity, service number, and herd size. A secondary objective was to identify the prevalence of beef breed sires selected to create beef × Holstein and beef × Jersey crossbred calves. The final data set included 8,244,653 total inseminations of 4,880,752 Holstein females across 9,155 herds, and 435,267 total inseminations of 266,058 Jersey females across 2,759 herds from October 2019 to July 2021. This data set represents approximately 42 and 27% of the total dairy cows and heifers, respectively, across approximately 40% of the total licensed dairy herds in the continental United States. Holstein and Jersey females were inseminated with 1 of 4 semen types: (1) beef, (2) conventional, (3) sexed, or (4) other dairy. The top 4 beef breeds used to produce beef × Holstein and beef × Jersey crossbred calves, respectively, were Angus (55.1 and 39.1%), Limousin (13.9, and 23.5%), Simmental (11.7 and 20.5%), and Crossbreed Beef (11.3 and 4.8%). From 2019 to 2021, the use of sexed semen to inseminate Holstein and Jersey females increased from 11.0 and 24.5% to 17.7 and 32.1%, respectively, and the use of beef semen to inseminate Holstein and Jersey females increased from 18.2 and 11.4% to 26.1 and 21.2%, respectively. The use of beef semen to inseminate Holstein and Jersey females increased with increasing parity and service number, whereas the use of sexed semen decreased with increasing parity and service number supporting that farmers used sexed semen more aggressively in higher fertility and younger females with greater genetic merit. Overall, the increase in sexed and beef semen inseminations was driven primarily by larger herds. In conclusion, sexed and beef semen inseminations in US Holstein and Jersey females increased from 2019 to 2021 and was allocated differentially based on parity and service number. This increase was driven primarily by larger dairy herds possibly due to differences in reproductive performance and economies of scale.

Abstract
Improved reproductive management has allowed dairy cow pregnancies to be optimized for beef production. The objective of this sire-controlled study was to test the feedlot performance of straightbred beef calves raised on a calf ranch and to compare finishing growth performance, carcass characteristics, and mechanistic responses relative to beef × dairy crossbreds and straightbred beef cattle raised in a traditional beef cow/calf system. Tested treatment groups included straightbred beef steers and heifers reared on range (A × B; n = 14), straightbred beef steers and heifers born following embryo transfer to Holstein dams (H ET; n = 15) and Jersey dams (J ET; n = 16) The finishing trial began when cattle weighed 301 ± 32.0 kg and concluded after 195 ± 1.4 d. Individual intake was recorded from day 28 until shipment for slaughter. All cattle were weighed every 28 d; serum was collected from a subset of steers every 56 d. Cattle of straightbred beef genetics (A × B, H ET, and J ET) and A × H were similar in final shrunk body weight, dry matter intake, and carcass weight (P > 0.05 for each variable). Compared with A × J cattle, J ET was 42 d younger at slaughter with 42 kg more carcass weight (P < 0.05 for both variables). No difference was observed in longissimus muscle area between all treatments (P = 0.40). Fat thickness was greatest for straightbred beef cattle, least for A × J cattle, and intermediate for A × H cattle (P < 0.05). When adjusted for percentage of adjusted final body weight, feed efficiency was greater for straightbred beef cattle compared with beef × dairy crossbred cattle (P = 0.04). A treatment × day interaction was observed for circulating insulin-like growth factor I (IGF-I; P < 0.01); 112 d after being implanted, beef × dairy crossbred cattle had greater circulating IGF-I concentration than cattle of straightbred beef genetics (P < 0.05). Straightbred beef calves born to Jersey cows had more efficient feedlot and carcass performance than A × J crossbreds. Calves of straightbred beef genetics raised traditionally or in a calf ranch performed similarly in the feedlot.

Abstract
Feeding rumen-protected choline (RPC) to late gestation dairy cows has potential to affect growth in offspring. The objective of this study was to evaluate the effects of in utero choline exposure on the growth, feed efficiency (FE), metabolism, and carcass quality of Angus × Holstein cattle. Multiparous Holstein cows pregnant with male (N = 17) or female (N = 30) Angus-sired calves were enrolled 21 d prepartum and randomly assigned to one of four dietary treatments varying in quantity and formulation of RPC. The treatments included a control with 0 g/d supplemental RPC (CTL), supplemental RPC fed at the recommended dose (RD) of 15 g/d from either an established RPC product (RPC1RD; ReaShure; Balchem Corp.) or choline ion from a concentrated RPC prototype (RPC2RD; Balchem Corp.), or a high dose (HD) of RPC2 fed at 22 g/d (RPC2HD). From 2 to 6 mo of age, calves were group housed and offered 2.3 kg grain/hd/d (42% CP) with ad libitum grass hay, and stepped up to a complete finishing diet by 7 mo (12.0% CP; 1.34 Mcal/kg NEg). Weight and height were measured monthly. Animal FE was measured in individual pens for 35 d at 8 mo. Feed intake was measured daily, and blood was obtained on day 18 during the FE period. Afterwards, cattle were group housed and offered a free-choice finishing diet until slaughter, where carcass yield and quality characteristics were measured. Mixed models were used in PROC MIXED (SAS, 9.4) with the fixed effects of treatment, sex, time, their interactions, and the random effect of calf. Month was the repeated measure, and preplanned contrasts were used. Blood and FE data were analyzed with the fixed effect of dam choline treatment, calf sex, and the interaction. Increasing dose of RPC tended to increase weight over the entire study period. Feeding any RPC increased hip and wither height compared with CTL, and increasing RPC dose linearly increased hip and wither height. Treatment and sex interacted on DMI whereby increasing RPC intake linearly increased DMI for males but not females. Compared with control, feeding any RPC decreased plasma insulin, glucose, and an insulin sensitivity index (RQUICKI). In utero choline exposure increased kidney-pelvic-heart fat and marbling score. Mechanisms of action for intrauterine choline exposure on offspring growth, metabolism, and carcass characteristics should be explored as they have direct implications for profitability for cattle growers and feeders.

Abstract
Beef genetics are used with increasing frequency on commercial dairies. Although use of beef genetics improves calf value, variability has been reported in beef × dairy calf phenotype for traits related to muscularity and carcass composition. The objective of this study was to characterize morphometric and compositional differences between beef, beef × dairy, and dairy-fed cattle. Tested treatment groups included Angus-sired straightbred beef steers and heifers (A × B; n = 45), Angus × Holstein crossbreds (A × H; n = 15), Angus × Jersey crossbreds (A × J; n = 16), and straightbred Holsteins (H, n = 16). Cattle were started on trial at mean BW of 302 ± 29.9 kg and then fed at 196 ± 3.4 d. Morphometric measures were recorded every 28 d during the finishing period, ultrasound measures were recorded every 56 d, and morphometric carcass measures were recorded upon slaughter. Muscle biopsies were collected from the longissimus thoracis of a subset of steers (n = 43) every 56 d. Strip loins were collected from carcasses (n = 78) for further evaluation. Frame size measured as hip height, hip width, and body length was greatest for H cattle (P < 0.05), and A × H cattle had greater hip height than A × J cattle (P < 0.05). Relative to BW as a percentage of mature size, ribeye area of all cattle increased at a decreasing rate (negative quadratic term: P < 0.01), and all ultrasound measures of fat depots increased at an increasing rate (positive quadratic term: P < 0.01). Although no difference was observed in muscle fiber area across the finishing period from the longissimus thoracis (P = 0.80), H cattle had a more oxidative muscle phenotype than A × B cattle (P < 0.05). Additionally, H cattle had the smallest area of longissimus lumborum in the posterior strip loin, greatest length-to-width ratio of longissimus lumborum in the posterior strip loin, and least round circumference relative to round length (P < 0.05). Beef genetics improved muscularity in portions of the carcass distal to the longissimus thoracis.

Abstract
Sire selection for beef on dairy crosses plays an important role in livestock systems as it may affect future performance and carcass traits of growing and finishing crossbred cattle. The phenotypic variation found in beef on dairy crosses has raised concerns from meat packers due to animals with dairy-type carcass characteristics. The use of morphometric measurements may help to understand the phenotypic structures of sire progeny for selecting animals with greater performance. In addition, due to the relationship with growth, these measurements could be used to early predict the performance until the transition from dairy farms to sales. The objectives of this study were 1) to evaluate the effect of different beef sires and breeds on the morphometric measurements of crossbred calves including cannon bone (CB), forearm (FA), hip height (HH), face length (FL), face width (FW) and growth performance; and (2) to predict the weight gain from birth to transition from dairy farms to sale (WG) and the body weight at sale (BW) using such morphometric measurements obtained at first days of animals' life. CB, FA, HH, FL, FW, and weight at 7 ± 5 d (BW7) (Table 1) were measured on 206 calves, from four different sire breeds [Angus (AN), SimAngus (SA), Simmental (SI), and Limousin (LI)], from five farms. To evaluate the morphometric measurements at the transition from dairy farms to sale and animal performance 91 out of 206 calves sourced from four farms, and offspring of two different sires (AN and SA) were used. To predict the WG and BW, 97 calves, and offspring of three different sires (AN, SA, and LI) were used. The data were analyzed using a mixed model, considering farm and sire as random effects. To predict WG and BW, two linear models (including or not the morphometric measurements) were used, and a leave-one-out cross-validation strategy was used to evaluate their predictive quality. The HH and BW7 were 7.67% and 10.7% higher (P < 0.05) in SA crossbred calves compared to AN, respectively. However, the ADG and adjusted body weight to 120 d were 14.3% and 9.46% greater (P < 0.05) in AN compared to SA. The morphometric measurements improved the model's predictive performance for WG and BW. In conclusion, morphometric measurements at the first days of calves' life can be used to predict animals' performance in beef on dairy. Such a strategy could lead to optimized management decisions and greater profitability in dairy farms.

Abstract
Phenotypic expression of dairy-influence often carries negative implications in beef production; thus, considerable variation in expression of beef- versus dairy-type might adversely affect value of crossbred beef × dairy cattle. This study evaluated effects of beef- versus dairy-type on meat quality in crossbred beef × dairy cattle. Effects were blocked within commercial feedlot pens because cattle within a pen were contemporaries for sex, age, management, and source. On their harvest date, 592 Angus or [Simmental × Angus] × Holstein cattle from 9 pens were assessed by 3 expert evaluators. Scores for muscling and frame size were used to categorize and subset cattle in a pen into 4 phenotype groups: (1) fully dairy-type, (2) partially dairy-type, (3) partially beef-type, and (4) fully beef-type. Strip loin steaks were obtained from selected cattle (n = 82 to 84 per group) and evaluated for descriptive sensory attributes, shear force, pH, color at retail display, steak dimensions, muscle fiber type, and fatty acid composition. Data were tested for fixed effects of phenotype group with random effects of pen. Despite distinct expression of visual beef- versus dairy-type among cattle sampled, phenotype groups were largely not different (P > 0.05) in shape, sensory attributes, color, or biochemical properties of strip loin steaks. Other body regions, separate from the loin, were likely responsible for differences in live animal muscling. Additional research is needed on effects of sire breed, individual sire, and management strategies on meat quality in beef × dairy crossbreds. Because expression of beef- versus dairy-type does not affect meat quality, the beef × dairy mating system should focus on increasing complementarity of beef breeds and sires to produce more profitable, beef-type cattle. Finally, marketing programs rooted in production of consistent and premium products may benefit from including beef from beef × dairy crossbreds.

Abstract
Genetic and reproductive advancements in the dairy industry, volatile milk markets, and beef packer restrictions on dairy carcasses have increased the popularity of crossbreeding beef sires to dairy cows in the United States. This observational study aimed to understand performance of dairy cows bred to beef sires and feedlot and carcass performance of crossbred beef × dairy cattle. For dairy cow performance, archived records from two dairies representing two successive lactations were evaluated in cows (Dairy A: n = 72/group; Dairy B: n = 456/group) representing 1) All Dairy, where previous sire type of conception was Holstein for both lactations, or 2) Beef on Dairy, where previous sire type of conception was Holstein for the preceding lactation and a beef breed for the subsequent lactation. For feedlot performance, closeout data from pens (n = 26/cattle type) of beef and beef × dairy steers and heifers were evaluated. For carcass performance, individual carcass data were compared between conventional beef (n = 966), beef × dairy (n = 518), and Holstein (n = 935) steers sampled across a variety of processing facilities, harvest lots, and geographical regions. Cow lactation performance was minimally impacted by sire type of previous conception. Cows conceived to beef sires exhibited a 2 to 3 d greater (P < 0.01) gestation length than cows conceived to Holstein sires. Beef × dairy cattle were not largely different in weight gain at the feedlot but exhibited 1-unit lesser (P < 0.01) dressing percentage than beef cattle. Beef × dairy carcasses possessed 18% lesser (P < 0.05) 12th rib fat thickness than beef cattle and 5% greater (P< 0.05) ribeye area than dairy cattle. Additionally, beef cattle produced nearly double (P < 0.05) the percentage of yield grade 4 carcasses produced by beef × dairy and Holstein cattle.

Abstract
Current trends in the United States dairy industry suggest that crossbred beef × dairy calves are replacing a proportion of the calf-fed Holstein steers slaughtered for beef each year. Economic pressures value preweaned beef × dairy calves at a premium over preweaned dairy bull calves; however, there is little modern data to support that intensively fed crossbred calves maintain their premium value over dairy steers across the supply chain. Data from international production systems and from historic research suggests that beef × dairy cattle had greater average daily gains and converted feed to gain more efficiently than dairy steers. Regarding carcass characteristics, across the literature crossbreds consistently yielded heavier carcasses that had lower proportions of trim than dairy steers. Fewer comparisons of beef × dairy and dairy steers exist in the literature for other economically relevant carcass characteristics such as ribeye area, backfat, marbling, tenderness, and eating quality. Existing published data are inconsistent among studies, highlighting the necessity for more research tailored to the United States beef production system.

Abstract
Thailand is a tropical country affected by global climate change and has high temperatures and humidity that cause heat stress in livestock. A temperature−humidity index (THI) is required to assess and evaluate heat stress levels in livestock. One of the livestock types in Thailand experiencing heat stress due to extreme climate change is crossbred dairy cattle. Genetic evaluations of heat tolerance in dairy cattle have been carried out for reproductive traits. Heritability values for reproductive traits are generally low (<0.10) because environmental factors heavily influence them. Consequently, genetic improvement for these traits would be slow compared to production traits. Positive and negative genetic correlations were found between reproductive traits and reproductive traits and yield traits. Several selection methods for reproductive traits have been introduced, i.e., the traditional method, marker-assisted selection (MAS), and genomic selection (GS). GS is the most promising technique and provides accurate results with a high genetic gain. Single-step genomic BLUP (ssGBLUP) has higher accuracy than the multi-step equivalent for fertility traits or low-heritability traits.

Abstract
The use of beef bulls on dairy cattle has increased in the last 6 years. In fact, beef semen sales have more than doubled. Dairyman needs to capture real value for the beef on dairy cross calf, selection of beef sires that produce offspring that complement dairy cattle are needed, not simply the cheapest black bull in the tank. Those beef sires should be selected on calving ease, ribeye area, marbling, feed efficiency, fertility, polled, and an industry preference for black hided. Even more important, the use of beef on dairy has allowed dairy producers to manage replacement animal inventories.

Crossbreeding dairy cows with beef sires has greatly altered the consist of U.S. dairy-influenced slaughter cattle and generated an influx of crossbred beef × dairy cattle to the U.S. fed beef slaughter supply in 2021. This review provides a summary of our observations of carcass and meat traits in the recent U.S. beef × dairy crossbred population and, based on these observations, exposes future opportunities for consideration. Strip loin steaks from beef × dairy cattle can be marketed alongside conventional beef products in retail display without consumer discrimination based on color or steak shape previously experienced in steaks from straightbred dairy cattle. Additionally, beef from crossbred beef × dairy cattle cannot be discriminated against for eating quality attributes (tenderness, flavor, and juiciness) as it exhibits similar, if not improved, performance of these attributes to beef from conventional beef cattle. We have also demonstrated that live expression of beef-type versus dairy-type character within the beef × dairy crossbred population has minimal effect on eating quality. With proper genetic selection and management, crossbred beef × dairy cattle can capture carcass premiums from an optimal combination of carcass quality (marbling) and red meat yield. Future beef × dairy crossbred mating and management systems should emphasize increases in total carcass muscling and reductions in liver abscess prevalence. A story of quality, sustainability, and traceability in the large and constant supply of beef from crossbred beef × dairy cattle may present profitable branding and marketing opportunities for these products.

Abstract
The use of beef semen on dairy cows has been increasing steadily since 2017. We aimed to describe dairy management practices toward the use of beef semen by surveying farmers in California, the largest US dairy producer. In January 2020, we mailed a printed version of the beef semen use survey to 1,017 dairy producers in California, who also had the option to answer the survey online. The questionnaire consisted of 33 questions that were categorized into three sections: general herd information (n = 10), beef semen management (n = 17), and sexed dairy semen management (n = 6). The response rate was 13.9% (n = 141). Regression models were used to evaluate the associations between the dairy-beef crossbred sale price, use of beef semen, and use of sexed dairy semen vs. herd characteristics. The mean ± SD herd size was 1,693 ± 1,311 milking cows. Most dairies (81%) reported using beef semen on dairy cows. Among respondents, 78% reported extra profit as the main advantage of using beef semen, followed by control of heifer inventory (69%), genetic improvement (37%), and other factors (8%). Most respondents (58%) started using beef semen in the past 3 years and 34% of the respondents were breeding more than 30% of all the eligible cows with beef semen. Angus semen was the most used (reported by 89% of the respondents), followed by Limousin (12%), Wagyu (10%), Charolais (7%), others (5%, Limflex, Stabilizer, and Hereford), and Simmental (4%). Reproductive performance was an important criterion to select cows to receive beef semen and 45% of the respondents reported starting breeding cows with beef semen from the third breeding, 18% on the fourth breeding, and 21% on the fifth or greater breedings. The region of California (a proxy for type of production system) contracts with a calf ranch and the herd breed explained 76.7% of the observed variation in the day-old dairy beef crossbred calf price. Survey results demonstrated the widespread use of beef semen in dairies and the main breeding strategies adopted by dairy farmers.

Abstract
The contribution of the calf enterprise to the profit of the dairy farm is generally considered small, with beef bull selection on dairy farms often not considered a high priority. However, this is likely to change in the future as the rapid rate of expansion of the dairy herd in some countries is set to plateau and improvements in dairy herd fertility combine to reduce the proportion of dairy breed calves required on dairy farms. This presents the opportunity to increase the proportion of beef breed calves born, increasing both the value of calf sales and the marketability of the calves. Beef embryos could become a new breeding tool for dairies as producers need to reassess their breeding policy as a consequence of welfare concerns and poor calf prices. Assisted reproductive technologies can contribute to accelerated genetic gain by allowing an increased number of offspring to be produced from genetically elite dams. There are the following 3 general classes of donor females of interest to an integrated dairy-beef system: (1) elite dairy dams, from which oocytes are recovered from live females using ovum pick-up and fertilized in vitro with semen from elite dairy bulls; (2) elite beef dams, where the oocytes are recovered from live females using ovum pick-up and fertilized with semen from elite beef bulls; and (3) commercial beef dams (≥50% beef genetics), where ovaries are collected from the abattoir postslaughter, and oocytes are fertilized with semen from elite beef bulls that are suitable for use on dairy cows (resulting embryo with ≥75% beef genetics). The expected benefits of these collective developments include accelerated genetic gain for milk and beef production in addition to transformation of the dairy herd calf crop to a combination of good genetic merit dairy female calves and premium-quality beef calves. The aim of this review is to describe how these technologies can be harnessed to intensively select for genetic improvement in both dairy breed and beef breed bulls suitable for use in the dairy herd.

Abstract
Dairy bull fertility is traditionally evaluated using semen production and quality traits; however, these attributes explain only part of the differences observed in fertility among bulls. Alternatively, bull fertility can be directly evaluated using cow field data. The main objective of this study was to investigate bull fertility in the Italian Brown Swiss dairy cattle population using confirmed pregnancy records. The data set included a total of 397,926 breeding records from 1,228 bulls and 129,858 lactating cows between first and fifth lactation from 2000 to 2019. We first evaluated cow pregnancy success, including factors related to the bull under evaluation, such as bull age, bull inbreeding, and AI organization, and factors associated with the cow that receives the dose of semen, including herd-year-season, cow age, parity, and milk yield. We then estimated sire conception rate using only factors related to the bull. Model predictive ability was evaluated using 10-fold cross-validation with 10 replicates. Interestingly, our analyses revealed that there is a substantial variation in conception rate among Brown Swiss bulls, with more than 20% conception rate difference between high-fertility and low-fertility bulls. We also showed that the prediction of bull fertility is feasible as our cross-validation analyses achieved predictive correlations equal to 0.30 for sire conception rate. Improving reproduction performance is one of the major challenges of the dairy industry worldwide, and for this, it is essential to have accurate predictions of service sire fertility. This study represents the foundation for the development of novel tools that will allow dairy producers, breeders, and artificial insemination companies to make enhanced management and selection decisions on Brown Swiss male fertility.

Abstract
The care of surplus dairy calves is a significant issue for the United States and Canadian dairy industries. Surplus dairy calves commonly experience poor welfare as evidenced by high levels of mortality and morbidity, and negative affective states resulting from limited opportunities to express natural behaviors. Many of these challenges are a result of a disaggregated production system, beginning with calf management at the dairy farm of origin and ending at a calf-raising facility, with some calves experiencing long-distance transportation and commingling at auction markets or assembly yards in the interim. Thus, the objectives of this narrative review are to highlight specific challenges associated with raising surplus dairy calves in the U.S. and Canada, how these challenges originate and could be addressed, and discuss future directions that may start with refinements of the current system, but ultimately require a system change. The first critical area to address is the management of surplus dairy calves on the dairy farm of origin. Good neonatal calf care reduces the risk of disease and mortality, however, many dairy farms in Canada and the U.S. do not provide sufficient colostrum or nutrition to surplus calves. Transportation and marketing are also major issues. Calves can be transported more than 24 consecutive hours, and most calves are sold through auction markets or assembly yards which increases disease exposure. Management of calves at calf-raisers is another area of concern. Calves are generally housed individually and fed at low planes of nutrition, resulting in poor affective states and high rates of morbidity and mortality. Strategies to manage high-risk calves identified at arrival could be implemented to reduce disease burden, however, increasing the plane of nutrition and improving housing systems will likely have a more significant impact on health and welfare. However, we argue the current system is not sustainable and new solutions for surplus calves should be considered. A coordinated and holistic approach including substantial change on source dairy farms and multiple areas within the system used to market and raise surplus dairy calves, can lead to more sustainable veal and beef production with improved calf outcomes.

Abstract
Because a growing proportion of the beef output in many countries originates from dairy herds, the most critical decisions about the genetic merit of most carcasses harvested are being made by dairy producers. Interest in the generation of more valuable calves from dairy females is intensifying, and the most likely vehicle is the use of appropriately selected beef bulls for mating to the dairy females. This is especially true given the growing potential to undertake more beef × dairy matings as herd metrics improve (e.g., reproductive performance) and technological advances are more widely adopted (e.g., sexed semen). Clear breed differences (among beef breeds but also compared with dairy breeds) exist for a whole plethora of performance traits, but considerable within-breed variability has also been demonstrated. Although such variability has implications for the choice of bull to mate to dairy females, the fact that dairy females themselves exhibit such genetic variability implies that "one size fits all" may not be appropriate for bull selection. Although differences in a whole series of key performance indicators have been documented between beef and beef-on-dairy animals, of particular note is the reported lower environmental hoofprint associated with beef-on-dairy production systems if the environmental overhead of the mature cow is attributed to the milk she eventually produces. Despite the known contribution of beef (i.e., both surplus calves and cull cows) to the overall gross output of most dairy herds globally, and the fact that each dairy female contributes half her genetic merit to her progeny, proxies for meat yield (i.e., veal or beef) are not directly considered in the vast majority of dairy cow breeding objectives. Breeding objectives to identify beef bulls suitable for dairy production systems are now being developed and validated, demonstrating the financial benefit of using such breeding objectives over and above a focus on dairy bulls or easy-calving, short-gestation beef bulls. When this approach is complemented by management-based decision-support tools, considerable potential exists to improve the profitability and sustainability of modern dairy production systems by exploiting beef-on-dairy breeding strategies using the most appropriate beef bulls.
