Abstract
1. Killing male one-day-old chicks, especially from layer lines, is banned in some European countries. Therefore, dual-purpose chickens, where each sex is used for meat and egg production, respectively, offer an alternative production solution. This study evaluated the British purebred breed Ixworth as a dual-purpose chicken for meat and egg production.2. Ixworth chicks (n = 167) were hatched and reared mixed-sex in a floor housing system, with two groups receiving a commercial pullet diet (treatment 1) and two groups receiving a diet composed for males of layer lines (treatment 2). Individual chick performance data were recorded. Males were slaughtered at 12 weeks of age, and their growth rate and carcase variables were analysed. All hens were continuously reared on the pullet diet and kept in a free-range system from 20 weeks old for one laying period (52 weeks). In addition, group-based feed consumption and mortality were recorded.3. Cockerels in treatment 1 and 2 showed significantly different [T(88) = -2.846, P = 0.003] growth rates (25.3 vs. 27.4 g/day) and average final weights (2166 g vs. 2344 g). The hens in treatment 1 (n = 41) laid an average of 193 eggs per hen housed (mean egg weight: 56.9 g), whereas those in treatment 2 (n = 35) laid 195 eggs per hen housed (mean egg weight: 56.5 g). Nest acceptance was >97.5% and feed consumption was up to 140 g/bird/day.4. The results showed that the Ixworth may be a suitable breed for dual-purpose use and could be improved through selective breeding, offering potential for preservation of this local breed as well as general biodiversity in poultry farming.

Abstract
Extracts from Boswellia serrata (Bs) and Salix alba (Sa) are used as supplements in poultry feed. The aims of this research were to study the possible effects of dietary supplementation with Bs and Sa extracts on serum and albumen proteins, zinc and iron, and yolk cholesterol content in Leghorn hens during the critical phase of the onset of laying. A total of 120 pullets, 17 weeks of age, were assigned to two groups (control (C) and treated (T), n = 60 each). The T group received a supplement containing Bs (5%) and Sa (5%) for 12 weeks. The study lasted 19 weeks. Serum proteins were fractionated using agarose gel electrophoresis (AGE) and SDS–polyacrylamide gel electrophoresis (SDS–PAGE). Trace elements were determined in serum using atomic absorption spectrometry, and yolk cholesterol was determined using a colorimetric test. No significant differences were observed between control and supplemented hens for the analyzed biochemical indices. Moreover, the supplementation with phytoextracts did not negatively affect the physiological variations in serum proteins; therefore, it can be safely used as a treatment to prevent inflammatory states at onset and during the early laying phase.

Abstract
Commercial egg production relies on the industry-accepted practice of culling day-old male chicks, which are a live by-product of the egg production industry. Researchers are exploring the use of a transgenic marker gene to allow early identification of male embryos in ovo at the point of lay, rather than upon hatching. Here we examine social acceptability of this biotechnology-enabled solution to sex selection, which addresses the key ethical issue of culling and improved sustainability of food systems. A national online survey (N = 1148) measured psychological factors influencing public support for the development of the technology and willingness to purchase eggs derived from the novel process. Most participants expressed at least a moderate intention to support the development of gene marking technology, with 1 in 5 people expressing strong support. Participants expressed moderate to high agreement that gene marking of chickens would: (a) help reduce or eliminate the practice of culling male chicks in the egg-laying industry (response efficacy), and; (b) that this new synbio approach to sex selection may be better than current methods of identifying and removing male chicks during egg production (relative advantage). Of those participants who consumed eggs, almost 60% reported they would be moderately to strongly willing to purchase eggs derived from the gene marking process. A partially-mediated path model comprising both intention to support and willingness to buy eggs (R2 = 0.78) showed that key factors involved in decision-making, in addition to response efficacy and relative advantage, were evaluative attitudes toward the technology (e.g., was the technology bad/good, risky/safe, unethical/ethical) and emotional reactions. These results suggest that consumers may be primarily basing their decisions and behavioral choices on how valuable they perceive the novel gene marking solution, reflecting on how it compares favorably to current culling practices, yielding a range of benefits such as higher animal welfare, improved sustainability, and reduced waste.

Abstract
This paper investigates how consumers can be guided towards healthy diets from sustainable and more animal-friendly food systems, in times when no single food system can be considered the best. In order to provide an alternative, the paper focuses on how farm animal welfare concerns can be translated into potential consumer goals, inspired by the "Three Rs" principles of Replacement, Reduction and Refinement, originally developed to systematically improve the welfare of laboratory animals. After some adaptations, the three goals established are 1) to eat less meat, and/or 2) "less and better" meat, and/or 3) "less worrisome" animal protein, respectively, which imply choices described in the literature on consumer behavior. This literature shows that the goal of eating less meat is relatively straightforward, but needs to be made more prominent, and that the goals of eating "less and better" meat or eating "less worrisome" animal protein need more nuances regarding the specific trade-offs that should be made in terms of species, production types and geographic locations. This may help to better integrate the repercussions of food choices for human health, animal welfare, climate change and biodiversity, the relative importance of which varies between countries and consumer segments. In conclusion, it should be emphasized that Reduction, Replacement and Refinement are not just different parts of the same process to meet human health and animal welfare challenges, but also powerful options to combat the climate, biodiversity and-last but not least-food security challenges of the next few decades.

Abstract
A concerning by-product of producing laying hen chicks are the hatched male layer chicks. As a consequence of their inability to lay eggs, these male chicks are culled as day-old chicks in the hatchery. To find an alternative for this ethical dilemma (generally), three alternatives are under study, namely, in ovo sex determination, using dual-purpose breeds, and the rearing of layer cockerels. In order to assess the awareness of this practice and preference for one of the alternatives, we conducted an online survey of the Dutch public. Most of the 259 respondents completing the survey were highly educated woman (HEW, n = 143) versus others (REST, n = 86). The questionnaire was divided into six topics: (1) general knowledge of the poultry industry, (2) awareness of culling male layer chicks (CMC), and (3) its acceptability, (4) alternatives to CMC, (5) willingness to pay (WTP) for eggs without CMC, and (6) WTP for cockerel meat. Awareness about CMC was 52%, and its acceptability was rejected by 78% (HEW) and 67% (REST). The level of acceptability increased when more salient facts were given, and almost all respondents agreed that an alternative was needed (90% HEW, 84% REST). For both groups of respondents, more than 50% preferred in ovo sex determination over keeping the current practice or using dual-purpose breeds or male layers. Furthermore, the majority of respondents were willing to pay more than double the price for eggs without CMC being involved. Roughly 40% would not buy processed cockerel meat burgers, most likely due to their vegan or vegetarian diet. Of the remaining respondents, half were willing to pay the current price or 1 euro more for processed cockerel meat burgers. The most important factors when buying poultry meat or eggs without CMC were food safety, animal friendliness (welfare), and the environment; price was the least important factor. Despite the skewed respondents' background, the results of our survey show that consumers are willing to pay more for poultry products that do not require culling day-old male chicks.

Abstract
Egg laying genotypes have been selected for generations due to their high yield and egg quality, resulting in efficient feed utilization and low body weight; hence, they are not suitable for meat production. This imposes an issue for the male layer chicks, which are killed at one day old. Because of ethical and food waste concerns, the search for suitable dual-purpose genotypes in order to avoid euthanasia of male day-old chicks has intensified. The aim of the present study is to evaluate potential dual-purpose genotypes for their egg quality compared to a representative egg laying genotype. Two dual-purpose genotypes with divergent characteristics were evaluated: genotype A represented an experimental crossbreed based on a broiler type male and an egg layer female, and genotype C was a crossbreed of a layer type. These were compared to a rustic genotype B and a control genotype D, which was an egg layer. Eggs were collected six times during the period of 21–54 weeks of hen age, i.e., a total of 990 shell eggs were analyzed. Examined parameters were weights of egg, shell, yolk, and albumen, by calculating their relative proportions. Shell quality was assessed by shell strength, shell stiffness, and shell thickness. Yolk quality was determined as yolk color and inclusions of blood and meat spots, and albumen quality was evaluated in terms of pH and dry matter (DM) content. The egg layer genotype produced the smallest eggs with least blood and meat spot inclusions compared to that produced by the three dual-purpose genotypes. Shell quality was superior for the layer genotype. However, the experimental genotype A laid eggs of comparable shell quality, albumen DM, and yolk weight, but also with the darkest and most red-yellow colored yolk. The two other dual-purpose genotypes produced eggs of low-medium quality. In conclusion, the genotype A could serve as dual-purpose genotype from an egg quality perspective.

Abstract
This study aimed to develop a tool to validate multivariety breed egg quality classification depending on quality-related internal and external traits using a discriminant canonical analysis approach. A flock of 60 Utrerana hens (Franciscan, White, Black, and Partridge) and a control group of 10 Leghorn hens were placed in individual cages to follow the traceability of the eggs and perform an individual internal and external quality assessment. Egg groups were determined depending on their commercial size (S, M, L, and XL), laying hen breed, and variety. Egg weight, major diameter, minor diameter, shell b*, albumen height, and the presence or absence of visual defects in yolk and/or albumen showed multicollinearity problems (variance inflation factor (VIF) > 5) and were discarded. Albumen weight, eggshell weight, and yolk weight were the most responsible traits for the differences among egg quality categories (Wilks’ lambda: 0.335, 0.539, and 0.566 for albumen weight, eggshell weight, and yolk weight, respectively). The combination of traits in the first two dimensions explained 55.02% and 20.62% variability among groups, respectively. Shared properties between Partridge and Franciscan varieties may stem from their eggs presenting heavier yolks and slightly lower weights, while White Utrerana and Leghorn hens’ similarities may be ascribed to hybridization reminiscences.

Abstract
As ethical and environmental concerns regarding current poultry production systems arise, consumers look for alternatives. This study assesses consumers’ preferences for chicken meat of dual-purpose breeds (DPBs), regionally produced feedstuff, and specific breeds, along with attitudes and social norms that explain these preferences. We conducted an online survey (n = 934) including a discrete choice experiment and elements of the theory of planned behavior. Results show that after price, product and feedstuff origin are preferred by consumers, followed by breeding form and specific breed. Utilities for each attribute and level were calculated and consumer segments were created using latent class analysis. Three different consumer groups were identified: (1) price-sensitive consumers, (2) price-sensitive and origin-oriented consumers, and (3) origin-oriented consumers. We conclude that although consumers are interested in meat from DPBs, this attribute alone is not enough to influence the purchase decision, and geographical origin seems to be of crucial importance. However, by highlighting important attributes (i.e., animal welfare, regional/local production), DPB products could be introduced to the market. The consumption of these alternative products has economic implications, such as not relying on imports and promoting local production/consumption, along with social implications as refraining from killing day-old chicks.

Abstract
Gender determination in incubated eggs (in ovo) has the potential to substitute the highly discussed practice of culling male layer chicks. The aim of this study was to investigate the effect pictures have on peoples' preferences toward in ovo sexing at different stages of embryonic development and chick culling. For this purpose, an online survey was conducted with a representative sample of 482 respondents in Germany. A within-subject design with 2 choice experiments was used to investigate the influence pictures have on respondents' preferences and willingness to pay. The first-choice experiment contained plain text only; the second contained also pictures of a chick or the incubated eggs at the corresponding stages of development. Findings reveal that in ovo gender determination at each proposed day of incubation (d1, d4, and d9) was preferred to chick culling. In ovo screening on d1 and d4 was significantly preferred to d9. This preference for early gender determination increased significantly as a consequence to the provision of pictures. Results furthermore reveal that a high error rate of gender determination or the lack of a meaningful utilization of incubated eggs can decrease approval for in ovo gender determination to an extent, where no positive willingness to pay remains. Findings of this study are useful for stakeholders in poultry production when considering the implementation of in ovo gender determination as a morally admissible substitute to chick culling.

Abstract
Chickens are the world's most widely used farm animal and have a significant genetic diversity. In the current study, we investigated three strains for their suitability as dual-purpose chickens, with a focus on the fattening ability and welfare of the cockerels: 1. layer cockerels (Lohmann Brown, LB, n = 714); 2. cockerels of a dual-purpose hybrid (Lohmann Dual, LD, n = 844); and 3. cockerels of a native breed (Rhinelander, RL, n = 458). Chicks were raised under identical conditions and marked individually to compare focus and random sampling methods for weighing birds weekly. Because chicks of dual-purpose origins are usually raised mixed-sex, cockerels and pullets were weighed and observed together until sexes the were identifiable at week 10 of their life. During the 10th to 20th week of life, investigations were continued on 100 cockerels per genotype. Key figures for growth performance, such as feed conversion ratio (FCR) and European production efficiency factor (EPEF), were also calculated at weekly intervals. LD cockerels showed considerable growth performance (p < 0.001 compared to LB, RL, 2 kg at 9 weeks), whereas LB reached a live weight of 2 kg at 13 weeks and RL at 15 weeks of age. Genotype-dependent differences were also evident, with favorable FCR and EPEF for LD, intermediate for LB, and unfavorable for RL (all p < 0.001). The results of the FCR and EPEF suggest that cockerels should be slaughtered around week 8 of life, although only the carcass of the LD might be marketable. Thus, the optimal time of slaughter based on production parameters such as FCR and EPEF is different from the time when the animal reaches a marketable 2 kg live weight. Animal-based welfare indicators revealed that the RL are not adapted to production environments, including those that are extensive. Further research aimed at adapted feed management, including better FCR, and animals adapted to the respective production environments is necessary to improve alternative poultry production in the future.

Abstract
This paper investigates consumers' preferences for egg purchase in two European countries, Hungary and Italy. We utilize random parameter logit models to interpret the results of discrete choice experiments (DCE) for the elicitation of preference of the egg consumers. A sample of 403 in the Hungarian survey and 404 in the Italian survey were recruited in summer 2018. The DCE questionnaire includes the following product and process characteristics: organic labels, nutrition and health claims, and price. Our results show that for Hungarian and Italian consumers, the price is the most important attribute, followed by the nutrition and health claim and the organic production labelling. Three egg consumer segments can be identified via latent class models for each country. In both countries, we found similar consumer groups, the Price Sensitive and Quality Optimizing Opportunist Consumers and Health Conscious Buyers, respectively. Particularly, compared to the other segments the Health Conscious Buyers (46% in Hungary and 49% in Italy) exhibited stronger preference for and are willing to pay a higher price premium for eggs with organic label and nutrition claims. In Italy, we identified a third segment with consumers preferring simpler labelling approach, whilst in Hungary we found a consumer segment distrusting the EU organic logo.

Abstract
The current practices of the poultry industry have raised concerns among consumers. Among these is the culling of day-old male chicks of laying hybrids; a suitable alternative for this could be the use of dual-purpose breeds where both sexes are used. Another practice that causes concern is the import of large quantities of soybeans for feedstuff production. Substitutes for these soybean-based products are regional protein crops, such as faba beans (Vicia faba L.; FBs). The objective of this study was to test the suitability of FB as a locally produced soybean meal replacement for two local dual-purpose chicken breeds and one high-performing layer line. The breast and leg meat of male Bresse Gauloise (BG), Vorwerkhuhn (VH), and White Rock (WR) animals was evaluated for different meat quality parameters: pH, color, water holding capacity, and tenderness. Sensory properties of the samples were evaluated by a trained panel with a conventional descriptive analysis. Results show different effects of FB diets on meat quality parameters in the different breeds. The attributes mostly affected by the diet are related to aroma, flavor, and texture, particularly in VH and WR. Overall, faba beans appear to be an acceptable dietary protein source for rearing these breeds for meat production.

Abstract
1. Although fattening dual-purpose types or male layer hybrid chickens appears more ethical than the common practice of culling day-old male layer chicks, the lower feed efficiency of these birds raises concerns. Replacing feed ingredients that compete with food production by those of lower value for human nutrition would be beneficial.2. Lohmann Dual (LD), a modern dual-purpose type, Lohmann Brown (LB), a male layer hybrid, and Hubbard JA 957 (HU), a slow-growing broiler type, were fattened for nine weeks on two diets (control or -20% crude protein; n = 6 × 12 birds). Growth, carcass and meat quality were analysed.3. Growth performance of HU exceeded that of LD and especially of LB. The growth depression caused by the low-protein diet fed to LD (-7%) was only half of that found in HU (-13%). The LD fed the control diet had the same feed efficiency as the HU fed the low-protein diet. Even the LB had a lower performance and feed efficiency with the low-protein diet in growth. There was a gradient in carcass properties (weight, dressing percentage, breast meat yield, breast proportion and breast angle) from HU to LD to LB, with some additional adverse effects of the low-protein diet especially in HU. There were some breed differences in fatty acid profile in the intramuscular fat.4. In conclusion, the dual-purpose type used complied with regulations for Swiss organic poultry systems in terms of growth rate and was found to respond less when fed a low-protein diet than the slow-growing broiler type. The LB males were inferior in all growth and carcass quality traits. Future studies need to determine the exact protein and amino acid requirements of dual-purpose and layer hybrid chickens and the economic feasibility of the systems, especially for organic farming.

Abstract
Context In order to maintain the availability of meat from indigenous chicken types in remote Asian regions with their special meat quality, novel ways of increasing efficiency are needed. One way could consist of crossbreeding with layer type chickens that are genetically quite distant from indigenous breeds. Aim The three hypotheses tested were as follows: that the meat quality of indigenous chickens differs from that of broilers; that the meat quality of male layer chickens resembles that of indigenous chickens rather than that of broilers; and that crossbreds of indigenous chickens and layer types overall are superior to the respective purebreds. Methods We studied carcass and meat quality of crossbreds of Thai indigenous Pradu Hang Dam (PD) and Rhode Island Red (RR) layers, and compared them with the corresponding purebreds and a commercial broiler type (Ross) in a complete randomised design. Chickens were reared in 4 × 5 pens with 10 chickens each for 120 days (Ross: 45 days). Key results The crossbreds were superior to PD and RR in body and carcass weight, as well as breast meat percentage, but in Ross the latter was 1.7 times higher. The Ross meat was lighter, more yellow and less red and had a higher intramuscular fat content and drip loss and a lower thawing loss and shear force than that of the three other types. Nucleotide content was either similar in all chicken types or lower in Ross meat. Ross meat was more susceptible to lipid oxidation than that of the three other types although the Ross muscles lipids contained less polyunsaturated fatty acids. Conclusion Considering the better carcass yield and breast meat proportion, crossbreeding of indigenous chickens with a layer breed likely is be economically advantageous. Implications Overall, fattening of crossbreds turned out to be a valid alternative to improve fattening systems and to preserve the specific meat quality of indigenous chickens.

Abstract
The use of highly specialized breeds in poultry production has led to the situation in which fattening layer-type males are not economically viable, when competing with the conventional broiler meat. The vast majority of male layer chicks are therefore culled soon after hatching. Ethical concerns about this practice have led to a public debate in a number of countries, and its tenor seems unambiguous: the practice should end. Political and industrial representatives have also promoted putting an end to chick culling. Two alternatives that are already available or soon to be in the market in a number of countries are dual-use poultry production and in ovo gender determination. However, the alternatives are also not free from controversy. The presented study analyzes consumer attitudes towards these 2 alternatives. A discrete choice experiment on eggs with different production attributes was conducted among a sample of 400 German citizens. Results from a latent class model show that there is considerable heterogeneity in preferences, which can be depicted in 5 consumer segments. Consumer segments differ significantly in socioeconomic characteristics and attitudes towards chick-culling alternatives. One segment decides mainly based on product price. However, 28% of the sample show no price sensitivity but choose based on other product attributes such as the preferred chick-culling alternative or egg type. We find wide approval for in ovo gender determination with no segment disapproving of the technology. When it comes to dual-use poultry, the type of husbandry of cockerels is crucial for the approval of this production scheme. Rearing male chicks in free-range husbandry is the preferred alternative for one segment representing 27% of the sample. Results provide empirical evidence for a diversified egg demand, indicating diverse expectations for poultry production in the future.

Abstract
In the past years, consumers' concerns about sustainability and animal welfare have increased, strengthening the demand for eggs and meat produced through alternative and extensive farming methods. In addition, producers have also become increasingly interested in the recovery and exploitation of local breeds due to their adaptability to local environmental conditions, to valorize the biodiversity and to provide added value to typical products. Among the Italian local breeds, Romagnola has almost risked extinction and currently is reared in small-scale farms for eggs and meat production. The aim of this study was to characterize the egg quality traits of Romagnola chicken breed (RMG) compared to those obtained by a commercial hybrid (CONV). Ten laying hens of both Romagnola breed and Hy-Line Brown at 40 wk of age were housed in the same outdoor pen and fed the same commercial feed (ME 2,830 kcal/kg, CP 17.2%) for 10 wk. At 5 and 10 wk after housing, all the eggs laid in 4 consecutive days were collected and used for the determination of egg and eggshell characteristics as well as proximate composition and fatty acid profile of egg yolk. As expected, some important productive traits such as egg weight and production resulted higher in CONV chickens. However, eggs from RMG hens presented a higher yolk/egg ratio (31.1 vs. 24.9%; P < 0.01) as well as carotenoids (36.8 vs. 20.2 ppm; P < 0.01) and cholesterol content (12.8 vs. 11.7 mg/g of yolk; P < 0.01) than those laid by the conventional genotype. Moreover, yolks from RMG eggs were characterized by lower polyunsaturated fatty acid (PUFA) n-6 content (22.6 vs. 28.4%; P < 0.01) and PUFA n-6/n-3 ratio (11.3 vs. 13.5; P < 0.01) showing a healthier fatty acids profile than conventional eggs. These results highlighted several valuable egg quality traits of Romagnola chicken breed that might be exploited for the conservation and the development of this underutilized Italian pure breed.

Abstract
Dual-purpose chicken where both sexes are reared together, before males are separated for final fattening, while females are kept for an entire laying period, may provide an economic alternative under certain production and marketing conditions. Two genotypes, purebred Bresse-Gauloise (PURE, n = 300) and crossbred Bresse-Gauloise × New Hampshire (CROSS, n = 300), were compared. One-day-old mixed-sex chicken were raised for 12 wk under floor husbandry conditions on a broiler diet. Thereafter, males were transferred to a mobile chicken house with free-range access. Males were slaughtered at weekly intervals from 12th to 19th wk of age. Hens were kept for 1 laying period in a mobile house. Growth performance, feed consumption, carcass, meat quality, health and welfare traits were measured in both sexes. In females layers’ performance, egg quality and behavior were recorded, too. At 12 wk, males of PURE reached a live weight of 2,075 g and CROSS of 1,865 g (P < 0.05), while at 16 wk both weighed more than 2,500 g (P > 0.05). Dressing percentage increased with slaughter age and was above 68% in both genotypes when slaughtered at 18 to 19 wk of age. Proportion of legs, breast, and wings was 34.3, 16.0, and 11.0% in PURE and 34.7, 15.5, and 12.1% in CROSS (P > 0.05). Laying performance was 54.5% in PURE and 54.2% in CROSS (P > 0.05). Egg breaking strength decreased during the laying period, but remained above 30 N. Feed conversion was 3.4 kg feed/kg egg. On average, 25% of the animals stayed outdoors during daytime (P > 0.05). Keel bone deformations were observed in 10% and breast blisters in 20% of the hens. Under the specific conditions of marketing products with added value, performances resulted in an overall economic benefit, which was higher for PURE than CROSS. The use of dual-purpose chicken to avoid the killing of 1-d-old chicken and mobile housing may substantiate premium prices in such a system.
