Abstract
The study aimed to analyze the hatching egg and physiochemical features of eggshells, thick albumen, amniotic fluid, and yolk during the incubation of Ross 308 chicken eggs. Eggs (n = 755) were incubated for 21 d. Quality analysis of fresh eggs was performed. Eggshells, albumen, and yolk were collected from fresh eggs and incubation d 1, 7, and 14. Eggshell thickness and strength, pH, vitelline membrane strength, fatty acid (FA) in the yolk, pH, viscosity, lysozyme activity, and crude protein content in thick albumen and amniotic fluid were analyzed. Hatching parameters were calculated. Egg weight loss was constant (8.04% overall). Lower egg surface temperature was found on d 7 compared to d 4, 14, and 18. A lower thickness of posthatch eggshells was found. The strength of the vitelline membrane significantly decreased within 24 h (by over 58%). During incubation, there was a decrease in thick albumen/amniotic fluid pH; an opposite trend was found in yolk pH. The vitelline membrane strength was negatively correlated with the albumen pH. Lysozyme activity was higher in fresh thick albumen and up to 2 wk of incubation. On d 7, the lowest activity was found in the amniotic fluid. On d 14, lysozyme activity increased in amniotic fluid. The higher viscosity of the thick albumen was demonstrated on d 7 and 14 of incubation. The lowest viscosity in amniotic fluid was found on the same days. Crude protein content was higher in thick albumen (d 7 and 14) and lowest in amniotic fluid on d 7. The FA content changed between d 0 and 14. The results indicate different use of FA, where PUFA decreased. Eggshell is used in the last week of incubation. The thick albumen is reduced, while the biological value of amniotic fluid is increasing. Lysozyme activity, viscosity, and crude protein content may be interdependent. It may indicate the flow of substances and the transfer of functions from the thick albumen to the amniotic fluid during chicken embryogenesis.

Abstract
Variability in shell structure is an evolutionary mechanism in birds that enables them to adapt to specific environmental conditions. This variability may also occur within the same species under the influence of individual indicators, such as the age or health status of females. While interspecies variation is quite obvious and easy to interpret, the reasons for intraspecies variation remain unclear. In this study, we examined the ultra- and microstructure of guinea fowl eggshells to identify the association between variations in shell structure and hatchability outcomes. We analyzed the visual differences between shells with low (L), intermediate (I), and high (H) external porosity using scale invariant feature transform analysis with NaturePatternMatch software. We found that the external pore image was closely related to the overall porosity of the shell before incubation. The total pore area, total porosity, and diffusion index (GH2O) were highest in group H shells (P < 0.001). Posthatching shells were characterized by an increased diameter and total surface area, decreased pore number (P < 0.001), as well as shortened mammillary layer (P < 0.001) and decreased total consumption of mammillary knobs (P < 0.001). The porosity indices of posthatching H shells had intermediate values between L and I. Although the effect of shell structure parameters on hatching was not confirmed, we assumed that all categories (L, I, and H) of shells were ideal for incubation. This suggests that the shell structure adapts to the metabolic rate of developing embryos; however, differences in shell structure affect the duration of incubation and synchronization of hatching. Both L and H shells showed delayed and prolonged hatching. Therefore, we recommended that guinea fowl eggs with different external porosity parameters should be incubated separately for better hatching synchronization. Differences in GH2O between L, I, and H eggs suggest that the shell porosity characteristics of guinea fowl eggs may be a key determinant of the rate of water loss during storage before incubation.

Abstract
Storing fertilised eggs prior to incubation is a frequent practice in commercial hatcheries to coordinate activities and synchronise hatchings. However, the conditions used to store eggs can have major impacts on egg quality and the subsequent viability of chicken embryos. While storage temperatures of 16-18°C are classically used in hatcheries, the duration of storage varies from three to more than 10 days. We explored the effect of storage duration (zero, three or 10 days; D0, D3 and D10, respectively) at 16°C, 80% relative humidity (RH) on egg quality (Broiler, Ross 308), using computed tomography (CT) and classical measurements (egg weight, eggshell strength, egg white pH, Haugh units, yolk index and colour). The results revealed that a storage duration of up to 10 days negatively affected some egg quality traits (yolk index and volume, air chamber volume and egg white pH). Eggs stored for three or 10 days were further incubated for 11, 13 or 15 days (37.8°C, 55% RH). Eggs were analysed by magnetic resonance imaging (MRI) and CT to assess the development of the embryo and internal egg changes occurring during incubation. First, data showed that the fertility and sex ratio of eggs were not affected by storage duration. However, the mortality of viable eggs was increased in the D10 group compared to the D3 group. Results of non-invasive imaging technologies revealed that the storage of eggs for 10 days impaired embryo growth as early as 11 days of incubation (decrease in brain and embryo volumes). Collectively, these data provide new evidence that the duration of egg storage negatively affects embryonic growth. They further corroborate that this parameter is likely to be crucial to synchronising embryonic stages and maybe reducing the hatching window, hence limiting the time spent by newborn chicks in hatchers. In addition, our results highlight that CT and MRI imaging technologies are useful non-invasive tools to evaluate egg quality prior to incubation and the impact of storage (or incubation) practices on developmental growth of the embryo.

Abstract
This study investigated the effects and possible interactions of storage and nonventilation during incubation for eggs from Sasso broiler breeder flock on pre- and post-hatch incubation results. A total of 1,260 Sasso eggs from a 58-wk-old broiler breeder flock were individually numbered, weighed and stored for 7 d or for 18 d in a climate-controlled room (16°C, 75% RH). After storage, eggs were weighed, and randomly assigned equally into 2 incubators. One of the incubators was ventilated (V) for the entire incubation and the second was nonventilated (NV) for the first 12 d. At d 18, the eggs were weighed, candled, and fertile eggs were transferred from the turning trays to hatching baskets. During the last 3 d of incubation, hatching eggs were checked individually every 3 h for hatching events and hatchability of fertile eggs. After pull out at d 21.5, post-hatch performances was determined until 1 wk of age. Results showed that, embryo weights from eggs in NV incubator was significantly higher (P < 0.05) in both stored eggs compared to those from eggs in ventilated incubator, but embryos from eggs stored for 18 d were smaller (P < 0.05) than those from eggs stored for 7 d. Hatchability was higher (P < 0.0001) in NV incubator compared to V incubator in both 7 d and 18 d stored eggs and an interaction was found between incubation ventilation and storage duration on both hatchability and embryonic mortality (P < 0.0001). Chick weights from NV incubator at 7 d post-hatch was greater (P = 0.0009) than those from V incubator. Serum Tri-iodothyronine (T3) and Thyroxin (T4) concentrations were significantly higher (P < 0.05) in NV compare to V group. It was concluded that the effect of long-term pre-incubation storage on embryonic physiology and post-hatch growth interacted significantly with incubation ventilation and that nonventilation can compensate for the negative effects of storage on some hatching and post-hatch performances.

Abstract
Yeonsan Ogye (OGYE; Gallus gallus domesticus) is a rare indigenous chicken breed that inhabits the Korean Peninsula. This breed has completely black coloring, including plumage, skin, eyes, beak, and internal organs. Despite these unique morphological characteristics, the population of OGYE has declined without in-depth research into their genome research. Therefore, this study aimed to compare the whole genome of OGYE to 12 other chicken populations, including ancestral breed, commercial breeds, Chinese indigenous breeds, and Korean native chickens. We focused on revealing the selection signature of OGYE, which has occurred through environmental pressures in the Korean Peninsula. Genome-wide selection analysis has identified local adaptation traits, such as egg development, that contribute to fetal viability and innate immune response to prevent viral and microbes infection in OGYE. In particular, SPP1 (Secreted Phosphoprotein 1), HSP90AA1 (Heat Shock Protein 90 Alpha Family Class A Member 1), and P2RX4 (Purinergic Receptor P2X 4) could have considerable involvement in egg development and RNASEL (Ribonuclease L), BRIP1 (BRCA1 Interacting Protein C-terminal Helicase 1), and TLR4 (Toll-Like Receptor 4) are crucial for the determination of the innate immune response. This study revealed the unique genetic diversity of OGYE at the genome-wide level. Furthermore, we emphasized the sustainable management of genetic resources and formulated breeding strategies for livestock on the Korean Peninsula.

Abstract
The inability to easily identify the animal species in highly processed meat products makes them highly susceptible to adulterations. Reliable methods for detecting the species origin of meat used in processed food are required to ensure adequate labelling and minimize food fraud and allergenic potential. Liquid chromatography high resolution mass spectrometry was employed to identify new heat-stable guinea-fowl-specific peptide markers that can differentiate guinea fowl meat from other commonly consumed animal species, including closely related poultry species, in highly processed food products. We identified 26 unique guinea-fowl-specific markers. The high stability of guinea-fowl-specific peptides was confirmed by analysing food products with guinea fowl meat content ranging from 4% to 100%. The findings indicate that sensitive and reliable LC-MS/MS methods can be developed for the targeted detection and quantification of guinea fowl meat in highly processed meat products.

Abstract
Simple Summary Egg storage duration and breeder age are two important factors influencing productivity and profitability of hatcheries. These factors probably interact with each other to influence egg quality, apparent fertility, hatchability, and hatchling quality. The aim of this study was to investigate interactions between egg storage duration and broiler breeder age on these parameters. It was demonstrated that eggs from young breeders were the most resistant to storage duration increase in relationship to early and middle embryonic mortality than eggs from older breeders. However, the opposite was found for hatchling quality, where yolk free body mass, which increased from young to old breeders after five days of storage, increased only from middle to old breeders after prolonged storage (19 days). The intestine percentage decreased also after long storage in younger breeders, but in older breeders no significant effect of egg storage duration was found. Abstract Egg storage duration and breeder age are probably interacting to influence egg quality, hatchability, and hatchling quality. To evaluate this interaction, the impact of breeder age (31, 42, 66 weeks) and storage duration (2, 5, 12, 19 days) was investigated on broiler breeder eggs (Arbor Acres). Thick albumen diameter and pH increased, and yolk dry matter decreased between 2 and 19 days of storage. With the increase of breeder age from 31 to 66 weeks, albumen height, percentage and dry matter and shell percentage decreased and the egg weight and yolk percentage, dry matter and diameter increased. Prolonged egg storage increased the yolk pH in all breeder ages, but earlier and steeper in the oldest breeders. Prolonged egg storage resulted in a lower hatchability of set and fertile eggs due to a higher percentage of embryonic mortality. Early mortality increased earlier and steeper with prolonged egg storage in the oldest compared to younger breeders. Between 5 and 19 days of storage, yolk free body mass, liver and proventriculus + gizzard percentages decreased, as well as hatchling length and yolk efficiency (yolk absorption per initial yolk weight). The latter effects were most pronounced in the younger than in the older breeders. Therefore, eggs are preferably stored shorter than 7 d, but if long storage (≥12 days) cannot be avoided, we recommend to store eggs of older breeders when egg quality and hatchability are most important. In case hatchling quality is most important, it would be better to store eggs of younger breeders (31 weeks) for a prolonged period.
