Abstract
1. This study assessed the addition of dried stinging nettle (SN) leaves at 0%, 2.5% and 5.0% in feed on egg production, egg quality, chemical composition and antioxidant content in eggs from laying hens.2. Seventy-two Hy-Line Brown laying hens, housed in 36 enriched layer cages, were used in the study from 43 to 47 weeks of age. Feeding dry SN leaves did not affect (p > 0.05) egg production variables.3. Dietary SN inclusion linearly increased (p < 0.001) carotenoid content more than six-fold, in addition to yellowness and redness of the yolks at the maximum inclusion. Providing eggs from hens fed carotenoid enriched diets, e.g. SN, may be used to increase carotenoids in human diets.

Abstract
This study aimed to investigate the effect of stevia residue (STER) on the production performance, egg quality and nutrition, antioxidant ability, immune responses, gut morphology and microbiota of laying hens during the peak laying period. A total of 270 Yikoujingfen NO. 8 laying hens (35 wk of age) were randomly divided into 5 treatments. The control group fed a basal diet and groups supplemented with 2, 4, 6, and 8% STER. The results showed that STER significantly increased egg production, the content of amino acids (alanine, proline, valine, ornithine, asparagine, aspartic acid, and cysteine) in egg whites, and decreased the yolk color (P < 0.05). Additionally, STER significantly increased acetate, HOMOγ linolenic acid and cis-13, 16-docosadienoic acid levels in egg yolk (P < 0.05). IL-2, IL-4, and IL-10 levels in serum significantly increased by STER (P < 0.05), while IL-1β significantly decreased (P < 0.05). STER also increased total antioxidant activity (T-AOC) in the liver and estradiol level in the oviduct (P < 0.05), but decreased the cortisol level in the oviduct (P < 0.05). For the intestinal morphology, the jejunal villus height and crypt-to-villus (V:C) significantly increased by STER (P < 0.05). STER increased the relative abundance of Actinobacteriota (P < 0.05), while deceased Proteobacteria, Desulfobacterota, and Synergistota (P < 0.05). In conclusion, STER improved egg production, quality and nutrition, improved the immune responses, antioxidant capabilities, estrogen level, gut morphology, and increased the relative abundance of beneficial bacteria while decreased the harmful bacteria. Among all treatments, 4 and 6% STER supplementation yielded the most favorable results in terms of enhancing production performance, egg nutrition, gut health, and immune capabilities in laying hens.

Abstract
1. This study assessed the impact of replacing two thirds of a soybean meal (SBM) based diet with an alternative protein (AP) based diet (sunflower and rapeseed meal), when fed to end of production Hy-Line Brown laying hens.2. Diets were fed in seven cages, each containing six birds aged from 75 to 83 weeks old. Measured variables included bird performance, egg production, quality variables of fresh eggs, total tract digestibility of dry matter (DMD), neutral detergent fibre (NDFD), fat (FD), and nitrogen corrected apparent metabolisable energy (AMEn).3. No significant differences were observed (P > 0.05) for egg production, egg composition or egg quality. However, birds fed the AP diet had darker yolks (P < 0.05), possibly linked to natural pigments in AP.4. The SBM diet had higher AMEn, DMD and NDFD (P < 0.05), although FD was higher in the AP diet (P < 0.05).5. Diets based on AP sources can be fed to aged laying hens without deteriorating productive performance, providing care is taken in formulating diets (e.g. amino acid levels, balance etc). Using AP sources may reduce reliance on SBM associated with land use change, contributing towards sustainability for the egg industry.

Abstract
The emergence of safe and functional eggs for consumer acceptance has gained focus. The production of carotenoid-enriched eggs has received attention due to its multifunctional biological properties. Nutritional modification of laying hens' diet can be a strategy to produce such eggs. This review presents the chemistry of carotenoids in nature and eggs, the accumulation process of carotenoids into eggs, and the functions of carotenoids in eggs. Our findings showed that carotenoids can be deposited into the egg and contribute to improving its nutritive value. The biosynthesis, chemical structure, and metabolism pathways of carotenoids lead to the deposition of carotenoids into eggs in their original or metabolized forms. Also, some factors modulate the efficiency of carotenoids in fowls before accumulation into eggs. Carotenoid-enriched eggs may be promising, ensuring the availability of highly nutritive eggs. However, further studies are still needed to comprehend the full metabolism process and the extensive functions of carotenoids in eggs.

Abstract
The goal of the current experiment was to investigate the effect of dietary concentrations of purple carrot powder (PCP) on performance, egg production, egg quality, and the antioxidant capacity of the yolk in laying quails. A total of one hundred and fifty 22-week-old Japanese laying quails were allotted to 5 dietary treatments each with 6 replicates of 5 quails. Quails were allocated to five dietary treatments (0, 0.1, 0.2, 0.3, and 0.4%) with PCP addition at an increasing level from 0 to 4000 mg/kg diet respectively, which were fed ad-libitum throughout the duration of the experiment. No differences were detected between dietary treatments for any of the performance parameters or egg production. Eggshell weight and eggshell thickness (P < 0.05) were linearly affected by PCP dietary, reaching maximum levels at 0.4% of PCP supplementation, while the percentage of damaged egg and egg-breaking strength remained similar for all experimental groups (P < 0.05). Quails receiving PCP diets showed a yellowness (b*) (P < 0.05) egg yolk color than those fed the control diet, without affecting the rest of the color parameters and egg internal quality. Increasing PCP levels in diets reduced linearly yolk TBARS (P < 0.01) and increased linearly DPPH (P < 0.01). The addition of PCP, a safe and readily available agricultural by-product, as a component of the diet of laying quail was effective without adversely affecting quail production. Moreover, the inclusion of PCP in the diet might benefit laying quails' eggs by improving some quality traits and enhancing the yolk's antioxidant capacity, which could improve their shelf-life and acceptability.
