Decoding the Effect of Age on the Taste Perception of Chicken Breast Soup Based on LC-QTOF-MS/MS Combined with a Chemometric Approach

Volatile and non-volatile compound analysis of ginkgo chicken soup during cooking using a combi oven

This study employed a range of analytical techniques to evaluate the changes in both volatile and non-volatile compounds during different cooking times (30, 60, 90, 120, and 150 min) of ginkgo chicken soup prepared using a multifunctional combi oven, and comparedthese results with those obtained from the traditional ceramic pot method.The techniques included electronic nose (e-nose), electronic tongue (e-tongue), gas chromatography-ion mobility spectrometry (GC-IMS), high-performance liquid chromatography (HPLC), gas chromatography-mass spectrometry (GC-MS), and automated amino acid analysis. A total of 64 volatile compounds, primarily aldehydes, ketones, esters, and alcohols, were detected, with 23 key aroma components identified. Principal component analysis (PCA) demonstrated similar aroma and taste profiles between the two cooking methods. Additionally, 22 amino acids, 6 nucleotides enhancing umami, and 18 fatty acids were categorized into saturated, monounsaturated, and polyunsaturated groups. Pearson correlation revealed significant relationships among key amino acids, 5'-nucleotides, and volatile compounds, providing insights into industrial-scale applications of multifunctional ovens in ginkgo chicken soup production.

Effect of Different Cooking Methods on the Aroma and Taste of Chicken Broth

A single combi oven, known for its versatility, is an excellent choice for a variety of chicken soup preparations. However, the impact of universal steam ovens on the flavor quality of chicken soup remains unclear. This study aimed to explore the impact of different cooking methods on the aroma and taste of chicken soup. Three cooking methods with various stewing times were compared: ceramic pot (CP), electric pressure cooker (EPC), and combi oven (CO). Analyses were conducted using electron-nose, electron-tongue, gas chromatography-ion mobility spectrometry (GC-IMS), automatic amino acid analysis, and chemometric methods. A total of 14 amino acids, including significant umami contributors, were identified. The taste components of CP and CO chicken soups were relatively similar. In total, 39 volatile aroma compounds, predominantly aldehydes, ketones, and alcohols, were identified. Aldehydes were the most abundant compounds, and 23 key aroma compounds were identified. Pearson's correlation analyses revealed distinct correlations between various amino acids (e.g., glutamic acid and serine) and specific volatile compounds. The aroma compounds from the CP and CO samples showed similarities. The results of this study provide a reference for the application of one-touch cooking of chicken soup in versatile steam ovens.

The dynamic change of flavor characteristics in Pacific oyster (Crassostrea gigas) during depuration uncovered by mass spectrometry-based metabolomics combined with gas chromatography-ion mobility spectrometry (GC-IMS)

The flavor of Pacific oyster (Crassostrea gigas) significantly changed during the depuration process. This work aimed to explore the mechanism of flavor changes during the 72 h depuration by metabolomics combined with gas chromatography-ion mobility spectrometry (GC-IMS). The metabolomics analysis indicated that carbohydrate metabolism was more affected in the early stage of depuration, including the citrate cycle, glyoxylae and dicarboxylate metabolism, etc. After 72 h depuration, it affected mainly the metabolism of global and overview maps and nucleoside metabolism, etc. The equivalent umami concentration (EUC) value was calculated and exhibited a gradual increase following a 48 h depuration. The GC-MS results revealed that the content of furans was the highest, and the content of aldehydes, ketones, and alcohols was the lowest after 48 h depuration, while the content of aldehydes, ketones, and alcohols increased after 72 h depuration. All these results suggested the depuration period was recommended to be controlled within 48 h.
