Abstract
Global population is projected to reach 9.1 billion by 2050, emphasizing the need for increased food production. Edible insects, such as house crickets (Acheta domesticus), emerged as promising due to higher nutritional value and efficient feed conversion rates compared to conventional protein sources. Incorporating insect powders into new food products can improve consumer acceptance but often leads to poor technological food processing functionality and/or undesirable organoleptic characteristics. Protein isolates have proven to be effective in enhancing this functionality and consumer acceptance, but existent protein extraction methods still lack improvements concerning the optimization of protein extraction rates. This study aimed to address this gap by developing and comparing the yield of three different protein extraction methods using sodium hydroxide, ascorbic acid or alcalase from house crickets (Acheta domesticus) for food applications. Protein extraction was performed on cricket powder with a mean protein content of 46.35 g/100 g, and the results were evaluated. The enzymatic method shows the highest protein extraction rate at 69.91% with a mean protein content of 60.19 g/100 g, while extraction with NaOH or ascorbic acid resulted in rates of 60.44 and 46.34%, respectively. Further studies on technological food processing functionality and sensorial evaluation of products developed with this protein extract are recommended.

Abstract
The consumption of insect-based foods has been widely studied in recent years due to their nutritional value and their contribution to sustainability. In this study, the integrated sustainable neophilic insect-based eating model (ISNIEM) was used to investigate the various parameters that influence the intention of members of Turkish society to consume insect-based foods. Structural equation modeling was used to test the ISNIEM. A total of 1194 participants were reached through an online survey. According to the study data, sustainability attitudes (biospheric values, new human interdependence paradigm, attitude toward sustainability, attention to insect welfare) influence individuals' intentions to consume insect-based foods by interacting with each other; however, intentions do not influence behavior in the same direction. As expected, food neophobia reduced the number of chosen insect-based foods (NCIBF) (β: -0.121; p < 0.001), while social norms positively influenced the NCIBF (β: 0.176; p < 0.001) and reduced food neophobia (β: -0.307; p < 0.001). Meanwhile, social norms and food neophobia did not affect the intention to eat insect-based food (p > 0.05). The findings of this study suggest that the ISNIEM may be effective in predicting individuals' intentions and behaviors toward eating insect-based foods in Turkey.

Abstract
Insect-based dog food is increasingly becoming available in pet food markets, potentially offering environmental and nutritional benefits, depending on insect species and how they are reared, processed, and utilized. However, there is limited understanding of dog owners' attitudes towards the use of insects as protein alternatives for dogs. An online survey was conducted to explore Australian dog owners' (n = 201) attitudes towards insect-based pet food, segmenting participants according to their food neophobia, previous insect consumption, and dog-human relationship. Participants' dog food purchases were highly influenced by perceived health/nutrition, palatability, and product quality, with these factors being of most importance to 'dog people' (i.e., participants with closer relationships with their dogs). Participants were reasonably accepting of insect-based pet food made from mealworms and crickets and slightly accepting of products made from black soldier fly larvae. In contrast, participants' responses to plant-based pet foods were neutral. Food neophiles, and to a lesser extent, insect-eating consumers (i.e., those who had previously eaten insects), were found to be more willing to feed their dogs insects in comparison to non-neophiles and non-insect-eating consumers. Overall, Australian dog owners appear to be supportive of feeding their dogs diets supplemented with insect protein. Insights from this study will help inform the development and marketing of insect-based pet foods.

Abstract
A bioactive film was developed using cricket (Acheta domestica) protein (Cric-Prot) and Caralluma fimbriata extract-based nanoparticles [Car-Fim-NPs (0.0, 1.0, 2.0, and 3.0 % w/v)] to augment the storage stability and functional value of cheddar cheese (Ched-Chee). The Car-Fim-NPs were developed using an ultrasonication-mediated (20 kHz, 500 W, 10 min, pulse duration of 5/5 s on/off) green method. The addition of Car-Fim-NPs modified the film characteristics [density (%), WVTR (mg/mt2), transmittance (%), elongation at break (%), and colour (L*, a*, b*)] and enhanced its antioxidant [DPPH, ABTS and FRAP activities, total phenolic and flavonoid contents, and antioxidant release (%)] and antimicrobial (inhibitory halos against E. coli and S. aureus) potential. Application of the films containing Car-Fim-NPs (1.0-3.0 %) increased the antioxidant potential (DPPH, ABTS and FRAP activities), lipid (TBARS and free fatty acids) and protein (total carbonyl content) oxidative stability, and microbial quality (microbial counts) of the Ched-Chee during 90 days of storage. The sensory quality of Ched-Chee showed a significant increase after day 30 till the storage end. Gastrointestinal digestion simulation augmented the antioxidant potential of Ched-Chee. Overall, the results indicate the possibility of theuse ofCric-Prot-based film containing Car-Fim-NPs to enhance thestorage quality of Ched-Chee.

Abstract
Insect protein has received considerable attention as an alternative to conventional animal proteins with its high nutritional contents and eco-friendly credentials. Exploring commercially available insect-protein-enhanced foods, this study aims to profile and compare such products in the ultra-processed category with products protein-enhanced with dairy (e.g., milk and whey) and plants (e.g., pea and rice). A global product audit was conducted drawing from English-language online retail portals to determine the product formats and statistically compare their nutritional contents with products fortified with non-insect proteins. The results show that four categories-flour/powder, pasta/noodle, starch-based snacks (e.g., chips, crackers, and cookies), and energy bars-are involved with food enhanced with insect protein. Flour/powder and pasta/noodles with insects demonstrated comparable protein contents to non-insect equivalents, highlighting insects' potential as effective protein sources. However, insect protein's performances in snacks and energy bars were less favourable, with significantly lower protein contents compared to products enhanced with non-insect sources. This may be attributed to the high fat content of insects, which may also contribute to undesirable flavours in complex foods, limiting their usage. The study highlights the need for industry innovation and scientific collaboration to overcome the challenges to widely applying insects as food ingredients, offering benefits for both the industry and consumers.

Abstract
Alternative diets for pets have gained attention in recent years due to concerns about sustainability and environmental impact. One emerging option is the inclusion of edible insects in pet food. This study aimed to survey dog (DO) and cat (CO) owners regarding their willingness to feed insect-based pet food (IBPF) to their pets and to identify potential motivating factors. A total of 435 valid responses were evaluated, with 66% being DO and 58% CO. Of those, 24% owned both dogs and cats. About half of DO (52%) and 62% of CO were positive about IBPF. CO had a higher acceptance of IBPF than DO (p < 0.05). Moreover, both DO and CO showed a significant increase in acceptance if IBPF has been proven to provide sustainable and nutritional benefits (p < 0.01). CO adhering to a specific diet themselves showed a significantly higher acceptance of IBPF (p < 0.05), however it was independent of the type of diet. Additionally, 32% of DO and 34% of CO reported prior experience with eating edible insects themselves, and a positive entomophagy experience increased DO's (p = 0.108) and CO's (p < 0.01) acceptance of IBPF. Furthermore, the interest in entomophagy resulted in increased acceptance of IBPF by both DO and CO who had not yet tried insects (p < 0.01). In conclusion, pet owners demonstrated a favourable perception of IBPF and showed a willingness to incorporate these products into their pets' diets. CO displayed a more positive perception compared to DO, suggesting a beneficial focus on the feline niche. To enhance overall acceptance, emphasizing sustainability and conducting further research to establish the nutritional benefits of IBPF are crucial. The findings of this study provide valuable insights for pet food manufacturers and marketers to develop strategies and products aligned with the preferences and needs of pet owners.

Abstract
BACKGROUND Due to environmental, health, and ethical concerns, more consumers are reducing their meat consumption or giving it up entirely. Plant protein is most often chosen as a sustainable source of protein. Still, recently, edible insects have been gaining popularity as a source of alternative protein with a better nutritional profile. However, there is no information on whether vegetarians can accept insects. METHODS An online survey was conducted with a sample of 790 vegetarians to address this gap. The findings of this survey are crucial in understanding the potential acceptance of insects in vegetarian diets. RESULTS We found that 13% of the respondents approve of using processed insect protein in vegetarian dishes. Moreover, 9% of the respondents declared that they had knowingly consumed insects before; of these, 42% of them found the taste of the insects to be neutral, 16% found it to be very good, and 25% found it to be good. The level of insect acceptance was influenced by the type of vegetarian diet and its duration of use. Furthermore, pesca-vegetarians and flexi-vegetarians were the most likely to eat insects for ecological reasons (x¯ = 3.54 ± 0.74; x¯ = 3.00 ± 0.67, respectively). CONCLUSIONS These findings do not eliminate the possibility of using edible insects in vegetarian diets but support their partial acceptance.

Abstract
Ethical food consumption has gained significant attention in the past years, reflecting a societal shift towards ethical behavior. Our study examines the evolution of ethical food consumption research over the past three decades, aiming to map its transformation. We identified key trends, influential contributors, and major thematic clusters through a bibliometric analysis, employing VOSviewer (v.1.6.18) for bibliometric visualization, focusing on citation networks and keyword o-occurrences to reveal the field's structure and dynamics. We made extensive use of the Web of Science database, where we selected 1096 relevant articles and review papers. Our analysis shows a notable rise in publications starting in 2005, with a peak in 2022, indicating increased scholarly interest in the topic. The findings underscore the importance of integrating empathy and human values into ethical food consumption, highlighting the critical roles of animal welfare, sustainability, and social justice. Despite a strong pro-ethical attitude among consumers, a significant "attitude-behavior gap" persists, emphasizing the need for strategies that bridge this divide. Our results emphasize the importance of interdisciplinary efforts to align ethical practices with broader societal goals, offering valuable insights for future research and policy-making to promote sustainable and ethical food consumption worldwide.

Abstract
The aim of the study was to analyze the acceptance of muffins containing a 15% addition of powder from four edible insect species (Alphitobius diaperinus, Tenebrio molitor, Acheta domesticus, Ruspolia differens) in both savory and sweet versions, focusing on the psychological factors influencing their consumption. The study involved 106 adult consumers. Initially, the level of food neophobia (FNS) among participants was determined. Over 80% displayed low to medium levels of neophobia. Similar results were obtained when assessing attitudes towards insects, with most participants showing positive and ambivalent attitudes. Based on these findings, the acceptance of insect-based muffins was evaluated. The level of acceptance of insects varied and depended mainly on taste, smell, and texture. Participants with lower levels of neophobia and positive attitudes towards consuming insects generally rated the insect muffins higher compared to those with higher levels of neophobia and negative attitudes. The sweet versions of insect powder muffins were rated higher, which also indicates preferences and dietary habits. Products with grasshopper powder (GS, GCL) were rated the lowest for both taste versions. Conversely, products based on buffalo worms (BS, BCL) were seen as having the greatest potential for acceptance. Understanding consumer attitudes, neophobia, and levels of acceptance provides valuable insights for designing new insect-based foods.

Abstract
The marketing of insect-derived protein has led to the development of respective legal regulations on such insects-based foods in the European Union. Despite the interest in the area of insect-based food, European researchers have paid relatively little attention to consumer attitudes and behaviors towards such products or the factors that may affect them. Attempts undertaken so far in this respect are insufficient; therefore, there is a need to continue and expand research in this field. The present study attempts to verify the following research hypotheses: H1. Attitudes towards food containing insects are related to the attributes/characteristics of these products, care for health and the natural environment, and attitudes towards novelty (neophilic/neophobic); H2. Intentions to purchase food containing insects can be predicted based on attitudes towards food from insects, product attributes, and attitudes towards environmental health and novelties. An empirical study was conducted among university students (N = 1063) by an indirect interview method using a specially designed questionnaire, via an online platform (Computer-Assisted Web Interview, CAWI) in November 2023. The questionnaire was validated by assessing the construction validity and estimating the reliability of the scales used. The study results demonstrated that the attributes of insect-based food products can influence the positive attitudes towards them and behavioral intentions to consume them, and that the strength of the impact of health quality traits is far greater than that of the organoleptic or functional traits. A negative, statistically significant value of the correlation coefficient between neophobic attitude and intention to purchase this type of food was observed. Thus, respondents without food neophobia were characterized by a positive attitude towards the purchase of foods containing edible insects in their composition.

Abstract
The chemical composition, antioxidant properties, and sensory aspects of sponge cakes with the addition of flours from edible insects (buffalo worm, cricket, and mealworm) were evaluated. The addition of edible-insect flours increased the protein, fat, and dietary fiber content in all cases. The utilization of edible insects demonstrated a notable augmentation in the phenolic compounds (especially protocatechuic acid and protocatechuic aldehyde, and syringic, ferulic, and sinapic acids). This resulted in an increase in the antioxidant activity measured against the ABTS radical cation, the DPPH radical, and ferric ions. The antioxidant potential, assessed by four different methods, unequivocally confirmed that the aforementioned polyphenolic compounds found in edible insects provide significant radical-scavenging and antioxidant activity in sponge cakes containing them. The polyunsaturated fatty acid contents were significantly lower in cakes with insect flour compared to the standard wheat cakes. Products and raw materials exhibited high values of the n - 6/n - 3 ratio, which may be associated with negative health effects, with a high oleic acid content. The amino acid score (AAS) for the essential amino acids exceeded 100% for all obtained products. The sponge cakes were accepted by consumers and the taste was the most important predictor for overall acceptability, whereas the structure and appearance had less impact.
