Abstract
This research aimed to enhance the nutritional and sensory qualities of Balady bread by adding locally Egyptian buckwheat flours, Fagopyrum esculentum (FE) and Fagopyrum tataricum (FT), to Hard Wheat Flour (HWF) 82% extraction at three levels (10%, 20%, and 30%). The chemical composition, rheological properties, color, sensory evaluation and stalling of the balady bread were determined. The chemical composition of raw materials revealed that FE was significantly (P ≤ 0.05) higher in protein and fat contents compared to HWF and FT. While FT was higher in fiber and ash contents. The findings show that a 30% replacement with FE or FT significantly enhances the bread's nutritional profile, notably increasing protein, fiber, ash, and moisture content. Rheological analysis revealed that FE and FT alter dough handling, with a notable improvement in dough stability and mixing tolerance at 30% FT. Sensory evaluation indicated acceptable qualities even at higher substitution levels, although 30% FE showed slight declines in certain attributes. Furthermore, bread supplemented with 30% FT demonstrated slower staling and potentially extended shelf life. These results highlight the potential of FE and FT as nutritional enhancers in bread formulations, with 30% FT emerging as the optimal replacement level for balancing nutritional benefits and sensory acceptance.

Abstract
BACKGROUND Grain weight/size influences not only grain yield (GY) but also nutritional and appearance quality and consumer preference in Tartary buckwheat. The identification of quantitative trait loci (QTLs)/genes for grain weight/size is an important objective of Tartary buckwheat genetic research and breeding programs. RESULTS Herein, we mapped the QTLs for GY, 1000-grain weight (TGW), grain length (GL), grain width (GW) and grain length-width ratio (L/W) in four environments using 221 recombinant inbred lines (XJ-RILs) derived from a cross of 'Xiaomiqiao × Jinqiaomai 2'. In total, 32 QTLs, including 7 for GY, 5 for TGW, 6 for GL, 11 for GW and 3 for L/W, were detected and distributed in 24 genomic regions. Two QTL clusters, qClu-1-3 and qClu-1-5, located on chromosome Ft1, were revealed to harbour 7 stable major QTLs for GY (qGY1.2), TGW (qTGW1.2), GL (qGL1.1 and qGL1.4), GW (qGW1.7 and qGW1.10) and L/W (qL/W1.2) repeatedly detected in three and above environments. A total of 59 homologues of 27 known plant grain weight/size genes were found within the physical intervals of qClu-1-3 and qClu-1-5. Six homologues, FtBRI1, FtAGB1, FtTGW6, FtMADS1, FtMKK4 and FtANT, were identified with both non-synonymous SNP/InDel variations and significantly differential expression levels between the two parents, which may play important roles in Tatary buckwheat grain weight/size control and were chosen as core candidate genes for further investigation. CONCLUSIONS Two stable major QTL clusters related to grain weight/size and six potential key candidate genes were identified by homology comparison, SNP/InDel variations and qRT‒qPCR analysis between the two parents. Our research provides valuable information for improving grain weight/size and yield in Tartary buckwheat breeding.

Abstract
Essential trace elements are required at very low quantities in the human body but are essential for various physiological functions. Each trace element has a specific role and a lack of these elements can easily cause a threat to health and can be potentially fatal. In this study, inductively coupled plasma mass spectrometry (ICP-MS) and inductively coupled plasma atomic emission spectrometry (ICP-AES) were used to determine the content of trace metal elements Ca, Fe, Cu, Mg, Zn, Se, Mo, Mn, and Cd in buckwheat flour. The content and distribution characteristics of trace metal elements were investigated using principal component and cluster analysis. The principal component analysis yielded a four-factor model that explained 73.64% of the test data; the cumulative contribution of the variance of the 1st and 2nd principal factors amounted to 44.41% and showed that Cu, Mg, Mo, and Cd are the characteristic elements of buckwheat flour. The cluster analysis divided the 28 buckwheat samples into two groups, to some extent, reflecting the genuineness of buckwheat flour. Buckwheat flour is rich in essential trace metal elements and can be used as a source of dietary nutrients for Mg and Mo.

Abstract
The use of orphan crops could mitigate the effects of climate change and improve the quality of food security. We compared the effects of drought, high temperature, and their combination in 12 varieties of Tartary buckwheat (Fagopyrum tataricum). Plants were grown at 21/19 °C or 28/26 °C under well-watered and water-stressed conditions. Plants were more discriminated according to environmental conditions than variety, with the exception of Islek that was smaller and produced fewer leaves, inflorescences, and seeds than the other varieties. The combination of high temperature and water stress had a stronger negative impact than each stress applied separately. The temperature increase stimulated leaf and flower production while water stress decreased plant height. Leaf area decreased with both temperature and water stress. High temperature hastened the seed initiation but negatively affected seed development such that almost all seeds aborted at 28 °C. At 21 °C, water stress significantly decreased the seed production per plant. At the physiological level, water stress increased the chlorophyll content and temperature increased the transpiration rate under well-watered conditions. High temperature also increased the polyphenol and flavonoid concentrations, mainly in the inflorescences. Altogether, our results showed that water stress and temperature increase in particular negatively affected seed production in F. tataricum.

Abstract
The accumulation of valuable nutrients in cereal grains depends on a number of factors, including species, cultivars, and environment conditions. The aim of this study was to compare protein, some polyphenols and rutin content, as well as mineral composition in Fagopyrum tataricum and Fagopyrum esculentum genotypes growing in Polish conditions. A field experiment was conducted on pseudopodsolic soil in 2017-2018 at the Experimental Station in Osiny (51°35', 21°55'), following randomized complete block method with three replications. Two cultivars of Fagophyrum esculentum (Kora and Panda), two cultivars of Fagopyrum tataricum (LIT1 and 63181) and two forms of Fagopyrum esculentum (Red Corolla and Green Corolla) were used in this experiment. We found differences in the tested compounds (protein, phenolic acids, rutin, and mineral composition) between cultivars and genotypes. Total phenolic acid and rutin contents were higher in the Fagopyrum tataricum compared to Fagopyrum esculentum. Ferulic and coumaric acids were prominent in the Kora and Panda cultivars, however vanillic and syringic acids accumulated more in Green Corolla and Red Corolla. The common buckwheat seeds contained more Cu, Mn, and Mg and less Ca than tartary buckwheat. Moreover Fagopytum esculentum genotype contains more protein compared to Fagopyrum tataricum.

Abstract
Tartary buckwheat (Fagopyrum tataricum Gaertn.) originates in mountain areas of western China, and it is mainly cultivated in China, Bhutan, northern India, Nepal, and central Europe. Tartary buckwheat shows greater cold resistance than common buckwheat, and has traits for drought tolerance. Buckwheat can provide health benefits due to its contents of resistant starch, mineral elements, proteins, and in particular, phenolic substances, which prevent the effects of several chronic human diseases, including hypertension, obesity, cardiovascular diseases, and gallstone formation. The contents of the flavonoids rutin and quercetin are very variable among Tartary buckwheat samples from different origins and parts of the plants. Quercetin is formed after the degradation of rutin by the Tartary buckwheat enzyme rutinosidase, which mainly occurs after grain milling during mixing of the flour with water. High temperature treatments of wet Tartary buckwheat material prevent the conversion of rutin to quercetin.

Abstract
In temperate ecosystems, elevated temperatures, and drought occur especially during spring and summer, which are crucial periods for flowering, pollination, and reproduction of a majority of temperate plants. While many mechanisms may underlie pollinator decline in the wake of climate change, the interactive effects of temperature and water stress on the quantity and quality of floral nectar and pollen resources remain poorly studied. We investigated the impact of temperature rise (+3 and +6°C) and water stress (soil humidity lower than 15%) on the floral resources produced by the bee-pollinated species Borago officinalis. Nectar volume decreased with both temperature rise and water stress (6.1 ± 0.5 μl per flower under control conditions, 0.8 ± 0.1 μl per flower under high temperature and water stress conditions), resulting in a 60% decrease in the total quantity of nectar sugars (mg) produced per flower. Temperature rise but not water stress also induced a 50% decrease in pollen weight per flower but a 65% increase in pollen polypeptide concentration. Both temperature rise and water stress increased the total amino acid concentration and the essential amino acid percentage in nectar but not in pollen. In both pollen and nectar, the relative percentage of the different amino acids were modified under stresses. We discuss these modifications in floral resources in regards to plant-pollinator interactions and consequences on plant pollination success and on insect nutritional needs.
