Investigation into Polyphenol Profile and Biological Activities of Enriched Persimmon/Apple Smoothies during Storage

Smoothies are becoming an increasingly popular product as a healthy alternative to snacks. The consumer expects from this product that, apart from its nutritional value, it will also be qualitatively stable during storage. Therefore, in this study, original smoothies obtained with persimmon fruit puree and apple juice (Dk/Md) enriched with Arbutus unedo fruits, Myrtus communis purple berry extract, Acca sellowiana, and Crocus sativus petal juice were evaluated for their polyphenol composition, antioxidant activity, and inhibition on targeted digestive enzymes, over six months of storage. The amount of polyphenols evaluated by UPLC-PDA analysis decreased in six months from 23.5% for both Dk/Md and enriched C. sativus smoothies to 42.5% for enriched A. sellowiana, with anthocyanins the most sensitive compounds (71.7-100% loss). Values of antioxidant assays generally strongly decreased during the first three months (up to ca. 60%) and to a lesser extent in the following three months (0.4-27%). In addition, inhibitory activity on α-amylase, α-glucosidase, and pancreatic lipase, especially on the last two enzymes, was negatively affected by time storage. The outcome of this study indicates that persimmon fruit is a good option for producing smoothies, and enrichment with other plant extracts can enhance the bioactive compound content and biological activities. It is recommended that appropriate storage strategies to preserve the properties of those smoothies should be developed.

Development and Testing of a Low-Cost Belt-and-Roller Machine for Spheroid Fruit Sorting

Sorting is one of the most critical factors in the marketing development of fruit and vegetable and should be performed without any damage to the product. This article reports results of the development and testing of a prototype of a low-cost mechanical spherical fruit sorter based on a belt-and-roller device built at the State University of Tabriz, Iran. The efficiency and damage effect of the prototype of the machine was tested at different sorting rates on apples (Red Delicious and Golden Delicious) and oranges. Performance tests indicated that the speed of the feeding belt and transporting belt as well as the spherical coefficient significantly affect the machine’s sizing performance and damages. The results of the test showed a 95.28% and 92.48% accuracy in sorting for Red Delicious and Golden Delicious, respectively, and 94.28% for orange. Furthermore, the machine sorts fruits without any significant damage.

Mass Modelling and Effects of Fruit Position on Firmness and Adhesiveness of Banana Variety Nipah

Fruits including banana are susceptible to damage especially during transportation. Nipah banana, also known as Musa acuminata balbisiana, has irregular shape and is short in length. This paper focuses on the physical and mechanical properties of Nipah banana. Mathematical models were developed to predict the mass of banana fruit based on the physical properties. Changes during ripening period in terms of the firmness and adhesiveness of Nipah banana were investigated at room temperature (25 °C) for three different positions in a finger. Peak positive and negative force was taken as firmness and adhesiveness, respectively. Results showed that the multiple regression modelling based on three dimensions had the highest R2 value. Values of firmness and adhesiveness decreased with the ripening days due to starch degradation and accumulation of soluble sugars. A similar trend was observed on the firmness for all three positions.

Postharvest changes in phenolic compounds and antioxidant capacity of apples cv. Jonagold growing in different locations in Europe

Apples cv. 'Jonagold' of the same quality were collected from four orchards in three European countries. The orchards differed in terms of longitude, latitude and microclimate. The apples were stored in controlled atmosphere storage for six months. Both after harvest and after storage the apples were compared in terms of physical and chemical properties. Differences in firmness, titratable acidity, total soluble solids, mass varied not >11%. Storability was little affected by harvest location. The sum of polyphenols was more strongly influenced by storage than by orchard location. The strongest degradation of flavonols after storage was in apples grown in the most southern region of harvest (Italy). The content of (+)- catechin and (-)-epicatechin depended on harvest location and its strong increase resulted in higher content of procyanidins and flavanols after storage. Changes in individual polyphenols were significant after storage and depended on harvest location.

Analysis and evaluation of a fruit bin for apples

A fruit bin is an essential part of apple harvesting, storage, and transport. The lateral pressure distribution on the bin walls by apples in the bin are not well understood, thus making it harder to predict the behavior of the vertical walls of the bin. In this study, a bin was loaded with apples and deflections of the base and a vertical wall were experimentally measured and then modeled using finite element methods to understand typical static load distribution. One of the factors determining the accuracy of an analytical model is accurate representation of load distribution on the structure. A mathematical model was used to validate the lateral pressure distribution applied by the apples on the vertical walls and the bottom plate of the bin. The effect of unit weight of an apple and the angle of repose of apples on load distribution in the bin has been analyzed. Angle of repose is found to be a significant parameter for the lateral pressure distribution on the bin walls. A nonlinear lateral pressure distribution was observed along the depth from top to bottom of the bin. The resulting finite element model allows for comparison of deformation behavior of fruit bins constructed with a variety of materials, such as plywood, wood plastic composites, or a thermoplastic polymer. Although this study dealt with bins for apples, the sensitivity analyses for a range of unit weights and angles of repose for apples makes the analysis results versatile for use with other kinds of fruits and vegetables that fall within the reported range of unit weight and angle of repose.
