Nutritional impact of excluding red meat from the Canadian diet

The objective of the study was to examine differences in nutrient intake between consumers and non-consumers of red meat and to assess nutritional adequacy of consumers relative to Recommended Daily Allowance (RDA) in Canada. Matching estimators were used to identify differences in nutrient intake between the two groups. Statistically significant differences were observed in nutrient intake between red meat consumers and non-consumers, including lower daily intake of protein, riboflavin, niacin, vitamin D, and zinc and a higher daily intake of dietary fiber, folate, and magnesium among Canadians who did not consume red meat. Further, red meat consumers and non-consumers had nutrient intakes below RDA for dietary energy, fiber, and calcium. While individuals who did not consume red meat were at increased risk of calcium, vitamin D, energy, and potassium inadequacy, those who consumed red meat were at increased risk of dietary fiber, vitamin A, and magnesium inadequacy.

Influence of Maternal Corn Supplementation of Beef Cattle on Muscle Fiber Type and Meat Quality of their Offspring

ObjectivesTo determine the influence of corn supplementation of beef cows during winter and their impact on offspring beef quality attributes.Materials and MethodsForty-seven multiparous Angus beef cows carrying male calves were assigned randomly to two dietary treatments: corn supplementation at 0.2% BW (SUP; n = 24) vs. non-supplementation (NSUP; n = 23) at d 110 d of gestation for 22 wks. Ad-libitum access to low-quality forage was provided to both groups. At 7 d post-calving, a muscle biopsy was collected from the longissimus dorsi muscle (LD) of each calf for muscle fiber typing. Offspring were managed as a single group from nursing through to the backgrounding phase. Thereafter, the steers were placed in the feedlot and assigned to 4 pens (blocks) based on BW and offered ad-libitum access to a 100% corn silage-based ration (76.97% TDN, 11.07% CP), salt and minerals. When the steers reached a final BW of 615 kg (∼16 mo of age), they were slaughtered in a commercial abattoir. A second LD muscle biopsy sample was obtained at 45 min postmortem (PM) for muscle fiber typing. At 96 h PM, striploins (n = 42) were collected, aged for 14 d and samples obtained for Warner Bratzler shear force (WBSF), proximal composition, myofibril fragmentation index (MFI), collagen analysis and objective color evaluation. Data were analyzed as a randomized block design.ResultsImmunofluorescent analysis for the myosin heavy chain (MHC) isoform on the proportion of the fiber type or fiber dimensions was not influenced by maternal dietary treatment at both ages (P > 0.05). However, regardless of maternal dietary treatment, the proportion of fiber type IIA decreased while type IIAX increased in samples from steers at 16 mo of age compared with samples from steers at 7 d of age. No differences were observed between dietary treatment groups in proximate composition (P = 0.8), MFI (P = 0.29), or collagen content (P 0.98); however, WBSF values tended to be higher in steers from SUP cows than steers from NSUP dams (P = 0.07). Maternal dietary treatment had no influence on objective color evaluation at the retail display (P > 0.05). Objectives traits were not affected by dietary treatment × display time interaction (P = 0.92).ConclusionOur findings indicate that corn supplementation of cows during mid to late gestation has minimal effects on muscle fiber type and beef quality of their offspring. Thus, corn supplementation of low-quality forage offered during mid to late gestation did not have detrimental effects on muscle fibers and meat quality of offspring.

Effect of post-weaning residual feed intake classification on grazed grass intake and performance in pregnant beef heifers

There is limited knowledge of how cattle tested for feed efficiency under drylot conditions perform when they graze on summer pasture. Residual feed intake adjusted for end of test backfat thickness (RFIfat) was determined on 171 beef crossbred heifers under drylot conditions over 2 yr using an automated system. Upon completion of the test, the 10 lowest and 10 highest RFIfat (–0.54±0.17 vs. 0.58±0.15 kg DM d−1) heifers in 2012, and the 14 lowest and 14 highest RFIfat (−0.47±0.16 vs. 0.53±0.19 kg DM d−1) heifers in 2013 were selected and placed on meadow bromegrass pasture to investigate the effect of RFIfat ranking on their grass intake and performance on the pasture. The pasture adaptation period (8 d in 2012 and 19 d in 2013) was followed by a pasture feed intake experiment during which heifers were dosed twice daily (0815 and 1415) with 500 g of C32-labeled feed pellet for 13 d (day 0 to 12) and fecal sampled twice daily (0815 and 1415) from day 8 to 12. Forage DM intake on pasture for each heifer was determined using the double alkane (C31/C32) methodology. High and low RFIfat heifers were similar in body weight (BW), backfat and rump fat thickness, and average daily gain (ADG) during the grazing trial period, except backfat thickness at the end of test period. However, low RFIfat heifers consumed 5.3% less forage when expressed as kg DM d−1 (8.20±0.08 vs. 8.66±0.09, P<0.001) and 5.1% less when expressed as a percentage of body weight (1.86±0.02 vs. 1.96±0.02% of BW, P<0.001) compared with high RFIfat heifers. RFIfat measured under drylot conditions in growing heifers was positively correlated to grazed RFIfat determined in pregnant heifers (rp=0.30, P=0.04). These results suggest that beef heifers classified as low RFIfat during the post-weaning drylot period had lower dry matter intake as heifers in their first pregnancy grazing tame pasture, with no negative impact on their body weight, back-fat thickness, and ADG compared with their high RFIfat herdmates.

[Case report--polydactyly in a German holstein calf]

A female German Holstein twin calf showed polydactyly in both front limbs and in one of the hind limbs. In three limbs an additional medial toe was seen. No malformations of the limbs were present in the male twin partner and four maternal half sibs. The analysis of the pedigree revealed that the affected calf had common ancestors. The coefficient of inbreeding of the affected calf was 1.312%. As a monogenic or digenic inheritance was suspected in similar cases, it may be probable that the polydactyly observed here has a genetic background.

Impact of pasture type on methane production by lactating beef cows

In order to determine the quantity of methane (CH4) produced by lactating beef cows on pasture, 16 Hereford–Simmental first-calf heifers with a mean weight of 511.2 ± 5.8 kg were randomly selected from a larger group of cows (n = 60) on a grazing management experiment and used to evaluate the effects of pasture type on ruminal CH4 production using the sulfur hexafluoride (SF6) tracer-gas technique. Pasture treatments consisted of two pasture types, alfalfa-grass [78% alfalfa (Medicago sativa L.) – 22% meadow bromegrass (Bromus biebersteinii Roem and Schult.)] or 100% meadow bromegrass at each of two fertility levels (either unfertilized or soil test recommended fertilizer levels) with two replications of each pasture treatment (8 pastures). Cows were managed using a "put and take" stocking system to leave equal residual herbage mass on all treatments following the grazing period in each paddock. During the 69-d grazing season, two cows from each pasture were sampled to determine daily forage intake and CH4 production on four occasions. The chemical composition of diets differed between pasture types and sampling periods. Dry matter intake was greater for cows grazing alfalfa–grass pastures than for cows grazing grass-only pastures (11.4 vs. 9.7 kg DM d−1. P < 0.018). However, methane production was greater for cows grazing alfalfa–grass pastures than for cows grazing grass-only pastures (373.8 vs. 411.0 L CH4 d−1. P < 0.008). Consequently, energy lost through eructation of CH4 was less for cows grazing alfalfa–grass pastures than it was for cows grazing grass-only pastures (7.1 vs. 9.5% of GEI; P < 0.001). Methane production by steers on pasture

In order to determine the quantity of methane (CH4) produced by steers on pasture, 16 steers with a mean weight of 356 ± 25 kg were randomly selected from a larger group of cattle (n = 48) to evaluate the effects of grazing management and monensin controlled release capsule (CRC) administration on ruminal CH4 production using the sulphur hexafluoride (SF6) tracer-gas technique. Pasture management treatments consisted of two grazing systems (continuous stocking or 10-paddock rotational stocking) at each of two stocking rates (low, 1.1 steer ha−1 or high, 2.2 steers ha−1) with two replications of each pasture treatment. Half of the animals on each pasture treatment were administered a monensin CRC delivering 270 mg d−1, and untreated animals served as controls. During the 140-d grazing season, one steer from each treatment-replicate combination was sampled to determine daily intake and CH4 production on four occasions. The chemical composition of diets differed between grazing management treatments and sampling periods. Voluntary intake and CH4 production, adjusted for differences in body weight, were unaffected by grazing management, sampling period or by monensin CRC administration and averaged 0.69 ± 0.1 L kg BW−1 d−1 across all grazing management treatments.
