Mashed potatoes enriched with soy protein isolate and inulin: chemical, rheological and structural basis

Soy protein isolate is typical vegetable protein with health-enhancing activities. Inulin, a prebiotic no digestible carbohydrate, has functional properties. A mashed potato serving of 200 g with added soy protein isolate and/or inulin concentrations of 15–60 g/kg provides from 3 to 12 g of soy protein isolate and/or inulin, respectively. Currently, no information is available about the possible texture-modifying effect of this non-ionizable polar carbohydrate in different soy-based food systems. In this study, the effect of the addition of soy protein isolate and inulin blends at different soy protein isolate: inulin ratios on the degree of inulin polymerization and the rheological and structural properties of fresh mashed and frozen/thawed mashed potatoes were evaluated. The inulin chemical structure remained intact throughout the various treatments, and soy protein isolate did not affect inulin composition being a protein compatible with this fructan. Small-strain rheology showed that both ingredients behaved like soft fillers. In the frozen/thawed mashed potatoes samples, addition of 30 : 30 and 15 : 60 blend ratios significantly increased elasticity ( G′ value) compared with 0 : 0 control, consequently reducing the freeze/thaw stability conferred by the cryoprotectants. Inulin crystallites caused a significant strengthening effect on soy protein isolate gel. Micrographs revealed that soy protein isolate supports the inulin structure by building up a second fine-stranded network. Thereby, possibility of using soy protein isolate and inulin in combination with mashed potatoes to provide a highly nutritious and healthy product is promising.

Factors that affect the quality of the bio-waste fraction of selectively collected solid waste in Catalonia

The present study determines the composition of the bio-waste fraction of waste and establishes correlations between the quality of this fraction and socio-economic/demographic variables. According to the Catalan Waste Agency [Agència de Residus de Catalunya (2004). Statistical data. Available from: <www.arc-cat.net>], the quantities of glass, paper/cardboard, light packaging and biodegradable material (those components of municipal waste that can be recovered, and have a separate collection) that were selectively collected in 2004 represent 25.6% by weight of the total municipal waste generated. There is a large spread of values from different cities. It is important to bear in mind that this percentage was calculated using the total weights of all of the materials present in the different bins used for selective solid waste collection, without taking account of the fact that many of these bins contain a certain amount of other, undesirable waste. In order to be able to determine the actual quantities that are recovered, it is necessary to establish the quality of the waste collected. To establish the quality of the waste collected, 350 samples were analysed, corresponding to the bins for the bio-waste fraction of solid waste in 193 different cities in Catalonia. Seven levels of quality were established for the study, depending on the amount of undesirable waste present. The results show certain correlations between the socio-economic/demographic factors studied and the percentage of undesirable waste present in the samples. The correlations presented here are not intended to be predictive, but rather indicative of a tendency, which should help us gain a better understanding of the behaviour of the society studied with respect to the separation of solid household waste at origin.

Relationship of abdominal obesity with alcohol consumption at population scale

BACKGROUND

The high energy content of alcohol makes its consumption a potential contributor to the obesity epidemic.

AIM OF THE STUDY

To determine whether alcohol consumption is a risk factor for abdominal obesity, taking into account energy underreporting.

METHODS

The subjects were Spanish men (n = 1491) and women (n = 1563) aged 25-74 years who were examined in 1999-2000, in a population-based cross-sectional survey in northeastern Spain (Girona). Dietary intake, including alcohol consumption, was assessed using a food frequency questionnaire. Anthropometric variables were measured.

RESULTS

The mean consumption of alcohol was 18.1 +/- 20.7 g/d in men and 5.3 +/- 10.4 g/d in women. 19.3% of men and 2.3% of women reported alcohol consumption of more than 3 drinks per day. The consumption of alcohol was directly associated with total energy intake in men (P < 0.001) and women (P = 0.001). The proportion of energy underreporting significantly (P < 0.001) decreased with higher amounts of alcohol drinking in both genders. Multiple logistic regression analysis, controlled for energy underreporting, smoking, educational level, leisure-time physical activity, energy, and diet quality, revealed that consuming more than 3 drinks of alcohol (>30 g ethanol) was significantly associated with the risk of abdominal obesity (Odds ratio 1.80; 1.05, 3.09) and exceeding recommended energy consumption (Odds ratio 1.97; 1.32, 2.93) in men. A very small number (2.13%) of women in this population reported high levels of alcohol consumption.

CONCLUSIONS

Alcohol consumption in elevated amounts was associated with risk of abdominal obesity in men, independent of energy underreporting.

[Validation in Spain of the dysfunctional ventilatory response to weaning]

In this article we present the study financed by the Sanitary Investigations Fund (FIS), with the objectives to prove that the Nursing Diagnosis of "Dysfunctional Ventilatory Response at Weaning" (DWRU) incorporated to the taxonomy of the North American Nursing Diagnosis Association (NANDA), is valid in Spain; as well as identify the items which configure its definition. A descriptive observational study was performed in nine Intensive Care Units belonging to six autonomous communities, including as study subjects 89 male and female nurses who are experts in yhe care of critically ill patients with mechanical ventilation. The model of validation proposed by Fehring and the Delphi Technique were used. The data were analysed calculating the average of the weights of each defining feature; percentage and average calculus; opinion percentages about the related factors; variability calculus; and factorial analysis of the result. The results make us conclude that Spanish nurses who have experience in taking care of critically ill patients, identify DWRU as a phenomenon which patients in our environment present and which can be treated by them. Besides, the identification of levels of DWRU into Severe, Moderate and Slight which the NANDA suggests, is better applied using an association of factors than defining higher and lower features.

Predictive factors in the genesis of intraventricular hemorrhage in premature infants

Intraventricular hemorrhage of the newborn (IVH) is a common complication of prematurity, especially of those infants with birth weights of less than 1500 grams. It may be associated with neurodevelopmental impairment and even death. We did a retrospective study of infants born with birth weights of less than 1500 grams during the period of January 1989 to January 1990 who had head sonograms done during the newborn period. A total of 37 patients were identified. The purpose of the study was to identify risk factors associated to IVH. Risk factors considered were those related to pregnancy and delivery complications and perinatal and postnatal events. Patients were classified according to type of IVH into mild and severe. The overall incidence of IVH was 43% (16/37). The incidence of severe IVH was 30%. Pregnancy and delivery complications were not related to the development of IVH. None of the perinatal factors were associated with IVH. Of the neonatal factors, hypertension per se was not associated with severe IVH, but the fluctuations in mean blood pressure (MAP) during the first 72 hours of life were significantly different in infants with mild IVH as compared to infant with severe IVH, 25mmHg and 40mmHg respectively.

[Comparative study of von Willebrand factor in patients with temporal arteritis]

Giant cell arteritis, temporal arteritis (TA), is a vasculitis which affects large and medium-sized vessels. The von Willebrand factor (vWF) is synthesized by endothelial cells and megakaryocytes. Increased amounts of vWF are released into plasma in response to an endothelial damage. vWF levels were studied by Electro-Immunodiffusion in 16 patients with TA (8 of them with a positive biopsy) and their values were compared with 5 patients with Polymyalgia Rheumatica (PMR) and 32 controls. We found higher amount of vWF in global TA, biopsy-positive TA, biopsy-negative TA, and PMR than in controls. There were no relationship between vWF amounts in plasma and clinical findings nor the laboratory parameters. We feel that although in our study vWF might be of some help as an alternative to the biopsy in those patients with high suspicion of TA, the results of other authors raise doubt about the usefulness of the determination of vWF in TA.
