The Effect of Washing, Blanching and Frozen Storage on Pesticide Residue in Spinach

Spinach (Spinacia oleracea L.) is a representative green leafy vegetable commonly consumed fresh or as a ready-to-cook frozen product, with increasing consumption because of its many health-related properties. Among leafy vegetables, spinach poses a major concern in terms of pesticide residue detection due to common phytotechnical practices. In this study, spinach leaves were treated in the open field with three commercial pesticide formulations containing propamocarb, lambda-cyhalothrin, fluopicolide and chlorantraniliprole at the highest concentration. The effects of the successive processing steps of washing, blanching, freezing and frozen storage were evaluated on the levels of the four pesticide residues and the degradation product (propamocarb n-desmethyl). The washing step caused a reduction of fluopicolide and chlorantraniliprole of -47% and -43%, respectively, while having a mild effect on lambda-cyhalothrin content (+5%). A two-minute blanching step allowed for the reduction of pesticides content ranging from -41% to -4% with respect to the washed sample. Different behaviors were depicted for longer blanching times, mainly for propamocarb, reaching -56% after 10 min of treatment. Processing factors higher than 1 were reported mainly for lambda-cyhalothrin and fluopicolide. Frozen storage led to a slight increase in the pesticide content in samples treated for 6 and 10 min. The optimal blanching treatment for spinach, submitted to freezing and frozen storage, seems to be 2 min at 80 °C.

Residue levels, household processing evolution and risk assessment of chlorothalonil, SDS-3701, metalaxyl and dimethomorph in Dendrobium officinale Kimura et Migo

Dendrobium officinale, a minor crop with medicinal and edible value, is increasingly entering people's diets, but the pesticide residues on it have received little attention. In this work, field trials were conducted under good agricultural practice (GAP) conditions to investigate the residues of chlorothalonil, SDS-3701, metalaxyl and dimethomorph in D. officinale, then the evolution of these pesticides after household processing were studied. The results indicated that chlorothalonil, SDS-3701, metalaxyl and dimethomorph were 2.41-30.12, 0.20-1.23, 0.07-0.80, 0.19-7.90 mg kg^-1 respectively in stems at recommended preharvest interval (PHI, 30 d). Washing and soaking removed the pesticides in fresh stems with the processing factors (PFs) of 0.41-1.14 and 0.12-1.13, respectively. In brewing test, the transfer rates (TRs) of pesticides in dry stems decreased from the first time (4.27-95.40%) to the third time (3.89-15.57%). Intake risk assessments were also conducted and the risk quotients (RQs) were no more than 27.02% for all compounds in different samples, which indicated acceptable risks for consumers. As effective risk-reducing home processing methods, washing, soaking and multiple brewing were suggested in this work, hoping to help consumers with diet safety.

Efficiency and Safety Assurance of Six Fungicides Applied on Postharvest Cabbages Stored in a Natural Environment

Postharvest disease is a major factor in the limited shelf life of many fruits and vegetables, and it is often managed using fungicidal spraying or soaking. In this study, we first tested the efficiency of six common fungicides on postharvest head cabbage ( Brassica oleracea var. capitata) against Botrytis cinerea. Afterward, the elimination abilities of these six fungicides on different layers of cabbage heads were examined, and the effects of the household processes on residue removal were evaluated. Results showed that very low contents of residues reached the inner layers and that peeling the three outmost leaves of cabbage could eliminate most of the investigated fungicides. All six fungicides disappeared during washing, stir-frying, or boiling, among which cyprodinil was the easiest to be eliminated. Furthermore, the combined processes reduced the residues below the limits of quantification for all six investigated fungicides, even after 2 days of spraying.

Effect of Traditional Household Processes on Iron, Zinc and Copper Bioaccessibility in Black Bean (Phaseolus vulgaris L.)

Micronutrient deficiencies are a major public health problem. Beans are an important plant-based source of iron, zinc and copper, but their absorption is reduced in the presence of anti-nutrients such as phytates, polyphenols and tannins. Soaking and discarding the soaking water before cooking is unanimously recommended, but this can result in mineral loss. Data on the consequences for mineral bioaccessibility is still limited. This study aimed to evaluate iron, zinc and copper bioaccessibility in black beans cooked (regular pan, pressure cooker) with and without the soaking water. For that, three batches of black beans were investigated in triplicate, each split in nine parts (raw grains and four different household processes in duplicate) and analyzed by applying the quarter technique, resulting in a grand total of 164 samples. Minerals were quantified by ICP-MS (inductively coupled plasma mass spectrometry), myo-inositol phosphates (InsP₅, InsP₆) by HPLC (high-performance liquid chromatography) ion-pair chromatography, total polyphenols using Folin-Denis reagent and condensed tannins using Vanillin assay. Mineral bioaccessibility was determined by in vitro digestion and dialysis. All treatments resulted in a statistically significant reduction of total polyphenols (30%) and condensed tannins (20%). Only when discarding the soaking water a loss of iron (6%) and copper (30%) was observed, and InsP₆ was slightly decreased (7%) in one treatment. The bioaccessibility of iron and zinc were low (about 0.2% iron and 35% zinc), but copper presented high bioaccessibility (about 70%). Cooking beans under pressure without discarding the soaking water resulted in the highest bioaccessibility levels among all household procedures. Discarding the soaking water before cooking did not improve the nutritional quality of the beans.

How effective are common household preparations on removing pesticide residues from fruit and vegetables? A review

Nowadays, the use of pesticides is inevitable for pest control in crops, especially for fruit and vegetables. After the harvest from raw agricultural commodities, the amount of pesticide residues in food is mainly influenced by the storage, handling and processing that follow. If good agricultural and good manufacturing practices are enforced effectively, the amount of pesticide residues would be brought below the corresponding maximum residue level. Thus, the consumption of raw and/or prepared fruit and vegetables would be safe. Nonetheless, reports regarding pesticide residues in fruit or vegetables on mass media have been worrying consumers, who are concerned about the adverse effects of pesticide residues. As a result, consumers perform household processing before consumption to reduce any related risks. However, can these preparations effectively remove pesticide residues? Reviewing the extensive literature, it showed that, in most cases, washing and soaking can only lead to a certain degree of reduction in residue level, while other processing such as peeling, soaking in chemical baths and blanching can reduce pesticide residues more effectively. In general, the behaviour of residues during processing can be rationalised in terms of the physico-chemical properties of the pesticide and the nature of the process. In contrast, the reported studies are diversified and some areas still lack sufficient studies to draw any remarks. Recommendations are provided with respect to the available information that aims to formulate an environmental friendly, cost-effective and efficient household processing of fruit and vegetables to reduce pesticide residues. © 2017 Society of Chemical Industry.
