Abstract
Agriculture and industrial waste are produced in large volumes every year worldwide, causing serious concerns about their disposal. These wastes have high organic content, which microorganisms can easily assimilate into relevant value-added products. Valorization of agro-industrial waste is required for sustainable development. Solid state fermentation is an excellent method of utilizing waste for circular bioeconomy. Exploitation of agro-industrial waste as a substrate utilizing microorganisms for solid state fermentation provides beneficial products for use in industries and other fields. The use of waste reduces the cost of production of value-added products. This method is an environmentally friendly, economical and feasible approach for waste management. This review discusses the factors affecting the production of value-added products through solid state fermentation. It also discusses the valuable products from solid state fermentation technology, such as antibiotics, enzymes, organic acids, bioremediation, biosurfactants and biofertilizers. Challenges and future prospects are also presented.

Abstract
Novel antimicrobials are urgently needed to combat methicillin-resistant Staphylococcus aureus (MRSA) infections. This study explores the potential of biosurfactants derived from Bacillus rugosus HH2 as a novel antibacterial agent against MRSA. The biosurfactant, identified as surfactin, demonstrated surface-active properties, reducing surface tension to 37.63 mN/m and lowering contact angles in a concentration-dependent manner. It remained stable across a wide range of pH (4-10), temperatures (30-80 °C), and salinity levels (3-18 %). The biosurfactant inhibited the growth of both methicillin-sensitive S. aureus and MRSA, with minimum inhibitory concentrations ranging from 128 to 256 μg/mL. Additionally, it showed anti-biofilm activity, preventing biofilm formation and dispersing established biofilms. Field-emission scanning electron microscopy revealed that the biosurfactant disrupted bacterial cell membranes, leading to leakage. Furthermore, it reduced the production of virulence factors in S. aureus, including hemolysin and lipase. Transcriptomic analysis indicated downregulation of genes associated with quorum sensing and cell adhesion in MRSA. Molecular docking studies showed strong interactions between surfactin and key MRSA proteins, underscoring its potential to overcome antibiotic resistance. Biocompatibility was confirmed through in vitro cytotoxicity and in vivo phytotoxicity tests. In summary, this study presents surfactin as a promising novel antibacterial agent against MRSA, providing insights into its mechanisms of action.

Abstract
Surfactin is a natural surfactant almost exclusively produced by Bacillus species with excellent physical-chemical, and biological properties. Among innovative applications, surfactin has been recently used as an ingredient in formulations. The antibacterial and anti-acne activities, as well as the anti-wrinkle, moisturizing, and cleansing features, are some of the reasons this lipopeptide is used in cosmetics. Considering the importance of biosurfactants in the world economy and sustainability, their potential properties for cosmetic and dermatological products, and the importance of patents for technological advancement in a circular bioeconomy system, the present study aims to review all patents involving surfactin as an ingredient in cosmetic formulas. This review was conducted through Espacenet, wherein patents containing the terms "cosmetic" and "surfactin" in their titles, abstracts, or claims were examined. Those patents that detailed a specific surfactin dosage within their formulations were selected for analysis. All patents, irrespective of their publication date, from October 1989 to December 2022, were considered. Additionally, a comprehensive search was performed in the MEDLINE and EMBASE databases, spanning from their inception until the year 2023. This complementary search aimed to enrich the understanding derived from patents, with a specific emphasis on surfactin, encompassing its associated advantages, efficacy, mechanisms of action on the skin, as well as aspects related to sustainability and its merits in cosmetic formulations. From the 105 patents analysed, 75% belong to Japan (54), China (14), and Korea (9). Most of them were submitted by Asian companies such as Showa Denko (15), Kaneka (11) and Kao Corporation (5). The formulations described are mainly emulsions, skincare, cleansing, and haircare, and the surfactin dose does not exceed 5%. Surfactin appears in different types of formulas worldwide and has a high tendency to be used. Surfactin and other biosurfactants are a promising alternative to chemical ingredients in cosmetic formulations, guaranteeing skin health benefits and minimizing the impact on the environment.

Abstract
The quest for scientifically advanced and sustainable solutions is driven by growing environmental and economic issues associated with coal mining, processing, and utilization. Consequently, within the coal industry, there is a growing recognition of the potential of microbial applications in fostering innovative technologies. Microbial-based coal solubilization, coal beneficiation, and coal dust suppression are green alternatives to traditional thermochemical and leaching technologies and better meet the need for ecologically sound and economically viable choices. Surfactant-mediated approaches have emerged as powerful tools for modeling, simulation, and optimization of coal-microbial systems and continue to gain prominence in clean coal fuel production, particularly in microbiological co-processing, conversion, and beneficiation. Surfactants (surface-active agents) are amphiphilic compounds that can reduce surface tension and enhance the solubility of hydrophobic molecules. A wide range of surfactant properties can be achieved by either directly influencing microbial growth factors, stimulants, and substrates or indirectly serving as frothers, collectors, and modifiers in the processing and utilization of coal. This review highlights the significant biotechnological potential of surfactants by providing a thorough overview of their involvement in coal biodegradation, bioprocessing, and biobeneficiation, acknowledging their importance as crucial steps in coal consumption.

Abstract
Surfactin is widely used in the petroleum extraction, cosmetics, biopharmaceuticals and agriculture industries. It possesses antibacterial and antiviral activities and can reduce interfacial tension. Bacillus are commonly used as production chassis, but wild-type Bacillus subtilis 168 cannot synthesise surfactin. In this study, the phosphopantetheinyl transferase (PPTase) gene sfp* (with a T base removed) was overexpressed and enzyme activity was restored, enabling B. subtilis 168 to synthesise surfactin with a yield of 747.5 ± 6.5 mg/L. Knocking out ppsD and yvkC did not enhance surfactin synthesis. Overexpression of predicted surfactin transporter gene yfiS increased its titre to 1060.7 ± 89.4 mg/L, while overexpression of yerP, ycxA and ycxA-efp had little or negative effects on surfactin synthesis, suggesting YfiS is involved in surfactin efflux. By replacing the native promoter of the srfA operon encoding surfactin synthase with three promoters, surfactin synthesis was significantly reduced. However, knockout of the global transcriptional regulator gene codY enhanced the surfactin titre to 1601.8 ± 91.9 mg/L. The highest surfactin titre reached 3.89 ± 0.07 g/L, with the yield of 0.63 ± 0.02 g/g DCW, after 36 h of fed-batch fermentation in 5 L fermenter. This study provides a reference for further understanding surfactin synthesis and constructing microbial cell factories.

Abstract
The increased use of personal care products and detergents in modern society has raised concerns about their potential adverse effects on the environment. These products contain various chemical compounds that can persist in water bodies, leading to water pollution and ecological disturbances. Bioremediation has emerged as a promising approach to address these challenges, utilizing the natural capabilities of microorganisms to degrade or remove these contaminants. This review examines the current strategies employed in the bioremediation of personal care products and detergents, with a specific focus on their sustainability and environmental impact. This bioremediation is essential for environmental rejuvenation, as it uses living organisms to detergents and other daily used products. Its distinctiveness stems from sustainable, nature-centric ways that provide eco-friendly solutions for pollution eradication and nurturing a healthy planet, all while avoiding copying. Explores the use of microbial consortia, enzyme-based treatments, and novel biotechnological approaches in the context of environmental remediation. Additionally, the ecological implications and long-term sustainability of these strategies are assessed. Understanding the strengths and limitations of these bioremediation techniques is essential for developing effective and environmentally friendly solutions to mitigate the impact of personal care products and detergents on ecosystems.

Abstract
The rapid emergence of multidrug-resistant pathogens worldwide has raised concerns regarding the effectiveness of conventional antibiotics. This can be observed in ESKAPE pathogens, among others, whose multiple resistance mechanisms have led to a reduction in effective treatment options. Innovative strategies aimed at mitigating the incidence of antibiotic-resistant pathogens encompass the potential use of biosurfactants. These surface-active agents comprise a group of unique amphiphilic molecules of microbial origin that are capable of interacting with the lipidic components of microorganisms. Biosurfactant interactions with different surfaces can affect their hydrophobic properties and as a result, their ability to alter microorganisms' adhesion abilities and consequent biofilm formation. Unlike synthetic surfactants, biosurfactants present low toxicity and high biodegradability and remain stable under temperature and pH extremes, making them potentially suitable for targeted use in medical and pharmaceutical applications. This review discusses the development of biosurfactants in biomedical and therapeutic uses as antimicrobial and antibiofilm agents, in addition to considering the potential synergistic effect of biosurfactants in combination with antibiotics. Furthermore, the anti-cancer and anti-viral potential of biosurfactants in relation to COVID-19 is also discussed.

Abstract
Bioproduction is considered a promising alternative way of obtaining useful and green chemicals. However, the downstream process of biomolecules has been one of the major difficulties in upscaling the application of bioproducts due to the high purification cost. Acid precipitation is the most common method for purifying biosurfactants from the fermentation broth with high purity. However, the use of strong acids and organic solvents in solvent extraction has limited its application. Hence, in this study, a new strain of Bacillus velezensis PhCL was isolated from phenolic waste, and its production of amylase had been optimized via response surface methodology. After that, amylase and biosurfactant were purified by sequential ammonium sulfate precipitation and the result suggested that even though the purified crude biosurfactant had a lower purification fold compared to the acid precipitation, the yield was higher and both enzymes and biosurfactant also could be recovered for lowering the purification cost. Moreover, the purified amylase and crude biosurfactant were characterized and the results suggested that the purified crude biosurfactant would have a higher emulsion activity and petroleum hydrocarbon removal rate compared to traditional surfactants. This study provided another approach for purifying bioactive compounds including enzymes and biosurfactants from the same fermentation broth and further explored the potential of the crude purified biosurfactant in the bioremediation of polycyclic aromatic hydrocarbons and petroleum hydrocarbons.

Abstract
Plant disease control requires novel approaches to mitigate the spread of and losses caused by current, emerging, and re-emerging diseases and to adapt plant protection to global climate change and the restrictions on the use of conventional pesticides. Currently, disease management relies mainly on biopesticides, which are required for the sustainable use of plant-protection products. Functional peptides are candidate biopesticides because they originate from living organisms or are synthetic analogs and provide novel mechanisms of action against plant pathogens. Hundreds of compounds exist that cover an extensive range of activities against viruses, bacteria and phytoplasmas, fungi and oomycetes, and nematodes. Natural sources, chemical synthesis, and biotechnological platforms may provide peptides at large scale for the industry and growers. The main challenges for their use in plant disease protection are (a) the requirement of stability in the plant environment and counteracting resistance in pathogen populations, (b) the need to develop suitable formulations to increase their shelf life and methods of application, (c) the selection of compounds with acceptable toxicological profiles, and (d) the high cost of production for agricultural purposes. In the near future, it is expected that several functional peptides will be commercially available for plant disease control, but more effort is needed to validate their efficacy at the field level and fulfill the requirements of the regulatory framework.

Abstract
Surfactin, which is composed of a β-hydroxy fatty acid chain and a peptide ring, has drawn considerable attention due to its potential applications in the biomedicine, bioremediation, and petroleum industries. However, the low yield of surfactin from wild strains still restricts its industrial applications. In this study, eight genes relevant to the fatty acid biosynthesis pathway were targeted to enhance surfactin production, and high surfactin-yielding strains with potential industrial applications were obtained. When ldeHA and acc were co-overexpressed, the surfactin yield of recombinant strains TDS8 and TPS8 increased to 1.55- and 1.19-fold of their parental strains, respectively, again proving that the conversion of acetyl-coenzyme A (CoA) to malonyl-CoA is the rate-limiting step in fatty acid biosynthesis. Furthermore, changes in surfactin isoforms of recombinant strain TPS8 suggest that the fatty acid precursor synthesis pathway can be modified to improve the proportion of different isoforms. In addition, the deletion of lpdV, which is responsible for the conversion of α-ketoacyl-CoA precursors, resulted in a sharp decrease in surfactin production, further demonstrating the importance of branched-chain fatty acid biosynthesis in surfactin production. This work will facilitate the design and construction of more efficiently engineered strains for surfactin production and further extend industrial applications.

Abstract
Microplastics are persistent and complex contaminants that have recently been found in freshwater systems, raising concerns about their presence in aquatic organisms. Plastics tend to be seen as an inert material; however, it is not well known if exposure to plastics for a prolonged time, in combination with organic chemicals, causes organism mortality. Ingestion of microplastics in combination with another pollutant may affect a host organism's fitness by altering the host microbiome. In this study, we investigated how microplastics interact with other pollutants in this multi-stress system, and whether they have a synergistic impact on the mortality of an aquatic organism and its microbiome. We used wild water boatmen Hemiptera (Corixidae) found at lake Erken located in east-central Sweden in a fully factorial two-way microcosm experiment designed with polystyrene microspheres and a commonly used detergent. The microplastic-detergent interaction is manifested as a significant increase in mortality compared to the other treatments at 48 h of exposure. The diversity of the microbial communities in the water was significantly affected by the combined treatment of microplastics and the detergent while the microbial communities in the host were affected by the treatments with microplastics and the detergent alone. Changes in relative abundance in Gammaproteobacteria (family Enterobacteriaceae), were observed in the perturbed treatments mostly associated with the presence of the detergent. This confirms that microplastics can interact with detergents having toxic effects on wild water boatmen. Furthermore, microplastics may impact wild organisms via changes in their microbial communities.

Abstract
Microbial surfactants are amphiphilic surface-active substances aid to reduce surface and interfacial tensions by accumulating between two fluid phases. They can be generically classified as low or high molecular weight biosurfactants based on their molecular weight, whilst overall chemical makeup determines whether they are neutral or anionic molecules. They demonstrate a variety of fundamental characteristics, including the lowering of surface tension, emulsification, adsorption, micelle formation, etc. Microbial genera like Bacillus spp., Pseudomonas spp., Candida spp., and Pseudozyma spp. are studied extensively for their production. The type of biosurfactant produced is reliant on the substrate utilized and the pathway pursued by the generating microorganisms. Some advantages of biosurfactants over synthetic surfactants comprise biodegradability, low toxicity, bioavailability, specificity of action, structural diversity, and effectiveness in harsh environments. Biosurfactants are physiologically crucial molecules for producing microorganisms which help the cells to grasp substrates in adverse conditions and also have antimicrobial, anti-adhesive, and antioxidant properties. Biosurfactants are in high demand as a potential product in industries like petroleum, cosmetics, detergents, agriculture, medicine, and food due to their beneficial properties. Biosurfactants are the significant natural biodegradable substances employed to replace the chemical surfactants on a global scale in order to make a cleaner and more sustainable environment.

Abstract
BACKGROUND The complexity, toxicity and abundance of frying oil waste (FOW) render it difficult to be degraded biologically. The aim of the present work was to valorize FOW and investigate the potential use of the produced biosurfactant by Serratia marcescens N2 (Whole Genome sequencing accession ID SPSG00000000) as a biodetergent. RESULTS Serratia marcescens N2 demonstrated efficient valorization of FOW, using 1% peptone, 20% FOW and 8% inoculum size. Gene annotation showed the presence of serrawettin synthetase indicating that the produced biosurfactant was serrawettin. Zeta potential and Fourier Transform Infrared (FTIR) spectroscopy indicate that the biosurfactant produced was a negatively charged lipopeptide. The biosurfactant reduced the surface tension of water from 72 to 25.7 mN/m; its emulsification index was 90%. The valorization started after 1 h of incubation and reached a maximum of 83.3%. Gamma radiation was used to increase the biosurfactant yield from 9.4 to 19.2 g/L for non-irradiated and 1000 Gy irradiated cultures, respectively. It was noted that the biorecovery took place immediately as opposed to overnight storage required in conventional biosurfactant recovery. Both chemical and functional characteristics of the radiation induced biosurfactant did not change at low doses. The produced biosurfactant was used to wash oil stain; the highest detergency reached was 87% at 60 °C under stirring conditions for 500 Gy gamma assisted biorecovery. Skin irritation tests performed on experimental mice showed no inflammation. CONCLUSION This study was able to obtain a skin friendly effective biodetergent from low worth FOW using Serratia marcescens N2 with 83% efficient valorization using only peptone in the growth media unlike previous studies using complex media. Gamma radiation was for the first time experimented to assist biosurfactant recovery and doubling the yield without affecting the efficiency.

Abstract
Biosurfactants (BS) are amphiphilic molecules that align at the interface reducing the surface tension. BS production is developed as an alternative to synthetic surfactants because they are biodegradable, with low toxicity and high specificity. BS are versatile, and this research proposes using a biosurfactant crude extract (BCE) as part of cleaning products. This paper reported the BCE production from Bacillus subtilis DS03 using a medium with molasses. The BCE product was characterized by different physical and chemical tests under a wide pH range, high temperatures, and emulsifying properties showing successful results. The water surface tension of 72 mN/m was reduced to 34 mN/m with BCE, achieving a critical micelle concentration at 24.66 ppm. BCE was also applied to polystyrene surface as pre-treatment to avoid microbial biofilm development, showing inhibition in more than 90% of Escherichia coli, Staphylococcus aureus, and Listeria monocytogenes above 2000 ppm BCE. The test continued using BCE as post-treatment to remove biofilms, reporting a significant reduction of 50.10% Escherichia coli, 55.77% Staphylococcus aureus, and 59.44% Listeria monocytogenes in a concentration higher than 250 ppm BCE. Finally, a comparison experiment was performed between sodium lauryl ether sulfate (SLES) and BCE (included in commercial formulation), reporting an efficient reduction with the mixtures. The results suggested that BCE is a promising ingredient for cleaning formulations with applications in industrial food applications.

Abstract
Our world is under serious threat of environmental degradation, climate change and in association with this the out breaks of diseases as pandemics. The devastating impact of the very recent COVID-19, The sharp increase in cases of Cancer, Pulmonary failure, Heart health has triggered questions for the sustainable development of pharmaceutical and medical sciences. In the search of inclusive and effective strategies to meet today’s demand, improvised methodologies and alternative green chemical, bio-based precursors are being introduced by scientists around the globe. In this extensive review we have presented the potentiality and Realtime applications of both synthetic and bio-based surfactants in bio-medical and pharmaceutical fields. For their excellent unique amphoteric nature and ability to solubilise in both organic and inorganic drugs, surfactants are one of the most potential candidates for bio-medicinal fields such as dermatology, drug delivery, anticancer treatment, surfactant therapy, vaccine formulation, personal hygiene care and many more. The self-assembly property of surfactants is a very powerful function for drug delivery systems that increases the bio-availability of the poorly aqueous soluble pharmaceutical products by influencing their solubility. Over the decades many researchers have reported the antimicrobial, anti-adhesive, antibiofilm, anti-inflammatory, antioxidant activities of surfactants regarding its utility in medicinal purposes. In some reports surfactants are found to have spermicidal and laxative activity too. This comprehensive report is targeted to enlighten the versatile applications of Surfactants in drug delivery, vaccine formulation, Cancer Treatment, Therapeutic and cosmetic Pharmaceutical Sciences and prevention of pulmonary failure due to COVID-19.

A New Biosurfactant/Bioemulsifier from Gordonia alkanivorans Strain 1B: Production and Characterization. Processes (Basel) 2022. Abstract
Biosurfactants and bioemulsifiers (BS/BE) are naturally synthesized molecules, which can be used as alternatives to traditional detergents. These molecules are commonly produced by microorganisms isolated from hydrocarbon-rich environments. Gordonia alkanivorans strain 1B was originally found in such an environment, however little was known about its abilities as a BS/BE producer. The goal of this work was to access the potential of strain 1B as a BS/BE producer and perform the initial characterization of the produced compounds. It was demonstrated that strain 1B was able to synthesize lipoglycoprotein compounds with BS/BE properties, both extracellularly and adhered to the cells, without the need for a hydrophobic inducer, producing emulsion in several different hydrophobic phases. Using a crude BS/BE powder, the critical micelle concentration was determined (CMC = 16.94 mg/L), and its capacity to reduce the surface tension to a minimum of 35.63 mN/m was demonstrated, surpassing many commercial surfactants. Moreover, after dialysis, emulsification assays revealed an activity similar to that of Triton X-100 in almond and sunflower oils. In benzene, the E24 value attained was 83.45%, which is 30% greater than that of the commercial alternative. The results obtained highlight for the presence of promising novel BS/BE produced by strain 1B.

Abstract
Biosurfactant has potential application value in the removal of microalgal blooms, but the ecological risks require more research. In this paper, the effects of surfactin on the toxic dinoflagellate Karlodinium veneficum were studied. The coaction of surfactin and K. veneficum was also evaluated through toxicological experiments on Artemia and juvenile clams. The results showed that: (1) in the concentration range of 0–10 mg/L, surfactin significantly killed algal cells in a dose-dependent manner within 48 h; the 24 h EC50 was 3.065 mg/L; (2) K. veneficum had the ability to restore population growth after stress reduction and the restored proliferation was positively correlated with the initial surfactin concentration; (3) the ability to restore population growth was associated with protection afforded by the promotion of antioxidant enzymes, including catalase (CAT), peroxidase (POD) and superoxide dismutase (SOD), whose increase was positively correlated with the surfactin concentration; (4) the toxicity of the coculture of surfactin and K. veneficum was significantly greater than that of the K. veneficum culture or surfactin alone and was dose and time dependent. The potential ecological risks should be considered when applying biosurfactants, such as surfactin, in the removal of harmful algal blooms.

Abstract
Waste generation is becoming a global concern owing to its adverse effects on environment and human health. The utilization of waste as a feedstock for production of value-added products has opened new avenues contributing to environmental sustainability. Microorganisms have been employed for production of biosurfactants as secondary metabolites by utilizing waste streams. Utilization of waste as a substrate significantly reduces the cost of overall process. Biosurfactant(s) derived from these processes can be utilized in environmental and different industrial sectors. This review focuses on global market of biosurfactants followed by discussion on production of biosurfactants from waste streams such as agro-industrial waste and waste cooking oil. The need for waste stream derived circular bioeconomy and scale up of biosurfactant production have been narrated with applications of biosurfactants in environment and industrial sectors. Road blocks and future directions for research have also been discussed.

Abstract
Surfactants are utilized to reduce surface tension in aqueous and nonaqueous systems. Currently, most synthetic surfactants are derived from petroleum. However, these surfactants are usually highly toxic and are poorly degraded by microorganisms. To overcome these problems associated with synthetic surfactants, the production of microbial surfactants (called biosurfactants) has been studied in recent years. Most studies investigating the production of biosurfactants have been associated mainly with bacteria and yeasts; however, there is emerging evidence that those derived from fungi are promising. The filamentous fungi ascomycetes have been studied for the production of biosurfactants from renewable substrates. However, the yield of biosurfactants by ascomycetes depends on several factors, such as the species, nutritional sources, and environmental conditions. In this review, we explored the production, chemical characterization, and application of biosurfactants by ascomycetes.

Abstract
The Coronavirus disease-2019 (COVID-19) outbreak is caused by a highly pathogenic novel coronavirus (SARS-CoV-2). To date, there is no prescribed medicine for COVID-19. Frequent handwashing with soap and the use of alcohol-based hand sanitizers is recommended by WHO for hand hygiene and to prevent the spread of COVID-19. However, there are safety concerns associated with the use of soaps and alcohol-based hand sanitizers. Therefore, the review aims to highlight the health and environmental concerns associated with the frequent use of soaps/detergents and alcohol-based hand sanitizers amid COVID-19. The potential of some of the natural detergents and sanitizing agents as eco-friendly alternatives to petrochemical-based soaps and alcohol-based hand rubs for hand hygiene are discussed. The market of soaps and hand sanitizers is expected to grow in the coming years and therefore, future research should be directed to develop eco-friendly soaps and hand sanitizers for human and environmental safety.

Abstract
Surfactin is a lipoheptapeptide produced by several Bacillus species and identified for the first time in 1969. At first, the biosynthesis of this remarkable biosurfactant was described in this review. The peptide moiety of the surfactin is synthesized using huge multienzymatic proteins called NonRibosomal Peptide Synthetases. This mechanism is responsible for the peptide biodiversity of the members of the surfactin family. In addition, on the fatty acid side, fifteen different isoforms (from C12 to C17) can be incorporated so increasing the number of the surfactin-like biomolecules. The review also highlights the last development in metabolic modeling and engineering and in synthetic biology to direct surfactin biosynthesis but also to generate novel derivatives. This large set of different biomolecules leads to a broad spectrum of physico-chemical properties and biological activities. The last parts of the review summarized the numerous studies related to the production processes optimization as well as the approaches developed to increase the surfactin productivity of Bacillus cells taking into account the different steps of its biosynthesis from gene transcription to surfactin degradation in the culture medium.

Abstract
Surfactants are multipurpose products found in most sectors of contemporary industry. Their large-scale manufacturing has been mainly carried out using traditional chemical processes. Some of the chemical species involved in their production are considered hazardous and some industrial processes employing them categorised as "having potential negative impact on the environment". Biological surfactants have therefore been generally accepted worldwide as suitable sustainable greener alternatives. Biosurfactants exhibit the same functionalities of synthetic analogues while having the ability to synergize with other molecules improving performances; this strengthens the possibility of reaching different markets via innovative formulations. Recently, their use was suggested to help combat Covid-19. In this review, an analysis of recent bibliography is presented with descriptions, statistics, classifications, applications, advantages, and challenges; evincing the reasons why biosurfactants can be considered as the chemical specialities of the future. Finally, the uses of the solid-state fermentation as a production technology for biosurfactants is presented.

Abstract
There has been considerable interest in the use of biosurfactants due to the diversity of structures and the possibility of production from a variety of substrates. The potential for industrial applications has been growing, as these natural compounds are tolerant to common processing methods and can compete with synthetic surfactants with regards to the capacity to reduce surface and interfacial tensions as well as stabilise emulsions while offering the advantages of biodegradability and low toxicity. Among biosurfactant-producing microorganisms, some yeasts present no risks of toxicity or pathogenicity, making them ideal for use in food formulations. Indeed, the use of these biomolecules in foods has attracted industrial interest due to their properties as emulsifiers and stabilizers of emulsions. Studies have also demonstrated other valuable properties, such as antioxidant and antimicrobial activity, enabling the aggregation of greater value to products and the avoidance of contamination both during and after processing. All these characteristics allow biosurfactants to be used as additives and versatile ingredients for the processing of foods. The present review discusses the potential application of biosurfactants as emulsifying agents in food formulations, such as salad dressing, bread, cakes, cookies, and ice cream. The antioxidant, antimicrobial and anti-adhesive properties of these biomolecules are also discussed, demonstrating the need for further studies to make the use of the natural compounds viable in this expanding sector.
