Abstract
We assayed the fatty acid composition of muscles of the northern pike Esox lucius Linnaeus, 1758 inhabiting the Gyda River, Siberia, Russia using gas-liquid chromatography. Of 43 fatty acids identified in the pike samples, 23 fatty acids accounted for 99.3% of the total content. The most abundant saturated fatty acids (SFA, 31.6%) were palmitic (C16:0, 20.0%) and stearic (C18:0, 7.3%) acids. Among monounsaturated fatty acids (MUFA, 15.1%), oleic acid (C18:1n9, 10.2%) and palmitoleic acid (C16:1, 4.1%) demonstrated the highest levels. The most represented polyunsaturated fatty acids (PUFA, 53.3%) were arachidonic acid (C20:4n-6, 7.6%), eicosapentaenoic acid (EPA, C20:5n-3, 7.3%), and docosahexaenoic acid (DHA, C22:6n-3, 26.3%). The fatty acid profile of specimens from the Gyda River was different in comparison to profiles found in other pike populations, most likely due to different diets. Pike flesh has good nutrition quality in terms of a low n-6/n-3 ratio (0.36), low atherogenic (0.39), and thrombogenic (0.22) indices, and a high ratio of hypocholesterolemic to hypercholesterolemic fatty acids (2.83), and this species can be recommended as a replacement or alternative to other fish sources in traditional diets.

Abstract
The effect of dietary supplementation with canola seed on carcass and meat quality characteristics in three quail lines was studied. Ninety quails aged 4-weeks were selected from three lines (white, black and brown) and randomly allocated to 3 feeding groups. One group was fed a basal diet as control, while the other two groups were fed on basal diet with 1 or 3% canola seed supplementation. Quails were slaughtered at 10 weeks of age. At 24 h postmortem, breast and thigh meat samples were separated; vacuum packaged and stored at -40°C until meat quality analyses. Results showed that carcass characteristics did not differ (P>0.05) between dietary treatments. However, the inclusion of canola seed increased (P<0.05) the concentration of total omega-3 fatty acid in meat and decreased widely the omega-6: omega-3 ratio compared to the control diet. Feeding 3% canola seeds decreased the level of malondialdehyde (MDA) in the breast and thigh muscles of quails at day 5 of post-mortem. Regardless of dietary treatments, no carcass and meat quality characteristics except carcass weight differed between 3 quail lines. Brown quails exhibited significantly higher (P<0.05) carcass weight than white and black ones. These results indicate that feeding canola seed might modify meat fatty acid profile with better shelf life during postmortem aging. Likewise, due to high carcass weight, brown quail lines may be preferred for meat production purposes.

Abstract
The global market of food supplements is growing rapidly with a large turnover. Fish oil supplements represent a significant part of this turnover as they are believed to have important health benefits. Conversely, there are few papers in the literature about the quality control of fish oil capsules. As prior studies illustrate, a perfect agreement with the label is rarely found, and in some isolated cases, large amounts of soybean oil are also detected, indicating a true adulteration rather than a non-compliance with the label. None of the available studies refer to the Italian market, which ranks first in Europe in the consumption of food supplements. In this present communication, a quality control of fish-oil-based supplements from the Italian market was carried out for the first time. With minor deviations, all results showed substantial agreement with the label. However, the most important conclusion from this research is that compliance with the label is not enough to judge a product of good quality. The analysis of the overall fatty acid composition showed that some supplements have a high level of saturated fatty acids, and therefore they did not undergo a proper purification process. This may represent a safety issue since the purification process also allows the removal of toxic contaminants.

Abstract
In order to assess the impact of sewage pollution on the diet of the strict detritivorous and migratory South American fish, Prochilodus lineatus, 16 sterol biomarkers were analyzed by gas chromatography-mass spectrometry from fish muscle (n: 144) collected along 1200 km in the Rio de la Plata basin. Sterol concentrations were fairly homogeneous (2.4 ± 1.3 mg g-1 dry weight), but their proportion in lipids was highly variable and inversely related to both body mass and lipid contents, reflecting the more conservative character of sterols compared to the rapid accumulation of fat as fish grows. As expected, the muscle sterol signature was widely dominated by cholesterol (92 ± 4.5% of total sterols), but it exhibited a remarkable diversity with variable proportions of fecal coprostanol (4.0 ± 4.4%) and plant sterols (3.1 ± 1.9%, e.g. sitosterol and campesterol). Muscle sterols exhibited contrasting geographical differences associated with dietary shifts from plant-derived detritus in the northern reaches of the basin (N: Paraná and Uruguay Rivers), to sewage dominated inputs at Buenos Aires (BA). Fish from BA are fattier (lipids: 35 ± 18 vs. 15 ± 9.0% at N), with higher total sterol contents (2.6 ± 1.3 vs. 1.9 ± 1.0 mg g-1), abundant coprostanol (5.3 ± 4.4 vs. 0.46 ± 1.1%) and lower plant sterols (2.6 ± 1.6 vs 4.6 ± 2.0%), reflecting a diet shifted to anthropogenic organic matter as opposed to vegetal detritus in the north. Accordingly, BA fish presented lower phyto/fecal sterol ratios (0.37 ± 0.21 vs. 0.91 ± 0.12 at N) and higher copro/epicoprostanol ratios (0.95 ± 0.082 vs 0.51 ± 0.25 at N), indicating fresh fecal inputs which provide a valuable supply of easily absorbed organic matter at this site. In addition, the sterol signature allowed to distinguish migratory fish from BA collected 900 km north (previously identified by their pollutant fingerprint and biochemical composition). In fact, coprostanol concentrations show a direct relationship with human populations along the basin, highlighting the usefulness of fecal sterol biomarkers as tracers of polluted fish stocks.

Abstract
We evaluated the fatty acid (FA) composition of broodstock white bass ova fed one of six commercial diets with increasing polyunsaturated FA content (n-6/n-3 ratio; 0.36, 0.39, 0.46, 0.83, 1.07, 1.12) eight weeks prior to sampling. Fatty acid profiles of ova from brooders fed each of the six diets were significantly altered according to canonical discriminant analysis. Ova FA profiles resulting from the 0.39 diet separated those from the 0.36 diet based on lower 18:2n-6 (LNA) and higher 20:1n-9 concentrations from the 0.36 diet. Ova profiles were further separated based on lower concentrations of 22:5n-3 (DPA) from the 0.46 diet, lower concentrations of 20:5n-3 (EPA) in the 1.12 and 0.83 diets, and lower concentrations of 22:6n-3 (DHA) in all other diets relative to the 0.46 diet. Changes in ova FA profile at four and eight weeks were consistent with dietary intake with an approximate 2% increase in any given FA class with increasing time on individual diet. There was no correlation between dietary ARA concentrations (0.7-1.1 mol%), or dietary EPA/ARA ratios (7-15), and the concentrations (1.4-1.7 mol%) or ratios (3.3-4.4) found in the ova by diet. Our results suggest that white bass females have the ability to preferentially incorporate n-3 PUFA, particularly DHA, suggesting mobilization of this FA from other tissues for ova deposition or preferential dietary incorporation of PUFA into ova. These results will add to the limited FA information available in white bass and enable nutritionists to formulate broodstock diets that maximize reproductive potential in this species.

Abstract
This study was conducted to quantitatively determine the fatty acid contents of 20 species of marine fish and four species of shellfish from Straits of Malacca. Most samples contained fairly high amounts of polyunsaturated fatty acids (PUFAs), especially alpha-linolenic acid (ALA, C18:3 n3), eicosapentaenoic acid (EPA, C20:5 n3), and docosahexaenoic acid (DHA, C22:6 n3). Longtail shad, yellowstripe scad, and moonfish contained significantly higher (P < 0.05) amounts of eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA), and alpha-linolenic acid (ALA), respectively. Meanwhile, fringescale sardinella, malabar red snapper, black pomfret, Japanese threadfin bream, giant seaperch, and sixbar grouper showed considerably high content (537.2-944.1 mg/100 g wet sample) of desirable omega-3 fatty acids. The polyunsaturated-fatty-acids/saturated-fatty-acids (P/S) ratios for most samples were higher than that of Menhaden oil (P/S = 0.58), a recommended PUFA supplement which may help to lower blood pressure. Yellowstripe scad (highest DHA, ω - 3/ω - 6 = 6.4, P/S = 1.7), moonfish (highest ALA, ω - 3/ω - 6 = 1.9, P/S = 1.0), and longtail shad (highest EPA, ω - 3/ω - 6 = 0.8, P/S = 0.4) were the samples with an outstandingly desirable overall composition of fatty acids. Overall, the marine fish and shellfish from the area contained good composition of fatty acids which offer health benefits and may be used for nutraceutical purposes in the future.

Abstract
Cinnamon deodorised aqueous extract (CinDAE) was prepared and evaluated for its total phenolic (315.3 ± 35.4 mg GAE/g) and flavonoid (99.3 ± 9.6 mg RE/g) contents. Stabilizing efficiency of CinDAE, for chicken meatballs, was measured against oxidative deterioration as function of storage time under chilled conditions. For this purpose, oxidative stability [2-thiobarbituric acid reactive substances (TBARS); peroxide value (PV)], colour and sensory acceptability were measured in the control meatballs (C), and those stabilized with 200 ppm of: CinDAE (T1), ascorbic acid (T2), BHA/BHT (50/50; w/w) (T3). In comparison to "C", induction period (IP) and redness (a* value) of the stabilized samples (T1, T2 and T3) were increased, while PV and TBARS were decreased throughout storage (8 ± 1 °C) significantly (p < 0.05). Meanwhile, CinDAE slightly decreased L* value of the meatballs as compared to other tested samples. Conclusively, CinDAE improved stability and redness of chicken meatballs without negatively affecting its sensory acceptability (Hedonic test) up to a comparable extent to that of ascorbic acid/BHA/BHT and may potentially function as a dietary antioxidant for meat products.

Abstract
When fatty acids in fish are analyzed, results in percentage form (profile analysis) are mostly reported. However, the much more useful results expressed as mg/100 g (absolute analysis) is the main information required. Absolute methods based on calibration curves are of good accuracy but with a high degree of complexity if applied to a great number of analytes. Procedures based on the sequence profile analysis-total FA determination-absolute analysis may be suitable for routine use, but suffer from a number of uncertainties that have never been really resolved. These uncertainties are mainly related to the profile analysis. In fact, most profile analyses reported in the literature disagree about the number and type of fatty acids monitored as well as about the total percentage to assign to their sum so leading to possible inaccuracies; in addition the instrumental response factor for all FAME (fatty acid methyl esters) is often considered as a constant, but this is not exactly true. In this work, a set of 24 fatty acids was selected and studied on 12 fish species in the Mediterranean area (variable in lipid content and month of sampling): in our results, and in these species, this set constitutes, on average, 90 ± 3 % of the total fatty acid content. Moreover the error derived from the assumption of a unique response factor was investigated. Two different detection techniques (GC-FID and GC-MS) together with two capillary columns (different in length and polarity) were used in order to acquire complementary data on the same sample. With the protocol here proposed absolute analyses on the 12 cited species are easily achievable by the total FA determination procedure. The accuracy of this approach is good in general, but in some cases (DHA for example) is lower than the accuracy of calibration-based methods. The differences were evaluated on a case by case basis.

Abstract
The effect of retorting and oven cooking on the nutritional properties of beef frankfurters blended with palm oil (PO), red PO35 and red PO48 were compared against the control beef fat treatment. Red PO oven-cooked beef frankfurters resulted in a significant loss of vitamin E from 538.5 to 287.5 microg after 6 months. Oven cooked sausages stored at -18 degrees C and retorted sausages stored for the 6 months of shelf studies resulted in more than 90% loss of alpha-carotene and beta-carotene in red PO beef frankfurters. Cholesterol was reduced at the range of 29.0-32.2 mg/100 g when beef fat was substituted with palm-based oils, in beef frankfurters. Differences of heat treatments did not significantly change THE cholesterol content, within all treatments. This study showed the potential of utilizing red palm oils as animal fat analogues in improving vitamin E, reducing cholesterol but not carotenes in beef frankfurters.

Abstract
The proximate and fatty acid composition of two locally important freshwater fish, Schizothorax zarudnyi and Schizocypris altidorsalis, from Sistan Province in Iran were investigated for their nutritional value. The protein and lipid content in the S. zarudnyi were 14.67 and 6.36%, respectively. In S. altidorsalis, protein and lipid content were 13.03 and 4.52%. There was quantitative difference between individual fatty acids of these two fish. Totally 18 fatty acids were found. In S. zarudnyi, DHA was the highest among the poly-unsaturated fatty acids with 42.85%, followed by EPA with 29.62% of the total poly-unsaturated fraction. In S. altidorsalis, EPA was the highest among the poly-unsaturated fatty acids with 45.05%, followed by DHA with 27.87% the total poly-unsaturated fraction. The n-6/n-3 ratio was 0.26 and 0.20 for S. zarudnyi and S. altidorsalis, respectively. High n-3 fatty acids content in these fish revealed that they have high nutritional value. Schizothorax zarudnyi showed better nutritional value in comparison to protein and lipid content of S. altidorsalis.

Abstract
Different lagoon grey mullets such as Liza ramada (thinlip mullet), Liza aurata (golden grey mullet), and Liza saliens (leaping grey mullet) were analyzed for their nutritional, microbiological, and safety parameters. The microbiological values never exceeded the lower limits stipulated by the Italian Higher Institute of Health. The pathogenic species frequently associated with seafood (Salmonella, Listeria monocytogenes, Vibrio cholerae, Vibrio parahaemolyticus, and Aeromonas hydrophila) were never detected. The absence of coliforms and of Escherichia coli was noted in all fish species after 4 days of storage in ice. Heavy metals such as cadmium and mercury were always below the detection limits (0.01 mg/kg). All three fish species had low levels of total biogenic amines (80 to 100 mg/kg), and the presence of histamine was sporadic. All Liza species, particularly L. ramada and L. saliens, are a good source of omega3 long-chain polyunsaturated fatty acids.

Abstract
Total lipid contents and fatty acid composition of 13 marine fish species namely, "jenahak" (Lutianus agentimaculatus), "kebasi" (Anadontostoma chacunda), "duri" (Arius cumatranus), "tenggiri batang" (Scomberomorus commersoni), "kembong" (Rastrelliger kanagurta), "kintan" or "sebalah" (Psettodes crumei), "kerisi" (Pristipomodes typus), "kerapu" (Epinephelus sexfasciatus), "gelama kling" (Sciaena dussumieri), "malong" (Congresax talabon), "laban" (Cynoglossus lingua), "yu 9" (Scolidon sorrakowah) and "bagi" (Aacnthurs nigrosis) commonly found in Pulau Tuba, one of the islands surrounding the popular tourist destination Langkawi in Malaysia were determined. All fish showed a considerable amount of unsaturated fatty acids particularly those with 4, 5 and 6 double bonds. Two physiologically important n-3 polyunsaturated fatty acids (PUFAs), i.e. eicosapentaenoic acid (EPA) and docasahaexaenoic acid (DHA), made up of more than 50% of the total PUFAs. For saturated fatty acids, palmitic was found to be the major one in all types of fish studied. Based on DHA, EPA and arachidonic acid (AA) contents, "gelama kling" was found to be the best source (23, 11 and 7%, respectively) followed by "kerapu" (21, 10, 9%) and "sebalah" (19, 14, 4%).

Abstract
To identify a stable resource of 20:4 n-6 (arachidonic acid, AA) in marine fish tissues, the lipid profiles of Siganus fuscescens organs (muscle, liver, and other viscera) and stomach contents were examined throughout the year. Crude total lipid (TL) contents in respective organs showed seasonal variations and were high in winter and low in summer. The main FA in TL were 16:0, 18:0, 16:1n-7, 18:1n-9, AA, and 22:6n-3 (DHA). These FA were those generally observed in marine fish lipids, except for comparatively high levels of AA. In TL of muscle and liver, AA showed relatively high values during the period from late May to August (muscle, 4.6-13.1%; liver, 4.5-9.1%), compared with other seasons (muscle, 4.3-9.5%; liver, 3.6-8.4%). The AA levels in TL of other viscera and stomach contents fluctuated (other viscera, 2.0-10.7%; stomach contents, 7.6-26.7%). Regardless of the fishing season, each organ contained a higher level of AA in polar lipids (PL) than in neutral lipids. It was concluded that the fish contain comparatively high levels of AA in their TL throughout the year, and they accumulate AA characteristically in their tissue PL, probably from dietary food sources. Moreover, it was suggested that S. fuscescens has potential utility as a natural marine source of nutritional lipids, because the fish contain comparatively high levels of DHA and AA.
