Abstract
The objective of this study was to evaluate the effects of sunflower cake inclusion and its association with crude glycerin in the diet of laying hens. A total of 320 laying hens with 39 weeks of age were distributed in a completely randomized design in a 4 × 2 factorial scheme with 5 replications of 8 birds. The studied factors were 4 inclusion levels of sunflower cake and 2 levels of crude glycerin. The inclusion of 210 g/kg of sunflower cake reduced egg mass and worsened feed conversion, and after the level 70 g/kg there was reduction in yolk coloration and specific density of eggs with or without the addition of glycerin in the diet. The addition of 70 g/kg of crude glycerin reduced the specific density of eggs in all levels of sunflower cake. There was increase in phenolic compounds, antioxidant capacity and antioxidant activity in eggs and reduction in lipid oxidation of yolks from fresh and stored eggs, with the inclusion of sunflower cake. The addition of crude glycerin increased the lipid oxidation of egg yolks. Therefore, it is possible to include up to 140 g/kg sunflower cake in the diet of laying hens, with or without crude glycerin, without impairing performance and egg quality, obtaining higher antioxidant capacity of eggs and lower lipid oxidation in yolks from fresh and stored eggs. The inclusion of 70 g/kg crude glycerin does not affect laying hens performance, however, it worsens shell quality and increases lipid oxidation in the liver and egg yolks.

Abstract
The aim of the present study was to evaluate the effect of dietary free fatty acid (FFA) content and the degree of saturation on egg quality, yolk fatty acid (FA) profile, and yolk cholesterol content. For a 15-wk period, a total of 144 laying hens (19-wk-old) were randomly assigned to 8 treatments arranged in a 2 × 4 factorial design, with 2 sources of crude oil (soybean oil and palm oil) and 4 levels of FFA (10, 20, 30, and 45%). The dietary treatments were achieved by progressively substituting the original oils with equivalent amounts of their corresponding acid oils (soybean acid oil and palm fatty acid distillate, respectively). No differences in ADFI or egg mass were found. However, dietary FFA reduced egg production (linear, P < 0.05) and increased the feed conversion ratio (linear, P < 0.05). Higher levels of FFA in soybean diets resulted in higher egg weight with higher albumen and yolk weights (linear, P < 0.01). Palm diets presented higher yolk:albumen ratio than soybean diets (P < 0.001), but the effect of FFA did not follow a linear trend. Hens fed soybean diets laid eggs with higher Haugh units (HU) than palm diets (P < 0.001), although increasing the dietary FFA% reduced the HU values in both (linear, P < 0.001). Palm diets enhanced shell quality with greater resistance to breakage, and higher dry matter and ash content than soybean diets (P < 0.05). No differences in egg chemical composition and yolk cholesterol content were found (P > 0.05). The saturation degree had a significant effect on all the analyzed yolk FA (P < 0.001) except for arachidonic acid (C20:4 n-6), whereas increasing the FFA content did not affect to a great extent. These results show that varying dietary FFA level did not affect egg quality and yolk composition as much as the dietary fat source did, supporting the use of acid oils and fatty acid distillates as fat ingredients for feed.

Abstract
The aim of this experiment was to investigate the effect of soy lecithin on serum-related indicators and liver health in laying hens under the influence of high-fat diets. 180 peak laying hens at 40 weeks of age were randomly assigned to one of the four diets using a 2 × 2 factorial and fed for 5 weeks. The results showed that compared to the low-fat group, the high-fat group had lower egg production (p < 0.05) and higher average daily feed intake and feed-to-egg ratio (p < 0.05). At the 21st day, the serum levels of triglyceride (TC) and superoxide dismutase (SOD) were higher (p < 0.05), high-density lipoproteins cholesterol (HDL-C) levels were lower (p < 0.01), catalase (CAT) activity was lower (p < 0.05), TC and malondialdehyde (MDA) levels in liver were higher (p < 0.01) and SOD activity in liver was lower (p < 0.05) in layers supplemented with soy lecithin. CAT activity in serum was increased (p < 0.01) and total antioxidant capacity (T-AOC) activity in the liver was decreased (p < 0.05) after increasing the dietary fat concentration. The addition of soy lecithin and the increase in dietary fat concentration had a highly significant interaction on serum CAT activity and liver TC content in layers (p < 0.01). At the 35th day, the serum alanine aminotransferase (ALT) activity was higher (p < 0.01), serum glutathione peroxidase (GSH-Px) and CAT activity were higher (p < 0.05), and serum triglyceride (TG) content and total T-AOC capacity activity were lower (p < 0.05) in layers supplemented with soy lecithin. Increasing dietary fat concentration decreased alanine aminotransferase (ALT), aspartate aminotransferase (AST) and GSH-Px activity in serum (p < 0.05). However, it increased TG and MDA content in liver (p < 0.05), and highly decreased SOD content in liver (p < 0.01) in layers. The addition of soy lecithin and increasing dietary fat concentration had a highly significant reciprocal effect on serum ALT viability and CAT viability (p < 0.01) and liver TG and MDA content and SOD viability (p < 0.05) in layers. In conclusion, feeding high-fat diets will adversely affect the laying performance of laying hens, while long-term addition of lecithin can improve the blood lipids and liver lipids of laying hens, enhance the antioxidant capacity of the liver, and maintain liver health.

Abstract
The objective of the present study was to evaluate the effects of hydroxylated lecithin on growth performance, serum enzyme activity, hormone levels related to lipid metabolism and meat quality in Jiangnan White goslings. Six hundred 1-day-old goslings were randomly divided into five treatments with six replicates and 20 for each replicate. The control group (CG) was fed the basal diet, while the experimental group was fed the basal diet with 50, 100, 200 mg/kg hydroxylated lecithin and 100 mg/kg soy lecithin (HLG50, HLG100, HLG200, and LG100, respectively) in the form of powder. Feed and water were provided ad libitum for 32 days. Compared with the CG, (a) the average daily feed intake was higher (P < 0.05) in HLG100, the final body weight and average daily gain were higher (P < 0.05), and the feed conversion ratio was lower in the HLG200; (b) the alanine aminotransferase, malate dehydrogenase, leptin, glucagon, thyroid hormone, Triiodothyronine contents in the HLG200 were lower (P < 0.05); (c) The breast muscle water holding capacity was higher (P < 0.05) in groups with hydroxylated lecithin, the breast muscle shear force and fiber diameter were lower (P < 0.05) in the HLG100; (d) the inositic acid, intramuscular fat, phospholipid contents were higher (P < 0.05), the triglyceride content was lower (P < 0.05) in HLG100 of the breast muscle; (e) the relative expression of sterol regulatory element-binding protein-1 genes were higher (P < 0.05) in the treated groups of muscles, the phosphorylase kinase gamma subunit 1 gene expression was shown an opposite trend. In comparison with LG100, (a) the feed conversion ratio was lower (P < 0.05) in HLG200; (b) the alanine aminotransferase and adiponectin contents were higher (P < 0.05), the malondialdehyde and free fatty acid contents were lower (P < 0.05) in HLG200; (c) the water holding capacity and intramuscular fat contents in the breast and leg muscles were higher (P < 0.05) in HLG200. The hydroxylated lecithin concentration of 200 mg/kg improved the growth performance, serum enzyme activity, hormone levels related to lipid metabolism, and the meat quality of Jiangnan White goslings.

Abstract
1. The purpose of this research was to investigate the effects of supplementing an emulsifier (de-oiled soybean lecithin (DSL)) in a low metabolisable energy (ME) diet on growth performance, nutrient digestibility, carcase characteristics, intestinal morphology, blood metabolites, and antioxidant status in growing turkeys.2. A total of 480 one-day-old turkeys were assigned to one of four dietary treatments with of eight replicates of 15 birds each. Experimental treatments included a basal diet (BE) with commercially recommended levels of ME, a reduced energy diet (RE) with 0.42 MJ/kg reduction in dietary ME content, the RE diet + 1 g/kg DSL (DSL-1), and RE + 2 g/kg DSL (DSL-2).3. After 112 days, the body weight, average daily gain, and feed:gain in turkeys fed the supplemented for BE diets were better (P < 0.05) than in those fed RE, and those fed diet DSL-2 had the best performance. Although the RE diet decreased abdominal fat and relative liver weight (P < 0.05), compared to the BE diet, and supplementation with either level of DSL did not influence these variables.4. There were linear increases (P < 0.05) in fat digestibility, nitrogen-corrected apparent ME, and duodenal villus height, villus height/crypt depth ratio, and villus surface area in LE diet supplemented with DSL. From the jejunal morphology, crypt depth was decreased by DSL-supplemented diets (P < 0.05).5. Serum triglyceride, total cholesterol, and malondialdehyde concentrations were lower, whereas the serum superoxide dismutase activity was greater for the DSL-2 group compared to the BE and RE groups (P < 0.05).6. The findings suggested that, while low-ME diets impaired turkey growth performance, dietary supplementation of DSL could reverse such impacts of these diets. The DSL-supplemented diet at the inclusion level of 2 g/kg was advantageous over both BE and RE diets in terms of intestinal morphology, lipid profile, and antioxidant status in growing turkeys.

Abstract
An experiment was performed to assess the inclusion of soybean lecithin (SL) in the replacement of soybean oil (SO), for grower and finisher broiler chicken diets (up to 15 d of life), and its effects on performance, fatty acid (FA) absorption, gut health, and saturation degree of the abdominal fat pad (AFP). A total of 1,440 female Ross-308 chickens were distributed in 60 pens and were fed 5 experimental diets. The control diet (T1) was supplemented with SO (grower and finisher diets at 2.00%), and 4 levels of SL were included in replacement: T2 (0.25% in grower and 0.50% in finisher diets), T3 (0.50% in grower and 1.00% in finisher diets), T4 (0.75% in grower and 1.50% in finisher diets), and T5 (1.00% in grower and 2.00% in finisher diets). At day 39, titanium dioxide was added to finisher diets at 5 g/kg to perform a digestibility balance. At day 46, AFP, tissue, and gut digesta samples were collected to characterize FA digestibility, adipose saturation degree, microbial groups, and histomorphometry. No effects were associated with SO replacement by SL on performance (P > 0.05), ileal digestibility of total, saturated and monounsaturated FA (P > 0.05), nor jejunal morphology (P > 0.05). Total replacement of SO by SL reduced ileal absorption of polyunsaturated FA (P < 0.02) and increased jejunal Lactobacillus spp. counts (P = 0.049). Higher levels of SL inclusion (T4 and T5) lowered polyunsaturated FA concentration of the AFP (P = 0.002) and, thus, slightly reduced its unsaturated-to-saturated FA ratio (P = 0.005). Soybean lecithin inclusion did not modify performance parameters, total FA absorption, nor jejunal morphology, however caused changes on polyunsaturated FA absorption, jejunal microbiota, and saturation degree of the AFP. The study demonstrates that soybean lecithin can be included, in combination with or in replacement of soybean oil, as an alternative energy source for grower (up to a 1%) and finisher broiler diets (up to 2%).

Abstract
This study aimed to evaluate the use of acidulated soybean soapstock in association with lecithin on productive performance, metabolic efficiency in the utilization of nutrientes, and the egg quality of Japanese quails. A total of 192 quails were used, distributed randomly in a 2×2×2 factorial scheme that included two types of oils, two levels of supplementation (4% and 8%) and two levels of lecithin (1% or 0%). At the end of the six-month experimental period, some double significant interactions were shown between the level of oil and lecithin for the performance variables (egg weight p=0.04, feed intake p<0.01 and feed conversion rate p=0.04). The feed conversion rate also was influenced by a double significant interaction between the type of oil and the level of oil (p<0.01). The nutrient digestibility showed that different interactions affected the results. The evaluation of egg quality, was verified that the use of acidulated soybean soapstock did not affect most variables of internal quality. The results showed that it is possible to use 8% acidulated soybean soapstock in combination with 1% lecithin in the diets of Japanese quails for a period of up to six months without a reduction in performance.

Abstract
Two experiments were conducted to evaluate the use of crude soybean lecithin (L) as an alternative energy source in broiler feeding and to study its influence on performance, fatty acid (FA) digestibility between 9 to 11 D and 36 to 37 D, feed AME content, and the FA profile of the abdominal fat pad (AFP). A basal diet was supplemented at 3% with soybean oil (S; experiment 1) or a monounsaturated vegetable acid oil (A; experiment 2) and increasing amounts of L (1, 2, and 3%) were included in replacement. The inclusion of L did not modify performance results (P > 0.05). In starter diets, the replacement of S by L reduced feed AME content (P < 0.001) and lowered PUFA digestibility (P = 0.028), whereas in the grower-finisher phase, a blend of 2% of S and 1% of L did not modify feed AME content or FA digestibility. When L was included instead of A, no effects on feed AME value and total FA digestibility (P > 0.05) were shown in the starter phase, whereas in grower-finisher diets, a blending of 2% of A and 1% of L enhanced feed AME content (P < 0.001) and total FA digestibility (P = 0.001). The FA profile of the AFP reflected the FA composition of the diets. Crude soybean lecithin represents an alternative energy source for broiler chickens, and it can be used in growing-finishing diets in replacement of 1% S. The best option to include both alternative fats (L and A) was 2% of L with 1% of A in starter diets and 1% of L with 2% of A in grower-finisher diets because they showed positive synergic effects. The results suggest that dietary FA profile have a bigger impact on the AFP saturation degree than the different dietary lipid molecular structures.
