Abstract
BACKGROUND Furfurals, key derivatives of Maillard reactions commonly found in everyday foods, have been identified as having significant toxic effects on human health. Excessive intake of furfurals can lead symptoms such as weight loss, poor nutrient metabolism which followed by disease occurrence. The severe carcinogenicity, mutagenicity and genotoxicity of furfurals were well recognized recently. In response, international organizations have established strict limits on the allowable levels of furfurals in food products. Therefore, it is of paramount importance to implement control which mediated by modern pretreatment and analytical techniques, towards the daily accessibility of furfurals. SCOPE AND APPROACH This review seeks to present a comprehensive overview of recent advancements in the pretreatment and analytical techniques for furfurals in food from 2017 to 2023. Various pretreatment methods, such as liquid phase microextraction, solid phase extraction, solid phase microextraction, and QuEChERS, as well as analytical technologies like liquid chromatography-based methods and gas chromatography-based methods, are thoroughly discussed in terms of their mechanisms, benefits, and limitations. KEY FINDINGS AND CONCLUSIONS Currently, various pretreatment and analytical techniques with advantages and limitations had been proposed. The development of novel materials does facilitate the optimization and application of microextraction based pretreatment platforms which share with enhanced extraction efficiency. In addition, the development of novel targeting/sensing materials along with the utilization of high-resolution mass spectrometry could promote the determination sensitivity. In future, development of novel absorbents which mediates more desirable pretreatment methods, and automated and miniaturized on-site analytical instruments for furfurals determination still deserve indepth invesigation.

Abstract
This study investigated the characterization of fatty acid derivatives and vegetable oils by the quartz crystal microbalance (QCM). Resonant frequency and resistance were monitored for fatty acid derivatives and vegetable oils by a QCM sensor at 35℃ and 55℃. The resonant resistance depended on varieties of fatty acid derivatives, although the resonant frequency was similar for them. Oleic acid showed higher resonant resistance than methyl and ethyl oleate and oleyl alcohol. The resonant resistance of fatty acid methyl esters showed lower value according to the unsaturation (numbers of double bonds). Glyceryl oleate showed remarkably higher resonant resistance than oleic acid and its esters. Triolein showed the highest resonant resistance among glyceryl oleate. The resonant resistances of vegetable oils also depended on their varieties and iodine value (IV). Olive oil with the lowest IV showed the highest resonant resistance, while linseed oil with the highest IV showed the lowest resonant resistance among tested vegetable oils. The resonant resistances of vegetable oils reduced with their IV. These results suggested QCM may be effective for identification of vegetable oils.

Abstract
This study presents a novel approach for the rapid and reliable electrochemical determination of 5-hydroxymethylfurfural (5-HMF) in honey using a screen-printed carbon electrode modified with nickel oxide nanoparticles (NiONPs/SPCE). The NiONPs were synthesized using a simple method and characterized using scanning electron microscopy (SEM) and transmission electron microscopy (TEM). The NiONPs/SPCE demonstrated enhanced sensitivity and selectivity for 5-HMF detection. The electrochemical behavior of 5-HMF on the NiONPs/SPCE was investigated using techniques such as cyclic voltammetry (CV) and square wave voltammetry (SWV). The optimum experimental conditions were obtained including a 5 μL of 5.0 mg/mL NiONPs modifier, the voltammetric response of step potential 15 mV, amplitude 50 mV and frequency 50 Hz in 0.1 M BR buffer pH 13 as supporting electrolyte. The proposed method exhibited a linear relationship between the cathodic peak current and the concentration of 5-HMF in the concentration ranges of 0.5-5.0 ppm, with a limit of detection (LOD) of 0.24 ppm. The selectivity of the NiONPs/SPCE was evaluated by studying potential interferences commonly found in honey samples, and the results demonstrated excellent selectivity for 5-HMF detection. The reproducibility and stability of the NiONPs/SPCE were also assessed, with low relative standard deviations (RSD) obtained for both the cathodic peak current (2.94 %) and long-term stability (3.14 %). The developed NiONPs/SPCE method was successfully applied to the determination of 5-HMF in real honey samples, yielding comparable results to the standard HPLC method. This work showcases the potential of the NiONPs/SPCE as a practical and cost-effective electrochemical sensor for the accurate analysis of 5-HMF in honey samples.

Abstract
BACKGROUND Chinese rice wine (CRW) is a well-known drink and functional food that is used in traditional Chinese medicine. However, there is still a lack of quality control and evaluation methods for CRWs. PURPOSE The study aimed to establish a new method that can serve both as quality control and evaluation method and, as well as an identification method for CRWs. METHOD Compound identification in different CRW samples and determination of uracil, xanthine, uridine, adenine, guanosine, 5-hydroxymethylfurfural, and adenosine contents from 29 CRW samples from 14 brands were performed using UPLC-PDA/TOF-MS. The dual-column chromatographic separation of CRW was performed using CORTECS T3 coupled to HSS T3. The optimal mobile phase consisted of water with 0.1% formic acid, 40 mM ammonium acetate, and methanol: acetonitrile (2:1). Furthermore, to compare the UPLC fingerprints between CRWs of different brands, a similarity analysis was performed to classify the CRW samples. Finally, network pharmacology and in vitro efficacy and toxicity tests were used to investigate the biological function of the seven components and CRWs. RESULTS A total of 55 compounds were unambiguously or tentatively identified. Among them, nucleoside, pyrimidines and purines were reported in CRW for the first time. The seven components were successfully determined, and their contents showed large variations among different brands of CRW, which was consistent with the results of the chromatographic fingerprint similarities. The results of in vitro efficacy and toxicity tests indicated that CRWs and seven components had obvious protective effect on H9c2 cell injury induced by the H2O2 model. Network pharmacology analysis showed that these seven compounds might be the main active components of CRW that promote blood circulation and ventilation. CONCLUSION This study revealed that dual-column chromatographic separation is an effective method for quantitative and chromatographic fingerprint analyzes of complex samples, and seven compounds can be used for the quality evaluation and control of CRWs.

Abstract
Polyoxometalates (POMs) as metal-oxide anions have exceptional properties like high negative charges, remarkable redox abilities, unique ligand properties and availability of organic grafting. Moreover, the amenability of POMs to modification with different materials makes them suitable as precursors to further obtain new composites. Due to their unique attributes, POMs and their composites have been utilized as adsorbents, electrodes and catalysts in extraction, and electrochemical and optical detection methods, respectively. A survey of the recent progress and developments of POM-based materials in these methods is therefore desirable, and should be of great interest. In this review article, POM-based materials, their properties as well as their identification methods, and analytical applications as adsorbents, electrodes and catalysts, and corresponding mechanisms of action, where relevant, are reviewed. Some current issues of the utilization of these materials and their future prospects in analytical chemistry are discussed.

Abstract
A new hybrid of silica aerogel with a Preyssler-type polyoxometalate and MIL-101(Cr) metal-organic framework was prepared and used as a highly porous fiber coating for headspace solid-phase microextraction of Ferulago angulata volatile components. Applying a permanent magnetic field to the sorbent increased the extraction efficiency for most of the plant's components, up to 5.53 times. Optimization of the extraction parameters was carried out using a GC-MS instrument and by a simplex method. The extraction efficiency of the P5W30/MIL-101(Cr)/silica aerogel fiber exceeded 3.5 times of a mesoporous SBA-15 fiber. The prepared fiber was stable in multiple injections with relative standard deviations of 5.3 to 10.9% for 5 replicates. The proposed method was successfully applied to the extraction and identification of volatile components of some F. angulata samples. According to the results obtained by GC-FID, β-bourbonene, β-gurjunene, β-elemene and cedrenol were the main components of the plant.

Abstract
Polyoxometalates (POMs) are a class of metal oxide complexes with a large structural diversity. Effective control of the final chemical and physical properties of POMs could be provided by fine-tuning chemical modifications, such as the inclusion of other metals or non-metal ions. In addition, the nature and type of the counterion can also impact POM properties, like solubility. Besides, POMs may combine with carbon materials as graphene oxide, reduced graphene oxide or carbon nanotubes to enhance electronic conductivity, with noble metal nanoparticles to increase catalytic and functional sites, be introduced into metal-organic frameworks to increase surface area and expose more active sites, and embedded into conducting polymers. The possibility to design POMs to match properties adequate for specific sensing applications turns them into highly desirable chemicals for sensor sensitive layers. This review intends to provide an overview of POM structures used in sensors (electrochemical, optical, and piezoelectric), highlighting their main functional features. Furthermore, this review aims to summarize the reported applications of POMs in sensors for detecting and determining analytes in different matrices, many of them with biochemical and clinical relevance, along with analytical figures of merit and main virtues and problems of such devices. Special emphasis is given to the stability of POMs sensitive layers, detection limits, selectivity, the pH working range and throughput.

Abstract
This study presents a sensitive approach for electrochemical determination of 5-hydroxymethylfurfural (5-HMF) in food. The electrochemical sensor was fabricated on a copper electrode (CuE) modified with co-electrodeposited Cu-Ni bimetallic particles. This sensor, fabricated by 30 cycles of cyclic voltametric scanning with a scan rate of 50 mV s-1, exhibits good electrocatalytic ability to 5-HMF oxidation. Under the optimal conditions, linear scan voltammetry (LSV) and chronoamperometry were conducted for the determination of 5-HMF. The results of LSV show that a linear dependency within the 0.4-10 mM range with a detection limit (LOD) of 3.51 μM (S/N = 3) was achieved, while a linear range in 1 × 10-4-11 mM with a LOD of 0.043 μM (S/N = 3) was obtained by chronoamperometric measurement. The electrochemical sensor was finally applied in determination of 5-HMF in various foods, and the reliability and accuracy of the method were assessed by adopting an UV method as a standard method. Results show that the concentrations of 5-HMF in real samples are close to those measured by the standard method. In addition, standard addition method was further performed to evaluate the accuracy of our approach. The recoveries ranged from 90.0% to 110.0% are calculated, demonstrating good accuracy of the electrochemical sensor.

Abstract
A surface plasmon resonance (SPR) platform, based on a D-shaped plastic optical fiber (POF), combined with a biomimetic receptor, i.e., a molecularly imprinted polymer (MIP), is proposed to detect furfural (2-furaldheide, 2-FAL) in fermented beverages like wine. MIPs have been demonstrated to be a very convenient biomimetic receptor in the proposed sensing device, being easy and rapid to develop, suitable for on-site determinations at low concentrations, and cheap. Moreover, the MIP film thickness can be changed to modulate the sensing parameters. The possibility of performing single drop measurements is a further favorable aspect for practical applications. For example, the use of an SPR-MIP sensor for the analysis of 2-FAL in a real life matrix such as wine is proposed, obtaining a low detection limit of 0.004 mg L−1. The determination of 2-FAL in fermented beverages is becoming a crucial task, mainly for the effects of the furanic compounds on the flavor of food and their toxic and carcinogenic effect on human beings.

Abstract
Pekmez is a concentrated syrup-like food conventionally produced by vacuum evaporation process from sugar-rich fruits. In this study, the applicability of grape pekmez production by ohmic heating assisted vacuum evaporation (ΩVE) method was investigated. Conventional vacuum evaporation (CVE) and ΩVE methods were compared in terms of physicochemical properties, HMF (5-hydroxymethylfurfural) contents, rheological properties, and energy consumptions. ΩVE was run at four different voltage gradients (17.5, 20, 22.5, and 25 V/cm). Total process times for grape pekmez production were determined as 57, 28.5, 32, 39, and 50 minutes for CVE, ΩVE (25 V/cm), ΩVE (22.5 V/cm), ΩVE (20 V/cm) and ΩVE (17.5 V/cm), respectively. Energy consumption of CVE method was higher than ΩVE method for all voltage gradients. Energy efficiency increased as the voltage gradient increased. There was no significant difference between CVE and ΩVE methods for HMF contents. The results show that the ΩVE method could be an alternative to the CVE process for grape pekmez production.

Abstract
There is an increasing interest in determining the concentration of furanic compounds naturally formed in food aqueous matrices, by in situ, fast and low-cost methods. A sensor presenting such characteristics is here proposed, and characterized. It is based on a molecularly imprinted polymer (MIP) as a receptor with electrochemical transduction on a screen printed cell (SPC). The molecularly imprinted polymer has been developed for a particular furanic derivative, 2-furaldehyde (2-FAL). The detection bases on the reduction of 2-FAL selectively adsorbed on the polymer layer in contact with the working electrode. The polymer layer is simply formed by in situ polymerization, directly over the SPC and it was characterized by IR, SEM and electrochemical methods. Even if based on an easy and fast preparation procedure, the layer sufficiently adheres to the cell surface giving a reusable sensor. Square wave voltammetry (SWV) was applied as the signal acquisition method. The sensor performance in aqueous solution (NaCl 0.1 M) was tested, obtaining that the dose-response curve is fitted by the Langmuir adsorption isotherm. The sensitivity, and so the limit of detection, were noticeably improved by a chemometric approach based on the Design of experiment method. (optimized conditions: Estep = 0.03 V, Epulse = 0.066 V, f = 31 s-1). In water solution at pH around neutrality the dynamic range was from about 50 μM to 20 mM. Similar results were obtained for a white wine containing 12% ethanol, which has been considered as a typical example of beverage possibly containing furhaldehydes. The higher limit of quantification can be modulated by the amount of MIP deposited, while the lower detection limit by the conditions of the electrochemical measurement.

Abstract
Polyoxometalates (POMs) have been used for spectrophotometric determinations of silicon and phosphorus under acidic conditions, referred to as the molybdenum yellow method and molybdenum blue method, respectively. Many POMs are redox active and exhibit fascinating but complicated voltammetric responses. These compounds can reversibly accommodate and release many electrons without exhibiting structural changes, implying that POMs can function as excellent mediators and can be applied to sensitive determination methods based on catalytic electrochemical reactions. In addition, some rare-earth-metal-incorporated POMs exhibit fluorescence, which enables sensitive determination by the enhancement and quenching of fluorescence intensities. In this review, various analytical applications of POMs are introduced, mainly focusing on papers published after 2000, except for the molybdenum yellow method and molybdenum blue method.

Abstract
In this work a new method for the determination of 5-hydroxymethylfurfural (HMF) in cereal and insect bars has been developed and validated. The method consisted of a solid-liquid extraction (SLE) followed by a solid phase extraction (SPE), employing functionalized mesostructured silica as sorbent, and prior to high-performance liquid chromatography coupled to mass spectrometry analysis (HPLC-MS/MS). Mesostructured silica with a large pore (SBA-15-LP) functionalized with aminopropyl- groups (SBA-15-LP-NH2), octyl- groups (SBA-15-LP-C8) and bifunctionalized with both organic ligands (SBA-15-LP-C8-NH2) were prepared, characterized and tested for this purpose. The optimal conditions showed that the best extraction solvent was water acidified with HCl (pH 1.0) and the best material for SPE was SBA-15-LP-NH2 (recoveries near 100%). Results were compared with other analogous commercial sorbent (Discovery® DSC-NH2), evaluated under similar conditions, and SBA-15-LP-NH2 sorbent showed better recoveries than the commercial one (62 ± 1%). The developed method was validated and good detection and quantification limits (MDL: 11 µg kg-1and MQL: 38 µg kg-1), good precision in terms of repeatability and within-laboratory reproducibility (RSD < 8%) and good accuracy (recoveries between 99-102%) were obtained. The method was successfully applied to the determination of HMF in different samples of cereals and insect bars. In all the samples analysed, high concentrations of HMF (ranging from 336 to 962 mg kg-1) have been found.

Abstract
Calcium fluoride (CaF2) quantum dots have many applications in various fields. But there is no report on fluorescent characteristics of CaF2 quantum dots (CaF2 QDs). Here, a synthesis of multiple-color emission CaF2 QDs by changing the temperature, time and raw ratio is reported, by which the CaF2 QDs with purple, blue, green, and yellow emission can be obtained, respectively. They were characterized by X-ray diffraction (XRD) and transmission electron microscope (TEM). On this basis, a novel molecular imprinting ratiometric fluorescence sensor (MIR sensor) had been constructed based on the prepared CaF2 QDs and CdTe QDs, in which the yellow emission CaF2 QDs was used as a responsive signal material and the red emission CdTe QDs was served as a reference signal material. And the β-CD and methylacrylic acid (MAA) as bifunctional monomers were used for constructing the specific molecularly imprinted polymers (MIPs) in MIR sensor. This MIR sensor was applied for highly selective and excellent sensitive detection of 5-hydroxymethylfurfural (HMF). Under optimum conditions, it exhibited an excellent linear relationship between the fluorescence intensity ratio (I599/I625) and the concentration of HMF in the range of 0.1-6.0 μg/mL with a detection limit of 0.043 μg/mL. Finally, the established HMF-MIR sensor was successfully utilized to detect HMF in honey with satisfactory results. This work provided a reference for the application of the CaF2 QDs and the detection of the furfural substances.

Abstract
Acrylamide and 5-hydroxymethyl-2-furfural (5-HMF) are two of the most abundant compounds generated during thermal processing. A simple method for the simultaneous quantitation of acrylamide and 5-HMF was developed and successfully applied in thermally processed foods. Acrylamide and 5-HMF were co-extracted with methanol and then purified and enriched by an Oasis HLB solid-phase extraction cartridge, simultaneously analyzed by high-performance liquid chromatography and detected with a diode array detector, respectively, at their optimal wavelength. The linear concentration range was found to be 25-5000 μg/L with high linear correlation coefficients (R > 0.999). The limit of detection and the limit of quantitation for acrylamide and 5-HMF were 6.90 μg/L and 4.66 μg/L, and 20.90 μg/L and 14.12 μg/L, respectively. The recovery of acrylamide and 5-HMF in biscuits, bread, Chinese doughnuts, breakfast cereals, and milk-based baby foods was achieved at 87.72-96.70% and 85.68-96.17% with RSD at 0.78-3.35% and 0.55-2.81%, respectively. The established method presents simplicity, accuracy and good repeatability, and can be used for the rapid simultaneous quantitation of acrylamide and 5-HMF in thermally processed foods.

Abstract
Acoustic devices have found wide applications in chemical and biosensing fields owing to their high sensitivity, ruggedness, miniaturized design and integration ability with on-field electronic systems. One of the potential advantages of using these devices are their label-free detection mechanism since mass is the fundamental property of any target analyte which is monitored by these devices. Herein, we provide a concise overview of high frequency acoustic transducers such as quartz crystal microbalance (QCM), surface acoustic wave (SAW) and film bulk acoustic resonators (FBARs) to compare their working principles, resonance frequencies, selection of piezoelectric materials for their fabrication, temperature-frequency dependency and operation in the liquid phase. The selected sensor applications of these high frequency acoustic transducers are discussed primarily focusing on the two main sensing domains, i.e., biosensing for working in liquids and gas/vapor phase sensing. Furthermore, the sensor performance of high frequency acoustic transducers in selected cases is compared with well-established analytical tools such as liquid chromatography mass spectrometry (LC-MS), gas chromatographic (GC) analysis and enzyme-linked immunosorbent assay (ELISA) methods. Finally, a general comparison of these acoustic devices is conducted to discuss their strengths, limitations, and commercial adaptability thus, to select the most suitable transducer for a particular chemical/biochemical sensing domain.

Abstract
Honey-rich composition in biologically active compounds makes honey a food products highly appreciated due to the nutritional and healthy properties. Food-manufacturing is very prone to different types of adulterations and fraudulent labelling making it urgent to establish accurate, fast and cost-effective analytical techniques for honey assessment. In addition to the classical techniques (e.g., physicochemical analysis, microscopy, chromatography, immunoassay, DNA metabarcoding, spectroscopy), electrochemical based-sensor devices have arisen as reliable and green techniques for food analysis including honey evaluation, allowing in-situ and on-line assessment, being a user-friendly procedure not requiring high technical expertise. In this work, the use of electronic tongues, also known as taste sensor devices, for honey authenticity and assessment is reviewed. Also, the versatility of electronic tongues to qualitative (e.g., botanical and/or geographical origin assessment as well as detection of adulteration) and quantitative (e.g., assessment of adulterants levels, determination of flavonoids levels or antibiotics and insecticides residues, flavonoids) honey analysis is shown. The review is mainly focused on the research outputs reported during the last decade aiming to demonstrate the potentialities of potentiometric and voltammetric multi-sensor devices, pointing out their main advantages and present and future challenges for becoming a practical quality analytical tool at industrial and commercial levels.
