Abstract
Raman Fingerprinting spectra detection of ochratoxin A (OTA) in food still meets serious challenge because of uncontrolled signal heterogeneity and poor reproducibility at low analyte concentrations. Here, OTA molecularly imprinted three-dimensional (3D) porous SERS substrate was prepared on the surfaces of magnetic inverse photonic crystal microspheres (MIPCMs) @AuNPs, and its Raman analytical enhancement factor can reach to 2.67 × 107. The OTA imprinted polymer was synthesized using 3-aminopropyltriethoxysilane and phenyltriethoxysilane as the dual-functional monomers and Fmoc-d-Phenylalanine as the template molecule on the surfaces of MIPCMs. The functional microspheres can specifically enrich OTA and remarkably enhance the fingerprint Raman spectrum of OTA. The label-free 3D SERS substrate can rapidly quantitatively detect OTA by its fingerprint Raman spectrum, which shows a linear detection range of 10-1 to 103 ng/mL, a limit of detection of 0.078 ng/mL, good recovery rates of 76-97 % and regeneration property. The developed SERS method can integrate enrichment and detection of OTA in one system, which has a great application prospect in simple, rapid and high sensitivity detection of OTA.

Abstract
In this work, a porphyrin metalation-based ratiometric absorbance and fluorescence dual model immunoassay was proposed to detect ochratoxin A (OTA). 5,10,15,20-tetrakis(1-methyl-4-pyridinio) porphyrin (TMPyP) was pink and had a strong fluorescence, upon coordination with Hg(II), its fluorescence was quenched and the color became green. The alkaline phosphatase can catalyze the dephosphorylation of ascorbic acid 2-phosphate to produce ascorbic acid, which can reduce the coordinated Hg(II) to Hg(0) and then dissociated from TMPyP, its fluorescence was recovered. Meanwhile, the color changed from green to light pink, which can be identified by naked eye for semi-quantitative detection. The linear ranges of ratiometric absorbance and fluorescence model were 0-6.0 ng/mL and 0.1-6.0 ng/mL, respectively. The absorbance and fluorescence signals produced by porphyrin metalation can mutually verify to improve the accuracy of detection results. Besides, the ultra-sensitivity and high selectivity demonstrated this method was a powerful tool for trace OTA detection.

Abstract
Foodborne pathogens are a grave concern for the for food, medical, environmental, and economic sectors. Their ease of transmission and resistance to treatments, such as antimicrobial agents, make them an important challenge. Food tainted with these pathogens is swiftly rejected, and if ingested, can result in severe illnesses and even fatalities. This review provides and overview of the current status of various pathogens and their metabolites transmitted through food. Despite a plethora of studies on treatments to eradicate and inhibit these pathogens, their indiscriminate use can compromise the sensory properties of food and lead to contamination. Therefore, the study of detection methods such as electrochemical biosensors has been proposed, which are devices with advantages such as simplicity, fast response, and sensitivity. However, these biosensors may also present some limitations. In this regard, it has been reported that nanomaterials with high conductivity, surface-to-volume ratio, and robustness have been observed to improve the detection of foodborne pathogens or their metabolites. Therefore, in this work, we analyze the detection of pathogens transmitted through food and their metabolites using electrochemical biosensors based on nanomaterials.

Abstract
Food analysis plays a critical role in assessing human health risks and monitoring food quality and safety. Currently, there is a pressing need for a reliable, portable, and quick recognition element for point-of-care testing (POCT) to better serve the demands of on-site food analysis. Aptamer-modified paper-based analytical devices (Apt-PADs) have excellent characteristics of high portability, high sensitivity, high specificity, and on-site detection, which have been widely used and concerned in the field of food safety. The article reviews the basic components and working principles of Apt-PADs, and introduces their representative applications detecting food hazards. Finally, the advantages, challenges, and future directions of Apt-PADs-based sensing performance are discussed, to provide new directions and insights for researchers to select appropriate Apt-PADs according to specific applications.

Abstract
Natural toxins (NTs) are poisonous secondary metabolites produced by living organisms developed to ward off predators. Especially low molecular weight NTs (MW<∼1 kDa), such as mycotoxins, phycotoxins, and plant toxins, are considered an important and growing food safety concern. Therefore, accurate risk assessment of food and feed for the presence of NTs is crucial. Currently, the analysis of NTs is predominantly performed with targeted high pressure liquid chromatography tandem mass spectrometry (HPLC-MS/MS) methods. Although these methods are highly sensitive and accurate, they are relatively expensive and time-consuming, while unknown or unexpected NTs will be missed. To overcome this, novel on-site screening methods and non-targeted HPLC high resolution mass spectrometry (HRMS) methods have been developed. On-site screening methods can give non-specialists the possibility for broad "scanning" of potential geographical regions of interest, while also providing sensitive and specific analysis at the point-of-need. Non-targeted chromatography-HRMS methods can detect unexpected as well as unknown NTs and their metabolites in a lab-based approach. The aim of this chapter is to provide an insight in the recent advances, challenges, and perspectives in the field of NTs analysis both from the on-site and the laboratory perspective.

Abstract
Ochratoxin A (OTA) is a mycotoxin contaminating agricultural products produced by fungi, associated with important toxic effects. Thus, the development of fast, sensitive, and economical approaches for OTA detection is crucial. In this study, a barcode-style lateral flow assay for the semi-quantitative detection of OTA in coffee samples was developed. To achieve this goal, a BSA-OTA complex was immobilized in three test zones to compete with OTA molecules in the sample for binding with anti-OTA antibodies labeled with gold nanoparticles. Different concentrations of OTA in the sample produced distinct colour patterns, allowing semi-quantification of the analyte. The assay exhibited high sensitivity, with a limit of detection of 2.5 µg.L-1, and high reproducibility, with variation coefficient values between 2% and 13%. Moreover, the colour patterns obtained in the analysis with coffee samples were similar to the results obtained with standard OTA solutions, demonstrating a reliable applicability in real samples.

Abstract
Ochratoxin A (OTA), a dangerous mycotoxin, is found in many crops. It is essential to create sensitive OTA detection techniques to ensure food safety. Based on the principle of p-nitrophenol (PNP) quenched the fluorescence of bovine serum albumin silver nanocluster (BSA-AgNCs) through an internal filtering effect, and phosphate activated fluorescence of calcein-Ce3+ system, a ratiometric fluorescence immunoassay for OTA detection was developed. In this strategy, the value of F518/F640 was used as a signal for response of OTA concentration. The detection range of this strategy was 0.625-25 ng/mL, the limit of detection (LOD) was 0.04 ng/mL. This new immunoassay offered a brand-new platform for detecting OTA.

Abstract
In this work, a fluorescence immunoassay based on horseradish peroxidase-labeled IgG (HRP-IgG)-modified gold nanoparticle (AuNP@HRP-IgG) probe was established for detection of ochratoxin A (OTA). Through the catalysis of HRP, the dopamine (DA) and 1,5-dihydroxynaphthalene (DHA) can rapidly generate azamonardine fluorescence compound (AFC) with intense yellow fluorescence. Large amounts of AFC can be formed within 4 min, which led to fluorescence enhancement at 545 nm. This new method displayed high sensitivity with a limit of detection (LOD) of 0.18 ng/mL and a linear range of 0.78-200 ng/mL for OTA. Meanwhile, the recoveries of OTA in corn samples were 101.41% - 113.45%. Due to the universality of the probe and the rapidity of signal output, the fluorescence immunoassay allowed rapid and sensitive detection of targets.

Abstract
Ochratoxin A (OTA) is a highly toxic mycotoxin which can cause a variety of diseases. Sensitive detection of OTA is significant for food safety. Herein, a feasible and sensitive immunoassay was established for OTA detection by alkaline phosphatase (ALP) triggered gold nanoclusters (AuNCs) turn-on fluorescence. The fluorescence of the AuNCs can be quenched by Cr6+ induced aggregation of AuNCs and the fluorescence resonance energy transfer (FRET) between AuNCs and Cr6+. Under the catalytic action of ALP-labelled IgG (IgG-ALP), the ascorbic acid 2-phosphate (AA2P) was hydrolyzed to ascorbic acid (AA) for the reducing of Cr6+ to Cr3+. As a result, the degrees of AuNCs aggregation and FRET were weakened and the fluorescence of AuNCs was turned on. The amount of OTA in the sample was negatively correlated with the amount of IgG-ALP captured by anti-OTA monoclonal antibody (McAb) in the microplate. In optimal conditions, the turn-on fluorescence immunoassay had a good linear range of 6.25-100 ng/mL, and the detection limit was 0.693 ng/mL. The recoveries of OTA from corn were 95.89%-101.08% for the fluorescence immunoassay. This work provided a feasible, sensitive and good selectivity fluorescence method for OTA detection.

Abstract
Human milk is the best source of nutrition for infants. Lower freezing temperatures and faster freezing rates allow for better preservation of human milk. However, research on the freezing conditions of human milk is limited. This study investigated the effectiveness of quick freezing and suitable freezing conditions for home preservation. Human milk was stored under different freezing conditions (-18 °C, -18 °C quick freezing, -30 °C, -40 °C, -60 °C, and - 80 °C) for 30, 60, and 90 days and then evaluated for changes in the microbial counts, bioactive protein, and lipid. The results showed that the total aerobic bacterial and Bifidobacteria counts in human milk after storage at freezing temperatures of - 30 °C and lower were closer to those of fresh human milk compared to - 18 °C. Furthermore, the lysozyme loss, lipid hydrolysis degree, and volatile organic compound production were lower. However, -18 °C quick freezing storage was not markedly different from -18 °C in maintaining human milk quality. Based on the results, for household and environmental reasons, the recommended temperature for storing human milk is suggested as -30 °C.

Abstract
In this study, an ultrasensitive electrochemical (EC) aptasensor with Nafion-stabilized functionalized multi-walled carbon nanotubes (f-MWCNTs) as signal enhancers was established for ochratoxin A (OTA) determination. Herein, f-MWCNTs were prepared through functionalization with nitric acid. The incorporation of Nafion promoted a good dispersion of f-MWCNTs and prevented their leaching on the electrode, making a robust stability of the aptasensor. The Nafion-f-MWCNTs composites were used as the sensing substrates to largely enhance the electroactive surface area and the conductivity of the electrode, realizing a significant signal amplification. Carboxyl groups on the surface of f-MWCNTs readily exposed from Nafion membrane to couple with streptavidin, facilitating the immobilization of biotinylated aptamers to achieve selective recognition towards OTA. When OTA existed, aptamers preferentially combined with it, causing a noticeable decline in the current response. Under optimum conditions, a good linear relationship between the current changes and the logarithm of OTA concentration was observed from 0.005 ng/mL to 10 ng/mL, with a limit of detection low to 1 pg/mL for OTA. The specific, sensitive, and reproducible aptasensor succeeded in application in malt samples, confirming a great promise for more contaminants and providing a universal platform in complex matrices by simply replacing the corresponding aptamers.

Abstract
In recent years, microbial volatile organic compounds (mVOCs) produced by microbial metabolism have attracted more and more attention because they can be used to detect food early contamination and flaws. So far, many analytical methods have been reported for the determination of mVOCs in food, but few integrated review articles discussing these methods are published. Consequently, mVOCs as indicators of food microbiological contamination and their generation mechanism including carbohydrate, amino acid, and fatty acid metabolism are introduced. Meanwhile, a detailed summary of the mVOCs sampling methods such as headspace, purge trap, solid phase microextraction, and needle trap is presented, and a systematic and critical review of the analytical methods (ion mobility spectrometry, electronic nose, biosensor, and so on) of mVOCs and their application in the detection of food microbial contamination is highlighted. Finally, the future concepts that can help improve the detection of food mVOCs are prospected.

Abstract
Herein, we develop an optical biosensor for highly sensitive and facile detection of ochratoxin A (OTA) using an enzyme-mediated click reaction for signal amplification and polystyrene nanoparticles (PNPs) for signal readout. Alkaline phosphatase was employed to hydrolyze the ascorbic acid-phosphate to generate ascorbic acid, which reduces Cu(II) to Cu(I). Cu(I) can catalyze the click reaction between alkyne-functionalized magnetic beads and azide-functionalized PNPs to form complexes, while unbound PNPs acted as the signal probe. This strategy utilized the high efficiency of click chemistry and the inherent optical absorption properties of PNPs, which effectively improved the sensitivity of conventional immunoassays and simplified the procedures using magnetic separation technology. This optical biosensor enabled OTA detection in a linear range of 0.1 to 50 ng/mL with a detection limit of 54 pg/mL. Moreover, it has been successfully challenged with OTA detection in maize samples, revealing its potential as a promising tool for mycotoxin screening.

Abstract
In this work, a simple dual-mode immunoassay for detecting Ochratoxin A (OTA) was developed by mixing G-quadruplex/N-methylmesoporphyrin IX (G4/NMM) and 3,3',5,5'-tetramethylbenzidine (TMB). The fluorescence of G4/NMM can be quenched by oxidized TMB (oxTMB) because the absorbance of oxTMB overlapped with the fluorescence emission of G4/NMM. In the absence of OTA, large amounts of oxTMB were formed with blue color and the fluorescence of G4/NMM was quenched. In the presence of OTA, the concentration of oxTMB was decreased, therefore the fluorescence of G4/NMM increased. The linear range of fluorescence immunoassay was 0.195-25 ng/mL, and the linear range of the absorbance immunoassay was 0.049-1.563 ng/mL. Thus, the linear range of this dual-mode immunoassay can be expanded to 0.049-25 ng/mL. Meanwhile, the new method showed good selectivity for OTA. Besides, the satisfactory recovery rates implied the new method had a potential value for practical sample detection.

Abstract
BACKGROUND Milled rice are prone to be contaminated with spoilage or toxigenic fungi during storage, which may pose a real threat to human health. Most traditional methods require long periods of time for enumeration and quantification. However, headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS) technology could characterize the complex volatile organic compounds (VOCs) released from samples in a non-destructive and environmentally friendly manner. Thus, this study described an innovative HS-GC-IMS strategy for analyzing VOC profiles to detect fungal contamination in milled rice. RESULTS A total of 24 typical target compounds were identified. Analysis of variance-partial least squares regression (APLSR) showed significant correlations between the target compounds and colony counts of fungi. While the changes of selected volatile components (acetic acid, 3-hydroxy-2-butanone and oct-en-3-ol) in fungi-inoculated rice had sufficiently high positive correlations with the colony counts, the logistic model could effectively be used to monitor the growth of individual fungus (R2 = 0.902-0.980). PLSR could effectively be used to predict fungal colony counts in rice samples (R2 = 0.831-0.953), and the different fungi-inoculated rice samples at 24 h could be successfully distinguished by support vector machine (SVM) (94.6%). The ability of HS-GC-IMS to monitor fungal infection would help to prevent contaminated rice grains from entering the food chain. CONCLUSIONS This result indicated that HS-GC-IMS three-dimensional fingerprints may be appropriate for the early detection of fungal infection in rice grains. © 2021 Society of Chemical Industry.

Abstract
Five potato varieties were studied using an electronic nose with nine MOS sensors. Parameters measured included carbohydrate content, sugar level, and the toughness of the potatoes. Routine tests were carried out while the signals for each potato were measured, simultaneously, using an electronic nose. The signals obtained indicated the concentration of various chemical components. In addition to support vector machines (SVMs that were used for the classification of the samples, chemometric methods, such as the partial least squares regression (PLSR) method, the principal component regression (PCR) method, and the multiple linear regression (MLR) method, were used to create separate regression models for sugar and carbohydrates. The predictive power of the regression models was characterized by a coefficient of determination (R2), a root-mean-square error of prediction (RMSEP), and offsets. PLSR was able to accurately model the relationship between the smells of different types of potatoes, sugar, and carbohydrates. The highest and lowest accuracy of models for predicting sugar and carbohydrates was related to Marfona potatoes and Sprite cultivar potatoes. In general, in all cultivars, the accuracy in predicting the amount of carbohydrates was somewhat better than the accuracy in predicting the amount of sugar. Moreover, the linear function had 100% accuracy for training and validation in the C-SVM method for classification of five potato groups. The electronic nose could be used as a fast and non-destructive method for detecting different potato varieties. Researchers in the food industry will find this method extremely useful in selecting the desired product and samples.

Abstract
In the past 20 years, the development of an artificial olfactory system has made great progress and improvements. In recent years, as a new type of sensor, nanoelectronic smelling has been widely used in the food and drug industry because of its advantages of accurate sensitivity and good selectivity. This paper reviews the latest applications and progress of nanoelectronic smelling in animal-, plant-, and microbial-based foods. This includes an analysis of the status of nanoelectronic smelling in animal-based foods, an analysis of its harmful composition in plant-based foods, and an analysis of the microorganism quantity in microbial-based foods. We also conduct a flavor component analysis and an assessment of the advantages of nanoelectronic smelling. On this basis, the principles and structures of nanoelectronic smelling are also analyzed. Finally, the limitations and challenges of nanoelectronic smelling are summarized, and the future development of nanoelectronic smelling is proposed.

Abstract
Ochratoxin A (OTA) contamination in food is a serious threat to public health. There is an urgent need for development of rapid and sensitive methods for OTA detection, to minimize consumer exposure to OTA. In this study, we constructed two OTA-specific fluonanobodies (FluoNbs), with a nanobody fused at the carboxyl-terminal (SGFP-Nb) or the amino-terminal (Nb-SGFP) of superfolder green fluorescence protein. SGFP-Nb, which displayed better fluorescence performance, was selected as the tracer for OTA, to develop a FluoNb-based nanosensor (FN-Nanosens) via the fluorescence resonance energy transfer, where the SGFP-Nb served as the donor and the chemical conjugates of OTA-quantum dots served as the acceptor. After optimization, FN-Nanosens showed a limit of detection of 5 pg/mL, with a linear detection range of 5-5000 pg/mL. FN-Nanosens was found to be highly selective for OTA and showed good accuracy and repeatability in recovery experiments using cereals with various complex matrix environments. Moreover, the contents of OTA in real samples measured using FN-Nanosens correlated well with those from the liquid chromatography with tandem mass spectrometry. Therefore, this work illustrated that the FluoNb is an ideal immunosensing tool and that FN-Nanosens is reliable for rapid detection of OTA in cereals with ultrahigh sensitivity.

Abstract
A novel, simple and rapid colorimetric aptasensor for multiple mycotoxins (ochratoxin A (OTA) and aflatoxin B1 (AFB1)) detection was developed using unmodified gold nanoparticles (AuNPs). In the work, the high affinities of OTA and AFB1 aptamers were employed as the recognition elements for the colorimetric determination of OTA and AFB1. In the absence of mycotoxins, the sulfhydryl-modified aptamers were directly adsorbed to the AuNP surface through Au-S bonds, further prohibiting the aggregation induced by a high concentration of salt, and the solutions remain red. In the presence of mycotoxins, the corresponding aptamer-target complexes were formed and the corresponding aptamers were detached from the surface of AuNPs, leading to the aggregation of AuNPs under the optimal salt solution and a color change. By spectroscopic quantitative analysis and visual analysis, the LODs of OTA and AFB1 were down to 0.005 ng mL-1 and 0.07 ng mL-1, respectively. Furthermore, the colorimetric aptasensor showed a high specificity in the presence of other interfering mycotoxins and metal ions. Finally, the developed aptasensor was applicable to detect OTA and AFB1 in rice samples with satisfactory performance. Our strategy has great potential for the rapid and sensitive detection of OTA and AFB1 for on-site analysis.

Abstract
Enzyme-linked immunosorbent assay (ELISA) is widely used in the routine screening of mycotoxin contamination in various agricultural and food products. Herein, a cascade-amplifying system was introduced to dramatically promote the sensitivity of an immunoassay for ochratoxin A (OTA) detection. Specifically, a biotinylated M13 bacteriophage was introduced as a biofunctional competing antigen, in which a seven-peptide OTA mimotope fused on the p3 protein of M13 was used to specifically recognize an anti-OTA monoclonal antibody, and the biotin molecules modified on capsid p8 proteins were used in loading numerous streptavidin-labeled polymeric horseradish peroxidases (HRPs). Owing to the abundance of biotinylated p8 proteins in M13 and the high molar ratio between HRP and streptavidin in streptavidin-polyHRP, the loading amount of HRP enzymes on the M13 bacteriophage were greatly boosted. Hence, the proposed method exhibited high sensitivity, with a limit of detection of 2.0 pg/mL for OTA detection, which was 250-fold lower than that of conventional ELISA. In addition, the proposed method showed a slight cross-reaction of 2.3% to OTB, a negligible cross-reaction for other common mycotoxins, and an acceptable accuracy for OTA quantitative detection in real corn samples. The practicability of the method was further confirmed with a traditional HRP-based ELISA method. In conclusion, the biotinylated bacteriophage and polyHRP structure showed potential as a cascade-amplifying enzyme loading system for ultra-trace OTA detemination, and its application can be extended to the detection of other analytes by altering specific mimic peptide sequences.

Abstract
BACKGROUND Rice grains can be contaminated easily by certain fungi during storage and in the market chain, thus generating a risk for humans. Most classical methods for identifying and rectifying this problem are complex and time-consuming for manufacturers and consumers. However, E-nose technology provides analytical information in a non-destructive and environmentally friendly manner. Two-feature fusion data combined with chemometrics were employed for the determination of Aspergillus spp. contamination in milled rice. RESULTS Linear discriminant analysis (LDA) indicated that the efficiency of fusion signals ('80th s values' and 'area values') outperformed that of independent E-nose signals. Linear discriminant analysis showed clear discrimination of fungal species in stored milled rice for four groups on day 2, and the discrimination accuracy reached 92.86% by using an extreme learning machine (ELM). Gas chromatography-mass spectrometry (GC-MS) analysis showed that the volatile compounds had close relationships with fungal species in rice. The quantification results of colony counts in milled rice showed that the monitoring models based on ELM and the genetic algorithm optimized support vector machine (GA-SVM) (R2 = 0.924-0.983) achieved better performances than those based on partial least squares regression (PLSR) (R2 = 0.877-0.913). The ability of the E-nose to monitor fungal infection at an early stage would help to prevent contaminated rice grains from entering the food chains. CONCLUSIONS The results indicated that an E-nose coupled with ELM or GA-SVM algorithm could be a useful tool for the rapid detection of fungal infection in milled rice, to prevent contaminated rice from entering the food chain. © 2021 Society of Chemical Industry.

Abstract
Ochratoxin A (OTA) is a common food contaminant with multiple toxicities and thus rapid and accurate detection of OTA is indispensable to minimize the threat of OTA to public health. Herein a novel enzyme cascade-amplified immunoassay (ECAIA) based on the mutated nanobody-alkaline phosphatase fusion (mNb-AP) and MnO2 nanosheets was established for detecting OTA in coffee. The detection principle is that the dual functional mNb-AP could specifically recognize OTA and dephosphorylate the ascorbic acid-2-phosphate (AAP) into ascorbic acid (AA), and the MnO2 nanosheets mimicking the oxidase could be reduced by AA into Mn2+ and catalyze the 3,3',5,5'-tetramethyl benzidine into blue oxidized product for quantification. Using the optimal conditions, the ECAIA could be finished within 132.5 min and shows a limit of detection of 3.38 ng mL-1 (IC10) with an IC50 of 7.65 ng mL-1 and a linear range (IC20-IC80) of 4.55-12.85 ng mL-1. The ECAIA is highly selective for OTA. Good recovery rates (84.3-113%) with a relative standard deviation of 1.3-3% were obtained and confirmed by high performance liquid chromatography with a fluorescence detector. The developed ECAIA was demonstrated to be a useful tool for the detection of OTA in coffee which provides a reference for the analysis of other toxic small molecules.

Abstract
Table grapes (Vitis vinifera) are affected by botrytis bunch rot and summer bunch rot, the latter a complex disease caused by Botrytis cinerea, Aspergillus spp., Penicillium expansum and Rhizopus stolonifer. To search for biocontrol alternatives, a new bioproduct composed of Gluconobacter cerinus and Hanseniaspora osmophila, a consortium called PUCV-VBL, was developed for the control of fungal rots in table grapes. Since this consortium presents new biocontrol species, the effect of their VOCs (volatile organic compounds) was evaluated under in vitro and in vivo conditions. The VOCs produced by the PUCV-VBL consortium showed the highest mycelial inhibition against Botrytis cinerea (86%). Furthermore, H. osmophila was able to inhibit sporulation of A. tubingensis and P. expansum. VOCs' effect in vivo was evaluated using berries from Red Globe, Thompson Seedless and Crimson Seedless grapes cultivars, demonstrating a mycelial inhibition by VOCs greater than 70% for all evaluated fungal species. The VOC identification of the PUCV-VBL consortium was analyzed by solid-phase microextraction coupled to gas chromatography-mass spectrometry (SPME-GCMS). A total 26 compounds were identified, including 1-butanol 3-methyl, propanoic acid ethyl ester, ethyl acetate, phenylethyl alcohol, isobutyl acetate and hexanoic acid ethyl ester. Our results show that VOCs are an important mode of action of the PUCV-VBL biological consortium.

Abstract
Ochratoxin A (OTA) and staphylococcus enterotoxin A (SEA) are highly toxic contaminants and have induced human health problems. They commonly occur in milk and milk products. A competitive fluorescent immunoassay was developed for rapid and simultaneous determination of these toxins in milk samples. The procedure was based on the competitive immunoreactions between antigens in sample and antigen-fluorescent dye conjugates with immobilised antibodies on magnetic nanoparticles (MNPs). Each monoclonal antibody specifically recognises its corresponding toxin (antigen), and there is no cross-reactivity in the assay. First, monoclonal antibodies against OTA and SEA were produced. The activity of the obtained antibodies was determined by fluorescent-linked immunosorbent assay. Then, the monoclonal antibodies were immobilised on MNPs. The amounts of immobilised anti-OTA antibody and anti-SEA antibody were determined to be 20 and 22 μg mL-1, respectively. The antigen-fluorescent dye conjugates OTA-OVA-ATTO620 and SEA-FITC were prepared. The optimal amount of immobilised antibodies for competitive immunoassay was determined. It was found that the linear range of OTA in buffer was larger (0.001-100 ng mL-1) than the linear range of SEA (0.001-20 ng mL-1). The results for simultaneous determination of OTA and SEA in sixfold diluted milk were almost the same in buffer; the linear range for OTA was from 0.005 to 100 ng mL-1 and for SEA from 0.005 to 20 ng mL-1. The detection limit for both OTA and SEA in milk was 0.004 ng mL-1. The developed method took half the time of the individual assays (20 min). The assay was evaluated using spiked milk samples. The influences of somatic cell count, fat, pH and protein concentration in milk on immunoassay were studied. In summary, this developed immunoassay could provide an effective and rapid approach for detecting multi-toxins in milk samples.

Abstract
Nowadays, contamination of various mycotoxins in crops and their products exposes increasing risks to human health. Efficient determination methods are urgently needed. Herein, a bifunctional aptamer and a simple aptasensor based on microscale thermophoresis assay (MST) were constructed for the first time for simultaneous determination of two mycotoxins, i.e. zearalenone (ZEN) and ochratoxin A (OTA). The bifunctional aptamer was engineered by splicing a ZEN aptamer and an OTA aptamer with a linker according to the structure analysis of aptamers. The binding mechanism of the bifunctional aptamer to ZEN and OTA were revealed basing on the molecular docking studies. The MST assay proved that the bifunctional aptamer showed high affinity and specificity towards ZEN and OTA. Furthermore, a bifunctional aptamer-based MST-aptasensor was developed for simultaneous detection of ZEN and OTA in corn oil sample. The MST-aptasensor provided a limit of detection (LOD) of 0.12 nM, with satisfactory recoveries of 93.31-104.19% and excellent selectivity, indicating that the bifunctional aptamer and MST-aptasensor had great potential in practical applications.

Abstract
Mycotoxins represent a serious risk for human and animal health. Οchratoxin A (OTA) is a carcinogenic mycotoxin produced by A. carbonarius that constitutes a severe problem for viticulture. In this study, we investigate the development of novel detection and on-line monitoring approaches for the detection of OTA in the field (i.e. out of the chemical laboratory) using advanced molecular sensing. Both stand-alone and hyphenated mass spectrometry (MS) based systems (e.g. Time-of-Flight ToF-MS and gas chromatography GC combined with MS) and compact portable membrane inlet MS (MIMS) have been employed for the first time to detect and monitor volatile emissions of grape berries infected by the fungus Aspergillus carbonarius. In vacuo (electron impact-EI) and ambient ionisation (electrospray ionisation-ESI) techniques were also examined. On-line measurements of the volatile emissions of grape berries, infected by various strains of A. carbonarius with different toxicity levels, were performed resulting in different olfactory chemical profiles with a common core of characteristic mass fragments, which could be eventually used for on-site detection and monitoring allowing consequent improvement in food security.

Abstract
Ochratoxin A (OTA) is a mycotoxin that is widespread throughout the world. It contaminates foods such as vegetables, fruits, and rice. It harms human health and has potential carcinogenic effects. The G-quadruplex (G4) is a tetraplexed DNA structure generated from guanine-rich DNA that has found emerging use in aptamer-based sensing systems. This review outlines the status of OTA contamination and conventional detection methods for OTA. Various G4-based methods to detect OTA developed in recent years are summarized along with their advantages and disadvantages compared to existing approaches.

Abstract
In this paper, an ultrasensitive nanochannel sensor has been proposed for label-free Ochratoxin A (OTA) assay in combination with graphene oxide (GO) and catalyzed hairpin assembly (CHA). The high-performance sensor is segmented into two parts. One is composed of graphene oxide (GO) and DNA probes. In the presence of target OTA, OTA works as a catalyst to trigger the self-assembly pathway of the two probes and initiate the cycling of CHA circuits, which results in numerous double-stranded DNAs (dsDNA) in solution. The excess ssDNA probes are removed by GO. The other part is composed of biomimetic nanochannel coated with polyethyleneimine (PEI) and Zr4+, which can quantify the concentration of OTA by detecting the dsDNA in solution. The nanofluidic device has a detection limit of as low as 6.2 pM with an excellent selectivity. The nanochannel based assay was used to analyse food samples (red wine) with satisfied results. Thus, the proposed analytical method will provide a new approach the detection of OTA and can be applied for quality control to ensure food safety.

Abstract
Ochratoxin A (OTA) is a class of mycotoxin that are mainly produced by Aspergillus and Penicillium and widely found in plant origin food. OTA-contaminated foods can cause serious harm to animals and humans, while high stability of OTA makes it difficult to remove in conventional food processing. Thus, sensitive and rapid detection of OTA undoubtedly plays an important role in OTA prevention and control. In this paper, the conventional and novel methods of OTA at home and abroad are summarized and compared. The latest research progress and related applications of novel OTA electrochemical biosensors are mainly described with a new perspective. We innovatively divided the recognition element into single and combined recognition elements. Specifically, signal amplification technologies applied to the OTA electrochemical aptasensor are proposed. Furthermore, summary of the current limitations and future challenges in OTA analysis is included, which provide reference for the further research and applications.

Abstract
Ochratoxin A (OTA) is a major concern for public health and the rapid detection of trace OTA in food is always a challenge. To minimize OTA exposure to consumers, a nanobody (Nb)-mediated förster resonance energy transfer (FRET)-based immunosensor using quantum dots (Nb-FRET immunosensor) was proposed for ultrasensitive, single-step and competitive detection of OTA in agro-products at present work. QDs of two sizes were covalently labeled with OTA and Nb, acting as the energy donor and acceptor, respectively. The free OTA competed with the donor to bind to acceptor, thus the FRET efficiency increased with the decrease of OTA concentration. The single-step assay could be finished in 5 min with a limit of detection of 5 pg/mL, which was attributed to the small size of Nb for shortening the effective FRET distance and improving the FRET efficiency. The Nb-FRET immunosensor exhibited high selectivity for OTA. Moreover, acceptable accuracy and precision were obtained in the analysis of cereals and confirmed by the liquid chromatography-tandem mass spectrometry. Thus the developed Nb-FRET immunosensor was demonstrated to be an efficient tool for ultrasensitive and rapid detection of OTA in cereals and provides a detection model for other toxic small molecules in food and environment.

Abstract
Aspergillus carbonarius can produce a possibly carcinogenic mycotoxin named ochratoxin A (OTA). The metabolism of this fungus can also impact grape and wine quality as it influences the volatile and phenolic profiles, which are related to aroma and antioxidant activity, respectively. The objective of this study was to evaluate the effect of A. carbonarius on OTA levels and for the first time on volatile profile and antioxidant activity of grapes and their respective wines. Cabernet Sauvignon (CS, red) grapes presented higher susceptibility to A. carbonarius than Moscato Italico (MI, white) grapes and OTA levels in their respective musts were in accordance with this same trend. However, vinification of red grapes resulted in 67% reduction of OTA, while the reduction observed with white wines was 45%. The presence of acids (hexanoic, octanoic, nonanoic and decanoic, fatty odor) was found to be an indicative of the fungus incidence in grapes. These acids were precursors of esters that might impart negative aroma (methyl nonanoate and isoamyl octanoate, fatty odor) or provide desirable fruity characteristics (ethyl hexanoate, ethyl octanoate and methyl octanoate) for wine. In addition, terpenes were detected only in wines produced with grapes (CS and MI) inoculated with A. carbonarius. The presence of A. carbonarius increased the antioxidant activity of CS grapes. For MI grapes and both wines (CS and MI) no differences were verified in the antioxidant activity of the samples affected or not affected by this fungus. Although A. carbonarius occurrence has shown no influence on the antioxidant activity of wines, it produced OTA and has negatively influenced the wine odor profile, due to the production of some volatiles that impart a deleterious effect on wine aroma.

Abstract
Atractylodes macrocephala Koidz. has been used as an invigorating spleen drug for eliminating dampness and phlegm in China. According to recent researches, different processing methods may affect the drug efficacy, so we collected A. macrocephala from the Zhejiang Province, produced with different processing methods, crude A. macrocephala (CA) and bran-processed A. macrocephala (BA), then analyzed its essential oils (EOs) by GC/MS. The results showed 34 components representing 98.44% of the total EOs of CA were identified, and 46 components representing 98.02% of the total EOs of BA were identified. Atractylone is the main component in A. macrocephala. Compared with CA, BA has 46 detected compounds, 28 of which were identical, and 6 undetected compounds. Pharmacodynamic results revealed that the EOs of CA and atractylone exhibited more effective anticancer activity in HepG2, MCG803, and HCT-116 cells than the EOs of BA; while the EOs of BA exhibited simple antiviral effect on viruses H3N2, both the EOs and atractylone show anti-inflammatory activity by inhibiting the lipopolysaccharide (LPS)-induced nitric oxide (NO) production in ANA-1 cells.
