Abstract
The increasing prevalence of antibiotic-resistant bacteria has driven the need for alternative therapeutic strategies, with liposomal fatty acids (LipoFAs) emerging as promising candidates due to their potent antibacterial properties. Despite growing interest, the detailed biophysical interactions between LipoFAs and bacterial membranes remain underexplored. In this study, we systematically investigate the mechanistic interactions of liposomal linolenic acid (LipoLNA), linoleic acid (LipoLLA), and oleic acid (LipoOA) with model Gram-positive bacterial membranes using quartz crystal microbalance with dissipation (QCM-D) and fluorescence microscopy. QCM-D analysis revealed that LipoOA displayed the highest rate of membrane fusion, followed by LipoLLA and LipoLNA. Fluorescence microscopy highlighted distinct morphological changes induced by each LipoFA: LipoLNA generated large membrane buds, LipoLLA formed smaller dense protrusions, and LipoOA caused rapid incorporation with uniform dense spots. Furthermore, fluorescence recovery after photobleaching (FRAP) demonstrated that LipoLNA significantly enhanced lipid mobility and membrane fluidity, as confirmed by Laurdan generalized polarization measurements. The extent of unsaturation in LipoFAs was found to play a critical role in their interaction mechanism, with higher degrees of unsaturation inducing greater local curvature stress, increased membrane permeability, and substantial ATP leakage, ultimately leading to improved bactericidal activity. Notably, liposomal formulations exhibited enhanced biocompatibility compared to free fatty acids. These findings provide valuable mechanistic insights into how LipoFAs perturb bacterial membranes, supporting their potential application as alternative antibacterial agents.

Abstract
Considering the outstanding advantages including abundant resources, structure-performance designability, impressive mechanical strength, and 3D network structure-forming ability, cellulose is an ideal material for encapsulating bioactive ingredients. Due to its low solubility in water, large-scaled morphology and poor flexibility, cellulose is unsuitable for the construction of carriers. Consequently, the majority of cellulose is employed following physical or chemical modification. Cellulose and its derivatives are extensively employed in the food industry, including fat replacement, food packaging composites, food additives, 3D-printed food and delivery systems. Their benefits in food delivery systems are particularly pronounced. Therefore, the distinguishing features, preparation methods, recent developments and effectiveness of different cellulose-based delivery systems for bioactive ingredients are discussed. Cellulose-based delivery systems offer unique advantages in terms of environmental impact reduction, modification facilitation, stimuli-responsive release as well as tailored design, and their application has gained widespread recognition. However, they are facing challenges in the application process comprising modification methods for cellulose-based materials, new methods for commercial preparation on a wide scale, cellulose-based multifunctional conveyance systems and systematic evaluation using in vivo experiments. In conclusion, this review provides theoretical references for the development of novel delivery carriers as well as the efficient application and popularization of cellulose-based delivery systems.

Abstract
The human gastrointestinal microbiome encompasses bacteria, fungi, and viruses forming complex bionetworks which, for organismal health, must be in a state of homeostasis. An important homeostatic mechanism derives from microbial competition, which maintains the relative abundance of microbial species in a healthy balance. Microbes compete for nutrients and secrete metabolites that inhibit other microbes. Short-chain fatty acids (SCFAs) are one such class of metabolites made by gut bacteria to very high levels. SCFAs are metabolised by microbes and host cells and have multiple roles in regulating cell physiology. Here, we review the mechanisms by which SCFAs regulate the fungal gut commensal Candida albicans. We discuss SCFA's ability to inhibit fungal growth, limit invasive behaviours and modulate cell surface antigens recognised by immune cells. We review the mechanisms underlying these roles: regulation of gene expression, metabolism, signalling and SCFA-driven post-translational protein modifications by acylation, which contribute to changes in acylome dynamics of C. albicans with potentially large consequences for cell physiology. Given that the gut mycobiome is a reservoir for systemic disease and has also been implicated in inflammatory bowel disease, understanding the mechanisms by which bacterial metabolites, such as SCFAs, control the mycobiome might provide therapeutic avenues.

Abstract
The synthesis of catalysts has gained specific concern due to their versatile applications in particular azo dye decolorization. In the current work, metallic nanoparticles (copper and silver) were In-situ biosynthesised using Allium sativum and Chondrilla juncea extract. The obtained Allium-copper oxide and Allium-silver oxide materials were analyzed using SEM, TEM, FT-IR, TGA-DTG, SEM, TEM, and XRD techniques. Allium peels had a rough surface, with nanoparticles equally distributed over it. The crystal structure of Allium peels was altered after the addition of CuO and AgO nanoparticles. The highest residual mass values in the prepared materials indicated that the metallic nanoparticles were, in situ, formed. The prepared materials had worse thermal stability than Allium peel powders. The azo dyes, Calmagite and Naphthol Blue Black B were tested in the catalytic power of the resulting materials. The decolorization process was affected by the dye structure, amount of H2O2, dye concentration, time of reaction, and temperature of the bath. The activation energy values for Allium-CuO were 18.44 kJ mol-1 for calmagite, and 23.28 kJ mol-1 for naphthol blue black, respectively. Nevertheless, the energy values for Allium-AgO were 50.01 kJ mol-1 for calmagite and 12.44 kJ mol-1 for Naphthol blue black. The calculated low energy values for the prepared materials suggested the high efficiency of the use of these catalysts in azo dye decolorization under the change of some main experimental conditions.

Abstract
Nanomaterials have attracted specific consideration due to their specific characteristics and uses in several promising fields. In the present study, Chondrilla juncea was employed as a biological extract to facilitate the reduction of copper and silver ions within garlic peel powders. The resulting garlic-CuO and garlic-AgO nanocomposites were characterized using several analytical methods including FTIR, TGA/DTG, SEM, TEM, and XRD analyses. The garlic peel exhibited a rough surface. The nanoparticles were evenly dispersed across its surface. The incorporation of CuO and AgO nanoparticles affected the crystal structure of garlic peel. The establishment of CuO and AgO nanoparticles was evidenced by the highest residual mass values observed for the prepared nanocomposites. The thermogravimetric analysis showed that the prepared nanocomposites had lower thermal stability compared with garlic peel powders. The prepared nanocomposites were used for catalytic degradation of naphthol blue black B and calmagite. The decolorization process depended on the quantity of H2O2, initial concentration of azo dyes, duration of contact, and temperature of the bath. The calculated activation energy (Ea) values for the garlic-CuO nanocomposites were found to be 18.44 kJ mol-1 and 23.28 kJ mol-1 for calmagite and naphthol solutions, respectively. However, those calculated for garlic-AgO nanocomposites were found to be 50.01 kJ mol-1 and 12.44 kJ mol-1 for calmagite and naphthol, respectively.

Abstract
The gut microbiota, predominantly residing in the colon, is a complex ecosystem with a pivotal role in the host immune system. Dysbiosis of the gut microbiota has been associated with various diseases, and there is an urgent need to develop new therapeutics that target the microbiome and restore immune functions. This Brief Review discusses emerging therapeutic strategies that focus on oral delivery systems for modulating the gut microbiome. These strategies include genetic engineering of probiotics, probiotic-biomaterial hybrids, dietary fibers, and oral delivery systems for microbial metabolites, antimicrobial peptides, RNA, and antibiotics. Engineered oral formulations have demonstrated promising outcomes in reshaping the gut microbiome and influencing immune responses in preclinical studies. By leveraging these approaches, the interplay between the gut microbiota and the immune system can be harnessed for the development of novel therapeutics against cancer, autoimmune disorders, and allergies.

Abstract
During the preparation of cotton cellulose hydrogels using the phase inversion gelation method of N,N-dimethylacetamide/LiCl solution under ethanol vapor, acetone (AC), methyl ethyl ketone (MEK), or diethyl ketone (DEK) were added as additives, and their gelation state and the properties of the resulting hydrogels were evaluated. Adding the ketones to the cellulose solution caused an increase in the gelation time, but the solution viscosity decreased, indicating that the cellulose tended to aggregate in the solution. Among the hydrogels prepared by adding ketones, the water content was as high as 2050%, especially for AC and MEK. In these hydrogels, cellulose formed an agglomerated fibrous network of a few micron widths, forming a tuft-like entrapment space of about 10 to 100 μm size. The structure surrounded water and held it in the hydrogels. The FTIR results showed that the water, which formed hydrogen bonds, was retained within the hydrogel network. This structural configuration was determined to be conducive to maintaining the gel state against external deformation forces, especially in the case of the addition of MEK.

Abstract
Food gels derived from natural biopolymers are valuable materials with significant scientific merit in the food industry because of their biocompatibility, safety, and environmental friendliness compared to synthetic gels. These gels serve as crucial delivery systems for bioactive ingredients. This review focuses on the selection, formulation, characterization, and behavior in gastrointestinal of hydrogels, oleogels, and bigels as delivery systems for bioactive ingredients. These three gel delivery systems exhibit certain differences in composition and can achieve the delivery of different bioactive ingredients. Hydrogels are suitable for delivering hydrophilic ingredients. Oleogels are an excellent choice for delivering lipophilic ingredients. Bigels contain both aqueous and oil phases, whose gelation makes their structure more stable, demonstrating the advantages of the above two types of gels. Besides, the formation and properties of the gel system are confirmed using different characterization methods. Furthermore, the changing behavior (e.g., swelling, disintegration, collapse, erosion) of the gel structure in the gastrointestinal is also analyzed, providing an opportunity to formulate soft substances that offer better protection or controlled release of bioactive components. This can further improve the transmissibility and utilization of bioactive substances, which is of great significance.

Abstract
Ganoderma lucidum spores (GLSs) have been suggested to provide optimal structures for transporting orally bioavailable drugs. However, the double-layer wall and cavities of GLSs are naturally closed. This study aimed to modify GLSs into porous carriers by opening the layers and internal cavity with iturin A (IA) followed by potassium hydroxide (KOH) or hydrochloric acid (HCl). The (IA + KOH)- and (IA + HCl)-treated GLS carriers exhibited a high loading rate of 301.50 ± 2.33 and 268.18 ± 7.72 mg/g for the hydrophilic methylene blue (MB) and hydrophobic rifampicin (RF), respectively. The mechanisms underlying the modification involved the enhancement of the specific surface area with IA and the exposure of hydrophilic groups or hydrophobic groups of the GLSs with KOH or HCl. The sustained 48-h molecule-release profiles of the MB- and RF-loaded GLS carriers were best fitted using a first-order kinetics model in simulated gastric (or intestinal) fluid compared with other models. In mice, the designed GLS carriers had high adhesion capacities onto the mucosa of the digestive tract and long retention times (120 h), and even promoted the secretion of mucus and expression of several key intestinal barrier proteins. This study provided a new method to modify GLSs into oral carriers with selective drug affinity, high loading capacity, sustained drug release, and high adhesion to the digestive tract.

Abstract
Natural polymers, such as polysaccharides, cellulose, and starch, have been widely used in the chemical engineering, medicine, food, and cosmetics industries, which had a great many of biological activities. Natural polysaccharides origin from algae, fungi and plants were components of human diet since antique times. Ultrasonication achieved the breakage the polysaccharides reticulum in an ordered fashion. The factors of temperature, ratio of water/material, sonication frequency, time of exposure, pH of the sonication medium influenced the polysaccharide digestion. Sonication improved the enzyme catalysis over its substrate molecule. Positive health promoting slow digestive starch and resistant starch can be prepared quite easily by the sonication process. The aim of this review is to present the current status and scope of natural polymers as well as some emerging polymers with special characteristic. The physiochemical properties and molecular structure of natural carbohydrates under ultrasonic irradiation were also discussed. Moreover, Polysaccharide based films had industrial applications is formed by ultrasonication. Polysaccharide nanoparticles obtained by sonication had efficient water holding capacity. Sonication is an advanced method to improve the food quality. Hence, this review describes the effects of ultrasonication on physical, chemical, and molecular structure of natural polysaccharides.

Abstract
Fatty acids are good energy sources (9 kcal per gram) that aerobic tissues can use except for the brain (glucose is an alternative source). Apart from the energy source, fatty acids are necessary for cell signaling, learning-related memory, modulating gene expression, and functioning as cytokine precursors. Short-chain fatty acids (SCFAs) are saturated fatty acids arranged as a straight chain consisting minimum of 6 carbon atoms. SCFAs possess various beneficial effects like improving metabolic function, inhibiting insulin resistance, and ameliorating immune dysfunction. In this review, we discussed the biogenesis, absorption, and transport of SCFA. SCFAs can act as signaling molecules by stimulating G protein-coupled receptors (GPCRs) and suppressing histone deacetylases (HDACs). The role of SCFA on glucose metabolism, fatty acid metabolism, and its effect on the immune system is also reviewed with updated details. SCFA possess anticancer, anti-diabetic, and hepatoprotective effects. Additionally, the association of protective effects of SCFA against brain-related diseases, kidney diseases, cardiovascular damage, and inflammatory bowel diseases were also reviewed. Nanotherapy is a branch of nanotechnology that employs nanoparticles at the nanoscale level to treat various ailments with enhanced drug stability, solubility, and minimal side effects. The SCFA functions as drug carriers, and nanoparticles were also discussed. Still, much research was not focused on this area. SCFA functions in host gene expression through inhibition of HDAC inhibition. However, the study has to be focused on the molecular mechanism of SCFA against various diseases that still need to be investigated.

Abstract
Pickering emulsion hydrogels (PEHs) were developed as a pH-responsive, controlled-release delivery system to address the limitations of Pickering emulsions in some harsh processing or gastrointestinal conditions. Specifically, the PEHs were fabricated based on alginate and various concentrations of gellan gum (GG) with carboxymethyl chitosan (CMCS) matrix. The encapsulation efficiency (EE), Fourier transform infrared spectroscopy (FTIR) and X-ray diffraction (XRD) results proved the successful encapsulation. Furthermore, the hydrogels remained stable in the presence of destabilizing ions (Na+ or phosphate ions) and high osmotic pressure mediums. The texture profile analysis (TPA) characteristics and Young's modulus of the 0.8 % GG (w/v) PEHs were superior to the others. The PEHs prevented the emulsions from being released at pH 2.0, while the emulsions were entirely released at pH 7.4 in vitro, with the rate of release controlled by CMCS and the degree by GG concentration. This work facilitates the delivery of Pickering emulsions with excellent stability and pH-responsive controlled release for hydrophobic actives in food applications.

Abstract
A viscoelastic rheometer was equipped with a sono-device and a water bath to enable measurement of storage moduli G′ and loss moduli G″ of biomass polysaccharide hydrogels such as Kanten agarose, κ-carrageenan, and konjac glucomannan under ultrasound (US) exposure. The action of low power of 43 kHz US on their hydrogels significantly decreased G′ of Kanten agarose and carrageenan after a few seconds of US exposure 0.1% strain. When US with 20 W output power was exposed under mechanical strain at 0.1%, lower values were obtained cyclically for 3 min US intervals. The values then reverted to the original moduli values when US was stopped in cases of Kanten agarose and carrageenan hydrogels. As G″ values were increased during US operation, the anhydro-L-galactose segments in their hydrogels were unable to relax the external US forces within the gel sufficiently, thereby leading to gel structure collapse at a higher strain percentage. These results suggest that US exposure induced deformational change in the hydrogel structure formed by hydrogen-bonded cross-links. However, US deformation was less in the case of deacetylated cross-linkage in konjac glucomannan hydrogel.

Abstract
Recently, biomedicine and tissue regeneration have emerged as great advances that impacted the spectrum of healthcare. This left the door open for further improvement of their applications to revitalize the impaired tissues. Hence, restoring their functions. The implementation of therapeutic protocols that merge biomimetic scaffolds, bioactive molecules, and cells plays a pivotal role in this track. Smart/stimuli-responsive hydrogels are remarkable three-dimensional (3D) bioscaffolds intended for tissue engineering and other biomedical purposes. They can simulate the physicochemical, mechanical, and biological characters of the innate tissues. Also, they provide the aqueous conditions for cell growth, support 3D conformation, provide mechanical stability for the cells, and serve as potent delivery matrices for bioactive molecules. Many natural and artificial polymers were broadly utilized to design these intelligent platforms with novel advanced characteristics and tailored functionalities that fit such applications. In the present review, we highlighted the different types of smart/stimuli-responsive hydrogels with emphasis on their synthesis scheme. Besides, the mechanisms of their responsiveness to different stimuli were elaborated. Their potential for tissue engineering applications was discussed. Furthermore, their exploitation in other biomedical applications as targeted drug delivery, smart biosensors, actuators, 3D and 4D printing, and 3D cell culture were outlined. In addition, we threw light on smart self-healing hydrogels and their applications in biomedicine. Eventually, we presented their future perceptions in biomedical and tissue regeneration applications. Conclusively, current progress in the design of smart/stimuli-responsive hydrogels enhances their prospective to function as intelligent, and sophisticated systems in different biomedical applications.

Abstract
Some bioactive ingredients in foods are unstable and easily degraded during processing, storage, transportation and digestion. To enhance the stability and bioavailability, some food hydrogels have been developed to encapsulate these unstable compounds. In this paper, the preparation methods, formation mechanisms, physicochemical and functional properties of some protein hydrogels, polysaccharide hydrogels and protein-polysaccharide composite hydrogels were comprehensively summarized. Since the hydrogels have the ability to control the release and enhance the bioavailability of bioactive ingredients, the encapsulation and release mechanisms of polyphenols, flavonoids, carotenoids, vitamins and probiotics by hydrogels were further discussed. This review will provide a comprehensive reference for the deep application of polysaccharide/protein hydrogels in food industry.

Abstract
Composite hydrogels with different cellulose and chitin loading were prepared, and their in-situ viscoelastic properties were estimated under cyclic exposure of 43 kHz and 30 W ultrasound (US) using a sono-deviced rheometer. US transmitted into the hydrogel caused it to soften within about 10 sec, thus causing a decline in the storage modulus (G′) and loss modulus (G″). However, when the US was stopped, the G′ and G″ returned to their initial values. Here, G′ dropped gradually in response to the US irradiation, especially in the first cycle. After the second and third cycles, the decline was much quicker, within a few seconds. When the chitin component in the hydrogel was increased, the drop was significant. FTIR analysis of the hydrogels suggested that the peaks of -OH stretching and amide I vibration near 1655 cm−1 shifted towards lower wave numbers after the third cycle, meaning that the US influenced the hydrogen bonding interaction of the chitin amide group. This repetitive effect contributed to the breakage of hydrogen bonds and increased the interactions of the acetylamine group in chitin and in the -OH groups. Eventually, the matrix turned into a more stabilized hydrogel.

Abstract
The present study evaluated the use of the probiotic Lacticaseibacillus paracasei DTA-83 as a nitrite-reducing agent to produce potentially probiotic or postbiotic pre-converted nitrite from celery. The results obtained were compared to those achieved by direct addition of sodium nitrite for the typical reddish color formation in cooked pork sausages and the inhibitory potential against the growth of target microorganisms, including the clostridia group. Regarding the sausages color, similar findings were observed when comparing the use of pre-converted nitrite from celery produced by L. paracasei DTA-83 and the direct addition of sodium nitrite. Additionally, it presented an inhibitory effect against Salmonella spp., which was not observed with the direct addition of nitrite, revealing a potential strategy to control salmonellosis in the matrix. However, a non-equivalent preservative effect against Clostridium perfringens (INCQS 215) was determined. The results highlight a promising alternative to produce probiotic or postbiotic meat ingredients; however, further studies should be conducted to investigate doses that achieve microbial control.
