Abstract
The foam properties of egg white protein play a significant role in the food industry, particularly for pastry products, influencing both the quality and market value. However, foam generated by the continuous air injection into egg white protein tend to collapse over time due to thermodynamic instability. The molecular weight and structure of protein are crucial factors affecting foaming capacity and stability. Herein, the magnetic papain/nanoflowers were utilized to specifically hydrolyze proteins through confinement space effects, thereby enhancing the foam properties of egg white protein. By the cleavage with MPNFs, high molecular weight proteins were converted into proteins of appropriate molecular weight (48-35 kDa), exposing the hydrophobic amino acids inside. The foam capacity of egg white protein catalyzed by MPNF2 was 2.0-fold higher than that of untreated egg white protein, and the foam remained stable over a 3-h storage period.

Abstract
Whey is a natural by-product of the cheese-making process and represents a valuable source of nutrients, including vitamins, all essential amino acids and proteins with high quality and digestibility characteristics. Thanks to its different techno-functional characteristics, such as solubility, emulsification, gelling and foaming, it has been widely exploited in food manufacturing. Also, advances in processing technologies have enabled the industrial production of a variety of whey-based products exerting biological activities. The beneficial properties of whey proteins (WPs) include their documented effects on cardiovascular, digestive, endocrine, immune and nervous systems, and their putative role in the prevention and treatment of non-communicable diseases (NCDs). In this regard, research on their application for health enhancement, based on the optimization of product formulation and the development of pharmaceuticals, is highly relevant. Beyond the health and nutritionally relevant effects as in in vivo animal studies, the allergenicity of WPs and WP hydrolysates is also herein tackled and discussed, as well as their potential role as therapeutics for immune tolerance and so-called tolerogenic effects. Grounded on the WPs' health-promoting functions, this paper presents the latest research showing the potential of whey-derived peptides as an alternative strategy in NCD treatment. This work also reports a careful analysis of their current use, also revealing which obstacles limit their full exploitation, thus highlighting the future challenges in the field. Concluding, safety considerations, encompassing WP allergenicity, are also discussed, providing some insights on the role of WPs and peptides in milk allergen immunotolerance.

Abstract
Enzymes are natural biocatalysts with the advantages such as high catalytic efficiency, and strong substrate selectivity. However, the features of structure instability and low reusability rates have limited the industrial applications of enzyme. Fortunately, advancements in technology have made enzyme immobilization possible. Porous microspheres possess desirable characteristics, for example a large specific surface area, high porosity, stable mechanical and chemical properties, and cost-effectiveness, making them excellent carriers for immobilized enzymes. This review covered the latest developments in the field and the utilization of porous microsphere nanomaterials for enzyme immobilization. It emphasized the various methods used for carrier immobilization of enzymes and summarized the diverse applications of porous microsphere nanomaterials in enzyme immobilization.

Abstract
Extensively hydrolyzed protein products not only provide sufficient nutrition but also effectively reduce the allergenicity of milk proteins. However, there was limited information about the sensitization of extensive hydrolysate of milk protein concentrate (EMPH). In this study, the mechanism by which EMPH reduce sensitization was studied by constructing a milk protein concentrate (MPC) sensitization evaluation animal model. The results demonstrated that the serum levels of the specific IgE, IgG, and IgG1 antibodies in the EMPH group (one-step alcalase-protamex [O-AX] and two-step alcalase-protamex [T-AX]) were significantly decreased (P < 0.01). In addition, compared with the MPC group (19.29%), the expression of CD3+CD4+ T cells in the O-AX (16.61%) and T-AX groups (15.94%) was significantly reduced (P < 0.05). This indicated an imbalance of Th1/Th2 in the MPC group, which was confirmed by the results of cytokines and transcription factors in the spleen. The mice in the control MPC group highly expressed FcεRI+CD117+ mast cells (22.25%), peripheral blood B cells (2.91%), and CD3+CD8+ T cells (8.65%). The results indicated that EMPH did not cause an imbalance of Th1/Th2 cells and Treg/Th17 cells in mice and had lower sensitization.

Abstract
The use of organic-inorganic hybrid nanoflowers as a support material for enzyme immobilization has gained significant attention in recent years due to their high stability, ease of preparation, and enhanced catalytic activity. However, a major challenge in utilizing these hybrid nanoflowers for enzyme immobilization is the difficulty in handling and separating them due to their low density and high dispersion. To address this issue, magnetic nanoflowers have emerged as a promising alternative enzyme immobilization platform due to their easy separation, structural stability, and ability to enhance catalytic efficiency. This review focuses on different methods for designing magnetic nanoflowers, as well as future research directions. Additionally, it provides examples of enzymes immobilized in the form of magnetic nanoflowers and their applications in environmental remediation, biosensors, and food industries. Finally, the review discusses possible ways to improve the material for enhanced catalytic activity, structural stability, and scalability.

Abstract
Sesame (Sesamum indicum L.) is a valuable oilseed crop with numerous nutritional benefits containing a diverse range of bioactive compounds. However, sesame is also considered an allergenic food that triggers various mild to severe adverse reactions (e.g., anaphylaxis). Strict dietary avoidance of sesame components is the best option to protect the sensitized consumers. Sesame or sesame-derived foods are always consumed after certain food processing operations, which would cause a considerable impact on the structure of sesame proteins, changing their sensitization capacity and detectability. In the review, the molecular structure properties, and immunological characteristics of the sesame allergens were described. Meanwhile, the influence of food processing techniques on sesame proteins and the relevant detection techniques used for the sesame allergens quantification are also emphasized critically. Hopefully, this review could provide valuable insight into the development and management for the new "Big Eight" sesame allergen in food industry.

Abstract
Time-temperature integrators (TTIs) based on amyloglucosidase@Cu3(PO4)2 nanoflowers (AMG@NFs) were developed to monitor the freshness of chilled pork. AMG@NFs were synthesized through biomineralization, resulting in enhanced activity and stability of amyloglucosidase. The TTI prototypes were constructed by hydrolyzing maltodextrin with AMG@NFs. The hue of the TTIs varied from burgundy to colorless, and the discoloration kinetics were investigated. The deterioration process of chilled pork was explored, and the activation energy (Ea) was calculated as 67.32 ± 5.13 kJ/mol. To optimize costs and match TTIs with food, 6#TTI was selected to predict the quality of chilled pork. The dynamic temperature test revealed that the cumulative effective temperatures of chilled pork and 6#TTI were 289.34 K and 290.05 K, respectively, which indicated that 6#TTI was highly reliable and suitable for monitoring the actual chilled pork system. This study offers a new approach for real-time and accurate visual monitoring of chilled pork quality.

Abstract
Various nanoflowers are synthesized for enzyme immobilization. In order to increase the activity of nanoflowers, in this study, 3D flower-like structured organic-inorganic hybrid nanoflowers (hNFs) with various lipases Rhizomucor miehei lipase (RML), Candida antarctica lipase B (CALB), Humicola insolens lipase (HIL), Thermomyces lanuginosus lipase (TLL), Eversa® Transform 2.0 (ET) a genetically modified enzyme derived of TLL and graphene quantum dots (GQDs) were prepared and characterized.Lipase hNFs [lipase-(Cu/Co)3(PO4)2] and lipase@GQDs hNFs [lipase@GQDs-(Cu/Co)3(PO4)2] were straightforwardly prepared through mixing with metal ion (Cu2+or Co2+) aqueous solutions with or without GQDs. The ET@GQDs-(Cu)3(PO4)2 hNFs demonstrated 687 % higher activity than ET-(Cu)3(PO4)2 hNFs and 650 % higher activity than the free ET. Similar results were also observed with other lipase hybrid nanoflowers. For example, TLL@GQDs-(Cu)3(PO4)2 hNFs exhibited a 557 % higher activity than TLL-(Cu)3(PO4)2 hNFs and a 463 % higher activity than free TLL. Additionally, TLL@GQDs-(Co)3(PO4)2 hNFs showed a 141 % higher activity than TLL-(Co)3(PO4)2 hNFs and a 304 % higher activity than free TLL. Upon examining pH and thermal stability, it was revealed that lipase@GQDs hNFs exhibited higher activity compared to free lipase and other hNFs without GQDs. The effect of metal ions, enzyme concentrations and amount of GQDs on the morphology and enzyme activity of the lipase-hNFs was examined.

Abstract
Enzymatic hydrolysis is a promising approach for protein and food processing. However, the efficiency of this approach is constrained by the self-hydrolysis, self-agglomeration of free enzymes and the limited applicability resulted from enzymes' selectivityt. Here, novel organic-inorganic hybrid nanoflowers (AY-10@AXH-HNFs) were prepared by coordinating Cu2+ with both endopeptidase of PROTIN SD-AY10 and exopeptidase of Prote AXH. The results indicate that the AY-10@AXH-HNFs exhibited 4.1 and 9.6 times higher catalytic activity than free Prote AXH and PROTIN SD-AY10, respectively, for the enzymatic hydrolysis of N-benzoyl-L-arginine ethyl ester (BAEE). The kinetic parameters of Km, Vmax and Kcat/Km by AY-10@AXH-HNFs were determined to be 0.6 mg/mL, 6.8 mL·min/mg and 6.1 mL/(min·mg), respectively, surpassing the values obtained from free endopeptidase and exopeptidase. Furthermore, the ability of AY-10@AXH-HNFs to retain 41 % of their initial catalytic activity after undergoing 5 cycles of repeated use confirmed their stability and reusability. This study introduces a novel approach of co-immobilizing endopeptidase and exopeptidase on nanoflowers, resulting in significantly enhanced stability and reusability of the protease in catalytic applications.

Abstract
Milk protein concentrate (MPC) is one of the major allergens in food. This study aimed to analyze the peptide profiles and potential allergenicity of the extensive hydrolysates of MPC (EMPHs) using the peptidomics approach. Results demonstrated that when the hydrolysis time was 4 h, the degree of hydrolysis of the four EMPHs (AX, Alcalase-Protamex), (AD, Alcalase-Protease A 2SD), (AE, Alcalase-Flavourzyme) and (AH, Alcalase-ProteAXH) were 12.45 %, 18.48 %, 18.87 % and 16.77 %, respectively. The results of size exclusion chromatography showed no significant difference, when the hydrolysis time exceeded 3 h. A total of 16 allergic peptides were identified in the EMPHs by LC-MS/MS. The peptide profiles and the coverage of master protein of the four EMPHs were different. The results of the enzyme-linked immunoassay and KU812 cell model showed that the allergenicity of the EMPHs samples was significantly reduced. This study provided strong support for the application of EMPHs in hypoallergenic formula foods.

Abstract
Natural enzymes possess several drawbacks which limits their application in industries, wastewater remediation and biomedical field. Therefore, in recent years researchers have developed enzyme mimicking nanomaterials and enzymatic hybrid nanoflower which are alternatives of enzyme. Nanozymes and organic inorganic hybrid nanoflower have been developed which mimics natural enzymes functionalities such as diverse enzyme mimicking activities, enhanced catalytic activities, low cost, ease of preparation, stability and biocompatibility. Nanozymes include metal and metal oxide nanoparticles mimicking oxidases, peroxidases, superoxide dismutase and catalases while enzymatic and non-enzymatic biomolecules were used for preparing hybrid nanoflower. In this review nanozymes and hybrid nanoflower have been compared in terms of physiochemical properties, common synthetic routes, mechanism of action, modification, green synthesis and application in the field of disease diagnosis, imaging, environmental remediation and disease treatment. We also address the current challenges facing nanozyme and hybrid nanoflower research and the possible way to fulfil their potential in future.

Abstract
Milk proteins are widely used for food supplementation, despite the potential risk of food allergy, especially against β-lactoglobulin (BLG), which makes BLG surveillance critical. Possible interaction of detecting antibodies with BLG-derived peptides will result in unprecise inspection. Thus, in this study, it was proposed to generate nanobodies (Nbs) and validate the immunological detection of intact BLG rather than hydrolytic peptides. Nbs were successfully retrieved and characterized with high stability and target specificity. A competitive enzyme-linked immunosorbent assay (cELISA) was developed with a linear range from 39 to 10,000 ng/mL and a detection limit (LOD) of 4.55 ng/mL, with a recovery of 86.30%-95.09% revealed by analysis of spiked samples. Meanwhile, a sandwich ELISA (sELISA) was established with Nb82 and BLG polyclonal antibody (pAb-BLG) providing a linear range from 29.7 to 1250 ng/mL and an LOD of 13.82 ng/mL with a recovery of 87.82%-103.97%. The interaction of selected Nbs with BLG-derived peptides was investigated by Nb structure modeling and BLG docking. No binding on hydrolytic peptides was revealed, confirming the precision of Nb-mediated immunoassays. In summary, this study successfully identified BLG-specific Nbs for immunoassay development and guaranteed the monitoring of intact BLG without interference of hydrolytic peptides, providing experimental evidence that our Nbs recognize intact food allergen.

Abstract
Lipase from Thermomyces lanuginosus (TLL) has been immobilized on Purolite Lifetech® ECR8806F (viz. methacrylate macroporous resin containing octadecyl groups, designated as Purolite C18-TLL), and the enzyme performance has been compared to that of the enzyme immobilized on octyl-agarose, designated as agarose C8-TLL. The hydrolytic activity versus p-nitrophenol butyrate decreased significantly, and to a lower extent versus S-methyl mandelate (more than twofold), while versus triacetin and R-methyl mandelate, the enzyme activity was higher for the biocatalyst prepared using Purolite C18 (up to almost five-fold). Regarding the enzyme stability, Purolite C18-TLL was significantly more stable than the agarose C8-TLL. Next, the biocatalysts were mineralized using zinc, copper or cobalt phosphates. Mineralization increased the hydrolytic activity of Purolite C18-TLL versus triacetin and R-methyl mandelate, while this activity decreased very significantly versus the S-isomer, while the effects using agarose C8-TLL were more diverse (hydrolytic activity increase or decrease was dependent on the metal and substrate). The zinc salt treatment increased the stability of both biocatalysts, but with a lower impact for Purolite C18-TLL than for agarose-C8-TLL. On the contrary, the copper and cobalt salt treatments decreased enzyme stability, but more intensively using Purolite C18-TLL. The results show that even using enzymes immobilized following the same strategy, the differences in the enzyme conformation cause mineralization to have diverse effects on enzyme stability, hydrolytic activity, and specificity.

Abstract
Allergy by cow's milk proteins is among the major food allergies and could be reduced by the partial hydrolysis of these proteins by proteases, without significantly affecting its physicochemical properties. In addition, the peptides generated through enzymatic hydrolysis of the cow's milk can present prebiotic and bioactive properties. In this work, the cow's milk proteins were submitted to a controlled hydrolysis by Novo-Pro D® and the influence of the degree of hydrolysis (DH) on peptide size distribution was evaluated, as well as the prebiotic and antimicrobial properties of milk hydrolysates. It was shown that for DH-10%, all the peptides have sizes lower than 12 kDa which is the size of the most allergenic proteins, without apparent changes in the milk, as long as heating of the hydrolysate is avoided. The protein hydrolysis promoted a great improvement in the milk functional properties. In addition, the obtained milk peptides presented great prebiotic activities, as indicated by the significant improvement of the growth of prebiotic L. acidophilus and L. reuteri and by the production of bacteriocins indicated by the inhibition halos in the growth of a pathogenic microorganism. Abstract
This study investigated the changes in the structure and properties of soybean protein after hydrolysis using two types of hybrid nanoflowers (alcalase@Cu3(PO4)2•3H2O (ACHNs) and dispase@Cu3(PO4)2•3H2O (DCHNs)) and examined the basic properties and oxidative stability of hydrolyzed soybean protein emulsions. The formations of the two hybrid nanoflowers were first determined using a scanning electron microscope, transmission electron microscope, and Fourier infrared spectroscopy. The structure and functional properties of soybean protein treated with hybrid nanoflowers were then characterized. The results indicated that the degree of hydrolysis (DH) of the ACHNs hydrolysates was higher than that of the DCHNs for an identical reaction time. Soybean protein hydrolysates treated with two hybrid nanoflowers showed different fluorescence and circular dichroism spectra. The solubility of the hydrolysates was significantly higher (p < 0.05) than that of the soybean protein (SPI) at all pH values tested (2.0−10.0)*: at the same pH value, the maximum solubility of ACHNs hydrolysates and DCHNs hydrolysates was increased by 46.2% and 42.2%, respectively. In addition, the ACHNs hydrolysates showed the highest antioxidant activity (DPPH IC50 = 0.553 ± 0.009 mg/mL, ABTS IC50 = 0.219 ± 0.019 mg/mL, and Fe2+ chelating activity IC50 = 40.947 ± 3.685 μg/mL). The emulsifying activity index of ACHNs and DCHNs hydrolysates reached its maximum after hydrolysis for 120 min at 61.38 ± 0.025 m2/g and 54.73 ± 0.75 m2/g, respectively. It was concluded that the two hydrolysates have better solubility and antioxidant properties, which provides a theoretical basis for SPI product development. More importantly, the basic properties and oxidative stability of the soybean-protein-hydrolysates oil-in-water emulsions were improved. These results show the importance of proteins hydrolyzed by hybrid nanoflowers as emulsifiers and antioxidants in the food and pharmaceutical industry.

Abstract
Milk protein hydrolysates are common in infant formula, but some of them retain allergenicity due to incomplete hydrolysis of the epitopes for milk allergens. This study explored a method for screening proteases that could specifically hydrolyze the epitope of αs1-casein allergen. Firstly, the αs1-casein epitope AA83-105 was synthesized by the solid-phase synthesis method. Then, after purification and identification, the complete antigen was prepared through coupling with bovine serum albumin (BSA) and was used to raise monoclonal antibodies (mAb) in BALB/c mice. Additionally, an indirect competitive-enzyme-linked immunosorbent assay (icELISA) was established. The mAb raised against αs1-casein protein was used as a control. The results showed that the purity of the synthetic epitope was >90%, and the coupling rate with BSA was 6.31. The mAb subtype is IgG1, with a titer of 1:320,000. The mAb reacted specifically with αs1-casein but did not cross-react with soybean protein. The linear regression equation of the competitive inhibition curve was y = −9.22x + 100.78 (R2 = 0.9891). The detection limit of icELISA method was more sensitive, and the method showed good accuracy and repeatability. The amounts of antigen residues in papain protease hydrolysates were relatively small, and the epitope fragment was detected in papain hydrolysate via mass spectrometry. This study provides ideas and methods for screening proteases that specifically hydrolyze the epitopes of milk allergens and also provides a superior foundation for the development of an advanced hypoallergenic formula.

Abstract
Organic-inorganic hybrid nanoflowers (HNFs) of laccase@Zn3(PO4)2 were fabricated through a facile, simple, and rapid one-step strategy. In this process, laccase was involved in nucleation and fast anisotropic growth reactions with Zn (II) and phosphate ions. The average pore size of the prepared HNFs was 54.5 nm, and its BET-specific surface area was 59.5 m2 g-1. In comparison with the free laccase, the entrapped enzyme activity in the constructed HNFs was 86.4%. In addition, the hybrid biocatalyst displayed a maximum rate of reaction (Vmax) of 1640.2 ± 3.6 μmol min-1 with respect to the native enzyme. The constructed HNFs maintained 45.1% and 60% of the original laccase activity after 12 successive reusability cycles and 30 days of storage at 4 °C, respectively. The as-obtained HNFs demonstrated a high bioremoval percentage of Direct blue-71 (94.1%) within a 10-h-treatment at 40 °C and 15 mg l-1 of the dye concentration. The pseudo-first order and second order were the best-fitted kinetic models for the dye removal using Zn3(PO4)2 nanoflakes and the fabricated HNFs, respectively. Besides, liquid chromatography-mass spectrometry (LC-MS) revealed biotransformation of the dye into less toxic metabolites as verified by testing on some bacterial strains.

Abstract
Enzymes are biocatalysts known for versatility, selectivity, and brand operating conditions compared to chemical catalysts. However, there are limitations to their large-scale application, such as the high costs of enzymes and their low stability under extreme reaction conditions. Immobilization techniques can efficiently solve these problems; nevertheless, most current methods lead to a significant loss of enzymatic activity and require several steps of activation and functionalization of the supports. In this context, a new form of immobilization has been studied: forming organic-inorganic hybrids between metal phosphates as inorganic parts and enzymes as organic parts. Compared to traditional immobilization methods, the advantages of these nanomaterials are high surface area, simplicity of synthesis, high stability, and catalytic activity. The current study presents an overview of organic-inorganic hybrid nanoflowers and their applications in enzymatic catalysis.

Abstract
Mercury (Hg) emissions are increasing annually owing to rapid global industrialization. Hg poisoning can severely affect the human body owing to its persistence and bioaccumulation. In this study, hybrid nanoflowers (NFs) were synthesized by promoting the formation of primary copper-phosphate crystals coordinated with polydopamine (PDA) and Fe3O4 magnetic nanoparticles (MNPs), followed by coating with silver nanoparticles on the surface of the NFs (Ag-MNP-PDA-Cu NFs). The results suggest that the hierarchical structure of the NFs enabled a large surface area with nanosized pores, which were exploited for Hg adsorption. The adsorbed Hg ions could be further eliminated from the solution based on the magnetic characteristics of the NFs. Additionally, hybrid NFs functionalized with Hg2+-binding aptamers (Apt-Ag-MNP-PDA-Cu NFs) were prepared based on the silver-sulfur interactions between the Ag-MNP-PDA-Cu NFs and thiol-modified aptamers. The performance of both adsorbents demonstrated that the immobilization of Hg2+-binding aptamers significantly improved the elimination of Hg from solution. The Hg2+ adsorption isotherm of the Apt-Ag-MNP-PDA-Cu NFs followed the Dubinin-Radushkevich model, with a maximum adsorption capacity of 1073.19 mg/g. The Apt-Ag-MNP-PDA-Cu NFs adsorbed greater amounts of Hg2+ than the non-functionalized NFs at the same concentrations, which confirmed that the functionalization of Hg2+-binding aptamers on the NFs improved the Hg2+ removal performance. The results suggest that Apt-Ag-MNP-PDA-Cu NFs could serve as an efficient Hg-removing adsorbent, possibly by providing binding sites for the formation of T-Hg2+-T complexes.

Abstract
Epigallocatechin gallate (EGCG) and β-lactoglobulin (βLg) were conjugated by covalent bonds to form EGCG-βLg conjugates. This conjugation causes structural and bioactivity changes in βLg, which in turn can be used as a possible approach for desensitization to allergens. In this study, the desensitization mechanism was investigated by monitoring βLg secondary structure and immunoglobulin E (IgE) combining capacity changes on the basis of the conjugation mechanism. Furthermore, the desensitization efficiency in vivo was evaluated through animal experiments. The results show that temperature influenced the conjugation by decreasing the binding affinities (Ka) and binding numbers (n) of EGCG. The conjugation of EGCG decreased βLg's IgE combining capacity by decreasing the β-sheet component and imparted antioxidant properties by the introduction of hydroxyl groups. In addition, animal experiment results indicated that βLg induced significant changes in the levels of IgE and inflammatory cytokines, and the relative abundance of small intestinal flora, linked to the inflammatory lesions and anaphylaxis symptoms. EGCG-βLg conjugates can suppress the allergic response, attenuating serum IgE and relieving the anaphylaxis symptoms.

Abstract
Enzymes are particularly attractive as biocatalysts for the green synthesis of chemicals and pharmaceuticals. However, the traditional enzyme purification and separation process is complex and inefficient, which limits the wide application of enzyme catalysis. In this paper, an efficient strategy for enzyme purification and immobilization in one step is proposed. A novel poly (ionic liquid)-styrene microsphere is prepared by molecular design and synthesis for adsorbing and purifying high activity lipase from fermentation broth directly. By optimizing the surface morphologies and charge of the microspheres, the enzyme loading is significantly improved. In order to further stabilize the catalytic environment of lipase, the resulting lipase/poly (ionic liquid)-styrene microspheres are immobilized in physical crosslinking hydrogel to obtain a complex lipase catalytic system, which can be prepared into various shapes according to the requirements of catalytic environment. In the actual catalytic reaction process, this complex lipase catalytic system exhibits excellent catalytic activity (6314.69 ± 21.27 U mg-1) and good harsh environment tolerance compared with the lipase fermentation broth (1672.87 ± 36.68 U mg-1). Under the condition of cyclic catalysis, the complex lipase catalytic system shows the outstanding reusability (After 8 cycles the enzymatic activity is still higher than that of the lipase fermentation broth) and is easily separated from the products.

Abstract
Enzyme immobilization has been accepted as a powerful technique to solve the drawbacks of free enzymes such as limited activity, stability and recyclability under harsh conditions. Different from the conventional immobilization methods, enzyme immobilization in inorganic hybrid nanoflowers was executed in a biomimetic mineralization manner with the advantages of mild reaction conditions, and thus it was beneficial to obtain ideal biocatalysts with superior characteristics. The key factors influencing the formation of enzyme-based inorganic hybrid nanoflowers were elucidated to obtain a deeper insight into the mechanism for achieving unique morphology and improved properties of immobilized enzymes. To date, immobilized enzymes in inorganic hybrid nanoflowers have been successfully applied in biocatalysis for preparing medical intermediates, biodiesel and biomedical polymers, and solving the environmental or food industrial issues such as the degradation of toxic dyes, pollutants and allergenic proteins. Moreover, they could be used in the development of various biosensors, which provide a promising platform to detect toxic substances in the environment or biomarkers associated with various diseases. We hope that this review will promote the fundamental research and wide applications of immobilized enzymes in inorganic hybrid nanoflowers for expanding biocatalysis and biosensing.

Abstract
The immobilization of biomolecules has been a subject of interest for scientists for a long time. The organic-inorganic hybrid nanoflowers are a new class of nanostructures that act as a host platform for the immobilization of such biomolecules. It provides better practical applicability to these functional biomolecules while also providing superior activity and reusability when catalysis is involved. These nanostructures have a versatile and straightforward synthesis process and also exhibit enzyme mimicking activity in many cases. However, this facile synthesis involves many intricacies that require in-depth analysis to fully attain its potential as an immobilization technique. A complete account of all the factors involving the synthesis process optimisation is essential to be studied to make it commercially viable. This paper explores all the different aspects of hybrid nanoflowers which sets them apart from the conventional immobilization techniques while also giving an overview of its wide range of applications in industries.

Abstract
Two morphologies of laccase-mineral hybrid complexes, i.e., laccase-mineral hybrid nanoflowers (La-HNF) and nanopetals (La-HNP), were synthesized via biomineralization using Cu3 (PO4)2·3H2O as the mineral for Evans Blue (EB) dye biodegradation. XRD patterns and FT-IR spectra results revealed the successful immobilization of laccase via in-situ formed Cu3(PO4)2·3H2O crystals. Compared with free laccase, laccase-mineral hybrid complexes showed higher enzymatic activity due to the activation effect induced by copper ions of Cu3(PO4)2·3H2O, further, the improved kinetic parameters of laccase-mineral hybrid complexes could be ascribed to nanoscale-dispersed laccase molecules within hybrid complexes. For EB dye biodegradation, the reason why the biodegradation efficiency (94.9%) of La-HNF was higher than that (86.8%) of La-HNP could be synergistic effect of immobilized laccase within 3D hierarchical structure of La-HNF. In addition, the optimized biodegradation conditions (pH 4.6 and 40 °C) of La-HNF were obtained, moreover, 93.2% and 48.1% of EB dye were biodegraded by La-HNF after stored for 30 days and reused for 10 cycles, respectively, demonstrating La-HNF have good practicability.

Abstract
Papain is a cysteine protease from papaya, with many applications due to its broad specificity. This paper reviews for first time the immobilization of papain on different supports (organic, inorganic or hybrid supports) presenting some of the features of the utilized immobilization strategies (e.g., epoxide, glutaraldehyde, genipin, glyoxyl for covalent immobilization). Special focus is placed on the preparation of magnetic biocatalysts, which will permit the simple recovery of the biocatalyst even if the medium is a suspension. Problems specific to the immobilization of proteases (e.g., steric problems when hydrolyzing large proteins) are also defined. The benefits of a proper immobilization (enzyme stabilization, widening of the operation window) are discussed, together with some artifacts that may suggest an enzyme stabilization that may be unrelated to enzyme rigidification.

Abstract
Over the past decade, science has experienced a growing rise in nanotechnology with ground-breaking contributions. Through various laborious technologies, nanomaterials with different architectures from 0 D to 3 D have been synthesized. However, the 3 D flower-like organic-inorganic hybrid nanomaterial with the most direct one-pot green synthesis method has attracted widespread attention and instantly become research hotspot since its first allusion in 2012. Mild synthesis procedure, high surface-to-volume ratio, enhanced enzymatic activity and stability are the main factor for its rapid development. However, its lower mechanical strength, difficulties in recovery from the reaction system, lower loading capacity, poor reusability and accessibility of enzymes are fatal, which hinders its wide application in industry. This review first discusses the selection of non-enzymatic biomolecules for the synthesis of hybrid nanoflowers followed by the innovative advancements made in organic-inorganic hybrid nanoflowers to overcome aforementioned issues and to enhance their extensive downstream applications in transduction technologies. Besides, the role of hybrid nanoflower has been successfully utilized in many fields including, water remediation, biocatalyst, pollutant adsorption and decolourization, nanoreactor, biosensing, cellular uptake and others, accompanied with several quantification technologies, such as ELISA, electrochemical, surface plasmon resonance (SPR), colorimetric, and fluorescence were comprehensively reviewed.

Abstract
β-Lactoglobulin (β-LG) is one of the major food allergens. Enzymatic hydrolysis is a promising strategy to reduce the antigenicity of β-LG in industrial production. The relationship between the cleavage sites of β-LG by protease and its antigenic active sites were explored in this study. Molecular docking and molecular dynamics (MD) were used to analyze the active sites and interaction force of β-LG and IgG antibody. Whey protein was hydrolyzed by four specific enzymes and the antigenicity of the hydrolysates were determined by ELISA. The results of MD showed that the amino acid residue Gln155 (-4.48 kcal mol-1) played the most important roles in the process of binding. Hydrolysates produced by AY-10, which was the only one with specificity towards cleavage sites next to a Gln, had the lowest antigenicity at the same hydrolysis degree. Antigenicity decrease was related to the energy contribution of the cleavage site in the active sites.

Abstract
The use of magnetic biocatalysts is highly beneficial in bioprocesses technology, as it allows their easy recovering and enhances biocatalyst lifetime. Thus, it simplifies operational processing and increases efficiency, leading to more cost-effective processes. The use of small-size matrices as carriers for enzyme immobilization enables to maximize surface area and catalysts loading, also reducing diffusion limitations. As highly expensive nanoparticles (nm size) usually aggregate, their application at large scale is not recommended. In contrast, the use of magnetic micro-macro (µm-mm size) matrices leads to more homogeneous biocatalysts with null or very low aggregation, which facilitates an easy handling and recovery. The present review aims to highlight recent trends in the application of medium-to-high size magnetic biocatalysts in different areas (biodiesel production, food and pharma industries, protein purification or removal of environmental contaminants). The advantages and disadvantages of these above-mentioned magnetic biocatalysts in bioprocess technology will be also discussed.

Abstract
In this study, serine alkaline protease from halotolerant alkaliphilic Salipaludibacillus agaradhaerens strain AK-R was purified and immobilized onto double mesoporous core-shell silica (DMCSS) nanospheres. Covalent immobilization of AK-R protease onto activated DMCSS-NH2 nanospheres was more efficient than physical adsorption and was applied in further studies. DMCSS-NH2 nanospheres showed high loading capacity of 103.8 μg protein/mg nanospheres. Relative to free AK-R protease, the immobilized enzyme exhibited shifts in the optimal temperature and pH from 60 to 65 °C and pH 10.0 to 10.5, respectively. While the soluble enzyme retained 47.2% and 9.1% of its activity after treatment for 1 h at 50 and 60 °C, the immobilized protease maintained 87.7% and 48.3%, respectively. After treatment for 2 h at pH 5 and 13, the immobilized protease maintained 73.6% and 53.4% of its activity, whereas the soluble enzyme retained 32.9% and 1.4%, respectively. Furthermore, the immobilized AK-R protease showed significant improvement of enzyme stability in high concentration of NaCl, organic solvents, surfactants, and commercial detergents. In addition, the immobilized protease exhibited a very good operational stability, retaining 79.8% of its activity after ten cycles. The results clearly suggest that the developed immobilized protease system is a promising nanobiocatalyst for various protease applications.
