Abstract
The EU market offers different types of milk, distinguished by origin, production method, processing technology, fat content, and other characteristics, which are often detailed on product labels. In this context, ensuring the authenticity of milk is crucial for maintaining standards and preventing fraud. Various food authenticity techniques have been employed to achieve this. Among them, near-infrared (NIR) spectroscopy is valued for its non-destructive and rapid analysis capabilities. This study evaluates the effectiveness of a miniaturized NIR device combined with support vector machine (SVM) algorithms and LDA feature selection to discriminate between four commercial milk types: high-quality fresh milk, milk labeled as mountain product, extended shelf-life milk, and TSG hay milk. The results indicate that NIR spectroscopy can effectively classify milk based on the type of milk, relying on different production systems and heat treatments (pasteurization). This capability was greater in distinguishing high-quality mountain and hay milk from the other types, while resulting in less successful class assignment for extended shelf-life milk. This study demonstrated the potential of portable NIR spectroscopy for real-time and cost-effective milk authentication at the retail level.

Abstract
During food quality control, NIR technology enables the rapid and non-destructive determination of the typical quality characteristics of food categories, their origin, and the detection of potential counterfeits. Over the past 20 years, the NIR results for a variety of food groups-including meat and meat products, milk and milk products, baked goods, pasta, honey, vegetables, fruits, and luxury items like coffee, tea, and chocolate-have been compiled. This review aims to give a broad overview of the NIRS processes that have been used thus far to assist researchers employing non-destructive techniques in comparing their findings with earlier data and determining new research directions.

Abstract
Portable infrared-based instruments have made important contributions in different research fields. Within the dairy supply chain, for example, most of portable devices are based on near-infrared spectroscopy (NIRS) and are nowadays an important support for farmers and operators of the dairy sector, allowing fast and real-time decision-making, particularly for feed and milk quality evaluation and animal health and welfare monitoring. The affordability, portability, and ease of use of these instruments have been pivotal factors for their implementation on farm. In fact, pocket-sized devices enable nonexpert users to perform quick, low-cost, and nondestructive analysis on various matrixes without complex preparation. Because bovine colostrum (BC) quality is mostly given by the IgG level, evaluating the ability of portable NIRS tools to measure antibody concentration is advisable. In this study we used the wireless device SCiO manufactured by Consumer Physics Inc. (Tel Aviv, Israel) to collect BC spectra and then attempt to predict IgG concentration and gross and fine composition in individual samples collected immediately after calving (<6 h) in primiparous and pluriparous Holstein cows on 9 Italian farms. Chemometric analyses revealed that SCiO has promising predictive performance for colostral IgG concentration, total Ig concentration, fat, and AA. The coefficient of determination of cross-validation (R2CV) was in fact ≥0.75). Excellent accuracy was observed for dry matter, protein, and S prediction in cross-validation and good prediction ability in external validation (R2CV ≥ 0.93; the coefficient of determination of external validation, R2V, was ≥0.82). Nonetheless, SCiO's ability to discriminate between good- and low-quality samples (IgG ≥ vs. < 50 g/L) was satisfactory. The affordable cost, the accurate predictions, and the user-friendly design, coupled with the increased interest in BC within the dairy sector, may boost the collection of extensive BC data for management and genetic purposes in the near future.

Abstract
Miniaturized NIR instruments have been increasingly used in the last years, and they have become useful tools for many applications on a broad variety of samples. This review focuses on miniaturized NIR instruments from an analytical point of view, to give an overview of the analytical strategies used in order to help the reader to set up their own analytical methods, from the sampling to the data analysis. It highlights the uses of these instruments, providing a critical discussion including current and future trends.

Abstract
Spectrometers are key instruments in diverse fields, notably in medical and biosensing applications. Recent advancements in nanophotonics and computational techniques have contributed to new spectrometer designs characterized by miniaturization and enhanced performance. This paper presents a comprehensive review of miniaturized computational spectrometers (MCS). We examine major MCS designs based on waveguides, random structures, nanowires, photonic crystals, and more. Additionally, we delve into computational methodologies that facilitate their operation, including compressive sensing and deep learning. We also compare various structural models and highlight their unique features. This review also emphasizes the growing applications of MCS in biosensing and consumer electronics and provides a thoughtful perspective on their future potential. Lastly, we discuss potential avenues for future research and applications.

Abstract
The trans fatty acids (TFAs) in food are mainly generated from the ruminant animals (meat and milk) and processed oil or oil products. Excessive intake of TFAs (>1% of total energy intake) caused more than 500,000 deaths from coronary heart disease and increased heart disease risk by 21% and mortality by 28% around the world annually, which will be eliminated in industrially-produced trans fat from the global food supply by 2023. Herein, we aim to provide a comprehensive overview of the biological effects, analytical methods, formation and mitigation measures of TFAs in food. Especially, the research progress on the rapid, easy-to-use, and newly validated analytical methods, new formation mechanism, kinetics, possible mitigation mechanism, and new or improved mitigation measures are highlighted. We also offer perspectives on the challenges, opportunities, and new directions for future development, which will contribute to the advances in TFAs research.

Abstract
Bovine milk is one of the most complete foods that exist. During the last decades, milk FA have shown to improve human health due to the reduction in risk of cardiovascular disease and related pathologies. The aim of this study was to evaluate the feasibility of near infrared spectroscopy (NIRS) reflectance analysis to predict the nutritional value, fatty acid (FA) composition, and health index of fresh milk from dairy cows of pastoral systems. The prediction of Atherogenicity and Thrombogenicity indexes, along with other FA ratios in fresh milk samples by NIRS were precise and accurate. In addition, the calibration model obtained by NIRS provides an opportunity for the routine quantification of milk’s healthy FA such as omega-3 and conjugated linoleic acid (CLA), with applications in the dairy industry for food labeling, and at the farm level for management of the dairy cow’s diet.

Abstract
The ongoing miniaturization of spectrometers creates a perfect synergy with the common advantages of near-infrared (NIR) spectroscopy, which together provide particularly significant benefits in the field of food analysis. The combination of portability and direct onsite application with high throughput and a noninvasive way of analysis is a decisive advantage in the food industry, which features a diverse production and supply chain. A miniaturized NIR analytical framework is readily applicable to combat various food safety risks, where compromised quality may result from an accidental or intentional (i.e., food fraud) origin. In this review, the characteristics of miniaturized NIR sensors are discussed in comparison to benchtop laboratory spectrometers regarding their performance, applicability, and optimization of methodology. Miniaturized NIR spectrometers remarkably increase the flexibility of analysis; however, various factors affect the performance of these devices in different analytical scenarios. Currently, it is a focused research direction to perform systematic evaluation studies of the accuracy and reliability of various miniaturized spectrometers that are based on different technologies; e.g., Fourier transform (FT)-NIR, micro-optoelectro-mechanical system (MOEMS)-based Hadamard mask, or linear variable filter (LVF) coupled with an array detector, among others. Progressing technology has been accompanied by innovative data-analysis methods integrated into the package of a micro-NIR analytical framework to improve its accuracy, reliability, and applicability. Advanced calibration methods (e.g., artificial neural networks (ANN) and nonlinear regression) directly improve the performance of miniaturized instruments in challenging analyses, and balance the accuracy of these instruments toward laboratory spectrometers. The quantum-mechanical simulation of NIR spectra reveals the wavenumber regions where the best-correlated spectral information resides and unveils the interactions of the target analyte with the surrounding matrix, ultimately enhancing the information gathered from the NIR spectra. A data-fusion framework offers a combination of spectral information from sensors that operate in different wavelength regions and enables parallelization of spectral pretreatments. This set of methods enables the intelligent design of future NIR analyses using miniaturized instruments, which is critically important for samples with a complex matrix typical of food raw material and shelf products.

Abstract
The Montado is a Mediterranean agro–forestry–pastoral ecosystem. Knowledge of pastures’ nutritional value is critical for farm managers’ decision-making. Laboratory determinations are very expensive, destructive and costly, in terms of time and labour. The objective of this experimental work was to calibrate and validate a portable near-infrared spectrometer (micro-NIR) to predict the nutritive value (neutral detergent fibre, NDF and crude protein, CP) of pastures in the peak of spring 2021. Thus, a total of 87 pasture samples were collected at eight experimental fields located in the Alentejo, Southern region of Portugal. The results show good correlations between in-situ micro-NIR measurements and pasture NDF reference values (R2 of 0.73 and 0.69 for calibration and validation models, respectively), and a moderate correlation between micro-NIR measurements and pasture CP reference values (R2 of 0.51 and 0.36 for calibration and validation models, respectively). These results show the potential of this tool for the quick evaluation of pasture quality and constitute a starting point for future work, which should include the monitoring of temporal variability (throughout the entire vegetative cycle of the pasture) and spatial (with geo-referenced information) diversity of pastures characteristic of the Montado ecosystem in the Mediterranean region.

Abstract
Quality and safety monitoring in the dairy industry is required to ensure products meet a high-standard based on legislation and customer requirements. The need for non-destructive, low-cost and user-friendly process analytical technologies, targeted at operators (as the end-users) for routine product inspections is increasing. In recent years, the development and advances in sensing technologies have led to miniaturisation of near infrared (NIR) spectrometers to a new era. The new generation of miniaturised NIR analysers are designed as compact, small and lightweight devices with a low cost, providing a strong capability for on-site or on-farm product measurements. Applying portable and handheld NIR spectrometers in the dairy sector is increasing; however, little information is currently available on these applications and instrument performance. As a result, this review focuses on recent developments of handheld and portable NIR devices and its latest applications in the field of dairy, including chemical composition, on-site quality detection, and safety assurance (i.e., adulteration) in milk, cheese and dairy powders. Comparison of model performance between handheld and bench-top NIR spectrometers is also given. Lastly, challenges of current handheld/portable devices and future trends on implementing these devices in the dairy sector is discussed.

Abstract
One of the major issues confronting the dairy industry is the efficient evaluation of the quality of feed, milk and dairy products. Over the years, the use of rapid analytical methods in the dairy industry has become imperative. This is because of the documented evidence of adulteration, microbial contamination and the influence of feed on the quality of milk and dairy products. Because of the delays involved in the use of wet chemistry methods during the evaluation of these products, rapid analytical techniques such as near-infrared spectroscopy (NIRS) has gained prominence and proven to be an efficient tool, providing instant results. The technique is rapid, nondestructive, precise and cost-effective, compared with other laboratory techniques. Handheld NIRS devices are easily used on the farm to perform quality control measures on an incoming feed from suppliers, during feed preparation, milking and processing of cheese, butter and yoghurt. This ensures that quality feed, milk and other dairy products are obtained. This review considers research articles published in reputable journals which explored the possible application of NIRS in the dairy industry. Emphasis was on what quality parameters were easily measured with NIRS, and the limitations in some instances.

Abstract
The miniaturisation of analytical devices, reduction of analytical data acquisition time, or the reduction of waste generation throughout the analytical process are important requirements of modern analytical chemistry, and in particular of green analytical chemistry. Green analytical chemistry has fostered the development of a new generation of miniaturized near-infrared spectroscopy (NIR) spectrometric systems. However, one of the drawbacks of these systems is the need for a compromise between the performance parameters (accuracy and sensitivity) and the aforementioned requirements of green analytical chemistry. In this paper, we evaluated the capabilities of two recently developed portable NIR instruments (SCiO and NeoSpectra) to achieve a rapid, simple and low-cost quantitative determination of commercial milk macronutrients. Commercial milk samples from Italy, Switzerland and Spain were chosen, covering the maximum range of variability in protein, carbohydrate and fat content, and multivariate calibration was used to correlate the recorded spectra with the macronutrient content of milk. Both SCiO and NeoSpectra can provide a fast and reliable analysis of fats in commercial milk, and they are able to correctly classify milk according to fat level. SCiO can also provide predictions of protein content and classification according to presence or absence of lactose.
