Abstract
The study evaluated the performance, carcass characteristics, tissue composition, and meat quality of goats raised on pasture in the Caatinga rangeland supplemented with Leucena (Leucaena leucocephala) and Sabiá (Mimosa caesapiniifolia) hays associated or not with spineless cactus (Nopalea cochenillifera), and without supplementation. Thirty male castrated goats, no defined breed, with an average body weight of 15.5 kg ± 0.64 were used, distributed in a randomized block design, according to the initial weight of the animals. The experimental period lasted 105 days. The highest intake of DM, OM and CP occurred in the animals supplemented with Leucena hay associated or not with spineless cactus. The intake of NDF was higher (p <0.05) for animals fed only with Leucena and Sabiá hays. The highest intake of TDN was observed for diets, only grazing, and hays associated with spineless cactus. The daily weight gain for goats fed with Leucena hay and spineless cactus was 68.5% higher (p <0.05) than on grazing alone. Consequently, they obtained the highest (p <0.05) weights and yields of carcasses, shoulder, loin, and leg cuts, conformation and finishing scores, leg muscle index, and % fat in the leg of goats. The meat quality did not differ. The supplementation with Leucena hay associated with spineless cactus improves performance, weights, and yields of the carcass, commercial cuts, leg muscle of goats grazing in the Caatinga rangeland.

Abstract
This study investigated the utilization of detoxified Rhus
verniciflua (RV) extract as a natural antioxidant to extend the
shelf life of chicken breast meat during storage. Pre-heating at (35°C,
100°C, 120°C, and 140°C) was conducted on heartwood of RV
prior to extraction to improve its antioxidant activity and remove the
allergenic compound urushiol. The antioxidant activity was the highest when RV
pre-heated at 120°C with the 2,2-diphenyl-1-picrylhydrazyl (DPPH) and
azinobis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) scavenging activity
observed at 62.29 EC50 µg/mL and 12.11 IC50 mg/mL,
respectively. Pre-heating also significantly increased the total phenolic
content (TPC), with the highest improvement was seen at 120°C,
100°C, and 140°C respectively, wherein 35°C shared no
difference with the raw RV (RRV). Urushiol content was vanished following
pre-heating at 120°C and 140°C. With respect to these result,
pre-heating treatment at 120°C was applied before the extraction of the
heartwood of RV. Prepared breast meat sample was dipped into distilled water as
a negative control, 0.02% butylated hydroxytoluene (BHT) as positive control,
and a solution containing detoxified RV extract (0.10%, 0.25%, 0.50%, 1.00%) at
4°C for 60 min. Treatment group with 0.50% and 1.00% addition increased
the redness and yellowness value on day 6 and day 3 of storage respectively
(p < 0.05). The pH value of breast meat was also
increased in treatment of 0.50% and 1.00% on day 0, but subsequently lower until
end of storge day compared to control negative (p <
0.05). Furthermore, 0.50% treatment exhibited a higher antioxidant activity,
stronger inhibition of the microbial growth evaluated by total viable count and
maintaining a lower total volatile basic nitrogen among treatments
(p < 0.05), unless for BHT and 1.00% treatment
groups (p > 0.05). It indicates a similar efficacy of
detoxified RV extract with that of positive control treated with BHT. The
results of this study suggested that dipping chicken breast meat into a solution
containing 0.50% of previously pre-heated RV heartwood at 120°C could be
a promising natural antioxidant for extending the shelf life, and at the same
time improve its quality during storage.

Abstract
Simple Summary Zinc (Zn) is known as an essential trace mineral that plays a key role in metabolic processes such as synthesis, stability, and catalytic activity of many proteins in broilers. In ovo technology provides an alternative for delivering nutrient compounds to the embryo prior to hatching by injecting small amounts of material into a broiler egg during hatching. In this study, the in ovo injection of Zn and dietary supplementation of Zn were evaluated on their effects on growth performance, serum biochemical profiles, and meat quality in broilers. In ovo injection and Zn supplementation (i.e., 200 mg/kg) increased (p < 0.05) body weight and immunoglobulin G (IgG) compared to broilers fed with the control diet. In ovo injection group decreased (p < 0.05) feed conversion ratios compared to broilers fed with the no injection group. Our results indicated that broilers fed with a diet supplemented with 200 mg/kg of Zn could ameliorate growth performance, immune responses, and increase the unsaturated fatty acids of breast meat. The findings of this result highlighted that the diet supplemented with Zn has the effect to improve performance, blood immune response, and fatty acid profile of breast meat. Abstract This study investigated the main effects of the in ovo injection of inorganic zinc (Zn) or diet supplementation of Zn on performance, serum biochemical profiles, and breast meat quality in broilers. A total of 480 one-day-old broilers (Ross 308) were randomly divided into four groups: the control (Con, noninjected and basal diet), in ovo (injected 60 mg Zn/egg at 18 embryonic days of incubation and basal diet), Zn100 (noninjected and basal diet with Zn (100 mg/kg) for 35 days), and Zn200 (noninjected and basal diet with Zn (200 mg/kg) for 35 days) groups. The dietary supplementation of Zn increased feed intake (2860.42–2861.08 g), weight (1975.06–1985.25 g), and weight gain (1936.36–1946.53 g) compared to Con (2785.74, 1891.38, and 1852.62 g, respectively) after five weeks of age. No significant difference was found in biochemical parameters and leukocyte and erythrocyte levels in the blood among the four different groups. In ovo injected or supplemental Zn (100 and 200 mg/kg) increased IgG in the blood of broilers. Zn200 increased polyunsaturated fatty acids, and saturated fatty acid contents were reduced in breast meat compared with Con. In conclusion, Zn supplementation at 200 mg/kg could improve the weight, feed intake, blood immune response, and fatty acid profile of breast meat.

Abstract
Abstract This study aimed to evaluate the physicochemical and sensory properties of the meat of Santa Ines lambs subjected to quantitative nutrient restrictions. Twenty-four confined animals received diets with 30% and 60% feeding restriction levels, and were compared to a controlled group without feeding restrictions (ad libitum). After slaughter, the Longissimus thoracis et lumborum (LTL) muscle was collected for the evaluation, being the lamb meat was affected by the feeding restrictions (p < 0.05). The lipid content decreased with the increased restriction, whereas the shear strength, the lightness (L*) and the red index (a*) were lower in lambs treated with the 60% restriction and there were significant variation (p < 0.05) in the sensory properties according to diet. Due to the greater score in relation to aroma and similarity to control with respect to flavor, tenderness and overall evaluation, the 30% feeding restriction level can be considered an economic and efficient alternative for the maintenance of quality in lamb meat.

Abstract
Background Implantation of goats with melatonin can induce cashmere growth and significantly increase cashmere production performance. However, the impact of melatonin implantation on the carcass characteristics, meat quality and related hormone levels in muscle and viscera of cashmere goats has not been studied. This experiment was conducted to determine the effects of melatonin implantation of cashmere goats during the non-growing period on meat quality and related hormone levels in the tissues. It aimed to provide a theoretical basis for the practical application of melatonin in cashmere goat production systems. Results Melatonin implantation (2 mg/kg live weight) had no influence (P > 0.05) on daily weight gain, carcass weight, dressing percentage, loin muscle area, or the pH, moisture level, crude fat (except for Gluteus muscle) and amino acid content of muscles of cashmere goats. After implantation for 1 month, shear force of Longissimus dorsi and water loss rate of Longissimus dorsi and Biceps femoris of cashmere goats were increased (P < 0.05), whereas the cooking yield of Gluteus muscle was reduced (P < 0.05). The melatonin treatment decreased (P < 0.05) muscle crude protein, Gluteus muscle crude fat and ∑n-3PUFA content and decreased (P < 0.05) ∑n-6PUFA content. However, after 2 months of implantation most of these effects had resolved. Melatonin implantation had no effect (P > 0.05) on the melatonin or prolactin contents of kidney, heart, spleen, liver, Longissimus dorsi, Biceps femoris and Gluteus muscles. Melatonin content of lung tissue was lowered (P < 0.05) and that of prolactin was elevated (P < 0.05) by the melatonin implantation. Conclusion This study has shown little impact of melatonin implantation of cashmere goats on carcass quality. A few meat quality indices i.e., shear force, water loss rate, ∑n-3PUFA, ∑n-6PUFA, and crude protein content of Longissimus dorsi; water loss rate, cooking yield and crude protein content of Biceps femoris; ether extract, crude protein content of Gluteus; were affected briefly (at 1 month of implantation) but these effects were not evident after 2 months of implantation. There was little effect of the melatonin treatments on tissue levels of melatonin or prolactin except in lung.

Abstract
Objective In this study, we evaluated the nutritional value and antioxidant activity of black goat loin (BGL) and black goat rump (BGR) meat. Methods We evaluated the proximate compositions, collagen and mineral contents, and fatty acid compositions of BGL and BGR with respect to their nutritional value. The levels of bioactive compounds such as L-carnitine, creatine, creatinine, carnosine, and anserine were also measured. The ferric reducing antioxidant power (FRAP), 2,2-azinobis (3-ethyl-benzothiazoline-6-sulfonic acid) (ABTS) radical scavenging, and oxygen radical absorption capacity (ORAC) were assessed to evaluate the antioxidant activity of BGL and BGR. Results BGR showed higher collagen, Fe, Ca, P, and Na contents than did BGL (p<0.05). Notably, the Ca/P ratio was high in both BGR and BGL (1.82 and 1.54, respectively), thus satisfying the recommendation that the Ca/P ratio is between 1 and 2. BGL showed a significantly higher content of desirable fatty acids (stearic acid and total unsaturated fatty acids) than did BGR. In addition, the levels of creatine, carnosine, and anserine in BGL were higher than those in BGR (p<0.05). There was no significant difference in the antioxidant activity between BGL and BGR, as assessed by FRAP (both 15.92 μmol Trolox equivalent [TE]/g of dry matter [DM]), ABTS (12.51 and 12.90 μmol TE/g DM, respectively), and ORAC (101.25 and 99.06 μmol TE/g DM, respectively) assays. Conclusion This was a primary study conducted to evaluate the differences in nutritional value and antioxidant activity between loin and rump cuts of black goat meat. Our results provide fundamental knowledge that can help understand the properties of black goat meat.

Abstract
A total of 40 lambs of Chios breed were used to determine the effect of rearing system, sex and age on the fatty acid (FA) profile of M. semimembranosus proprius (SP), M. longissimus dorsii (LD) and M. triceps brachii (TB). The lambs were assigned into two groups balanced for bodyweight and sex. The first group (n = 20) underwent natural rearing (natural) and received only maternal milk until weaning. The second group (n = 20) weaned at birth and subjected to artificial suckling (artificial) with a commercial milk replacer. At 35 days of age, 10 animals from each group were weighed and slaughtered. The remaining lambs of both groups, after weaning were fed daily 100 g barley hay per animal and a commercial concentrate diet ad libitum up to 90 days of age, where they were also weighed and slaughtered. The results showed that the FA profile of lamb muscles was related with that of suckled milk (natural or artificial). Sex did not affect the FA profile, whereas the increase in the slaughtered age lead to changes in the FA profile of lamb muscles (SP, LD, TB). In conclusion, both rearing system and age change the FA profile of lamb muscles, but not in the same manner in all of them (SP, LD, TB).

Abstract
The present study investigated the effects of the nutritional levels of diets on meat quality and related gene expression in Hainan black goat. Twenty-four goats were divided into six dietary treatments and were fed a concentrate-based diet with two levels of crude protein (CP) (15% or 17%) and three levels of digestive energy (DE) (11.72, 12.55 or 13.39 MJ/kg DM) for 90 days. Goats fed the concentrate-based diet with 17% CP had significantly (P < 0.05) higher average daily gains (ADG) and better feed conversion rates (FCR). The pH 24h value tended to decrease (P < 0.05) with increasing DE levels. The tenderness of Longissimus dorsi muscle (LD) and Semimembranosus muscle (SM) reduced with increasing CP levels (P < 0.05). With increasing DE levels, tenderness was increased (P < 0.05). The heart fatty acid-binding protein (H-FABP) mRNA expression levels in LD and SM increased with increasing DE levels (P < 0.05), but decreased with increasing CP levels (P < 0.05). The calpastatin (CAST) and μ-calpain mRNA expressions levels in LD and SM were affected significantly (P < 0.05) by CP and DE levels in the diet. Therefore, the nutritional levels of diets affect meat quality and expression levels of genes associated with meat quality in Hainan black goats.

Abstract
This paper evaluates the concentrations of water- and fat-soluble precursors of meat flavour, with the aim of characterising the effect of species on the volatile profile of grilled goat and lamb meat. Compared to goat, lamb meat had higher levels of saturated fatty acids—SFA, monounsaturated fatty acids—MUFA and polyunsaturated fatty acids—PUFA and similar levels of sugars and free amino acids, except for lysine and glycine, which were higher in goat. Major differences were detected in lipid-derived volatiles; only pyrazine, thiazole, and some Strecker aldehydes were at different concentrations in these species. Volatile compounds derived from the oxidation of linoleic acid were at higher levels in meat from lamb due to the higher concentration of the latter, while compounds formed from α-linolenic acid were at higher levels in goat. It can be concluded that lamb meat has a stronger flavour profile compared to goat meat because it has the highest concentrations of lipid-derived volatile compounds, primarily straight saturated alkanals, pyrazines and thiazole.
