Abstract
The study aimed to investigate the physiological and meat quality differences between Non-Ambulatory, Non-Injured (NANI), and without apparent abnormalities (non-NANI) pigs in a commercial slaughterhouse setting, focusing on the impact of stress and health conditions on the overall well-being and meat quality of the animals. A total of 241 surgically castrated crossbred male pigs from Southern Brazil were analyzed, with 131 non-NANI pigs and 110 NANI pigs. Infrared orbital temperature, rectal temperature, hematological parameters, and meat quality measurements were collected. Statistical analysis included ANOVA tests and principal component analysis (PCA). NANI pigs exhibited significantly higher infrared orbital temperatures and rectal temperature (p < 0.01). Hematological analysis revealed higher levels of hemoglobin, hematocrit, and red blood cells in NANI pigs (p < 0.05). White blood cell count and lactate dehydrogenase were significantly elevated in NANI pigs (p < 0.01), indicating potential infections or inflammatory responses. Meat quality parameters showed that NANI pigs had lower pH values, higher luminosity, and increased drip loss (p < 0.01), reflecting poorer water retention and potential muscle glycogen depletion. The study highlights the physiological and meat quality differences between NANI and non-NANI pigs, emphasizing the impact of stress, health conditions, and handling procedures on the animals. Blood biomarkers proved valuable in assessing physiological stress, immune response, and potential health issues in pigs, correlating with meat quality abnormalities. Utilizing these biomarkers as predictive tools can enhance animal welfare practices and contribute to improving meat quality in the swine industry.

Abstract
OBJECTIVES The success of the ex vivo machine perfusion of pig livers used for preclinical research depends on organ quality and availability. In this study, we investigated whether livers obtained from slaughterhouses are suitable and equivalent to livers obtained from laboratory pigs. METHODS Livers were obtained from slaughterhouse pigs stunned by electrocution or CO2 inhalation and from laboratory pigs. For the latter group, 45 minutes of warm ischemia was mimicked for a subgroup, ensuring a valid comparison with slaughterhouse-derived livers. RESULTS Livers from CO2-stunned pigs showed lower indocyanine green clearance and bile production, higher blood lactate and potassium concentrations, and higher alanine aminotransferase activities than electrically stunned pigs. Furthermore, livers from electrically stunned pigs, and livers from laboratory pigs, subjected or not to warm ischemia, showed similar performance in terms of perfusion and metabolism. CONCLUSION For an ex vivo liver model generated using slaughterhouse pigs, electrical stunning is preferable to CO2 stunning. Livers from electrically stunned slaughterhouse pigs performed similarly to laboratory pig livers. These findings support the use of livers from electrically stunned slaughterhouse pigs, which may therefore provide an alternative to livers obtained from laboratory pigs, consistent with the principle of the 3Rs.

Abstract
Agonic aspiration of blood (AAB) may result from an inadequate exsanguination with accidental trachea severing, that can be favoured by ineffective stunning of pigs (Sus scrofa domesticus). This study aimed to evaluate AAB as an animal-based indicator of electrical stunning ineffectiveness, which could be used by official veterinarians during the post-mortem inspection of pigs. Information on 3584 finishing pigs was collected at a Portuguese abattoir that performs head-to-body electrical stunning with horizontal bleeding. Of them, 15.5% of the pigs presented signs of ineffective stunning. AAB lung lesions were found in 27.8% of lungs. Despite what was predicted, a strong correlation was found between well stunned animals and the presence of blood lesions in lungs (p = 0.006). Statistical significances were found between pigs' lateral recumbency at the conveyor and the presence of blood affecting one lung. Under the conditions of this study, the authors cannot point to AAB lung lesions as an animal-based indicator of electrical stunning ineffectiveness. Further studies should be conducted to establish a better understanding of the causes of aspiration of blood, in particular how horizontal bleeding may affect the occurrence of similar lesions.

Abstract
A biopsy is usually used to remove a piece of tissue from a patient for laboratory testing. The interstitial fluid is taken out at the same time as the tissue sample. Since interstitial fluid flows between cells and capillaries in tissues, similar to blood plasma, it is necessary to separate interstitial fluid from tissues in order to study them separately. Vacuum blood sampling has been used to draw blood into vacuum-sealed tubes, while interstitial fluid can be removed directly from the skin using microneedles with standard pumps. However, no methods are available to separate blood or interstitial fluid from the tissue itself for molecular characterization. In this study, we designed a biomedical device that can separate interstitial fluid from tissue using a vacuum-assisted filtration method. The device has a chamber that collects fluid extracted from the tissue that remains on top of the filter. We characterized the weight change and glycan profiles of tissues before and after vacuum-assisted filtration. The results demonstrate that the biomedical device can remove interstitial fluid and facilitate the analysis of tissue-specific molecules while minimizing information from the interstitial fluid.

Abstract
The objectives of this study were to elucidate the effect of different high-concentration levels of inert gases (Ar and N2) on heme-pigment solutions and on the color of the blood, meat, and small intestine of rabbits; and to figure out the proper concentration level of inert gas (Ar or N2) for the complete stunning of the rabbit. To observe the changing of color attributes, a research study was conducted in the abattoir of the National Institute of Animal Science (NIAS), RDA, Republic of Korea. This experiment had 2 parts, (i) A trial on heme-pigment solutions (hemoglobin and myoglobin solution) was conducted in a gas chamber with different high-concentration levels of carbon dioxide, argon, nitrogen, and normal air; and (ii) a rabbit experiment was conducted—stunning with different high-concentration levels of carbon dioxide, argon, nitrogen, and the Halal method (non-stunning). A small-size digital gas chamber was used for this experiment (size: width 850 mm × depth 1350 mm). Artificial hemoglobin (Hb) and myoglobin (Mb) solutions were created from “porcine hemoglobin lyophilized powder” and “equine skeletal muscle myoglobin lyophilized powder”, respectively. In the heme-pigment solutions trial, 10 treatments were used: (i) 80% carbon dioxide (T1), (ii) 85% carbon dioxide (T2), (iii) 90% carbon dioxide (T3), (iv) 80% argon (T4), (v) 85% argon (T5), (vi) 90% argon (T6), (vii) 80% nitogen (T7), (viii) 85% nitogen (T8), (ix) 90% nitogen (T9), and (x) normal air (T10). Heme-pigment solutions (both Hb and Mb) were exposed with each treatment for four separate durations of time (30 s, 1 min, 2 min, and 4 min); and every sample (Hb and Mb) was exposed during each duration of time for 10 times (n = 10). In the rabbit experiment, seven treatments were used (i) 85% carbon dioxide (T1), (ii) 90% carbon dioxide (T2), (iii) 85% argon (T3), (iv) 90% argon (T4), (v) 96% nitrogen (T5), (vi) 98% nitogen (T6), and (vii) the Halal method (non-stunning) (T7). Forty-two rabbits (mixed-breed) were collected from the nearest commercial farm and randomly selected for a treatment group (n = 6). The average body weight was 2.3 kg. For stunning, each individual rabbit was separately kept in a gas chamber, after which each specific gas was used to fulfill the desired level in the pit. After reaching the desired level of concentration, rabbits were stunned within a very short time. It was observed that the time required for stunning in the T1, T2, T3, T4, T5 and T6 treatment was 79−82, 68−73, 97−103, 88−91, 164−173, and 108−115 s, respectively. In the case of the Halal method (non-stunning), as per the rules of Islam, rabbits were slaughtered without stunning. After slaughtering, in all treatments, the blood, meat, and small intestine of each animal were collected carefully and kept in a cool room in which the temperature was −2 °C, and after 24 h, the color attributes—lightness (L*), redness (a*), and yellowness (b*)—were measured via a Chroma Meter. It was found that in both experiments (trial on heme-pigment solutions and rabbit stunning), the color values (L*, a* and b*) showed a significant difference (p < 0.05) among the treatment groups. The CO2-treated groups showed high redness (a*) and low lightness (L*) and yellowness (b*), which indicated a dark-red color, and N2-treated groups showed high lightness (L*) and yellowness (b*) and low redness (a*), which implied a bright-red color. The effect of the Ar was in between the CO2- and N2-treated groups. These phenomena were observed both in the heme-pigment solutions (Hb and Mb) and in the blood, meat, and small intestine of the rabbits. N2-stunned animals fulfill the fundamental desire of consumers to purchase bright red-colored fresh meat. Therefore, in view of color attributes, consumer satisfaction, and animal welfare, N2 gas can be thought of as a valuable alternative to stunning. Considering the time required for complete stunning and desirable color attributes, a 98% concentration of N2 is best for rabbit stunning. As such, it could be used as a better option for the gas stunning of animals.

Effects of High Concentration Nitrogen Gas Stunning of Pigs on the Quality Traits of Meat and Small Intestine. Animals (Basel) 2022; 12:ani12172249. Abstract
The objective of present study was to investigate the feasibility of utilizing only high concentration of nitrogen gas in the stunning of pigs and its effects on the quality traits of the meat and small intestine.To conduct this experiment, three treatment groups were compared: (i) electric stunning (T1), (ii) CO2 (80%) gas stunning (T2), and (iii) N2 (98%) gas stunning (T3). A total of 21 standard pigs (Landrace × Yorkshire × Duroc; LYD) were collected from a commercial pig farm, randomly selecting seven pigs for each group (body weight of 104.5 to 120.6 kg). For stunning, each individual pig was separately kept in a gas chamber, after which each specific gas was used to fulfill the desired level in the pit. To obtain the desired level of concentration for each gas (N2 at 98% and CO2 at 80%), approximately 80 min and 35 min were required, respectively. It was observed that after reaching the desired level of concentration, pigs were stunned within a very short time (for CO2, 90 s and for N2, 120 s). For electric stunning, standard quality electric devices were used. After slaughtering, the meat and small intestine of each animal was collected separately and kept in a cool room where temperature was −2 °C. In the meat and small intestine, L* (Lightness) and b* (Yellowness) were high (p < 0.05) in the T1 and T3 groups. The T2 group showed high a* (Redness) (p < 0.05) values in both the meat and small intestine. A proximate composition of meat showed no significant differences except moisture. The water holding capacity (WHC), cooking loss (CL), and Warner-Bratzler shear force (WBSF) of meat were lowest in the T2 group, but not at a notable difference compared to T3. In the small intestine, L* (Lightness), a* (Redness), b* (Yellowness), and thickness significantly differed (p < 0.05) in each group, but WBSF showed no significance between the T2 and T3 groups. It is concluded that a high concentration of N2 gas (98%) may be considered in the stunning of pigs, and its effect on meat and small intestine is favorable.

Abstract
This review analyzes the main anatomical structures and neural pathways that allow the generation of autonomous and behavioral mechanisms that regulate body heat in mammals. The study of the hypothalamic neuromodulation of thermoregulation offers broad areas of opportunity with practical applications that are currently being strengthened by the availability of efficacious tools like infrared thermography (IRT). These areas could include the following: understanding the effect of climate change on behavior and productivity; analyzing the effects of exercise on animals involved in sporting activities; identifying the microvascular changes that occur in response to fear, pleasure, pain, and other situations that induce stress in animals; and examining thermoregulating behaviors. This research could contribute substantially to understanding the drastic modification of environments that have severe consequences for animals, such as loss of appetite, low productivity, neonatal hypothermia, and thermal shock, among others. Current knowledge of these physiological processes and complex anatomical structures, like the nervous systems and their close relation to mechanisms of thermoregulation, is still limited. The results of studies in fields like evolutionary neuroscience of thermoregulation show that we cannot yet objectively explain even processes that on the surface seem simple, including behavioral changes and the pathways and connections that trigger mechanisms like vasodilatation and panting. In addition, there is a need to clarify the connection between emotions and thermoregulation that increases the chances of survival of some organisms. An increasingly precise understanding of thermoregulation will allow us to design and apply practical methods in fields like animal science and clinical medicine without compromising levels of animal welfare. The results obtained should not only increase the chances of survival but also improve quality of life and animal production.

Abstract
The present study used thirty-one pigs to investigate induction of unconsciousness and behavioural reactions in different gas mixtures: 80% CO2/air, 90 s; 40% CO2/30% O2/air, 180 s; 70% N2O/30% CO2, 90 s. All pigs lost consciousness. All presented respiratory difficulties and most pigs involuntary muscle contractions, often before loss of standing posture. Between mixtures, average latencies of certain behaviours and delays between behaviours differed. Following immersion, blood pH was lower than normal. The low pH induced by the CO2/O2/air mixture was physiologically associated with hyperoxemia. Relationships between blood gases, different behavioural and heart rate responses are discussed. In conclusion, all mixtures caused discomfort due to respiratory difficulties and the addition of O2 or N2O to the CO2 mixture did not present an advantage.

Abstract
This study assessed aversion, stunning effectiveness, and product quality of nitrogen and carbon dioxide (CO2) mixtures used for stunning pigs. A total of 1852 slaughter pigs divided into two similar batches was assessed during routine slaughter in a Swedish commercial abattoir using either hypercapnic-hypoxia (20% CO2 and less than 2% O2; 20C2O) or hypercapnia (90% CO2; 90C) gas mixtures. Behavioral indicators of aversion and discomfort were recorded. After exposure, the stunning quality was assessed through brainstem reflexes. After slaughter, the pH and electric conductivity of carcasses were assessed to estimate the incidence of pale, soft, and exudative (PSE) pork, and the presence of ecchymosis were inspected. Compared to 90C, pigs exposed to 20C2O showed a later (p < 0.05) onset of behaviors indicative of aversion, and a lower (p < 0.01) incidence of breathlessness. However, unconsciousness (i.e., losing posture) appeared earlier (p < 0.01) in 90C compared to 20C2O. In 90C, all (100%) pigs were adequately stunned, whereas in 20C2O a 7.4% of pigs showed signs of poor stunning, especially when oxygen concentrations were >2% (p < 0.001). The percentage of PSE carcasses was higher (p < 0.01) in 20C2O than 90C. In conclusion, compared to 90C, 20C2O reduced aversion and discomfort but showed lower stun effectiveness, especially when O2 was above 2%, and a slightly poorer pork quality.

Abstract
Swine mass depopulation refers to the destruction of large numbers of pigs and may include not only animals affected with a disease but also healthy pigs in a facility or surrounding areas. Emerging applications of mass depopulation include reducing welfare issues associated with slaughter delays, which was observed in the United States in 2020 as a result of the Coronavirus disease (COVID-19) pandemic. The objectives of this review were to summarize the available literature on swine depopulation methods and to highlight critical gaps in knowledge. Peer-reviewed articles were identified through a systematic search in electronic databases including Web of Science, MEDLINE, and PubMed. A total of 68 publications were assessed. Gaseous carbon dioxide inhalation was the most commonly reported depopulation method for both small- and large-scale trials. Measurements of consciousness state, which serves to assess suffering and humaneness, appeared to be lacking in a high proportion of the studies. None of the published studies demonstrated an ideally reliable and safe way to induce rapid unconsciousness in large groups of pigs. Development of rapid mass depopulation methods applicable to large groups of pigs is necessary to provide industry partners with suitable and low-cost emergency preparedness procedures while adhering to personnel safety and animal welfare standards. Lastly, there is an urgent need to standardize comprehensive reporting guidelines for depopulation studies.

Abstract
Loading, transport, unloading, lairage and stunning are the principle ante-mortem events that generate negative responses associated with stress in pigs. For this reason, it is important to verify the condition of animals throughout the supply chain in order to ensure their welfare and obtain, at the end of the slaughtering process, high-quality carcases and meat. Several studies have identified the indicators and samples that need to be taken into account to properly measure and evaluate the responses that these animals emit to the stressors involved. However, these procedures must be carried out quickly and by non-invasive means so as not to impede the flow of animals through the operations of loading, transport, unloading and lairage. Therefore, the objective of this review article is to analyse the stressful events that pigs experience during these events and discuss the use of the infrared thermography (IRT) as an alternative tool for measuring stress based on temperature changes on the surface of pigs’ skin. We argue that infrared thermography can be used as a strategy to improve animal welfare during loading, transport, unloading and lairage by preventing fatigue and deaths, and decreasing negative impacts on meat quality, such as pale, soft and exudative (PSE), or dark, firm and dry (DFD) conditions.

Abstract
The killing of pigs for human consumption (slaughtering) can take place in a slaughterhouse or on farm. The processes of slaughtering that were assessed for welfare, from the arrival of pigs until their death, were grouped into three main phases: pre-stunning (including arrival, unloading from the truck, lairage, handling and moving of pigs); stunning (including restraint); and bleeding. Stunning methods were grouped into three categories: electrical, controlled atmosphere and mechanical. Twelve welfare consequences the pigs can be exposed to during slaughter were identified: heat stress, cold stress, fatigue, prolonged thirst, prolonged hunger, impeded movement, restriction of movements, resting problem, negative social behaviour, pain, fear and respiratory distress. Welfare consequences and relevant animal-based measures were described. In total, 30 welfare hazards that could occur during slaughter were identified and characterised, most of them related to stunning and bleeding. Staff were identified as the origin of 29 hazards, which were attributed to the lack of appropriate skill sets needed to perform tasks or to fatigue. Corrective and preventive measures for these hazards were assessed: measures to correct hazards were identified, and management was shown to have a crucial role in prevention. Outcome tables linking hazards, welfare consequences, animal-based measures, origins and preventive and corrective measures were developed for each process. Mitigation measures to minimise welfare consequences are proposed.

Increased interest in the production of rabbit meat justifies the need to assess and improve the welfare of these animals not only during the production cycle but also at slaughter. Therefore, the aim of this study was to assess the effects of different stunning methods on the level of blood biochemical parameters (stress indicators), and meat quality of slaughter rabbits. Rabbits of the Hycole line (n = 60) were subjected to the following stunning methods: mechanical with a non-penetrating captive bolt (group I; n = 20), mechanical by hitting a narrow rod on the head (group II; n = 20), and electrical stunning (n = 20). In the stunning groups there were no differences found in the blood level of insulin, cortisol, glucose, total cholesterol, triglycerides, non-esterified fatty acids, and protein content (P>0.05). The stunning method did not affect the pH of rabbit meat (P=0.768), but significantly influenced the L* and b* colour parameters. The muscles of longissimus thoracis et lumborum, from the group of rabbits mechanically stunned by hitting a narrow rod on the head, were the darkest (L * = 58.4), with the lowest yellowness values (b* = 4.04). The meat of electrically stunned rabbits was characterised by higher drip loss (P<0.001), lower plasticity (P=0.043), and higher free water content (P=0.043). From the analysed texture measures, only the Warner Bratzler Shear Energy values of the cooked meat were affected by the stunning method. These values were higher in the meat of the mechanically stunned groups compared to the electrically stunned rabbits (P=0.042). The percentage of dry matter, crude protein, extractable fat and water to protein ratio, were affected only by the muscle type (P<0.001). To conclude, the rabbit meat was characterised by good quality, with only slight differences between the groups. No differences were found in the stress reaction of rabbits subjected to the examined stunning methods.

Abstract
The aim of the paper was a review of the scientific achievements in physiological stunning and slaughtering mechanisms, control methods of consciousness and their effect on meat quality. Special attention was paid to neurophysiological phenomena that accompany the process of depriving consciousness before animal deaths using mechanical, electrical and gas stunning methods. These mechanisms are associated with cerebral hypoxia or ischemia or depolarization, acidification and the destruction of cerebral neurons. Such effects can be caused by shock waves, bleeding, electric fields, reduction or arrest of the circulation of blood in the brain, high CO2 level or low O2 level in inhaled air or by the mechanical damage of neurons. Some of the stunning methods cause immediate and some gradual consciousness loss. An important factor in the animals’ slaughtering process is the estimation of their consciousness level before bleeding. The indicators of consciousness during mechanical, electrical and gas stunning are discussed within this paper. It is pointed out that at least 2 indicators should be used when estimating animals’ consciousness after stunning, e.g. phonic and clonic limb movements and lack of breathing. Ten indicators to control the consciousness were described. The effect of stunning on meat quality is also discussed. It was found that the impact of this process on the quality is not clear. However, the prevailing view is that electric stunning causes effusions and blood haemorrhages in meat. Whereas gas stunning with a CO2 mixture diminishes the risk of PSE meat. Despite numerous scientific research on the slaughter process there is still deficiency in knowledge on losing consciousness mechanisms and feeling pain. It might be useful to extend the knowledge concerning neurotransmitters and use of magnetic resonance in future studies.

Abstract
A total of 172 pigs were randomly allocated to two stunning treatments: carbon dioxide (CO2) and electrical stunning at a commercial abattoir. The Longissimus lumborum (LL) muscle was used to evaluate the effects of stunning methods on pork quality and financial losses of carcasses and viscera condemnation was also determined following by sanitary inspection. There was no effect due to stunning method on quality parameters (P > .137) of pH 24, drip or thaw loss, lipid oxidation, myofibrillar fragmentation index, shear force or PSE / DFD meat incidence. The LL muscle of the electrically stunned pigs had a higher L * value (P < .05), higher cooking loss (P < .001) and lower pH 45 (P < .05) compared to those stunned with CO2. CO2 stunned pigs had fewer carcasses condemned due to fractures / lesions (P < .05), hepatic and renal congestion (P < .05). CO2 stunning can be beneficial from an economic point of view because it has reduced losses through condemnation at the slaughterhouse.

Abstract
Electrical stunning is the most widely used stunning method for sheep and goats. Because low frequency head-to-back electrical stunning induces cardiac arrest, it is non-compliant with halal requirements. In addition, conventional head-only electrical stunning method can have adverse effects on carcass and meat quality. To address these issues high-frequency electrical stunning systems were developed. High frequency head-to-back removes the potential for pain and distress compared with non-stunned slaughter and does not induce cardiac arrest like low frequency head-to-back stunning making it appropriate for halal. However, this claim is yet to be proven through a comprehensive neurophysiological study. Thus, the present study examined the effects of different pre-slaughter electrical stunning methods and slaughter without stunning on electroencephalographic and blood biochemistry changes. Thirty-two male Boer crossbred bucks were distributed into four groups of eight animals each and subjected to slaughter without stunning (SWS), low frequency head-only (LFHO) and low frequency head-to-back (LFHB) or high frequency head-to-back electrical stunning (HFHB). Slaughtering of animals with or without stunning was performed under minimal anaesthesia. Based on electroencephalograph results, at slaughter, the SWS animals showed an increase in brain electrical activity, which is consistent with the presence of post slaughter noxious sensory input associated with tissue damage. Meanwhile the electroencephalograph activities decreased immediately after application of electrical stunning in all animals, suggesting that they were insensible to pain during and after the neck cut. Electrical brain activities for goats subjected to HFHB were comparable to those for LFHO and those for LFHB. The percentage of animals that exhibited severe clonic activity was significantly lower after LFHB or HFHB stunning compared with LFHO. The concentrations of catecholamines and hyperglycemia in electrically stunned goats were higher compared with those from SWS. It was observed that LFHB caused cardiac arrest in all goats whereas all HFHB goats had no cardiac arrest. High frequency head-to-back electrical stunning may be an improvement on non-stunned slaughter and has advantages for meat quality. However, stunning effectiveness after head-to-back electrical stunning with high frequencies needs to be evaluated under industrial conditions before any recommendation is given.

Abstract
There is a high demand for a veterinary education in animal welfare (AW) with different approaches from the academic, society and trade points of view. Latin American (LA) countries members of the World Organization for Animal Health (OIE) are under the urge and should be obligated to teach AW. The aims of this article are to analyze the current drives of change on the importance of teaching animal welfare in LA, the competences recommended from international education organizations for the region, and to provide the contents on the curriculum in AW that a future veterinarian should achieve in the LA scenario, in other words to examine why teaching AW, what should be taught and how. Despite significant advances in introducing AW into veterinary training programs, much remains to be done regarding the future of this field in teaching veterinary science in Spain and LA countries, and in including this science as an independent course in programs at distinct levels to integrate the scientific, ethical and legal aspects of AW. This paper presents a proposal that was constructed with a view towards integrating diverse curricular approaches based on criteria, contents and concepts provided by the researchers and professors who collaborated in the book entitled: Bienestar Animal: Una Visión Global en Iberoamerica [Animal Welfare: A Global Vision in Ibero-America]. To ensure veterinary students will be better equipped to graduate with OIE day 1 competencies in AW, teaching approaches are needed that support project-based learning and gamification, critical thinking, reflection and collaborative learning.

Abstract
The present study evaluated metabolic changes in lambs during three brief periods of ewe–lamb separation, namely 1 min (T1), 10 min (T10) and 60 min (T60). The lambs were divided by age into the following three groups: 15 days (G1 = 40 lambs), 30 days (G2 = 40 lambs) and 60 days (G3 = 40 lambs). The hypothesis to be tested was that breaking the ewe–lamb bond at different ages and for these brief time periods will cause significant metabolic changes in the lambs. To this end, blood samples were taken from the three test groups 24 h before separation to establish reference values (RVs), and again at the end of the three separation times. The following blood variables were analysed for all three study groups: glucose (mg/dL), lactate (mg/dL), calcium (Ca2+, mmol/L), sodium (Na+, mmol/L), potassium (K+, mmol/L), haematocrit (HTC, %), pCO2 (mmHg), pO2 (mmHg), HCO3– (mmol/L) and pH. Results showed that the G1 lambs suffered the greatest metabolic changes for the variables pO2, pCO2, glucose, lactate, pH, HCO3–, Ca2+, Na+, K+ and HCT. With respect to time, the first 10 min of separation from the mother induced marked metabolic changes in the 15-, 30- and 60-day-old lambs, but, at 60 min, the G2 and G3 lambs tended to recover their physiological RVs, while the G1 lambs did not. These findings showed that breaking the ewe–lamb bond immediately generated metabolic changes in the lambs even though they remained in a familiar, habitual environment. They also indicated that the age of the lambs at separation was a significant factor, as the older animals tended to re-establish their RVs after the metabolic changes, likely because their physiological compensating mechanisms are more efficient, or perhaps because the intensity of attachment to the mother decreases with greater age.

Abstract
The objectives of this study were to investigate the correlations between various blood parameters compared with cortisol and lactate levels under the standard pre-slaughter procedure and handling conditions and to assess their potential as indicators of pork quality traits. Despite there being no additional pre-slaughter stress treatment, there is considerable variation in blood parameters at exsanguination. Serum cortisol and blood lactate levels, widely used indicators of stress, were positively correlated with blood glucose and electrolytes, such as calcium, potassium and sodium. Moreover, these parameters were significantly correlated with a rapid rate of early postmortem glycolysis and reduced water-holding capacity. In particular, blood lactate and glucose levels significantly differed between porcine quality classes. However, other blood parameters including electrolytes did not significantly differ between quality classes though they significantly correlated with pork quality traits. Therefore, serum cortisol, blood lactate and glucose have potential as indicators of the rate and extent of postmortem metabolism and ultimate pork quality under the standard procedure and handling conditions of pre-slaughter.

Abstract
Animal welfare on the day of slaughter is of increasing concern to the authorities and consumers alike, creating a need not only to optimize the welfare of the animals but also to document the level of welfare. The day of slaughter is composed of a variety of stages, initiated when the pigs leave the home pen and including pick-up facilities, transport, lairage, stunning and sticking. At each of these stages, the animals are exposed to different stressors that, both individually and in interaction with one another, can compromise welfare. As part of the initial work aiming to document the welfare of finishing pigs on the day of slaughter, this paper provides an overview of the individual stages including a discussion of potential stressors and potential welfare measurements. These measurements are discussed with regard to their relevance and suitability for documentation of animal welfare on the day of slaughter for development of on-site tools for continuous automatic monitoring of animal welfare.

Abstract
The objective of the present study was to determine the impact of recovering consciousness on physiological responses in hogs stunned with different concentrations of CO2. A total of 1336 pigs were moved into a CO2 anaesthesia chamber for 90s. The remaining pigs were assigned to 3 groups according to the CO2 concentration used for stunning: 85, 90 or 95%. Each group was then further divided into 2 sub-groups: those exsanguinated during the first 60s after leaving the chamber without recovering consciousness (WRC); and those exsanguinated after more than 60s that recovered consciousness (RC). The blood pH of the RC pigs decreased below 7.08, but their blood levels of Ca(2+) (>1.59mmol/L), glucose (>159.79mg/dL), and lactate (>103.52mg/dL) all increased when compared to reference values (RV) (P<0.05). Therefore, a greater metabolic and energy imbalance occurs during exsanguination when pigs recover consciousness. In conclusion, exsanguination should be performed immediately upon the pigs leaving the CO2 chamber.

Abstract
This study assessed the effect of gas stunning which has not been conducted until now in comparison with slaughter without stunning on the welfare and meat quality of rabbits. Eighty male New Zealand White rabbits were divided into two groups of 40 animals and subjected to either halal slaughter without stunning (HS) or gas stunning using 61.4% CO2, 20.3% oxygen and 18.3 % nitrogen (GS). Analysis of the sticking blood revealed that both slaughter procedures caused a substantial increase in the levels of catecholamines, hypercalcemia, hyperglycemia, lactic acidemia and an increase in enzyme activities. The ultimate pH of the Longissimus lumborum muscle did not differ between treatments. GS exhibited higher lightness and cooking loss, and lower glycogen and MFI than HS. This indicates that both GS and HS can be significant stressors although the amount of stress may be below the threshold to negatively affect rabbit meat quality.

Abstract
When a stunning method is being evaluated, it is essential that the animal-handling and restraint methods that are used with it are also examined. This makes it possible to determine the effect of the entire system on animal welfare. Cattle, pigs, and sheep will move easily through the races at a slaughter plant if visual distractions such as reflections on shiny metal, dangling chains, moving equipment, or people up ahead are removed. The most important scientific research on captive bolt, CO2, and electrical stunning methods is reviewed. A common mistake made by people evaluating insensibility is to misinterpret reflexive leg kicks as a sign of return to sensibility. When religious slaughter is being evaluated, the variable of how the animal is restrained must be separated from the variable of slaughter without stunning. Slaughter can be done with a high level of animal welfare.

Abstract
The aim of the study was to evaluate the effect of two stressful stimuli, long transportation and 80% CO(2) stunning on metabolic-physiological variables, hemodynamic and gas exchange in slaughter pigs imported from the U.S. to Mexico City with a journey time of 27 h, with 8 h of lairage at the abattoir. A total of 589 pigs from three genders were monitored. Overall results show that both stimuli caused metabolic and physiological disturbance. Gilts were more efficient in controlling glycemia after a long transport journey (24h), than castrated males (P<0.05), whose glucose was increased above the 30 mg/dL basal level. Females on arrival had 23mg/dL more lactate compared to basal levels (P<0.05). Stunning caused more physiological effects compared to transportation. Regarding the gender factor, females and entire males were more susceptible to transport stress and stunning compared to the castrated pigs, and entire males showed more complications restoring the gas exchange compared to females and barrows.

Abstract
The aim of this study was to compare the effects of gas stunning (GS) and electrical stunning (ES) on energy metabolism in Arbor Acres broilers. Thirty-six birds were slaughtered without stunning (control) or after stunning with the following treatments: 40% CO(2) + 21% O(2) + N(2) (G40%); 60% CO(2) + 21% O(2) + N(2) (G60%); 35 V, 47 mA, 400 Hz (E35V); 50 V, 67 mA, 160 Hz (E50V); and 65 V, 86 mA, 1,000 Hz (E65V). Muscle samples were obtained from the pectoralis major (breast) and tibialis anterior (leg) muscles in ambient temperature within 45 min postmortem and stored at -80°C. Blood pH decreased consistently with GS (G40% and G60%) compared with ES and the control (P < 0.01). No consistent differences were observed between GS and ES in the plasma variables, glycolytic potential, adenosine phosphates, or fiber intensities. Plasma lactate increased with G40% and E35V (P < 0.05), whereas plasma uric acid and urea nitrogen increased with E35V (P < 0.05) compared with the control. Compared with the control, the intensity of type IIB fibers decreased in broilers stunned with E35V and E50V (P < 0.05) and glycolytic potential increased (P < 0.01) with G60% in the breast muscle and decreased (P < 0.01) in the leg muscle with all the stunning treatments except for E50V. Energy decreased (lower adenosine triphosphate, higher adenosine monophosphate, and adenosine monophosphate:adenosine triphosphate ratio, P < 0.05) in breast muscle with G40% compared with ES at high currents (E50V and E65V). However, the adenosine phosphates with GS were not significantly different (P > 0.05) from ES at low current (E35V) in either breast or leg muscle. In conclusion, no essential difference in energy metabolism was found in broilers stunned with ES and GS when ES was based on low current and high frequency and GS was based on hypercapnic moderate oxygenation. This study indicated that G40% was potentially a superior stunning variable.
