Abstract
Sulfite is an additive used in shrimp processing to prevent discoloration. However, sulfite can cause health issues for sensitive consumers, making its monitoring necessary. Determining sulfite concentrations is complex because the Monier-Williams reference method is laborious and has low analytical throughput. Additionally, new techniques are needed to stabilize sulfite during the extraction process because this analyte undergoes rapid oxidation. A new method involving extraction and derivatization of sulfite with formaldehyde through automated pressurized liquid extraction (PLE), followed by quantitation by capillary zone electrophoresis with diode-array detector in indirect mode, was developed and optimized using multivariate planning. The PLE procedure was compared to another solid-liquid extraction method. The new method successfully stabilized and extracted sulfite from shrimp in few steps with adequate precision (CV < 3.8%), producing extracts that were stable for 10 days. Recovery was satisfactory (97%-99%), and the limits of detection (4.6 mg kg-1) and quantitation (15.4 mg kg-1) were suitable for the intended purpose.

Abstract
L-cysteine, an indispensable amino acid present in natural proteins, plays pivotal roles in various biological processes. Consequently, precise and selective monitoring of its concentrations is imperative. Herein, we propose a Surface-enhanced Raman Scattering (SERS) sensor for detecting L-cysteine based on the anti-aggregation of 4-mercaptobenzoic acid (4-MBA) and histidine (His) functionalized silver nanoparticles (Ag NPs). The presence of Hg2+ ions can induce the aggregation of Ag NPs@His@4-MBA due to the unique nanostructures of Ag NPs@His@4-MBA, resulting in a robust SERS intensity of 4-MBA. However, in the presence of L-cysteine, the stronger affinity between L-cysteine and Hg2+ reduces the concentration of free Hg2+, causing the dispersion of the aggregated functionalized Ag NPs and the reduction of the SERS signal intensity of 4-MBA. The developed SERS platform demonstrates excellent performance with a low detection limit of 5 nM (S/N = 3) and linear detection capabilities within the range of 0.01-100 μM for L-cysteine. Additionally, the method was successfully employed for the determination of L-cysteine in spiked serum samples, yielding recoveries ranging from 95.0 % to 108.1 % with relative standard deviations of less than 3.3 %. This study not only presents a novel approach for fabricating highly sensitive and specific SERS biosensors for biomolecule detection but also offers a significant strategy for the development and construction of SERS substrates using anti-aggregation design.

Abstract
In this work, a simple electrochemical sensing platform based on acid-treated Fe3O4@SiO2 nanoparticles was successfully prepared for nitrite and sulfite detection. Fe3O4@SiO2 nanoparticles were synthesized through the sol-gel and hydrothermal methods. Fe3O4@SiO2 presented positive charges after acid treatment, which could enhance the electrostatic attraction between Fe3O4@SiO2 and nitrite and sulfite. The Fe3O4@SiO2(acid-treated) modified magnetic glassy carbon electrode (MGCE) was applied to detect nitrite and sulfite using differential pulse voltammetry and cyclic voltammetry. Under optimized conditions, the developed electrochemical sensor presented good analytical properties for nitrite and sulfite detection with detection limits of 3.33 μmol/L and 31.57 μmol/L, respectively. The good recoveries varied from 85.18% to 111.02%, with a relative standard deviation of 0.23-4.80%. Furthermore, the Fe3O4@SiO2(acid-treated) modified MGCE showed better selectivity, reproducibility, and repeatability in nitrite and sulfite detection. Therefore, this proposed electrochemical sensor provides a new method for developing a nitrite and sulfite detection sensor.

Abstract
As a commonly used food additive, sulfite (SO32-) is popular with food manufacturers due to the functions of bleaching, sterilizing, and oxidation resistance. However, excess sulfites can pose a threat to human health. Therefore, it is particularly important to achieve rapid and sensitive detection of SO32-. Herein, a colorimetric sensor was invented for visual, meticulous, and rapid detection of SO32- based on MIL-53(Fe/Mn). Bimetallic nanozyme MIL-53(Fe/Mn) was prepared by a one-pot hydrothermal reaction. The prepared MIL-53(Fe/Mn) can effectively catalyze the oxidation of colorless TMB to a blue oxidation product (oxTMB). The introduction of SO32- causes significant discoloration of the reaction system, gradually transitioning from a visible blue color to colorless. Hence, a sensitive colorimetric sensor for SO32- detection was developed based on the decolorization degree of the detection system. Further, the discoloration was ascribed to the inactivation of nanozyme and the strong reducing ability of SO32-. Under the optimal experimental conditions, there was a good linear relationship between the absorbance at 652 nm and SO32- concentration in the linear range of 0.5-6 μg mL-1 with a limit of detection (LOD) of 0.05 μg mL-1. The developed method was successfully applied to the detection of actual samples of white wine with good accuracy and recovery. Compared to traditional methods, this colorimetric sensor produces similar detection results but significantly reduces the detection time. Compared to traditional methods, this colorimetric sensor can not only reduce the detection costs effectively but also help the food industry maintain quality standards. Strong anti-interference capability, simple operation, and low detection limits ensure the excellent performance of the colorimetric sensor in detecting SO32- in white wine. The combination of a smartphone and a colorimetric analysis application has also greatly facilitated the semi-quantitative, visual on-site detection of SO32-, which has opened up an application prospect of an MIL-53(Fe/Mn)-based detection platform. Our work has indicated a new direction for the detection of SO32- and provided important assurance for food safety.

Abstract
A novel electrochemical sensor was developed for selective and sensitive determination of xanthine (XT) and hypoxanthine (HX) based on polyglycine (p-Gly) and reduced graphene oxide (rGO) modified glassy carbon electrode (GCE). A mixed dispersion of 7 μL of 5 mM glycine and 1 mg/mL GO was dropped on GCE for the fabrication of p-Gly/rGO/GCE, followed by cyclic voltammetric sweeping in 0.1 M phosphate buffer solution within -0.45~1.85 V at a scanning rate of 100 mV·s-1. The morphological and electrochemical features of p-Gly/rGO/GCE were investigated by scanning electron microscopy and cyclic voltammetry. Under optimal conditions, the linear relationship was acquired for the simultaneous determination of XT and HX in 1-100 μM. The preparation of the electrode was simple and efficient. Additionally, the sensor combined the excellent conductivity of rGO and the polymerization of Gly, demonstrating satisfying simultaneous sensing performance to both XT and HX.

Abstract
Organic chemical reactions have been used to functionalize preformed conducting polymers (CPs). The extensive work performed on polyaniline (PANI), polypyrrole (PPy), and polythiophene (PT) is described together with the more limited work on other CPs. Two approaches have been taken for the functionalization: (i) direct reactions on the CP chains and (ii) reaction with substituted CPs bearing reactive groups (e.g., ester). Electrophilic aromatic substitution, SEAr, is directly made on the non-conductive (reduced form) of the CPs. In PANI and PPy, the N-H can be electrophilically substituted. The nitrogen nucleophile could produce nucleophilic substitutions (SN) on alkyl or acyl groups. Another direct reaction is the nucleophilic conjugate addition on the oxidized form of the polymer (PANI, PPy or PT). In the case of PT, the main functionalization method was indirect, and the linking of functional groups via attachment to reactive groups was already present in the monomer. The same is the case for most other conducting polymers, such as poly(fluorene). The target properties which are improved by the functionalization of the different polymers is also discussed.
