Abstract
Loop-mediated isothermal amplification (LAMP) provides highly selective and sensitive DNA amplification and generates hydrogen ions as a byproduct under weakly buffered conditions, causing the solutions' pH to decrease from the initial basic to an acidic environment. This distinctive feature allows the color of the amplified DNA solution to change readily when suitable pH indicators are employed. In this study, curcumin, a biodegradable, non-toxic, and natural colorant, was used as a pH indicator to visually identify LAMP-amplified Staphylococcus aureus (S. aureus) and Streptococcus pneumoniae (S. pneumoniae). Curcumin (10 mM) displayed a unique color difference between negative (red) and positive (yellow) samples, and the detection process was completed within 30 s, demonstrating the effectiveness of using curcumin for on-site diagnostics. Under optimum conditions, curcumin enabled S. aureus and S. pneumoniae detection as low as 10 fg μL-1 and 1 pg μL-1, respectively, due to its unique halochromic properties. Owing to its adaptability, ease of use, and rapid visual detection, the introduced colorimetric pH-based LAMP method can be employed as a practical alternative to conventional colorimetry for infectious pathogen identification in both laboratory and field settings.

Abstract
Controlling the spread of bacterial infectious diseases is a major public health issue, particularly in view of the pandemic of bacterial resistance to antibiotics. In this context, the detection and identification of pathogenic bacteria is a prerequisite for the implementation of control measures. Current reference methods are mainly based on culture methods, which generate a delay in obtaining a result and requires equipment. Consequently, focusing on the detection of the whole bacterium represents a very attractive alternative, since no culture is required. Several techniques have already been deployed to identify whole-cell bacteria. In recent decades, growing interest in nucleic acid aptamers has emerged as a viable alternative to antibodies as recognition elements, offering preferable stability, cost-efficiency, good specificity and affinity. This review explores current alternative methods for the detection of whole-cell bacteria, with particular emphasis on aptamer-based assays. These assays have shown promising results in various transduction mechanisms, including optical, electrochemical, and mechanical approaches, enhancing their versatility in different diagnostic platforms. The integration of aptamers in these detection methods offers rapid, sensitive, versatile and portable solutions for pathogen identification, positioning them as valuable tools in the fight against bacterial infections.

Abstract
The rapid development of nanotechnology provides new approaches to manufacturing food-related nanoparticles in various food industries, including food formulation, functional foods, food packaging, and food quality control. Once ingested, nanoparticles will immediately adsorb proteins in the biological fluids, forming a corona around them. Protein coronas alter the properties of nanoparticles, including their toxicity, cellular uptake, and targeting characteristics, by altering the aggregation state. In addition, the conformation and function of proteins and enzymes are also influenced by the formation of protein coronas, affecting the digestion of food products. Since the inevitable application of nanoparticles in food industries and their subsequent digestion, a comprehensive understanding of protein coronas is essential. This systematic review introduces nanoparticles in food and explains the formation of protein coronas, with interactions between proteins and nanoparticles. Furthermore, the potential origin of nanoparticles in food that migrate from packaging materials and their fates in the gastrointestinal tract has been reviewed. Finally, this review explores the possible effects of protein coronas on bioactive compounds, including probiotics and prebiotics. Understanding the formation mechanisms of protein coronas is crucial, as it enables the design of tailored delivery systems to optimize the bioavailability of bioactive compounds.

Abstract
Foodborne diseases are a significant cause of morbidity (600 million cases) and mortality (420,000 deaths) worldwide every year and are mainly associated with pathogens. Besides the direct effects on human health, they have relevant concerns related to financial, logistics, and infrastructure for the food and medical industries. The standard pathogen identification techniques usually require a sample enrichment step, plating, isolation, and biochemical tests. This process involves specific facilities, a long-time analysis procedures, and skilled personnel. Conversely, biosensors are an emerging innovative approach to detecting pathogens in real time due to their portability, specificity, sensitivity, and low fabrication costs. These advantages can be achieved from the synergistic work between nanotechnology, materials science, and biotechnology for coupling biomolecules in nano-matrices to enhance biosensing performance. This review highlights recent advancements in electrochemical and optical biosensing techniques for detecting bacteria and viruses. Key properties, such as detection limits, are examined, as they depend on factors like the design of the biorecognition molecule, the type of transducer, the target's characteristics, and matrix interferences. Sensitivity levels reported range from 1 to 1 × 10⁸ CFU/mL, with detection times spanning 10 min to 8 h. Additionally, the review explores innovative approaches, including biosensors capable of distinguishing between live and dead bacteria, multimodal sensing, and the simultaneous detection of multiple foodborne pathogens - emerging trends in biosensor development.

Abstract
Staphylococcus aureus contamination continues to be a harmful foodborne pathogen threatening of human health, and there is a growing need for rapid detection technologies. This study proposed a novel paper biosensor based on a polydiacetylene (PDA) polymer functionalized fibrinogen (Fg) for the detection of S. aureus in food sources. The fluorophore was developed based on the high binding ability of fibrinogen-binding proteins on the surface of S. aureus. This binding caused twisting in the PDA backbone, leading to changes in chromatic and fluorescent. The detection limit of this method was 50.1 CFU/mL for S. aureus-contaminated foodstuffs and 65.0 CFU/mL for the pure S. aureus culture, and the novelty came from its rapidity and selectivity for S. aureus compared to other foodborne bacteria. In summary, the present work provides a rapid detection method for S. aureus detection, which will help in addressing food safety-related issues.

Abstract
The rapid and sensitive detection of pathogenic bacteria is becoming increasingly important for the timely prevention of contamination and the treatment of infections. Biosensors based on nucleic acid aptamers, integrated with optical, electrochemical, and mass-sensitive analytical techniques, have garnered intense interest because of their versatility, cost-efficiency, and ability to exhibit high affinity and specificity in binding bacterial biomarkers, toxins, and whole cells. This review highlights the development of aptamers, their structural characterization, and the chemical modifications enabling optimized recognition properties and enhanced stability in complex biological matrices. Furthermore, recent examples of aptasensors for the detection of bacterial cells, biomarkers, and toxins are discussed. Finally, we explore the barriers to and discuss perspectives on the application of aptamer-based bacterial detection.

Abstract
In order to combat the complex and diverse infections caused by bacteria, it is essential to develop efficient diagnostic tools. Current techniques for bacterial detection rely on laborious multistep procedures, with high costs and extended time of analysis. To overcome these limitations, we propose here a novel portable electrochemical biosensor for the rapid detection and identification of Gram-positive bacteria that leverages the recognition capabilities of vancomycin and aptamers. A vancomycin-modified screen-printed carbon electrode was used to selectively capture Gram-positive bacteria susceptible to this antibiotic. Electrochemical impedance spectroscopy and scanning electron microscopy demonstrated that capture was achieved in 10 min, with a limit of detection of only 2 CFU/mL. We then tested the device's potential for aptamer-based bacterial identification using Staphylococcus aureus and Bacillus cereus as the test strains. Specifically, electrodes with captured bacteria were exposed to species-specific aptamers, and the resulting changes in current intensity were analyzed using differential pulse voltammetry. When used directly in untreated milk or serum, the system was able to successfully identify a small amount of S. aureus and B. cereus (100 CFU/mL) in less than 45 min. This novel biosensor has the potential to serve as an invaluable tool that could be used, even by inexperienced staff, in a broad range of settings including clinical diagnostics, food safety analysis, environmental monitoring, and security applications.

Abstract
The rapid, sensitive and reliable food safety control is urgently needed due to the harmful effects of the food contaminants on human health. Colorimetric approach has exhibited promising potential for the detection of food contaminants due to their easy preparation, rapid detection, high sensitivity, and naked-eye sensing. In recent years, AuNPs-based colorimetric probes have been extensively explored for food analysis. The present article reviews the development of AuNPs-based colorimetric probes for colorimetric sensing and their applications in food analysis. It generally summarizes the properties of AuNPs and introduces the preparation and functionalization methods of AuNPs. An overview of the colorimetric sensing mechanisms of AuNPs-based probes and their applications in analysis of food contaminants are also provided. Although AuNPs-based colorimetric probes show many advantages in detection of food contaminants, challenges remain in terms of complexity of food matrices, multiple analytes detection in a single go, and testing conditions interference.

Abstract
A colorimetric sensor detects an analyte by utilizing the optical properties of the sensor unit, such as absorption or reflection, to generate a structural color that serves as the output signal to detect an analyte. Detecting the refractive index of an analyte by recording the color change of the sensor structure on its surface has several advantages, including simple operation, low cost, suitability for onsite analysis, and real-time detection. Colorimetric sensors have drawn much attention owing to their rapidity, simplicity, high sensitivity and selectivity. This Review discusses the use of colorimetric sensors in the food industry, including their applications for detecting food contaminants. The Review also provides insight into the scope of future research in this area.

Abstract
The rapid and sensitive detection of food contaminants is becoming increasingly important for timely prevention and treatment of foodborne disease. In this review, we discuss recent developments of electrochemical biosensors as facile, rapid, sensitive, and user-friendly analytical devices and their applications in food safety analysis, owing to the analytical characteristics of electrochemical detection and to advances in the design and production of bioreceptors (antibodies, DNA, aptamers, peptides, molecular imprinted polymers, enzymes, bacteriophages, etc.). They can offer a low limit of detection required for food contaminants such as allergens, pesticides, antibiotic traces, toxins, bacteria, etc. We provide an overview of a broad range of electrochemical biosensing designs and consider future opportunities for this technology in food control.

Abstract
Staphylococcus aureus (S. aureus) is accountable for a wide variety of clinical disease with a high rate of morbidity and mortality around the globe. It has a leading place into the ESKAPE group that includes six pathogens and exhibit multidrug resistance and are the major cause of healthcare associated infections: Enterococcus faecium, S. aureus, Klebsiella pneumoniae, Acinetobacter baumannii, Pseudomonas aeruginosa, and Enterobacter spp. A critical overview regarding the development of sensors for both S. aureus and his, more dangerous alter ego, Methicillin-resistant S. aureus (MRSA) was presented focusing on the bacteria targets starting with the detection of the whole cell, up to specific wall components, toxins or other virulence factors. The literature data was systematically assessed having in sight the design of the sensing platforms, the analytical performances, and possible courses of action to be implemented in real practice as point-of-care (POC) devices. Moreover, a distinct section was dedicated to commercially available devices and out of the box approaches, namely the use of bacteriophages as an alternative to antimicrobial therapy and as sensors modifiers. The reviewed sensors and devices were discussed in terms of their suitability for different biosensing applications, in early screening of contamination regarding food analysis, environmental monitoring and in clinical diagnosis.

Abstract
Given that food poisoning and infectious diseases caused by Salmonella typhimurium (S. typhimurium) draw intensive public health concerns, developing rapid, accurate, and cost-effective approaches to detect the pathogen is of crucial importance. Herein, we proposed a concanavalin A (Con A)-aptamer joint strategy to realize dual recognition for the strongly specific, visual, and highly sensitive determination of S. typhimurium. Compared with currently used single identification strategies, Con A and aptamer could recognize different sites of S. typhimurium to enhance the utilization rate of these sites for better sensing. The developed assay offered specific detection of S. typhimurium against other bacteria in a remarkably wide concentration range of 7.0 × 101 ∼ 7.0 × 109 CFU/mL, along with a detection limit as low as 23 CFU/mL. Real sample analyses of milk and pork demonstrated the excellent reliability and practicability of our assay, providing great potential for food safety analysis.

Abstract
Traditional foodborne pathogen detection methods are highly dependent on pre-treatment of samples and selective microbiological plating to reliably screen target microorganisms. Inherent limitations of conventional methods include longer turnaround time and high costs, use of bulky equipment, and the need for trained staff in centralized laboratory settings. Researchers have developed stable, reliable, sensitive, and selective, rapid foodborne pathogens detection assays to work around these limitations. Recent advances in rapid diagnostic technologies have shifted to on-site testing, which offers flexibility and ease-of-use, a significant improvement from traditional methods' rigid and cumbersome steps. This comprehensive review aims to thoroughly discuss the recent advances, applications, and limitations of portable and rapid biosensors for routinely encountered foodborne pathogens. It discusses the major differences between biosensing systems based on the molecular interactions of target analytes and biorecognition agents. Though detection limits and costs still need further improvement, reviewed technologies have high potential to assist the food industry in the on-site detection of biological hazards such as foodborne pathogens and toxins to maintain safe and healthy foods. Finally, this review offers targeted recommendations for future development and commercialization of diagnostic technologies specifically for emerging and re-emerging foodborne pathogens.
