Antimicrobial and immunomodulatory effects of tannic acid supplementation in broilers infected with Salmonella Typhimurium. Poult Sci 2022; 101:102111. Abstract
Infection by Salmonella Typhimurium, a food-borne pathogen, can reduce the poultry production efficiency. The objective of this study was to investigate the effects of tannic acid (TA) supplementation on growth performance, Salmonella colonization, gut barrier integrity, serum endotoxin levels, antioxidant capacity, gut health, and immune function in broilers infected with the Salmonella enterica serovar Typhimurium nalidixic acid resistant strain (STNR). A total of 546 one-day-old broilers were arbitrarily allocated into 6 treatments including 1) Sham-challenged control (SCC; birds fed a basal diet and administrated peptone water); 2) Challenged control (CC; birds fed a basal diet and inoculated with 108 STNR); 3) Tannic acid 0.25 (TA0.25; CC + 0.25 g/kg TA); 4) TA0.5 (CC + 0.5 g/kg TA); 5) TA1 (CC + 1 g/kg TA); and 6) TA2 (CC + 2 g/kg TA). On D 7, supplemental TA linearly reduced STNR colonization in the ceca (P < 0.01), and TA1 and TA2 group had significantly lower reduced STNR colonization in the ceca (P < 0.01). On D 7 to 21, average daily gain tended to be linearly increased by supplemental TA (P = 0.097). The serum endotoxin levels were quadratically decreased by supplemental TA on D 21 (P < 0.05). Supplemental TA quadratically increased ileal villus height (VH; P < 0.05), and the TA0.25 group had higher ileal VH compared to the CC group (P < 0.05). Supplemental TA linearly increased percentage of peripheral blood CD8+ T cells on D 18 (P < 0.01). The TA0.5 group had significantly lower lymphocyte numbers compared to the CC groups (P < 0.05). The abundance of monocytes linearly increased with TA supplementation (P < 0.01). Therefore, broilers fed TA had reduced STNR colonization, increased growth performance, decreased serum endotoxin levels, enhanced gut health in the broilers, and stimulated the immune system in broilers infected with STNR. Supplementation of TA (1–2 g/kg) enhanced growth performance and gut health via antimicrobial and immunostimulatory effects in broilers infected with STNR.

Abstract
Protein hydrolysate injection (PH) is a sterile solution of hydrolyzed protein and sorbitol that contains 17 amino acids and has a molecular mass of 185.0-622.0 g/mol. This study investigated the effect of PH on hematopoietic function in K562 cells and mice with cyclophosphamide (CTX)-induced hematopoietic dysfunction. In these myelosuppressed mice, PH increased the number of hematopoietic cells in the bone marrow (BM) and regulated the concentration of several factors related to hematopoietic function. PH restored peripheral blood cell concentrations and increased the numbers of hematopoietic stem cells and progenitor cells (HSPCs), B lymphocytes, macrophages, and granulocytes in the BM of CTX-treated mice. Moreover, PH regulated the concentrations of macrophage colony stimulating factor (M-CSF), interleukin (IL)-2, and other hematopoiesis-related cytokines in the serum, spleen, femoral condyle, and sternum. In K562 cells, the PH-induced upregulation of hematopoiesis-related proteins was inhibited by transfection with M-CSF siRNA. Therefore, PH might benefit the BM hematopoietic system via the regulation of M-CSF expression, suggesting a potential role for PH in the treatment of hematopoietic dysfunction caused by cancer therapy.

Abstract
The objective of present study was to study the effects of dietary ferrous sulfate (FeSO4) and time periods on Fe deposition, nutrients composition, color indices, water-holding capacity and oxidative stability of breast meat in broilers. This experiment was performed by 450 broilers in a 3 × 3 factorial design with 3 levels of supplemental Fe (0, 40 and 80 mg/kg) and 3 time periods (total, T: from 1 to 42 days; grower and finisher, GF: from 11 to 42 days and finisher, F: from 25 to 42 days). The results showed that increasing the iron supplementation to 80 mg/kg increased the breast meat crude Protein. Adding 80 mg/kg of FeSO4 during the T period increased the iron content of breast meat compared to other dietary periods. Supplementation of 40 mg/kg FeSO4 during T and GF periods increased quadratically (P < 0.001) the L* value of meat compared to F period. Meat redness significantly increased by adding of 80 mg/kg iron into broiler diet. At 1 and 7 day postmortem, malondialdehyde (MDA) and total antioxidant capacity (T-AOC) of meat were measured for determination of lipid oxidation stability of tissue. Feeding 40 mg/kg Fe caused a higher MDA value at both time points compared to 0 mg/kg Fe (linear response). However, increasing the Fe level to 80 mg/kg decreased MDA of meat (quadratic response). Adding 40 mg/kg Fe increased T-AOC of meat at both time points. It was concluded that dietary supplementation of 80 mg/kg Fe during T period resulted in the higher Fe deposition and better oxidative stability of breast meat in broilers.

Abstract
The aim of the study was to determine the effects of inorganic (ferrous sulfate [FeSO4] and FeSO4 + phytase [FeSO4+F]) and organic forms of iron (ferrous glycine chelate [FeGly], Fe-Gly + phytase [Fe-Gly+F]) on the concentrations of C-reactive protein (CRP), serum amyloid A (SA), alpha- 1-acid glycoprotein (α-AGP), haptoglobin (Hp), transferrin (TRF) and iron in the blood and liver tissue of poultry. Ross 308 roosters were used in this study. The acute-phase protein (AP) levels in the chicken serum and liver tissues were assayed using the double-antibody sandwich ELISA kits for chickens. The iron levels in serum and liver samples were measured using flame atomic absorption spectrophotometry. The results showed that the serum and hepatic iron concentration in the chickens receiving Fe-Gly and Fe-Gly-F were significantly higher than those in the control group and in the chickens receiving iron in the form of sulphates. Further, serum CRP and SA concentrations were lower in the chickens from the supplemented groups than in those from the control. The hepatic CRP concentration was higher in the supplemented groups than in the control group. The serum and hepatic TRF concentration were highest in the chickens receiving FeSO4 and FeSO4-F. The hepatic Hp concentration was higher in the chickens receiving organic forms of iron than in the control chickens, whereas the serum Hp concentrations were similar across the groups. The highest α-1-AGP concentration was found in the livers of the chickens receiving Fe- Gly and Fe-Gly-F. Taken together, these findings suggest that iron had the most beneficial effects for poultry in terms of health, performance and immunity when added to the feed in the form of glycine chelate.

Abstract
Simple Summary The value of yeast culture (YC) as alternative feed additives in poultry farming has been proven. YC is a nutrient-rich and complex micro-ecological fermentation product containing various metabolites. However, the major or specific effective components of YC and their importance in poultry farming are unknown. Herein, we screened the “effective ingredients” of YCs obtained from different fermentation times based on metabolomics and animal feeding experiments. Glycine, fructose, inositol, galactose, and sucrose were identified as potential effective metabolites in YCs. These findings provide an important basis for objective, accurate, and quick evaluation of the quality of YC products, as well as a scientific understanding of their functions. Abstract This study was aimed at determining the effective ingredients of yeast culture (YC) for animal breeding. First, the contents of YCs obtained from various fermentation times were detected using gas-chromatography. A total of 85 compounds were identified. Next, 336 Arbor Acres (AA) broilers were randomly divided into seven experimental groups and fed a basal diet, diets supplemented with YCs obtained at various fermentation times, or SZ1 (a commercial YC product). A significant increase in body weight gain (BWG) and a significant decrease in feed conversion ratio (FCR) of AA broiler chicks were observed with YC supplementation. Additionally, most of blood and immunological indices were improved with YC supplementation. According to the production performance and the results of multivariate analysis, glycine, fructose, inositol, galactose, and sucrose were found as the potential effective compounds of YC and were involved in metabolic pathways including glycine, serine, and threonine metabolism. Supplementation with diets based on combinations of effective compounds improved weight gain, feed efficiency, serum immunoglobulin A, and immunoglobulin G, but decreased blood urea concentration. These findings suggest YCs as effective and harmless feed additives with improved nutritional properties for broiler chicks.

Abstract
The demand for duck meat, duck eggs, and associated products is increasing each year. Classic and modern selection programs have been applied to enhance the economic traits of ducks to satisfy the requirements of consumers and enhance the incomes of producers. The nutritional requirements of unselected ducks may not be adequate, however, to fulfill the potential productivity performance of modern birds, including both meat-type and egg-type ducks. In particular, an imbalanced diet is associated with low productive performance and signs of nutritional deficiency (if insufficient nutrients are supplied), as well as with high feed costs and manure problems that reflect flock health and welfare (if excessive nutrients are supplied). Thus, the main aim of this review is to summarize the results of previous studies that estimated the nutrient requirements of meat-type and egg-type ducks in order to evaluate current knowledge and to identify further issues that need to be addressed. In addition, the results obtained in previous studies are compared in order to understand how to lower commercial feed costs, fulfill the genetic potential of selected ducks, protect the environment from pollution, and satisfy the welfare and health needs of ducks.

Abstract
Iron (Fe) is an essential micronutrient for human growth and health. Organic iron is an excellent iron supplement due to its bioavailability. Both amino acids and peptides improve iron bioavailability and absorption and are therefore valuable components of iron supplements. This review focuses on protein hydrolysates as potential promoters of iron absorption. The ability of protein hydrolysates to chelate iron is thought to be a key attribute for the promotion of iron absorption. Iron-chelatable protein hydrolysates are categorized by their absorption forms: amino acids, di- and tri-peptides and polypeptides. Their structural characteristics, including their size and amino acid sequence, as well as the presence of special amino acids, influence their iron chelation abilities and bioavailabilities. Protein hydrolysates promote iron absorption by keeping iron soluble, reducing ferric iron to ferrous iron, and promoting transport across cell membranes into the gut. We also discuss the use and relative merits of protein hydrolysates as iron supplements.

Abstract
The varied bioavailability and different effects of organic forms of copper on the immune system of poultry have prompted the search for new feed additives based on copper compounds containing modified chelate complexes. The aim of the study was to determine the effect of inorganic and organic forms of copper on selected parameters of the cellular and humoral immune response in broiler chickens by determining the percentages of CD3+ CD4+ , CD3+ CD8+ and CD25+ lymphocytes, cells with MHC Class II expression, and BU-1+ cells, as well as the concentrations of SOD, IL-2, IL-10 and TNF-α in the peripheral blood. The experiments were conducted using 500 one-day-old Ross 308 roosters divided into five groups. Cu was added in inorganic form (CuSO4 ), in inorganic form with the addition of phytase (CuSO4 + F), in organic form in combination with glycine (Cu-Gly) and in organic form in combination with glycine and a phytase supplement (Cu-Gly+F). The results of the study indicate an increase in the percentage of CD3+ CD4+ and CD3+ CD8+ T lymphocytes, CD25+ T cells, and cells expressing MHC class II molecules, and in the concentration of ceruloplasmin, activity of superoxide dismutase and the concentration of IL-2 in the groups that received copper, particularly copper-glycine chelates. Based on the study, we can conclude that supplementation of poultry feed with copper chelates activates mainly the Th1 cellular immune response and the response of peripheral blood T lymphocytes. Furthermore, it promotes secretion of cytokines, which are involved in potentiation and regulation of the immune response in birds.

Abstract
The ability of poultry to withstand infectious disease caused by bacteria, viruses or protozoa depends upon the integrity of the immune system. Zinc is important for proper functioning of heterophils, mononuclear phagocytes and T lymphocytes. Numerous data indicate that the demand for zinc in poultry is not met in Poland due to its low content in feeds of vegetable origin. The aim of the study was to determine the effect of supplementation of inorganic (ZnSO4 and ZnSO4+ phytase enzyme), and organic forms of zinc (Zn with glycine and Zn with glycine and phytase enzyme) on selected parameters of the cellular and humoral immune response in broiler chickens by evaluating the percentage of CD3+CD4+, CD3+CD8+, CD25+, MHC Class II, and BU-1+ lymphocytes, the phagocytic activity of monocytes and heterophils, and the concentration of IL-2, IL-10 and TNF-α in the peripheral blood. Flow cytometry was used to determine selected cell-mediated immune response parameters. Phagocytic activity in whole blood was performed using the commercial Phagotest kit (ORPEGEN-Pharma, Immuniq, Poland). The results showed that supplementation with zinc chelates causes activation of the cellular and humoral immune response in poultry, helping to maintain the balance between the Th1 and Th2 response and enhancing resistance to infections. In contrast with chelates, the use of zinc in the form of sulphates has no immunomodulatory effect and may contribute to the development of local inflammatory processes in the digestive tract, increasing susceptibility to infection.
